La notion de culinarité est « dans toutes les bouches » sans avoir été l'objet d'une définition en marketing et comportement du consommateur. Pour combler cette lacune, cette thèse s’est attachée à explorer les contours de la culinarité et proposer un mix design expérientiel x culinarité au service du ravissement du consommateur. Après de premières explorations basées sur des analyses de contenus sur internet (NGram Viewer et Google) et des entretiens semi-directifs qui ont affiné la compréhension du concept, la recherche a consisté en une analyse polymorphe des dimensions et pratiques autour de la notion de culinarité. S'appuyant sur une multiangulation des terrains de recherche, les quatre études empiriques ont été : 1) des études de cas au Grand Restaurant ; 2) une observation participante d’un Mooc en design culinaire ; 3) des manipulations de la culinarité au restaurant ; 4) trois expérimentations sous forme de restaurants éphémères, supports d’une enquête et d’observations. Dès lors, les conclusions apportées proposent une définition de la culinarité (déterminant Plaisir et 4 dimensions QCSP : Q-Qualité, C-Créativité, S-Savoir-Faire, Partage), confirmant l’intérêt d’un mix design expérientiel x culinarité pour ravir le consommateur et introduisent ce que serait le marketing culinaire. / The culinary is in everybody’s mouth without having been defined neither in marketing or in the field of consumer’s behavior. In order to limit this lack of concept, this thesis aims at exploring the ideas behind the culinary and to suggest a mix experiential design x « culinariness » for a consumer’s delightment. After the first exploration based on content analysis on the internet (NGram Viewer and Google) and semi-directive interviews that have revealed part of the concept, the research consisted in a polymorphic analysis of the dimensions and uses of the culinary. Built on a multiangulation of the research, the four empirical studies were : 1) case studies of quality restaurants ; 2) participating observation of a Mooc on food design ; 3) tests on the dimensions of the culinary at the restaurant ; 4) three experimentations as pop up restaurants enabling somes observations on spot and investigations. Thus, the results of this study lead to a definition of the culinary (Pleasure as a determinant and 4 dimensions QCKS: Q-Quality ; C-Creativty ; K-Know-how ; S-Sharing). They attest the point of an experiential design x culinary mix in order to delight the consumer and introduce a culinary marketing.

Questa tesi empirica si concentra sul ruolo svolto dal food marketing (sezione uno) e dal destination branding (sezione due) nel promuovere lo sviluppo di una regione . La tesi è strutturata come raccolta di 4 articoli.
La prima sezione si basa su due ricerche empiriche inerenti il caso della Fontina, un tipico formaggio italiano. L'obiettivo è capire che tipo di valore può essere generato collegando un alimento tipico alla regione di origine / produttore / certificazione. L'analisi approfondisce e supporta studi precedenti sull’ importanza della certificazione DOP e contribuisce individuando un legame tra le preferenze dei consumatori per i prodotti DOP e le differenze territoriali.
La seconda sezione si concentra sul tema della collaborazione nelle destinazioni turistiche, approfondendo il ruolo della fiducia nel rapporto tra benefici (economici e relazionali) realizzabili attraverso service bundling e l'orientamento degli albergatori al networking. Sono stati intervistati 164 albergatori valdostani. I risultati evidenziano che la fiducia media il rapporto tra benefici relazionali e orientamento al networking. Un ulteriore risultato interessante è l'effetto mediazione svolto dell’ innovatività degli albergatori nel rapporto tra benefici economici e orientamento al networking. Lo studio fornisce una segmentazione del settore dell'ospitalità in base all'orientamento al networking degli operatori. / This empirical thesis focuses on the role played by typical food marketing (section one) and destination branding (section two) in enhancing the development of a region. The thesis is structured as the collection of 4 papers.
The first section is based on two empirical surveys on the case of Fontina, a typical Italian cheese. The aim is to understand which kind of value can be generated by linking a typical food to the region of origin/ producer/ certification. The analysis supports and builds on previous studies on the importance of PDO certification. Importantly, it contributes by eliciting consumers’ preferences for PDO according to territorial differences.
The second section focuses on the topic of collaboration in tourism destinations. This research investigates the role of trust in the relationship between benefits (economic and relational) achievable through service bundling and hoteliers’ orientation to networking. 164 hoteliers located in Aosta Valley region in Italy were interviewed. Outcomes highlight that trust mediates the relationship between relational benefits and networking orientation. Another interesting result is the mediation effect of hoteliers’ innovativeness on the relationship between economic benefits and networking orientation. The study provides a segmentation of the hospitality industry according to operators’ networking orientation.

Cette thèse s’intéresse à l’impact du développement des Grandes et Moyennes Surfaces (GMS) sur les producteurs de produits agricoles Jordaniens. Ce travail essaye d’approcher les évolutions nécessaires aux exploitations agricoles traditionnelles, qui écoulent leur production dans les marchés de gros, pour se préparer aux exigences agronomiques, techniques et managériales propres aux circuits de distribution modernes. Cette thèse montre également que la vente dans les GMS n’est pas pour l’instant très rentable pour les agriculteurs Jordaniens. Malgré ce constat, ces derniers adoptent une stratégie d’anticipation en se positionnant dès aujourd’hui dans cette chaîne moderne. / This these focuses on the impact of the development of food retailing on Jordanian agricultural producers. This work is particularly interesting because it allows us to approach the evolutions necessary for traditional farms, which dispose of their production in the wholesale markets, in order to prepare themselves for the agronomic, technical and managerial requirements of modern channels. This thesis also shows that the sale in the supermarkets is not for the moment very profitable for the Jordanian farmers. Despite this, they are adopting a strategy of anticipation by positioning themselves today in this modern chain.

Is the Emperor naked? : rethinking approaches to responsible food marketing policy and researchCairns, Georgina January 2016 (has links)
The thesis aims to present a case for a rethinking of the paradigmatic frames underpinning food marketing control policy and research. In support of its contention, it reports on the methodological strategies, evidence outcomes and knowledge translation contributions of a series of research projects. The projects were commissioned by national and international policy makers during the period 2009-2015 in support of responsible food marketing policy development. They were conceptualised, developed and interpreted through participatory and iterative research planning processes. The research drew on theories and constructs from multiple disciplines. Public health, marketing and policy science contributed most, but information economics and management theories also informed research design and analysis and interpretation of findings. Its key generalizable findings can be summarised as follows: • The identification of a fragmented but convergent pool of evidence indicating contemporary food and beverage marketing is an interactive, dynamic phenomenon. • The identification of a fragmented but convergent pool of evidence demonstrating it significantly impacts sociocultural determinants of food behaviours. • The generation of evidence demonstrating a gap between the strategic aims of responsible marketing policy regimes and the inherent capacity of implemented interventions to constrain marketing’s food environment impacts. • The generation of evidence demonstrating that critical re-appraisal of food marketing policy research assumptions and preconceptions is a strategy supportive of policy innovation. • The generation of evidence that research intended to support real world multi-stakeholder policy development processes requires additional skills to those established and recognised as central to high quality research. These include the ability to engage with dynamic and politicised policy processes and their public communications challenges. • The generation of evidence that can inform future independent benchmark standard for responsible marketing development initiatives. • The generation of evidence that can inform future research on designing and developing policy that is ‘future proof’ and targets marketing’s sociocultural food environment impacts. Its most significant knowledge translation contributions have been: • Support for the WHO Set of Recommendations on the Marketing of Foods and Non-alcoholic Beverages to Children (subsequently endorsed at the 2010 World Health Assembly and the 2011 United Nations General Assembly). • Participatory research contributions to the Scottish Government’s responsible marketing standard development initiative (PAS2500). • Supporting the planning and development of the Scottish Government’s Supporting Healthy Choices Policy initiative. • Knowledge exchange with policy makers and stakeholders engaged in a scoping and prioritisation initiative commissioned by the United Kingdom’s Department of Health (An analysis of the regulatory and voluntary landscape concerning the marketing and promotion of food and drink to children). • Supporting responsible marketing policy agendas targeted to the engagement of a broad mix of stakeholders in innovative policy development processes. • Supporting policy makers’ efforts to increase popular support for stronger, more effective responsible marketing policy controls. The thesis therefore aims to present evidence that the programme of research presented here has made useful and original contributions to evidence and knowledge on contemporary food marketing and its impacts on food behaviours and the food environment. It aims to build on this by demonstrating how this evidence informed and supported policy development. Through this the thesis aims to support its case that a rethinking of food marketing policy research assumptions and conceptions can expand and enrich the evidence base as well as real world policy innovation.

This thesis is a case study focused on a relationship between public policy to prevent childhood obesity and the role of the food production and marketing in the Czech Republic. The emphasis is especially given to the institutional framework of food marketed and produced for children and its social concequences, because childhood obesity is one of them. The results from the analysis are then confronted with views and opinions of children and their parents, with how they feel about food advertising. Conclusion: advertising and production of food designated for children is not regulated in the Czech Republic. On governmental level only basic standards and rules are given and self-regulation is given precedence. Parents are aware of the huge influence of advertising on their children and that is why they are not satistied with the current situation. They would appreciate stronger legislative regulation of marketing and production of food for children.

This dissertation is focused on currently one of the most burning social problem - childhood obesity in Czech Republic. We have tried to find out a childhood prevalence obesity, its causes, social risks and expected dangers and we evaluated possible solutions for the prevention of obesity. A research problem of the thesis is the growing prevalence of childhood obesity in the Czech Republic in the context of developing its ineffectively controlled determinant. Our research targets on children, more precisely said on pupils of four primary schools (in the Bílina city). Among the objectives of the thesis belongs a pupil categorization according to BMI (body mass index). A principal goal is an evaluation of level of support for children to a healthy lifestyle by primary schools. Data have been collected from the children themselves, as well as from the school management and the respective school founder (city or region). The results of the research point out that a prevalence of childhood obesity (for a sample of the pupils of bílina's primary schools) corresponds to the current development and proportional representation of overweight and obesity in our country. This diploma thesis discusses Instagram as a means for spreading trends in gastronomy with a focus on gastronomy and related trends in the field specifically from the Czech Republic. The author tries to map the influences that the online environment can have on their formation, especially the social network Instagram. After a thorough acquaintance with the environment of social networks, the social network Instagram, its influence on the spread of experiences, trends and the media environment in general, is described in more detail. The author seeks to clarify whether what is happening on this network can guide the direction of what is popular in the gastronomic environment, understand the role that well-watched creators from Instragram play in society and what it means for ordinary users to share food experiences. "Influential" users from the gastronomic sphere on Czech Instagram and their further connection with the media environment are presented. This work follows the studies focused on obesity, its global extent and its serious health and economic impact. At the same time, the work examines the unsuccessful fight of public policies which try to reverse growing prevalence of obesity. Nevertheless, the main goal of the thesis is a discussion about priorities of new orientation in the research on the causes of the obesity epidemic and effectiveness of precautions that were taken in many countries and international organizations with the main aim to stop the obesity and its consequences. The discussion leads to the more detailed description of the problems connected with obesity, for instance, environmental aspects, housing culture in relation to physical activities, lifestyle in relation to advertisement/marketing, psychological and socio- psychological aspects, combating stress, etc. My intention was to find out utility of contemporary research on obesity for setting of policy fighting against obesity.
