O objetivo principal é compreender como os processos relacionados à atual fase da globalização vêm ganhando expressão a partir das práticas relacionas à alimentação de imigrantes transnacionais no contexto da cidade de Amsterdã (Países Baixos). Apoiado em um caráter interdisciplinar, o foco desta investigação recai sobre os aspectos socioculturais do fenômeno alimentar. O percurso metodológico tem como base a etnografia e o trabalho de campo foi realizado do mês de abril de 2015 a março de 2016 na cidade de Amsterdã. Nesta investigação, voltamos o olhar para indivíduos de diversas nacionalidades, buscando contemplar o caráter essencialmente transnacional das migrações em vigor. Tomando como prisma teórico as dinâmicas culturais da globalização e visando contornar como os fluxos globais vêm ressoando na alimentação desses imigrantes, o eixo de análise está direcionado para como estes indivíduos se relacionam com a paisagem alimentar de Amsterdã e o que esta possibilita em termos de reprodução cultural e articulação entre o global e o local através das suas práticas alimentares. Considerando que os fluxos globais em torno da comida não se restringem aos alimentos, incidindo ainda em ideias, informações, imagens, receitas e discursos, a análise também inclui os fluxos envolvendo as tecnologias da comunicação (mediascape) e a maneira pela qual vêm redimensionando a alimentação em condição migratória e colocando outros parâmetros para se refletir sobre o tema, sobretudo ao evidenciar a complexidade da alimentação que se restringe cada vez menos ao ato alimentar.<br> / Abstract : This thesis explores the issue of food and immigration from the perspective of globalization. The main objective is to understand how the processes related to the current phase of globalization have been expressed through practices related to food of transnational migrants in the context of the city of Amsterdam (The Netherlands). Based on an interdisciplinary character, this research is focused on the socio-cultural aspects of the food phenomenon. The methodology is based on ethnography and the fieldwork was carried out from April 2015 to March 2016 in the city of Amsterdam. In this research, we turn our attention to individuals of different nationalities, seeking to contemplate the essentially transnational character of the migrations in force. Taking the cultural dynamics of globalization as a theoretical prism, and in order to delineate how global flows are affecting the food practices of these immigrants, the analysis axis has the focus on how these individuals relate to the foodscape of Amsterdam and what it enables in terms of cultural reproduction and articulation between the global and the local through their food practices. But considering the global flows around food are not restricted to ingredients, but include ideas, information, images, recipes and speeches, the analysis also included flows linked to communication technologies (mediascape) and the way in which they have been reconfiguring food in a migratory status and setting other parameters to think about the complexity of food that it ´s not just to eat.
