Yrkeskulturen  i hotell och restaurangbranschen.En fara för lärlingar och elever? : / The culture of hotel and restaurant work.Dangerous for apprentices and students?

Wahlqvist, Thomas January 2009 (has links)
English abstract     The culture of hotel and restaurant work. Dangerous for apprentices and students? The study is based on a survey targeting 50 teachers at chef schools with good geographic distribution of 9 schools. Teachers answer questions on bullying and sexual harassment in the hotel and restaurant sector, and students practice shock in the meeting with the industry. Students face a hard and tough environment where it is expected that it will suffer a great deal of harassment and degrading treatment as part of a tradition. There seems to be a general but erroneous belief that the professional climate has improved. The study shows that this is not the case. The respondents replied that bullying is common in the industry, and 92% of vocational teachers indicated that students are affected by a practice shock. The study shows that the industry climate has to be tough, but it is stated at the same time be too tough. Schools management lacks understanding and insight into the unique professional culture that prevails. Keywords: Culture, hotel and restaurant sector, bullying, harassment, students, apprentices, traineeships shock, outsourced public school / Sammanfattning   Yrkeskulturen  i hotell och restaurangbranschen.

This investigation has a socio-historical character and its general aim is to build up, analyse and insert oral, visual and written sources of knowledge in the field of the History of Education, through the memories of the pioneer students (1910 - 1942 ), the first school configuration of the current Federal Technological Education Centre of Minas Gerais, the CEFET-MG. The first specific aim is to apprehend the education that pioneer students received at the School of Artificer Apprentices of Minas Gerais, for their subsequent professional trajectory. The second specific aim is to apprehend the relationship between the school of that period and the city, which means, the place of the school in the space of the city and the discovery of the city in the trajectory to school. The third specific aim is to understand how the school built its own culture while being historically constituted. Thus, we emphasize the school culture as a category of analysis, from its basic elements - the use of time, locations and materialities; scholar knowledge and methods of teaching and discipline; the scholar subjects, sensibilities and values. Therefore, the methodological approach chosen for the development of this study, with a qualitative methodology, is the Oral History, method of research that focuses on not written testimony, in other words, not hegemonic sources. But it also considers the dialogue with a wide range of sources that can be written, visual and official. Thus, this exercise of reflection and construction of one of the possible versions for the history of the School of Artificers Apprentices of Minas Gerais was built mainly through the voices of their pioneer students. We tries to build a privileged space with sources and records of a knowledge based on experiences lived and brought to light by social subjects of the popular classes / Doutorado / Educação, Sociedade, Politica e Cultura / Doutor em Educação

Nilo Peçanha e o sistema federal de Escolas de Aprendizes Artífices (1909 a 1930) / Nilo Peçanha and the federal system of Apprentices Craftsmen Schools (1909 to 1930)

Marcelo Augusto Monteiro de Carvalho 26 May 2017 (has links)
The objective of this work is the discussion about the political dynamics and some of the economic factors judged relevant and that together contributed in the decision of the Government of the Union to create a federal system of professional schools, the Apprentices Craftsmen Schools (EAAs), during the short Presidential term (1909/1910) of the leader from Nilo Procópio Peçanha, under the command of the Ministry of Agriculture. The said school instituted by this president was a concrete part of a political project alternative to that of the predominant liberalism of the São Paulo-Minas axis during the First Brazilian Republic. The EAAs was initiated by a representative leadership of a fraction of the Brazilian oligarchy whose political-administrative project, besides having emerged in a secondary economic pole of the country, also represented the political group\'s desire to make the Union\'s role more protagonist in the face of economic and some of the country\'s social problems, despite sharing the same values and making use of the same strategies of the oligarchic Republic and its clientelistic culture. In a sense, they were not adept at unrestricted federalism and, feeling prejudiced by the predominance of the political and economic interests of the São Paulo oligarchy and its associates at the time, proposed a more interventionist federal state, including in the field of Education. States. We will review the initial course of the Apprentices Craftsmen Schools until the 1930s, including the completion of this federal education system with the inclusion of the Wenceslau Braz Normal School of Arts and Crafts. We will also highlight the institutional transformations that the EAAs have experienced over the years, such as the \"Remodeling Service\" led by the engineer João Lüderitz, who proposed to modernize the institution. We will analyze some of its political, administrative and economic difficulties in the context of the Brazilian society of the First Republic, besides discussing certain characteristics as an institution that proposes professional education for the popular classes and, finally, if there was any legacy for Brazilian education.

On the Road: Spatial Practices in The Lazy Tour of Two Idle Apprentices

Tu, Ku Yun Unknown Date (has links)
The Lazy Tour of Two Idle Apprentices is a travelogue worked in collaboration between Charles Dickens and Wilkie Collins. Besides noting down what they observe and encounter during the trip, Dickens and Collins also enclose two gothic tales which is written respectively by them. Nevertheless, when most critics mention The Lazy Tour, they limit their concerns to simply the two interpolated tales, which violates the integrity of The Lazy Tour by dissecting it into disconnected pieces. This thesis proposes to apply Henri Lefebvre’s conceptual triad to analyze the recurring theme, idleness, which is interpreted by different subjects. By presenting the variations of the concept of idleness, this thesis attempts to see The Lazy Tour as an organic whole. Applying the idea of representation of space, Chapter Two explains how the seemingly inoperative landscapes are programmed and designed, which results in the demise of the deity of Nature. With the support of the concept of spatial practice, Chapter Three proposes to demonstrate how the spatial designs of the lunatic asylum, railway station, and the festive occasion, the race-week, respectively alienate the spatial inhabitants. The idleness manifested by these spatial inhabitants is the syndrome of their alienation. Chapter Four analyzes the constructive aspect of the idleness with the assistance of Lefebvre’s idea of space of representation. In terms of Thomas Idle, one of the protagonists, idleness serves as a resistant measure to develop his own narrative. As far as the two interpolated tales are concerned, idleness can be compared to a way to resist the incorporation of the narrative framework of The Lazy Tour, and in the meanwhile discloses the moral corruption brought by Capitalism.

Shipped out? : pauper apprentices of port towns during the Industrial Revolution, 1750-1870

Withall, Caroline Louise January 2014 (has links)
The thesis challenges popular generalisations about the trades, occupations and locations to which pauper apprentices were consigned, shining the spotlight away from the familiar narrative of factory children, onto the fate of their destitute peers in port towns. A comparative investigation of Liverpool, Bristol and Southampton, it adopts a deliberately broad definition of the term pauper apprenticeship in its multi-sourced approach, using 1710 Poor Law and charity apprenticeship records and previously unexamined New Poor Law and charity correspondence to provide new insight into the chronology, mechanisms and experience of pauper apprenticeship. Not all port children were shipped out. Significantly more children than has hitherto been acknowledged were placed in traditional occupations, the dominant form of apprenticeship for port children. The survival and entrenchment of this type of work is striking, as are the locations in which children were placed; nearly half of those bound to traditional trades remained within the vicinity of the port. The thesis also sheds new light on a largely overlooked aspect of pauper apprenticeship, the binding of boys into the Merchant service. Furthermore, the availability of sea apprenticeships as well as traditional placements caused some children to be shipped in to the ports for apprenticeships. Of those who were still shipped out to the factories, the evidence shows that far from dying out, as previously thought, the practice of batch apprenticeship persisted under the New Poor Law. The most significant finding of the thesis is the survival and endurance of pauper apprenticeship as an institution involving both Poor Law and charity children. Poor children were still being apprenticed late into the third quarter of the nineteenth century. Pauper apprenticeship is shown to have been a robust, resilient and resurgent institution. The evidence from port towns offers significant revision to the existing historiography of pauper apprenticeship.

Multilevel Approaches to Dealing with the Challenges of Diversity

Ehret, Agnes 12 May 2022 (has links)
In recent years, the role of diversity has become increasingly important and present – both in society and at the workplace. Diversity, that is any attribute that people might use do distinguish between self and others, is a topic that is visible in several areas and that has challenging implications, both for organizations and for society as a whole. It is a multilevel construct that needs a holistic approach - but so far, most of the research on diversity is limited to the team level, without reflecting on implications for other levels and interactions with other levels of diversity. The first objective of this dissertation is to examine whether approaches of organizational diversity research, namely faultlines, are applicable to the societal level and whether they are useful on this level to explain phenomena of societal relevance. Second, we investigate whether diversity trainings on the team-level can help meet these challenges by teaching useful competencies. And third, we explore whether characteristics on the individual level, namely intrapersonal diversity, enable people to overcome the challenges of diversity which will ultimately also contribute to meet the challenges of diversity on the societal level. On the basis of the combination of findings on diversity at three different levels and the introduced multi-level model, new hypotheses at different levels of analyses can be formulated and subsequently tested.:1.
