Whose Sustainability? An Analysis of a Community Farming Program's Food Justice and Environmental Sustainability Agenda

As the 1960s Environmental movement has grown, sustainability and justice discourses have come to the fore of the movement. While environmental justice discourse considers the unequal effects of environmental burdens, the language that frames "sustainability" is often socially and politically neutral. This thesis critically examines sustainability initiatives and practices of an urban farming organization in Florida. Based on ethnographic fieldwork in 2017, I explore the extent to which these initiatives incorporate race, ethnicity, and socioeconomic class when working to provide sustainably grown food in diverse communities. I argue that the organization's focus on justice for the environment, rather than for communities, and education as a barrier in low-income, food desert neighborhoods neglects to integrate experiences of those living on the margins into their initiatives. This research raises awareness of the need for a critical examination of sustainability in practice and a politically aware incorporation of environmental justice themes into sustainability agendas.

Community gardens: Exploring race, racial diversity and social capital in urban food deserts

Study purpose. The study examined race and racial diversity in community gardens located in Southern urban food deserts, as well as the capacity of community gardens to generate social capital and promote social justice. Methods. A mixed-methods approach was used to describe characteristics of gardeners and community gardens located in urban food deserts, and test Social Capital Theory hypotheses. A convenience sample of 60 gardeners from 10 community gardens was obtained. Data was collected using surveys and semi-structured interviews. Analyses. Univariate and bivariate statistics were used to describe gardeners and gardens. Leader rationales for garden characteristics were analyzed using thematic analysis. Cross-level analyses were used to examine individual and organizational characteristics on gardeners’ social capital in multivariate regression models. Results. Gardeners were racially diverse across the sample; however most community gardens were racially segregated. The majority of gardeners also appeared to be middle-class. This study indicated that community gardens could indirectly enhance community food security, largely through the efforts of people of color, and less so directly as few gardeners involved were food insecure. Community gardens also exhibited limited potential to advance social justice, based on the few resources that could potentially be exchanged between gardeners. Implications. This study calls for: greater dialogue around gentrification concerns; the development of culturally appropriate engagement sensitive to historical trauma rooted in slavery; increased focus on entrepreneurial opportunities; and, obtaining the missing voices – those from non-participating low-income residents – to better understand how to create community gardens located in food deserts that benefit multiple communities.

The Fresh-Water Mussel Industry of the Lower Tennessee River: Ecology & Future

The fresh-water mussel industry of the Tennessee River is nearing an end. Overharvesting, habitat alterations, and pollution are the major contributors to the depletion of the mussel resource, upon which the shell industry is based. A history of unconcern by shell harvesters and weak conservation enforcement by governmental agencies, has left the major waterways of the United States nearly void of commercial clams. The lower Tennessee River presently supplies the mussel industry with nearly all the important species of mollusks. If this industry is to be maintained in the United States, ways to preserve and propagate the mussel population must be sought. A number of recommendations have been submitted in this work that could aid in the protection of the mussel fauna. Limitations or harvesting methods, more stringent enforcement of existing laws, and extended research on propagation possibilities are suggested as aids in the preservation of this valuable natural resource.

Why CSAs Matter: (re)localizing for people-based food networks

This thesis details the history of Claremont Market Shares, a Community Sourced Agriculture (CSA) project based out of Claremont, California. By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. I argue for a people-based food network model over the currently popular 'place-based' that prioritizes producer-consumer relationships. The CSA functions as a sustainable model of this ideology.

Farm to Label: A Critique of Consumer Activism in the Sustainable Food Movement

“Local,” “organic,” “natural,” and “Fairtrade” are just several of the many claims adorning the food products that line grocery store shelves. These promises of environmental sustainability and social responsibility are pillars of the “good food revolution” sweeping the nation as consumers demand alternatives to the products of the industrial food system. Green consumerism, the premise that consumer demand for environmentally sustainable goods will bring about ecologically beneficial outcomes, is at the heart of the sustainable food movement. This thesis takes a critical look at the operation of green consumerism in the food system. It explores the ideology and shortcomings of neoliberal consumer-citizenship that informs the “vote with your fork” rhetoric promoted throughout alternative food markets. Examining the plant-based foods movement as a case study, it attempts to shed light on aspects of food production that are obscured by the promises of “conscious consumption,” such as environmental impacts, accessibility, and reinforcement of the dominant dietary and patriarchal paradigm. Ultimately, the emphasis on consumerism as a means to remedy the failures of the industrial food system instead perpetuates social inequalities and environmental exploitation while relieving powerful institutions and the public of the responsibility to enact significant change. This thesis concludes with recommendations for a multi-sectored approach to the good food revolution that incorporates government, corporate, and grassroots action to bring about a truly sustainable food system.

“WE’RE BEING LEFT TO BLIGHT”: GREEN URBAN DEVELOPMENT AND RACIALIZED SPACE IN KANSAS CITY

In this dissertation, I explore ‘green’ urban development and urban agriculture projects from the perspective of residents of an African American majority neighborhood in Kansas City—who reside in an area referred to as a ‘blighted food desert’ by local policy makers. In Kansas City, extensive city government support exists for urban agricultural projects, which are touted not just as a solution to poverty associated issues such food insecurity and obesity, but also as a remedy for ‘blight,’ violence and crime, and vacant urban land. Specific narratives of Kansas City’s past are used to prop up and legitimate these future visions for, and development projects in, the city. This dissertation lays out an argument for how, in Kansas City, the dominant narrative surrounding urban sustainability, agriculture, and history came to be constructed and informed by white voices, and documents how these narratives, primarily constructed by upper-middle class white local ‘foodies’, are harnessed to support green development projects that marginalize and displace people of color and the poor. Specifically, I draw on 26 months of ethnographic fieldwork to explore how this narrative was constructed and elevated in local policy circles, document the lived consequences of this whitened narrative from the perspective of residents of “food deserts,” and describe historical and current minority-led agricultural projects—which aren’t included in dominant accountings of Kansas City’s development. I also explore agentive actions of racialized groups in opposition to this dominant whitened discourse, documenting how one neighborhood council in Kansas City strategically utilizes urban food project funding to acquire other, more urgently needed, community resources. I bring light to important acts of resistance by some black and brown urban farmers, who explicitly work to shape city space by reinscribing spatialized histories of displacement and racism in Kansas City. In this project I understand racialization and representation as active, not passive, processes, that have the power to determine whose voices are heard, and who has power to shape city space and its use. By untangling the racialized construction of history and space, and drawing on narratives shared by oft-silenced groups, this dissertation project contributes to scholarly work committed to disrupting hegemonic spatialized whiteness (McKittrick 2011).

TARGETING FOOD SELECTIVITY IN YOUNG CHILDREN IN A PRESCHOOL CLASSROOM USING A MULTI-COMPONENT TREATMENT PACKAGE

The purpose of the study was to evaluate the effectiveness of using a video model, graduated exposure (i.e., touch, smell, try, eat), and positive reinforcement to first increase food exploration, and then increase consumption of non-preferred foods in young children that exhibit food selectivity in a school setting. A multiple probe design across behaviors replicated across participants was used to evaluate the effectiveness of a treatment package. The treatment package consisted of a video model of each target behavior (touch, smell, try, eat) and positive reinforcement which included preferred foods and materials. The results indicated that the treatment package was effective in increasing the food exploration and consumption of non-preferred foods for one participant, and was inconclusive for the second participant.

TANGLEWOOD TRAIL WALKING AND VOUCHER PROGRAM

Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented. Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. The 16-week program (June – Sept) included 121 participants. Data was analyzed by creating two groups, low-engagers and high-engagers that differed significantly in the number of times walked to the market and redeemed vouchers, p ≤ 0.0001. Among all participants’ significant decreases were seen in total cholesterol, LDL, ratio of total cholesterol/HDL cholesterol, 10-year risk of heart disease or stroke score, and hemoglobin A1c (p ≤ 0.05). Significant increases were seen in HDL, quantity and variety of F/V consumption among all participants and the high-engagers group. There were improvements in knowledge pertaining to participants’ awareness of the term “phytonutrient” with correctly identifying plant-based foods as the source (p=0.01). Results demonstrate that a community-based walking and farmers market F/V voucher program can improve health in a Rural Appalachian population.
