Effect of Added Calcium Ions on Relative Milk-Clotting Activities of Commercial Milk Clotting EnzymesPavenayotin, Nuchanart 01 May 1974 (has links)
Effect of added calcium ions on the relative milk clotting activities of porcine pepsin, Mucor miehei protease, Endothia parasitica protease, and Mucor pusillus protease was compared with that of rennin. Skimmilk, maintained at pH 6. 3 with 0.000% to 0.030% added calcium chloride, was used as a substrate. The coagulation activity of Mucor pusillus protease appeared to be most sensitive to calcium ions, followed by Mucor rniehei protease, porcine pepsin, rennin, and Endothia parasitica protease. The clotting activities of Mucor pusillus protease were also more sensitive than rennin to added calcium ions in milk samples maintained at pH values of 6.4, 6.5, and 6.6.
Mucor pusillus protease and rennin were standardized to equal activities in skimmilk maintained at pH 6.3 and 6.6 containing 0.020% added CaCl2. For skimmilk maintained at pH 6.3, Mucor pusillus protease concentrations ix that gave the same clotting times as rennin in skimmilk containing 0.000% and 0.010% added CaCl2, were 9.6% and 4.5% higher than its standardized concentration. While at pH 6.6 Mucor pusillus protease concentrations were 13.2% and 5.8% higher.

Virginia Cooperative Extension has the task of providing producers with timely and useful research-based information. As both producers and Virginia Cooperative Extension agents and specialists prepare for the challenges of the changing face of agriculture in Virginia in the next generation, a mutual understanding of the key factors and motivations for enterprise diversification is necessary. This study investigates the key factors, motivations, and information needs of seven diversified farms in Virginia. The implications for producers and Cooperative Extension are outlined, and recommendations are made for Virginia Cooperative Extension, lenders, and agribusiness. / Master of Science

Consumption of sugar, sugar-containing food and drinks, related health risks and change of life style in our population are currently addressed issues with negative consequences already observed in childhood. The aim of the diploma thesis was to study the consumption of sugar and foods containing sugar in children attending kindergarten and 1st grade of elementary school. The theoretical part was focused on an overview of knowledge about sugars, both naturally occurring and added, and health risks associated with frequent consumption of foods containing added sugars. In the practical part, the consumption of these foods in terms of quantity and various forms and its influence on the development of childhood obesity and other metabolic diseases was monitored. At the same time, other aspects of children's lifestyle that could determine children's obesity were identified. The basis of the practical part was a questionnaire survey using questions determining eating habits of children. The research showed a relationship between the BMI of children above the 75th percentile and more frequent sweets consumption and less frequent active (sports) and natural physical activities. A research report to be submitted to the Faculty of Commerce, Law and Management, University of Witwatersrand, Johannesburg, in partial fulfilment of the requirements for the degree of Master of Commerce( Specialising in Taxation); March 2016 / The present study sought to investigate self-selection among internal and international migrants
in Gauteng by making use of the Gauteng City Region Quality of Life Survey data. The present
study also sought to disentangle the effects of observed and unobserved characteristics in the
self-selection of migrants by conducting Oaxaca-Blinder decomposition on overall
employment and self-employment outcome variables. Preliminary descriptive statistics
indicated that international migrants experienced markedly higher levels of employment than
both locals and internal migrants driven by higher rates of informal and self-employment.
System GMM analysis of pseudo panel data confirmed these results and showed that
international migrants had a higher probability of employment and self-employment. Oaxaca
Blinder decomposition indicated that unobserved characteristics explained the greatest share
of the differences in the rates employment and self-employment of locals, internal migrants
and international migrants. These results provide evidence for the positive selection of
international migrants to Gauteng on unobservable characteristics relevant to the region’s
labour market.

Effects of Preblending and Water Addition on Physical and Sensory Characteristics of Seasoned Pork PattiesField, Molly Sheppard 15 December 2012 (has links)
The objective of this study was to establish the consumer acceptability of preblended and nonpreblended post rigor seasoned pork patties with added water levels of 0, 3, 6, and 9 percent for each formula. Other parameters measured were proximate analysis, texture, cooking loss, and consumer acceptability. Nonpreblended treatments had a higher (P<0.05) percentage of protein and a lower (P<0.05) percentage of fat as compared to preblended treatments. Texture analysis revealed a lower (P<0.05) amount of total energy required to shear through a single patty in preblended treatments than nonpreblended treatments. No differences (P>0.05) were detected among treatments at varying water levels. Consumer acceptability showed no differences (P>0.05) among selected treatments. Consumer acceptability scores indicated that consumers would consume both preblended and nonpreblended seasoned pork patties at varying water levels.
