Contexte : La petite enfance constitue une période importante dans l’acquisition de saines habitudes alimentaires. Par leurs connaissances, attitudes, croyances, pratiques et perceptions en alimentation et nutrition, plusieurs intervenants influencent les jeunes enfants : parents, responsables de l’alimentation et éducatrices en services de garde. Objectifs : Cette étude décrit et analyse les perceptions du « bien manger » de 113 responsables de l’alimentation, de 302 éducatrices et de 709 parents d’enfants âgés de 2 à 5 ans en services de garde au Québec. Méthodologie : Ce mémoire porte sur une question ouverte, répétée dans trois questionnaires autoadministrés de la recherche Offres et pratiques alimentaires revues dans les services de garde au Québec. Les réponses ont été recueillies de 2009 à 2010 et analysées au moyen d’une grille de codification construite de manières déductive et inductive. Résultats : L’analyse des données recueillies montre la récurrence des thèmes de la variété, l’équilibre, la modération, des légumes et fruits, mais aussi l’émergence du plaisir, de la santé, du GAC, des qualités organoleptiques, des pratiques coercitives et de la commensalité. Cette recherche dévoile que la variété, la santé et l’équilibre sont communs aux trois catégories d’intervenants, alors que le GAC, le plaisir, la saine alimentation et les qualités organoleptiques figurent plutôt dans les perceptions d’intervenants spécifiques. Conclusion : Ce portrait illustre la compréhension du « bien manger » qu’ont des intervenants jouant un rôle important dans le développement d’enfants âgés de 2 à 5 ans. En outre, il permet d’éclairer les acteurs développant messages, interventions et politiques de santé publique faisant la promotion de la saine alimentation et favorisant la mise en place d’environnements appuyant l’adoption de saines habitudes alimentaires dans les services de garde du Québec ainsi que dans les ménages. / Context: Preschool age represents an important period for the acquisition of healthy eating habits. With their knowledge, attitudes, beliefs, practices and perceptions with regard to eating and nutrition, several stakeholders influence children: parents, but also foodservice managers and educators in childcare centres. Objectives: This study describes and analyzes the perceptions of “eating well” of 113 foodservice managers, 302 educators and 709 parents of 2 to 5-year-old children in childcare centres of Quebec. Methodology: This study focuses on an open-ended question, repeated in three self-administered questionnaires taken from the research Offres et pratiques alimentaires revues dans les services de garde au Québec. Data collected between 2009 and 2010 was analyzed using a coding grid crafted by induction and deduction. Results: Qualitative data analysis revealed the recurrence of several themes such as variety, balance, moderation, vegetables and fruits, as well as the emergence of pleasure, health, Canadian Food Guide, organoleptic qualities, coercive practices and commensality. Findings indicate that variety, health and balance are perceptions common to all three categories of stakeholders, while the Canadian Food Guide, pleasure, healthy eating and organoleptic qualities are specific to certain stakeholders. Conclusion: This portrait sheds some light on how “eating well” is understood by stakeholders who play an important role in the development of 2 to 5-year-old children. It also informs actors developing public health messages, interventions and policies promoting healthy eating and encouraging the set up of environments supporting the adoption of healthy eating habits in childcare centres of Quebec, as well as in households.

Avaliação da implementação do sistema cook-chill em unidade de alimentação e nutrição - UAN / Evaluation of cook-chill system implementation on foodservice

Eficácia, aperfeiçoar a produção, minimizar custos relativos e otimizar recursos disponíveis são desafios aos quais se deparam os serviços de alimentação coletiva no Brasil. Este estudo procurou avaliar os recursos disponíveis de uma unidade de alimentação e nutrição - UAN, visando subsidiar a implementação do sistema cook-chill. Para realização do estudo foram utilizados dois tipos de proteína animal, o lagarto (músculo semitendinosus) e o peito de frango (pectoralis major) com o emprego das técnicas cook-chill e convencional. O estudo foi divido em três etapas. A primeira avaliou a capacidade instalada a partir da observação dos recursos necessários, tais como, mão de obra empregada, estrutura física relacionada a equipamentos e custo. Os resultados evidenciaram um baixo índice de produtividade de mão de obra quando comparado a outras UAN. O custo total da preparação alimentícia aumentou 2,7% com o emprego da técnica cook-chill quando comparado à técnica convencional. Este aumento foi causado principalmente pelo maior tempo no emprego da mão de obra, de consumo de energia elétrica e no uso da capacidade instalada. Esta, por sua vez pode ser considerada suficiente para a implementação da técnica cook-chill. Na segunda etapa, identificou-se os pontos críticos de controle - PCC - de preparações com o emprego da técnica cook-chill. Testes preliminares definiram o tempo e temperatura do tratamento térmico empregado, devendo ser a temperatura de forno de 160°C até atingir 89°C no centro geométrico por 4 minutos para carne bovina (lagarto) e 2 minutos para carne a base de ave (peito de frango), respectivamente, num tempo total de processo de 2 horas e 25 minutos, binômios suficientes para reduzir 11D do microrganismo alvo do estudo, o Clostridium botulinun type E. Para o emprego da técnica cook-chill, identificou-se como pontos críticos de controle, a partir do método recomendado pelo Codex alimentarius, as etapas de cocção, armazenamento e regeneração, para as duas preparações. Na terceira etapa aplicou-se a técnica cook-chill visando comparar os resultados em relação aos aspectos sensoriais, físicos, químicos e microbiológicos com a técnica convencional. O rendimento total das preparações com o emprego da técnica convencional foi menor quando comparado ao cook-chill, para ambas as proteínas, exceto nas amostras de lagarto com cook-chill que tiveram um rendimento maior no armazenamento durante cinco dias, justificado pela influência da retenção de água provido pelo acondicionamento em saco a vácuo. O emprego da técnica cook-chill e o tempo de armazenamento não influenciaram nos resultados para pH, força de cisalhamento e cor objetiva, para nenhum dos tipos de carnes. As contagens microbiológicas revelaram-se satisfatórias, mesmo para as amostras armazenadas sob refrigeração no período mais longo. Quanto à análise sensorial as duas técnicas obtiveram uma aceitação acima de 60% nos atributos sensoriais avaliados. Concluiu-se que a UAN poderá substituir a técnica convencional, uma vez que obteve resultados satisfatórios de aceitação da técnica cook-chill, principalmente no tempo de armazenamento em até 5 dias a 3°C, e demais análises. Do mesmo modo, essa técnica apresentou-se vantajosa devido à maior facilidade operacional, sugerindo a redução do tempo de produção, a otimização da mão de obra e equipamentos disponíveis o favorecimento do aumento da produção. / Effectiveness, improving the production, minimize costs and optimize available resources are challenges which face the collective power services in Brazil. This study sought to evaluate the resources of a unit of foodservice, aiming to support the implementation of the cook-chill system. To conduct the study were used two types of animal protein, the semitendinosus beef and fillet of chicken breast (pectoralis major) with the use of cook-chill techniques (zero time and five days of storage) and conventional. The study was divided into three stages. First, it was evaluated the installed capacity from observing the necessary resources, such as labour, physical structure related to equipment and cost analysis. While using conventional techniques, the results showed a low labor productivity rate when compared to other foodservice units. The total cost increased to 2.7% with the use of cook-chill technique when compared to the conventional technique, caused mainly by higher use of labor, consumption of electricity and installed capacity, which may be considered sufficient for the implementation of the cook-chill technique. In the second stage, it was identified the critical control points - CCP - of preparations with the use of cook-chill technology. Preliminary tests defined time and temperature of cooking should be 160°C of oven temperature, up to reach 89°C at geometric center for 4 minutes, to semitendinosus beef, and 2 minutes for the chicken breast, respectively, in a total time process of 2 hours and 25 minutes, binomial of time enough to reduce 11D of the study target microorganism, Clostridium botulinun type E. For the implementation of the cook-chill technique it was identified, as critical control points from the method recommended by the Codex alimentarius, the steps of cooking, storage and regeneration, for both of preparations. The third stage applied the cook-chill technique in order to compare its results with the conventional technique, on the sensory, physical, chemical and microbiological aspects. The overall process yield with the conventional technique was lower than in the cook-chill technique for both proteins, except in the lizard samples cook-chill with time of storage of 5 days, that shown a higher process yield, that can be explained by the influence of water retention provided by storage in a vacuum bag. The use of cook-chill technique did not influence the results for pH, shear force, objective color, the storage time, for any of the types of meats, as well as microbiological counts proved to be satisfactory even for the preparations of meats under longer periods of refrigeration. The sensory analysis of two techniques gained acceptance over 60% in the sensory attributes evaluated. In conclusion, the foodservice unit can replace the conventional technique for cook-chill technique, according to satisfactory results of analyzed parameters, particularly for storage time up to 5 days at 3°C, also provides greater operational convenience, reduced production time, and labour optimization creating conditions for further production increase.

An observational cross-sectional investigation of foodservice management and general management practices in schools running the National School Nutrition Programme (NSNP) in the formal and informal urban areas of Pietermaritzburg, KwaZulu-Natal, South Africa

The Primary School Nutrition Programme (PSNP) was first implemented in 1994 and aimed to improve educational outcomes by alleviating short-term hunger and improving school attendance and punctuality. Responsibility for the programme was transferred from the Department of Health (DoH) to the Department of Education (DoE) in 2004 and the name was changed to the National School Nutrition Programme (NSNP) at this time. Previous evaluations of the PSNP / NSNP had reported problems associated with foodservice management and general management aspects of the programme. The study was a cross-sectional, observational investigation of foodservice management and general management practices in primary schools running the National School Nutrition Programme (NSNP) in Pietermaritzburg, KwaZulu-Natal. Twenty-three schools were visited to investigate practices at each school relating to compliance with DoE menus and prescribed service time of the meal, the food delivery system and utilities available. The food handling and hygiene training and practices and general management practices linked to the NSNP were investigated. Most of the schools (78%) were using the DoE menus but only half (52%) served the meal at or before 10h00, which is an ongoing problem. Receiving and storage procedures were adequate at most schools. Food quality does not appear to be a problem in the Pietermaritzburg schools. The lack of expiry dates on food packages remains a problem area and should be addressed. Most of the schools had a designated kitchen area but these facilities could be upgraded. Most schools cooked on gas and 35% of schools had no running water in the kitchen. Kitchens should, at least, have hot and cold running water and adequate working space. Most schools reported that they run out of gas during the month. The monthly DoE allocation for gas should be reviewed to ensure schools have enough gas for the whole month. The holding time for cooked food should be kept to a minimum to minimise the risk of food poisoning. Some schools had insufficient plates (26%) and cutlery (35%). Standardised portion sizes were served at 70% of schools and food handlers reported that learners usually finish all the food. Food handlers at 70% of the schools had received training in food safety and hygiene but 26% of these had only received training once. Training was found to be significantly associated with hand washing (p=0.002), clean uniforms (p=0.036) iv and sanitising practices (p=0.035). Training should be provided in short, ongoing sessions. General management aspects of the NSNP remain a problem. Policies and procedures should be drawn up and implemented to provide a minimum standard of operations at schools. Monitoring should be conducted on a regular basis. The NSNP is running reasonably well in Pietermaritzburg. Adhering to prescribed meal times and upgrading kitchen facilities could result in improvements. Food handler training could also be conducted more frequently. General management aspects need to be improved.

In order to analyze the impact of restaurant s ambience elements in the overall quality perceived by customers, this qualitative research aims to identify the elements of greater and lesser importance in the ambience for both managers and customers, through interviews in depth. In total, 10 restaurants with average ticket over R$ 51, a la carte system and located on Florianópolis, were part of the survey. Were interviewed all these restaurant s owners (10 of total) and 20 clients who frequent these kind of restaurants, at least, twice a month and spend on average R$51 per person. In addition, we collected data by personal observation in the restaurants of the research. Armed with the customers and managers view, it was possible to list the most important elements in the restaurant s environment in costumers opinion, confront to the understanding of managers and, finally, identify possible gaps in service quality. In addition, a theoretical model was proposed based on Bitner s Servicescape Model (1992), the Gaps Model of Service Quality of Parasuraman, Zeithaml and Berry (1985) and Santos Model (2006). This theoretical model constructed proposes the customization of it to various services sectors. Among the findings, it was found that the most important elements in the restaurant s servicescape, in the view of customers, are temperature, music, color and lighting. According to the customers' position about these and other elements, can be concluded that customer satisfaction with the environment involves, in particular, feelings of comfort and security. More than the beauty and architecture of the place, people value aspects which let them comfortable and safe, whether visual comfort, thermal comfort, noise comfort or food safety / O cenário de serviços de restaurantes pode ser visto como uma estratégia de marketing que envolve tanto aspectos de psicologia ambiental, como administração, nutrição e arquitetura. Com o objetivo de analisar o impacto dos elementos do cenário de serviços de restaurantes na qualidade geral percebida por clientes, esta pesquisa qualitativa propõe a identificação dos elementos de maior e menor importância no ambiente do restaurante tanto para gestores quanto para clientes, por meio de entrevistas em profundidade. Ao total, 10 restaurantes com ticket médio acima de R$ 51, de sistema a la carte e localizados em Florianópolis fizeram parte da amostra. Foram entrevistados os gestores destes restaurante e 20 clientes que frequentam, pelo menos, duas vezes por mês restaurantes desse tipo e que gastam, em média, o valor referido. Além disso, também foi realizada a coleta de dados por observação pessoal, na forma de Cliente Oculto, nos restaurantes investigados. De posse das visões de clientes e gestores, foi possível elencar os elementos mais importantes no ambiente do restaurante para os clientes, confrontar com o entendimento dos gestores e, por fim, identificar possíveis lacunas de qualidade do serviço. Além disso, um modelo teórico foi proposto com base no Modelo de Cenário de Serviços de Bitner (1992), no modelo de Lacunas de Qualidade em Serviços de Parasuraman, Zeithaml e Berry (1985) e no Modelo de Santos (2006). Esse modelo teórico construído propõe a customização para diversos setores de serviços. Entre os resultados encontrados, identificou-se que os elementos mais importantes do cenário de serviços de restaurantes, na visão dos clientes, são temperatura, música, cores e iluminação. De acordo com a posição dos clientes a respeito desses e de outros elementos, pode-se concluir que a satisfação dos clientes com o ambiente envolve, em especial, sensações de conforto e segurança. Mais que a beleza e arquitetura do local, as pessoas valorizam aspectos que lhes deixem confortáveis e seguras, seja conforto visual, térmico, sonoro ou alimentar
