Optimisation des conditions de fabrication fromagère et d'affinage pour l'obtention d'un fromage de type Chester enrichi en acide gamma aminobutyrique

L’hypertension est probablement le plus important problème de santé dont souffrent les Canadiens (Statistiques Canada, 2010). Modifier l’alimentation est une façon de contrôler l’hypertension (OMS, 2013) (Statistiques Canada, 2010). Une autre possibilité serait la consommation d’acide gamma-aminobutyrique. L’acide gamma-aminobutyrique (GABA) est un composé hypotenseur présent dans certains aliments fermentés suite à sa production par certains microorganismes en condition de stress acide. La consommation quotidienne de 50 g de fromage de type Cheddar contenant 0,32 mg de GABA/g de fromage a entrainé une baisse de pression artérielle significative chez des hommes sujets à la préhypertension (Pouliot-Mathieu et al., 2013), mais non-significative par rapport au groupe témoin. Le Chester est un fromage à pâte semi-ferme, dont l’affinage dure plusieurs mois et dont le pH de 4,8 est obtenu naturellement, conditions qui favorisent la production de GABA. Le but de ce projet était de produire un fromage de type Chester en employant un ferment producteur de GABA qui permettrait l’obtention d’une concentration en GABA supérieure à 0,32 mg de GABA/g. La consommation de 50 g quotidienne de ce fromage pourrait alors entrainer une baisse de pression artérielle significative comparativement à un témoin sans GABA. La production de GABA a été confirmée chez les souches productrices Lc. lactis A23 et H13 et infirmée chez les souches de Lb. casei et Lb. paracasei testées. L’ajout du cofacteur de la réaction, le pyridoxal-5’-phosphate (PLP) a été évalué sur des caillés modèles, en plus de l’effet d’une combinaison des souches productrices de GABA, soit 50 % Lc. lactis H13/50% Lc. lactis A23. Le PLP n’a pas été ajouté lors de la fabrication des fromages de type Chester. Quatre ferments ont été employés et les fromages ont été affinés à 4°C, 8°C ou 12°C. À l’exception d’une humidité plus faible, la composition des fromages produits était semblable à celle d’un Chester traditionnel mais leur texture n’était pas aussi friable. La concentration maximale de GABA produite après 90 jours d’affinage à 12°C a été de 58mg/100g de fromage en utilisant un ferment composé de 25 % Lc. lactis H13 et de 75 % Lc. lactis A23.

Syftet med denna studie har varit att undersöka vad elever ges möjlighet att lära sig samt genom vilka läraraktiviteter sker kunskapsutvecklingen inom CAD (Computer-Aided-Design). Studien är baserad på en kvalitativ analys av intervjuer som genomförts med sju olika lärare som alla undervisar på gymnasiets teknikprogram i årskurserna 1 och 2. Av resultatet framgår det att elevers lärande kan kopplas till lärarnas kunskaper inom CAD. Kunskaper följer en hierarkisk struktur där kunskaper om kommandon är en förutsättning för att elever skall utveckla kunskaper om procedurer och vidare utveckla högre strategiska kunskaper och kreativt tänkande. Lärarna strävar efter att eleverna utveckla ett mer självständigt lärande. Eleverna skall även förbereda sig för yrkesförberedande samarbete genom att kunna nyttja gemensamma protokoll och standarder som förekommer i näringslivet. De läraktivitet som framkommer som tydliga inslag i CAD-undervisningen är att läraren överför sina expertkunskaper till eleverna genom planerade övningar, laborationer och visualiseringar i CAD. Stöttning förekommer i flera former som feedback, anpassningar i olika former, dialoger med frågor, samt genom digitalt stöd. Samarbete förekommer i olika former där elever lär sig att utveckla kunskaper tillsammans med andra elever. Lärarnas kollegiala ämnesöverskridande samarbete beskrivs också som en betydelsefull form i CAD-undervisningen. / The purpose of this study has been to investigate what knowledge students develop and through which teacher activities the knowledge development takes place within CAD (Computer-Aided-Design). The study is based on a qualitative analysis of interviews conducted with seven different teachers who all teach in the senior high school's technology program in grades 1 and 2. The results show that students learning can be linked to teachers CAD knowledge. Knowledge development follows a hierarchical structure where command knowledge is a prerequisite for students to develop procedural knowledge and further development of higher strategic knowledge and creative thinking. The teachers strive for the students to develop a more independent learning. Students will also learn to prepare for a more professional environment by being able to use common protocols and standards. The results indicate that, during the CAD teaching, the teachers transfer their expert knowledge to the students through planned exercises, laboratory work and visualizations in CAD. Furthermore, teachers support student through feedback, individual/group adaptations in various forms, dialogues and through digital support. Collaboration occurs in different forms where students learn to work with each other and develop knowledge together. The teachers' collegial cross-disciplinary collaboration is also described as an important form of CAD teaching.

This diploma thesis deals with the criticism of communism in the novels of three African-American writers: Richard Wright Native Son and The Outsider, Chester Himes Lonely Crusade and Ralph Ellison Invisible Man. The main characters of their novels, mainly African-Americans, were directly confronted with racial prejudices, injustice during the Great Depression. These unfavorable living situations brought them to the Marxist Ideology. The Communist Party in USA was attractive for African-Americans because their program included the fight for racial equality. After the initial excitement of Marxist Ideology came indignation and disappointment.

This project consists of two, two-week thematically planned language arts units containing all the components of a balanced literacy. It was created to teach second and third grade at risk students at Chester Morrison Elementary School, in Menifee, California during two weeks of their off track time. Both sessions have daily detailed plans for the teacher outlining all the components of a balanced literacy program. Both sessions contain relevent books that students make and take, shared reading to increase comprehension and skill building, and constant literacy opportunities.
