A partir de esto, se desarrollará el proyecto determinando puntos básicos como la demanda y el mercado objetivo, los costos asociados a todo el proceso de implementación, incluyendo el proceso productivo, servicios de terceros, entre otros, así como también se deberá evaluar la disponibilidad de materias, primas, tecnología y personal calificado para el desarrollo del mismo. Así, mediante el uso adecuado de las herramientas de ingeniería se demostrará la conveniencia de la realización de este proyecto. / The present project seeks to demonstrate the viability of installing a producing plant of ice cream at a technological, economic and social level, because the manufacturing process is really simple and all the necessary machines can be found easily at good prices. This exposes the develop of the Project, determining basic points such as the demand and target market, the costs associated with the entire implementation process, including the productive process and third-party services among others. It also covers the evaluation of raw material and qualified workforce and technology. Desenvolvimento e avaliação de sorbets probióticos e simbióticos elaborados com polpa de Juçara (Euterpe edulis) / Development and evaluation of probiotic and synbiotic sorbets produced with jussara pulp (Euterpe edulis)Júlia Fernanda Urbano Marinho 11 March 2016 (has links)
O objetivo deste trabalho foi desenvolver e avaliar diferentes formulações de sorbets probióticos e simbióticos a base de polpa de juçara (Euterpe edulis), de modo a combinar os efeitos benéficos à saúde dos compostos fenólicos deste fruto com os benefícios dos probióticos e prebióticos. Para isso, foram utilizados os microrganismos L. acidophilus e L. paracasei e a fibra polidextrose, além da elaboração de uma amostra controle sem tais elementos para efeito de comparação. Primeiramente, a polpa de juçara pasteurizada utilizada na produção dos sorbets foi avaliada de acordo com suas características físico-químicas e seus compostos bioativos, tendo apresentado resultados adequados para o emprego na matriz alimentícia em questão. Em seguida, os sorbets foram caracterizados através de diversos parâmetros. Assim, a análise centesimal mostrou sorbets com alto índice de carboidratos e baixo valor calórico, enquanto os teores de sólidos solúveis apresentaram-se coerentes em todas as formulações analisadas. Os valores de overrun e densidade aparente relevaram que a incorporação de ar dos sorbets não foi tão elevada quanto de um sorvete lácteo, embora as amostras adicionadas de polidextrose - capaz de mimetizar as propriedades de corpo e espessamento da gordura - tenham obtido resultados mais próximos aos gelados tradicionais. Foram ainda mensurados os efeitos do armazenamento dos produtos a -18 °C durante 120 dias, através de avaliações de pH, coloração instrumental, estabilidade dos compostos fenólicos e antocianinas e viabilidade dos probióticos. O pH das amostras manteve-se constante durante todo o experimento, com valores entre 4,4 e 4,8, enquanto os parâmetros de coloração caracterizaram as amostras como vermelhas e apontaram tendência à perda de luminosidade. Já os polifenóis e antocianinas apresentaram teores elevados, decorrentes da adição da polpa de juçara, sem a ocorrência de degradação destes compostos ao longo da estocagem das amostras sob congelamento. As populações de ambos os microrganismos adicionados apresentaram-se estáveis em cerca de 8 log UFC/ g durante todo o período de armazenamento, o que corresponde a um resultado bastante satisfatório e superior ao recomendado pela legislação brasileira. Por outro lado, a sobrevivência in vitro de tais probióticos quando submetidos aos fluidos gastrointestinais não apresentou resultados adequados para a garantia da funcionalidade destes produtos, com queda de viabilidade superior a 4 ciclos logarítmicos. A aceitabilidade sensorial e intenção de compra apresentaram resultados positivos para todas as formulações, com maior aceitação das amostras probióticas em relação ao controle e menor interesse pelas amostras com adição de prebiótico. Tal resultado demonstra que a incorporação destas bactérias em sorbets de juçara é capaz de melhorar a qualidade do produto, enquanto a adição de polidextrose pode diminuir sua aceitabilidade nas condições empregadas. Em síntese, os sorbets elaborados apresentaram resultados satisfatórios, demonstrando a viabilidade na produção deste tipo de alimento funcional adicionado de probióticos, prebiótico e rico em polifenóis, sendo a combinação de tais elementos capaz de potencializar os efeitos benéficos destes compostos e trazer vantagens fundamentais à microbiota intestinal e à saúde de quem os consome. / This work aimed to develop and evaluate different formulations of probiotic and synbiotic jussara (Euterpe edulis) sorbets in order to combine the beneficial effects of the fenolic compounds of this fruit with the benefits of probiotics and prebiotics. For this, the microorganisms L. acidophilus and L. paracasei and the fiber polydextrose were used and a control sample without such elements was developed for comparison. First, the pasteurized jussara pulp used in the production of sorbets was evaluated according to its physicochemical characteristics and its bioactive compounds and the results obtained showed that it was appropriate for employment in the food matrix. Then, sorbets were characterized by various parameters. The centesimal composition showed high levels of carbohydrates and low caloric value, while the soluble solids content were consistent in all analyzed formulations. The overrun and apparent density values showed that the air incorporated into sorbets was not as high as a dairy ice cream, although the samples with polydextrose - able to mimic the body and thickening properties of fat - have obtained results closer to traditional ice cream. The effects of storage of the products at -18 ° C for 120 days were also measured by pH assessments, instrumental color, stability of phenolic compounds and anthocyanins and viability of probiotics. The pH of the samples remained constant throughout the experiment, with values between 4.4 and 4.8, while the color parameters characterized the samples as red and showed a tendency to lose brightness. The levels of polyphenols and anthocyanins were elevated as a result of the addition of jussara pulp, without degradation of these compounds during storage of samples under freezing. The populations of both added microorganisms were stable at about 8 log CFU/ g throughout the storage period, which is a very satisfactory result and better than the recommended by Brazilian legislation. On the other hand, in vitro survival of the probiotics through simulated gastrointestinal fluids did not present appropriate results to guarantee the functionality of these products, with decrease of viability higher than 4 log cycles. The sensory acceptability and purchase intent showed positive results for all formulations, with greater acceptance of probiotic samples compared to control and less interest in the samples with prebiotic. This result demonstrates that the incorporation of these bacteria in jussara sorbets is able to improve the quality of the product while the addition of polydextrose may decrease the acceptability in conditions employed. In short, sorbets showed satisfactory results, demonstrating the viability of production of functional food with addition of probiotics, prebiotics and rich in polyphenols. The combination of these elements can enhance the beneficial effects and bring fundamental benefits to intestinal microbiota and to health of those who consume them.

Newsvendor problems in Operations Research predict the optimal inventory levels necessary to meet uncertain demands. This thesis examines an extended version of a single period multi-product newsvendor problem known as the ice cream vendor problem. In the ice cream vendor problem, there are two products – ice cream and hot chocolate – which may be substituted for one another if the outside temperature is no too hot or not too cold. In particular, the ice cream vendor problem is a data-driven extension of the conventional newsvendor problem which does not require the assumption of a specific demand distribution, thus allowing the demand for ice cream and hot chocolate respectively to be temperature dependent. Using Discrete Event Simulation, we first simulate a real-world scenario of an ice cream vendor problem via a demand whose expected value is a function of temperature. A sample average approximation technique is subsequently used to transform the stochastic newsvendor program into a feature-driven linear program based on the exogenous factors of probability of rainfall and temperature. The resulting problem is a multi-product newsvendor linear program with L1-regularization. The solution to this problem yields the expected cost to the ice cream vendor as well as the optimal order quantities for ice cream and hot chocolate, respectively.

The aim of this diploma thesis is to propose a recipe of natural BB-creams with the desired properties (different color shades, that will be suitable for Central European skin type; flow properties, texture, spreadability, stability). The experimental part of the thesis is mainly focused on the development of BB-cream formulas. Several different formulations with diverse dispersion medium (water and aloe vera/water in a suitable ratio) have been proposed, and three different shades of BB-cream have been developed. The flow properties (viscosity) of the samples were measured, accelerated stability tests were realized by using the dispersion analyzer LUMISizer, the obtained results were correlated with the results of stress temperature tests. The results of the rheological analysis showed that the flow properties of the creams are comparable with commercially available preparations. Stress temperature tests have shown that prepared samples remain stable over 4 cycles (12 weeks) of changing storage temperature, accelerated destabilization tests performed by LUMISizer confirmed their stability. The colour coordinates of the developed shades were measured using a spectrophotometer and compared with commercial analogues. Also the questionnaire for sensory evaluation of preparations for more comprehensive analysis of prepared BB-creams was developed. The 25 female respondents of different ages participated in servey. The results of sensory evaluation showed that textural properties of developed creams are satisfactory for potential consumers.

Improving energy efficiency in food refrigeration and freezing plays an important role in meeting the energy challenges of today. Freezing and hardening are important but energy-intensive steps in ice cream manufacturing. This thesis presents a series of models to address these issues. The first step taken to model energy consumption was to create a temperature-dependent ice cream material using empirical properties available in the literature. The homogeneous ice cream material is validated using finite element analysis (FEA) and previously published experimental findings. The validated model is then used to study the efficiency of various package configurations in the ice cream hardening process. The next step taken is to consider product quality by modeling the ice crystal size distribution (CSD) throughout the hardening process. This is achieved through the use of population balance equations (PBE). Crystal size and corresponding hardened ice cream coarseness can be predicted through the PBE model presented in this thesis. The crystallization results are validated through previous experimental study. After the hardening studies are presented, the topic of continuous freezing is discussed. The actual ice cream continuous freezing process is inherently complex, and therefore simplifying assumptions are utilized in this work. Simulation is achieved through combined computational fluid dynamics (CFD) and PBE modeling of a sucrose solution. By assuming constant fluid viscosity, a two-dimensional cross section is able to be employed by the model. The results from this thesis provide a practical advancement of previous ice cream simulations and lay the groundwork for future studies.

Probióticos são microrganismos vivos que, quando administrados em quantidades adequadas, conferem benefícios à saúde do hospedeiro. Prebióticos são carboidratos não digeríveis que afetam beneficamente o hospedeiro, por estimularem seletivamente a proliferação e/ou atividade de populações de bactérias desejáveis no cólon. Um produto referido como simbiótico é aquele no qual um probiótico e um prebiótico estão combinados. O presente trabalho visou estudar a viabilidade da obtenção de queijo fresco cremoso simbiótico processado com a adição de uma cultura probiótica de Lactobacillus paracasei subsp. paracasei (LBC 82) e do ingrediente prebiótico inulina. Três tratamentos de queijo fresco cremoso foram produzidos (5 repetições de cada um): T1 (probiótico) - com Streptococcus thermophilus + Lactobacillus paracasei; T2 (simbiótico) - com St. thermophilus + L. paracasei + inulina; T3 (controle) - somente com St. thermophilus. As contagens de L. paracasei, St. thermophilus, bactérias láticas, coliformes, Escherichia coli, Staphylococcus spp., Staphylococcus DNAse positivos, bolores e leveduras e as análises de pH, acidez titulável, umidade, atividade de água e perfil de textura (dupla compressão, em analisador de textura TA-XT2), além da determinação do teor de frutanos dos queijos T2, foram realizadas até 21 dias de armazenamento dos produtos a 4ºC. Os queijos também foram comparados através de avaliação sensorial após 7 dias de armazenamento, empregando-se o teste de ordenação-preferência. Não foram detectadas diferenças significativas entre os queijos T1, T2 e T3 para acidez titulável, umidade e atividade de água (p>0,05). As contagens de St. thermophilus permaneceram constantes, próximas a 9,5 log ufc/g, em T1, T2 e T3. A viabilidade de L. paracasei foi suficiente para caracterizar os queijos T1 e T2 como potencialmente probióticos, apresentando populações sempre acima de 7 log ufc/g. Os níveis de contaminação estiveram sempre abaixo dos limites exigidos pela legislação brasileira (exceto para Staphylococcus DNAse positivos em uma amostra dos queijos T3 ao 1o dia) e E. coli não foi detectado. A presença de inulina nos queijos T2 não alterou significativamente o perfil de textura (p>0,05). Não houve variação significativa no teor de frutanos dos queijos T2 durante o armazenamento (p>0,05), permanecendo sempre superior a 7g / 100g. Os queijos T1 apresentaram a menor preferência na análise sensorial e diferiram significativamente de T2 e T3 (p<0,05), devido ao sabor ácido, de acordo com os provadores. Por outro lado, T2 foi o preferido, porém, não diferindo significativamente de T3 (p>0,05). A adição de inulina ao queijo fresco cremoso produzido com a adição de uma cepa potencialmente probiótica de Lactobacillus paracasei resultou em um produto com características adequadas e com propriedades funcionais agregadas. / Probiotics are live microorganisms that, when administered in adequate amounts, confer a health benefit on the host. Prebiotics are nondigestible carbohydrates that beneficially affect the host by selectively stimulating the growth and/or activity of a limited number of bacteria present in the colon. A product referred as synbiotic is one in which probiotics and prebiotics are combined. The present research aimed to study the viability of obtaining a synbiotic fresh cream cheese produced with the addition of a probiotic culture of Lactobacillus paracasei subsp. paracasei (LBC 82) and of the prebiotic ingredient inulin. Three fresh cream cheese-making trials were produced (5 repetitions of each one): T1 (probiotic) ¡V with Streptococcus thermophilus + Lactobacillus paracasei; T2 (synbiotic) ¡V with St. thermophilus + L. paracasei + inulin; T3 (control) ¡V only with St. thermophilus. Counts of L. paracasei, St. thermophilus, lactic acid bacteria, coliforms, Escherichia coli, Staphylococcus spp., DNAse-positive Staphylococcus, yeasts and moulds, and analysis of pH, titratable acidity, moisture content, water activity and texture profile (two-bite compression tests, employing a TA-XT2 texture analyser), besides determination of fructan content in cheeses T2, proceeded up to 21 days of storage of the products at 4b1oC. Cheeses were also compared through sensory evaluation after 7 days of storage, using preference-ranking test. No significant differences were detected between cheeses T1, T2 and T3 for titratable acidity, moisture content and water activity (P>0.05). Counts of St. thermophilus remained constant, around 9.5 log cfu/g, in cheeses T1, T2 and T3. Viability of L. paracasei was enough to characterize cheeses T1 and T2 as potentially probiotic, and counts were always above 7 log cfu/g. Contamination levels were always bellow the recommended by Brazilian regulatory standards (except for a DNAse positive Staphylococcus sample of cheeses T3 at day 1), and E. coli was never detected. L. paracasei inhibited the growth of coliforms, Staphylococcus spp. and DNAse-positive Staphylococcus significantly (P<0.05) in cheeses T1 and T2. The presence of inulin in cheeses T2 did not alter the texture profile significantly (P>0.05). No significant changes in the fructan content during storage were observed (P>0.05), and it remained always above 7 g / 100 g. Cheeses T1 were the least preferred in the sensory evaluation and differed significantly from T2 and T3 (P<0.05), due to acidic taste, according to panelists. On the other hand, T2 was the most preferred one, though not significantly different from T3 (P>0.05). The addition of the prebiotic ingredient inulin to fresh cream cheese produced with a potentially probiotic Lactobacillus paracasei strain resulted in a product with appropriate features and with aggregated functional properties.

Os alimentos funcionais suplementados com microrganismos probióticos e ingredientes prebióticos se destacam por seus impactos positivos sobre a saúde do consumidor, representando uma categoria em ascensão: os produtos alimentícios simbióticos. O presente trabalho objetivou desenvolver um produto alimentício, para consumo em porções individuais, a partir da associação de uma barra de cereais a um gelado comestível com baixo teor de gordura e adicionado dos microrganismos probióticos LactobaciIlus acidophilus La-5 e Bifidobacterium animalis Bb-12, suplementado ou não com o ingrediente prebiótico inulina, verificar a viabilidade dos probióticos, avaliar a aceitabilidade sensorial do produto e suas características físico-químicas durante o seu armazenamento a -18°C. Utilizando um planejamento fatorial 22, foram produzidos (em triplicata) quatro tratamentos da porção gelado comestível, todos adicionados de probióticos: T1 (controle), T2 (adição de inulina), T3 (teor reduzido de gorduras) e T4 (adição de inulina e teor reduzido de gorduras). Os produtos foram armazenados a -18°C por até 168 dias. Os parâmetros avaliados na porção gelado comestível foram: pH (antes e após a maturação da calda e após 168 dias de armazenamento), Overrun (após o congelamento), viabilidade dos probióticos (na mistura final e após 1, 2, 7, 14, 21, 28, 84 e 168 dias), dureza instrumental (texturômetro TA-XT2) e fração de derretimento (após 14 dias). Os quatro tratamentos do produto final (barra de cereal em conjunto com a porção gelado comestível) foram avaliados sensorialmente por provadores não treinados, após 7, 28 e 84 dias de armazenamento, utilizando-se teste de aceitabilidade, com escala estruturada de nove pontos. As análises para determinação da composição centesimal da porção gelado comestível e da barra de cereais foram realizadas, para cada porção individualmente. As populações de L. acidophilus e B. animalis foram superiores a 7 log UFC/g, por até 168 dias nas formulações suplementadas com inulina e/ou substituto de gordura e é adição de inulina contribuiu para a manutenção da viabilidade de B. animalis ao longe do armazenamento. A adição e/ou substituição de ingredientes da formulação de gelado comestível não interferiu nos parâmetros físico-químicos pH e overrun. Para a dureza e a velocidade de derretimento, foi verificada diferença significativa (p<0,05). Entretanto, tais diferenças não se refletiram na aceitação do produto pelo consumidor uma vez que não foi verificada diferença para a aceitabilidade sensorial entre o: quatro tratamentos avaliados, com notas sempre superiores a 7 e sem a interferência: do período de armazenamento sobre essa aceitabilidade. O presente trabalho mostrou que a associação de uma barra de cereais a um gelado comestível probiótico não fermentado, com 1,5% de gordura láctea e adicionado de 8% de inulina, tecnologicamente viável para disponibilizar ao consumidor uma alternativa de alimento funcional simbiótico para consumo em porções individuais. / Functional foods supplemented with probiotic microorganisms and prebiotic ingredients are increasingly popular as they improve consumer health, and these foods nowadays form a new group of food products called synbiotic products. The present study aimed to develop a food product for consumption in individual portions, associating a cereal bar and a low fat ice cream bar containing the probiotic microorganisms Lactobacillus acidophilus La-5 and Bifidobacterium animalis Bb-12, supplemented or not with the prebiotic ingredient inulin, to verify the viability of the probiotics and to evaluate the sensory acceptability of the products and their physical-chemical characteristics during storage at -18°C. Employing a 22 design, four trials of the ice cream portion were produced in triplicate, all of them supplemented with probiotics: T1 (control), T2 (with inulin), T3 (with reduced fat content) and T4 (with inulin and reduced fat). The products were stored at -18°C for up to 168 days. The parameters evaluated in the ice cream portion included: pH (before and after the aging of the mix, and after 168 days of storage); overrun (after the freezing stage); viability of the probiotics (in the final mixture and after 1,2, 7, 14, 21, 28, 84, and 168 days); instrumental hardness (TA-XT2 texturometer); and melting rate (after 14 days). The four trials of the final product (cereal bar associated with ice cream bar) were submitted to sensory evaluation by an untrained panel, employing the acceptability test, with a 9-point structured hedonic scale, after 7, 28, and 84 days of storage. The compositional analyses of the ice cream and cereal bars were carried out individually for each portion. The populations of L. acidophilus e B. animalis were above 7 log CFU/g, for up to 168 days for the formulations supplemented with inulin and/or fat substitute, and the addition of inulin contributed to the maintenance of the viability of B. animalis throughout storage. The addition and/or substitution of ingredients in the ice cream formulations did not significantly affect pH and overrun. As for hardness and melting rate, significant differences were observed (p<0.05). However, such differences did not influence the product acceptance by the consumer, as no differences for sensory acceptability between the four trials evaluated was observed, and scores were always above 7, without any interference of the storage period on this acceptability. The study showed that the association of a cereal bar and a low fat non-fermented probiotic ice cream, containing 1.5% milk fat and supplemented with 8.0% inulin, is technologically feasible to provide consumers with a synbiotic functional food product, as an option for consumption of individual portions.
