From the survey of eating habits related to this type of food with selected consumers, relations of anxiety, confidence and incorporation (Claude Fischler, 1995) when someone allows a food to enter his or her body and to be a part of his or her physical and symbolic composition were analyzed in the context of contemporary food consumption. For this purpose, the methodology allied theoretical and empirical research. As part of the theoretical research, besides Fischler (1995), the work relies primarily on Pierre Bourdieu (1983, 2007), Michel de Certeau (1994), Luce Giard (1996), Raymond Williams (2000, 2001, 2003, 2011), Contreras Hernández and Mabel Grácia-Arnaiz (2005), Jean-Pierre Poulain (2004) and Carlos Alberto Dória (2007, 2008, 2009a, 2009b, 2012). The empirical research was qualitative and involved nine São Paulo residents aged 20 to 59 years old with a monthly family income larger than 15 minimum wages, range that consumes more processed foods according to Instituto Brasileiro de Geografia e Estatística (IBGE, 2010). Semi-structured in-depth interviews were conducted individually focusing on food life history in relation to eating nowadays. At the end of this research it was possible to understand more properly how people deal with one of their basic needs: food. When processed foods come into the equation, this relationship is permeated by anxiety, misinformation, confidence and conformity regarding what is put on their plates and in their bodies / O objetivo geral dessa dissertação é avaliar a relação entre os consumidores e os alimentos industrializados, tão presentes na vida urbana, em uma grande metrópole como São Paulo (SP). A partir do levantamento dos hábitos alimentares relacionados a esse tipo de alimento junto a alguns consumidores selecionados, foram analisadas as relações de ansiedade, confiança e incorporação (Claude Fischler, 1995) quando o indivíduo permite a entrada em seu corpo de um item que passará fazer a parte de sua composição física e simbólica no âmbito do consumo alimentar contemporâneo. Para tanto, a metodologia aliou pesquisa teórica e pesquisa empírica. Como parte da pesquisa bibliográfica, além de Fischler (1995), o trabalho conta principalmente com os autores Pierre Bourdieu (1983, 2007), Michel de Certeau (1994), Luce Giard (1996), Raymond Williams (2000, 2001, 2003, 2011), Jesús Contreras Hernández e Mabel Grácia-Arnaiz (2005), Jean-Pierre Poulain (2004) e Carlos Alberto Dória (2007, 2008, 2009a, 2009b, 2012). A pesquisa de campo foi qualitativa e envolveu nove moradores da capital paulista com idades entre 20 e 59 anos com renda mensal familiar superior a 15 salários mínimos, faixa que mais consome alimentos industrializados de acordo com o Instituto Brasileiro de Geografia e Estatística (IBGE, 2010). As entrevistas semi-estruturadas em profundidade foram realizadas de forma individual com foco na história de vida alimentar e na relação com o comer na contemporaneidade. Ao final dessa pesquisa foi possível entender com mais propriedade como as pessoas lidam com uma de suas necessidades básicas: a alimentação. A bactéria Listeria monocytogenes é reconhecida como um importante patógeno humano estando amplamente distribuída no ambiente e é responsável pela contaminação de alimentos crus e processados. O mecanismo de patogenicidade é determinado pela presença de genes no cromossomo da bactéria e entre eles estão os genes iap e hly que são essenciais para o mecanismo de invasão e atividade hemolítica do microorganismo, respectivamente. O obejtivo do presente estudo foi confirmar as cepas de L. monocytogenes usando a ténica de PCR para o gene hly e análise da variação nucleotídica do domínio central do gene iap, que é caracterizado pela presença de seqüências repetidas dos aminoácidos treonina e asparagina. Vinte e seis cepas de L. mnocytogenes, previamente isoladas de produtos lácteos e identificdas por métodos clássicos, se mostraram positivas para a PCR espécie-específico e então submetidas à determinação da seqüência nucleotídica. Os resultados mostraram variações na seqüência nucleotídica contendo substituições, inserções, deleções e um número de seqüências similares entre as cepas isoladas e a cepa controle EGD-e. Vinte e três cepas exibiram a mesma deleção que compreende 24 pares de bases dentro da seqüência de repetição e alterações similares na proteína traduzida. Apenas três cepas mostraram tamanhos diferentes de deleções e diferentes alterações na proteína. De acordo com estes resultados, a maioria das cepas apresentou uma característica molecular comum, diferentes da cepa padrão e este perfil predominante pode ser considerado como a característica das L. monocytogenes isoladas de produtos lácteos no Sul do Brasil. / The bacterium Listeria monocytogenes is recognized as an important human pathogen being omnipresent in the environment and is responsible for contamination in raw and processed foods. The mechanism of pathogenicity is established by presence of some genes on chromosome of bacteria between them, iap and hly genes that are essential to the invasion mechanism and hemolytic activity of microorganism, respectively. The aim of present study was confirm the strain L. monocytogenes using PCR to hly gene and analysis the nucleotide variability of central domain of iap gene characterized by the presence of similar sequences of threonine and asparagine amino acids. Twenty-six strains previously isolated from dairy products and classified by classic methods to L. monocytogenes were positive to specie-specific PCR and than submitted to nucleotide sequence determination. The results showed a sequence variation containing nucleotide substitutions, insertions, deletions and a number of repeated sequences among the isolates and control strain EGD-e. Twenty-three strains exhibited the same gap that includes a deletion of 24 base pairs inside of the repeated sequence and similar alterations in the translated protein. Just three strains showed different sizes of gaps and different protein alterations. According to these results, the majority strains displayed a common molecular characteristic different from the strain pattern and this predominant profile can be considerate as characteristic to L. monocytogenes isolated from dairy products in South Brazil.

An Empirical Analysis of U.S. Foreign Direct Investment and Exports of Processed Food Industries

This study examined the determinants of U.S. foreign direct investment (FDI) and exports of processed food. This study also examined the impact of U.S. FDI on U.S. exports on processed food. FDI and export models used for estimation in this study were based on the cost-minimizing production function. The analysis focused on ten countries for the period of 1989-2004. Four of them were Asian countries: India, Japan, South Korea, and Thailand. Six of them were European countries: Belgium, France, Germany, Italy, Spain, and the United Kingdom. The model was estimated using the two-way error component three-stage least squares (EC3SLS) method. Results from this study show that U.S. FDI and U.S. exports of processed food are complements. Major factors affecting U.S. FDI in the processing industry are GDP, GDP per capita, exchange rate, tariff rate, labor compensation cost, interest rate, and distance. Major factors affecting U.S. exports in the processed food industry are GDP, distance, and GDP from the agri-sector.

Tener un acertado pronóstico de ventas es un tema indispensable en empresas productoras y distribuidoras, ya que impacta positivamente en la toma de decisiones relacionadas a la demanda, gestión de inventario, abastecimiento, distribución y surtido de productos, así como otras áreas del negocio como finanzas, marketing, operaciones y servicio al cliente. Sin embargo, actualmente, en la mayoría de los casos, las predicciones de las ventas se basan en análisis individuales de los productos, mas no en técnicas de clustering, las cuales permitirían reducir el error y ser más acertados en sus pronósticos. Por ello, el presente trabajo propone evaluar y comparar el impacto de la precisión de los pronósticos de ventas del método tradicional, regresión lineal simple con series de tiempo, con los métodos de clustering k-means y Ward. El alcance de la investigación será a los cinco principales productos de una importante empresa productora y distribuidora de alimentos procesados en el Perú. Los indicadores que se utilizarán para identificar el método más preciso serán los errores medios absolutos (MAD) y errores cuadráticos medios (MSE) resultantes. / Having a successful sales forecast is an essential issue in manufacturing and distributing companies, since this impacts the decision-making related to demand, inventory management, supply, distribution and product assortment, as well as other areas of the business such as finance, marketing, operations and customer service. However, currently, in most cases, sales forecast are based on individual product analyzes, but not on clustering techniques, which would reduce error and be more accurate in their forecasts. Therefore, the present work proposes to evaluate and compare the impact of the precision of the sales forecasts between the traditional method, simple linear regression with time series, and the clustering methods such as k-means and Ward. The investigation scope will be the five main products of an important manufacturer and distributor of processed foods in Peru. Prenatal Diet Quality, Intake of Ultra-Processed Foods, and Gestational Weight Gain

The Institute of Medicine (IOM) and National Research Council (NRC) established guidelines for weight gain during pregnancy to maximize positive health outcomes for mothers and their offspring. However, in the US, about half of all pregnant women exceed these recommendations. Excessive weight gain during pregnancy is associated with various negative outcome for mothers and their children. Research in recent years has begun to explore the relationship between both diet quality and ultra-processed food (UPF) intake during pregnancy with gestational weight gain (GWG). However, research is scarce, especially pertaining to UPF intake and GWG. Additionally, there is no research which explores these relationships among Latina women living within the US. The purpose of this study is to explore the relationships between prenatal diet quality, measured with the Healthy Eating Index-2020 (HEI), and intake of UPF, based on the Nova classification system, with the adequacy of GWG among a predominantly Latina sample of adult pregnant women living within the US. Additionally, the association between social determinants of health with diet quality and with UPF intake were also explored. The study is a secondary-data analysis of data from a longitudinal study. The sample analyzed includes 118 pregnant women between the ages of 18-45 years old (mean = 29.9, SD = 6.1). Mean pre-pregnancy body mass index (pBMI) for the total sample was 25.8 kg/m2 (overweight). 67% of the sample identified as Hispanic/Latina. Overall, 22% of the sample were classified with inadequate GWG; 17% with adequate GWG; and 61% with excessive GWG. The mean total HEI score for the sample was 54.1 out of 100, where higher scores reflect higher diet quality and adherence to the Dietary Guidelines for Americans. There was a statistically significant difference across GWG groups (inadequate/adequate/excessive) in mean total HEI scores (p < .05). The adequate GWG group had the highest total HEI scores and the excessive GWG group had the lowest total HEI scores. Variables that were found to be univariately associated with excessive gestational weight gain included: average total HEI score, pBMI, ethnicity; education; and income (p < .05). A 1-point increase in mean total HEI scores was associated with a 5% lower chance of excessive GWG (p = .02). However, after adjustment for covariates (maternal age; pBMI; income; education; race and ethnicity), the association between average total HEI score and excessive gestational weight gain was attenuated and no longer statistically significant. There was a statistically significant difference across GWG groups (inadequate, adequate, or excessive) in their scores of two HEI components: Greens and Beans (p < .01); and Seafood and Plant Proteins (p < .01). The adequate GWG group had the highest scores and the excessive GWG group had the lowest scores in these HEI components. In simple logistic regressions of excessive GWG versus adequate GWG on HEI components, the Greens and Beans scores and the Seafood and Plant Protein scores were significantly associated with excessive GWG. After adjustment, the Greens and Beans scores and Seafood and Plant Proteins scores indicated strong estimated negative associations with excessive GWG, OR = 0.61, 〖 χ〗_1^2= 8.07, p < 0.01 and OR = 0.60, 〖 χ〗_1^2= 7.84, p < 0.01, respectively. A higher score on these components was associated with a lower risk of excessive GWG. The mean percentage of energy intake from ultra-processed foods (PEI-UPF) was 51.2%. There was no statistically significant difference in the PEI-UPF across GWG groups (inadequate, adequate, or excessive) and the PEI-UPF was not associated with odds of excessive GWG. However, the adequate GWG group had the lowest intake of PEI-UPF (49.2%) and the excessive GWG group had the highest intake of PEI-UPF (52.1%). Social determinants of health were not associated with the mean PEI-UPF, but results suggested a positive relationship between social support and total HEI scores (p = .08). Deeper analysis of the social support measure revealed a statistically significant relationship between the appraisal subscale of social support and HEI scores, Β = 0.13, F(1, 102) = 7.11 (p = 0.009). Overall, dietary intake during pregnancy may influence the adequacy of gestational weight gain. Achieving recommended intake of greens and beans, as well as seafood and plant proteins, may play a particularly important role in reducing the risk for excessive gestational weight gain. In addition, greater levels of social support, particularly access to another person who can offer advice and guidance with personal problems, may enhance diet quality during pregnancy.

Développement et validation initiale d’un questionnaire pour mesurer la consommation d’aliments ultra-transformés des adultes canadiens : une étude pilote auprès de la communauté de l’Université de Montréal

Plusieurs études à ce jour démontrent que la consommation d’aliments ultra-transformés (AUT) serait associée à une alimentation de faible qualité et à une augmentation du risque de maladies chroniques non-transmissibles (MCNT) et d’obésité. Actuellement, pour les adultes canadiens, il n’existe encore aucun questionnaire permettant de discriminer rapidement entre différents profils de consommateurs d’AUT. Ce mémoire présente donc un projet pilote de développement et de validation initiale d’un Outil pour mesurer la consommation de Produits Ultra-Transformés (le OUTPUT). Pour ce faire, les catégories d’AUT contribuant à 0,5% et plus de l’apport énergétique total des adultes canadiens ont été identifiées d’après les données de consommation nationale (ESCC) de 2015. Ces catégories ont été représentées par des photos d’AUT vendus en épicerie et en restauration rapide. Celles-ci constituaient les deux questionnaires alimentaires simplifiés développés (rappel de 24 heures et questionnaire de fréquence). La validité apparente et de contenu du OUTPUT a été évaluée par un comité d’experts, avec la méthode Delphi. Deux tours d’enquête ont été nécessaires pour observer un consensus (fixé à 80% et plus) quant aux dimensions évaluées. La validité apparente de l’outil a ensuite été évaluée par 11 membres de la communauté de l’UdeM. Les données recueillies à travers cette étude pilote ont permis d’émettre des recommandations pour l’étude future de développement et de validation de l’outil. Une fois validé, celui-ci permettra aux nutritionnistes, aux chercheurs en épidémiologie et aux décideurs politiques une meilleure identification, gestion et prévention des MCNT et d’obésité, en lien avec la consommation d’AUT. / Several studies to date have shown that ultra-processed food consumption (UPF) is associated with low diet quality and increased risk of non-communicable diseases (NCDs) and obesity. Currently, there is no rapid screener to estimate UPF consumption based on Canadian dietary patterns. This research presents a pilot study that addresses the early stages of the development and validation of a screener to this purpose (the OUTPUT). Ultra-processed food categories contributing to 0.5% or more of the total energy intake for Canadian adults (18 years and older) were identified based on 2015 national consumption data (CCHS). Thus, two simplified dietary screeners were developed (a 24-hour recall and a food frequency questionnaire). The face and content validity of the OUTPUT was evaluated by an expert advisory committee, through the Delphi method. Two rounds were required to observe an agreement (set at 80% or more) regarding the different metrics that were assessed. The face validity of the screener was then evaluated by 11 participants from the UdeM community. The data collected through this pilot study made it possible to provide recommendations for the future study in which the development and validation of the tool will take place. Once validated, this tool will enable nutritionists, epidemiology researchers, and policymakers to better identify, manage and prevent NCDs and obesity.

[pt] O consumo de alimentos ultraprocessados, ao lado do consumo do tabaco e do álcool, constitui uma das principais causas de doenças crônicas não transmissíveis – principal causa de mortes em adultos no Brasil –, sendo a publicidade de tais produtos considerada pela Organização Mundial da Saúde um dos fatores comerciais determinantes deste problema de saúde pública. A situação demanda a análise quanto a se o controle jurídico da publicidade no país tutela, de forma suficiente, os direitos fundamentais à saúde e à proteção do consumidor impactados pelas estratégias de marketing da indústria alimentícia. Neste sentido, o trabalho se propõe a realizar esta análise, com o intuito de compreender o regime jurídico de controle da publicidade no Brasil, por meio das normas do Código de Defesa do Consumidor e da autorregulamentação publicitária, assim como a natureza da proteção jurídica da publicidade no Direito brasileiro, a partir dos conceitos de liberdade de expressão comercial e livre iniciativa, a fim de identificar a legitimidade de restrições a estes direitos, com foco em estudos doutrinários e pesquisas em Tribunais brasileiros, sobretudo no âmbito do Superior Tribunal de Justiça e do Supremo Tribunal Federal; realizando, por fim, algumas proposições críticas, com o objetivo de contornar os problemas verificados – em especial a necessidade de regulação específica para estabelecer medidas restritivas à publicidade destes alimentos. / [en] The consumption of ultra-processed foods, together with the consumption of tobacco and alcohol, constitutes one of the main causes of non-communicable diseases – the principal cause of deaths in adults in Brazil –, being the advertisement of such products deemed by the World Health Organization as one of the commercial determinants of such public health problem. The situation demands the analysis of the sufficiency of the legal regulation of commercial speech in the country, with a view to verify if it duly protects the fundamental rights to health and consumer protection once impacted by marketing strategies adopted by the food industry. Thus, this work proposes to carry on such analysis, with the intent to understand the legal regime of commercial speech regulation in the country, through the norms of the Consumer Protection Statute and the self-regulation code, as well as the nature of the legal protection of commercial speech under Brazilian law, related to the notions of rights to freedom of commercial speech and free enterprise, with the purpose to identify the legitimacy of restrictions to such rights. The work will focus in academic studies as well as research on Brazilian courts decisions, specially under the Superior Court of Justice and the Constitutional Supreme Court, finally, from an analytical perspective, aiming to identify existing problems – mainly, the need to implement specific regulation establishing restrictive measures to advertisements of ultra-processed foods.

Introdução - A obesidade infantil está pautada como assunto de saúde pública e exige a análise, implementação e avaliação de novas intervenções. O marketing é apontado como um dos fatores que interferem no aumento do índice de sobrepeso e de obesidade da população. As estratégias de comunicação publicitária se utilizam de processos cognitivos para determinar, através de elementos emocionais do receptor, a escolha e o consumo de alimentos não saudáveis, já que os publicitários respondem à demanda das empresas que buscam lucrar com seus produtos. Já se afirma que a regulamentação legal do marketing dos alimentos infantis não saudáveis deve ser adotada como instrumento de política pública na prevenção da obesidade. Assim, justifica-se a investigação de quais seriam as formas mais apropriadas para regular esse tipo de marketing no Brasil, de forma a garantir o direito à saúde e à alimentação adequada e saudável. Objetivo - Analisar o papel do marketing como um dos determinantes da obesidade infantil, buscando apontar, no campo jurídico, estratégias para a sua regulamentação no Brasil. Métodos - Revisão de literatura, análise de textos legislativos e de programas adotados para controle da obesidade infantil, além de entrevistas com representantes de entidades e profissionais diretamente ligados à implementação de políticas públicas, nacionais e internacionais, de controle da nutrição e saúde infantil, bem como de proteção dos direitos do consumidor infanto-juvenil. A interpretação dos dados levantados deu-se através do método científico dedutivo. Resultados - O crescente índice de obesidade no Brasil está demonstrado através de pesquisa nacional. A presença de alimentos no mercado com excesso de sal, gordura e açúcar precisa ser controlada. As teorias de comunicação explicam a influência do marketing na decisão emocional do consumidor. Os direitos à saúde e à alimentação adequada e saudável estão previstos na Constituição Federal. Conclusão - A regulamentação legal do marketing de alimentos não saudáveis é juridicamente possível e suas diretrizes devem focar os alimentos processados e ultraprocessados, além dos fatores que facilitam a persuasão da criança, impedindo o uso de elementos emocionais. / Introduction - Childhood obesity is considered a public health issue and requires the analysis, implementation and evaluation of new interventions. Marketing is considered as one of the factors that play a role in the increase of overweight and obesity rates in the population. Advertisement strategies use cognitive processes to determine, by means of emotional elements of the receptor, the choice and consumption of unhealthy foods, since advertisement professionals respond to the demand of companies willing to make a profit by selling their their products. The regulation of the marketing of unhealthy foods for children must be adopted as a public policy instrument for the prevention of obesity. Thus, we should investigate what are the most appropriate ways to regulate this kind of marketing in Brazil to guarantee the right to health and to adequate and healthy foods. Objective - Analyze the role of marketing as one of the determinants of childhood obesity, and try to identify legal strategies for its regulation in Brazil. Methods - Literature review, analysis of legal texts and programs implemented for the control of childhood obesity and interviews with representatives of institutions and professionals directly related to the implementation of public national and international policies for the control of childhood nutrition and health, as well as the protection of children and youth consumer rights. Deductive scientific method was used to interpret data. Results - Increasing obesity rates have been demonstrated by national surveys. The presence of foods with excessive salt, fat and sugar in market must be controlled. Communication theories explain the influence of marketing in the emotional decision of consumers. The right to health and to adequate and healthy foods is determined by the Federal Constitution. Conclusion - It is possible to regulate the marketing of unhealthy foods according to the law. The guidelines for regulation must focus on processed and ultra processed foods and the factors that facilitate persuasion of children, by prohibiting the use of emotional elements.
