Avaliação do estado nutricional de indivíduos obesos submetidos a um programa de treinamento físico e educação nutricional / Evaluation of the nutritional status of obese individuals submitted to a program of physical training and nutritional education

Devido ao constante aumento na prevalência de obesidade e doenças relacionadas é sugerido que indivíduos obesos sejam submetidos a programas educativos para redução da massa corporal. Objetivos: avaliar os efeitos de um programa de Educação em Saúde (Educação nutricional e Educação física) voltado a um grupo de mulheres obesas. Métodos: 50 mulheres obesas foram submetidas a um programa de quatro meses envolvendo educação nutricional (1 vez/semana) e exercício físico (aeróbio e contra-resistência - 3 vezes/semana). Foram avaliadas variáveis antropométricas, metabólicas e alimentares: peso, estatura, circunferência da cintura e do quadril, composição corporal por raios X de dupla energia (DEXA), teste ergoespirométrico e gasto energético de repouso (VO2000-Imbrasport&#174;), hemograma, leucograma, perfil lipídico, glicemia, leptina, IGF-1 (Fator de crescimento semelhante à insulina-1, TSH (Hormônio estimulante da tireóide), albumina e pré albumina, 3 diários alimentares e de atividade física. Para análise dos resultados, as participantes foram distribuídas em G1 (IMC inicial < IMC final) e G2 (IMC inicial &#8805; IMC final). Resultados: No G1 houve redução de: massa corporal, IMC, CC, CQ, RCQ, gordura corporal (kg), massa corporal magra (kg) e glicemia. No G2 não foram encontradas alterações significativas nestas variáveis. Não foram encontradas diferenças significativas no GER e ambos os grupos apresentaram aumento do VO2 pico, redução da leptina plasmática e da albumina sérica. Conclusões: O programa de perda de peso realizado neste estudo foi eficiente para resultar em redução da massa corporal em 50% das participantes, apresentando também melhoras em fatores de risco para doenças cardiovasculares. Independentemente da redução da massa corporal e na massa corporal magra, programas de exercício físico sem o controle individualizado da ingestão alimentar, principalmente de proteínas, pode resultar em prejuízos para o estado nutricional de mulheres obesas. / Because of the high prevalence of obesity and its associated comorbities all over the world, it is suggested to submmit obese people to edicational weight reduction programs. Objectives: to evaluate the effects of an educational program (nutrition and physical education) in obese women. Methods: 50 obese women were submitted to a four months program of nutritional education (once a week) and exercise training (aerobic and resistance -3 times/week). They were evaluated variables related to anthropometry, metabolic and eating behavior: weight, height, waist and hip circumferences, body composition by dual X-ray energy (DEXA), aerobic power and resting energy expenditure (VO2000-lmbrasport&#174;); hemogram, leucogram, lipid profile, glucose level, leptin, IGF-1 (Insulin like growth factor-1), TSH (Tireoid stimulating hormone), albumin and pré-albumin, 3 days of food and physical activity records. The participants were distributed into the follow groups for the analysis: G1 (initial BMI < final BMI) and G2 (initial BMI &#8805; final BMI). Results: In G1 they were reduced: body mass, body mass index (BMI), waist circumference, hip circumference, waist/hip relation, fat mass (kg), lean body mass (kg) and glucose. No statistical differences were found in these parameters in G2. No statistical differences were found in resting energy expenditure in both groups and there was an increase in VO2peak, decrease in leptin and albumin concentration in both groups. Conclusions: The weight reduction program realized in this study was efficient to result weight loss in 50% of the participants, with improvements in cardiovascular risk factors. Independent of reductions on body mass and lean body mass, exercise training programs without individualized control of protein intake, especially of proteins, can jeopardize nutritional status of obese women.

Nutrition knowledge of educators in primary schools in Makhuthamaga Municipality in Limpopo Province

MSCPNT / Department of Nutrition / Introduction: Nutrition education is the change process whereby beliefs, attitudes, environmental influences, and understanding about food lead to nutrition practices that are scientifically sound, practical, and consistent with individual needs and available resources Design and Methods: The purpose of this study was to assess the nutrition knowledge of educators in Makhuduthamaga municipality, Limpopo Province. Quantitative, descriptive, and exploratory research was conducted to determine the factors that influence the nutrition knowledge of educators and explore the relationship between factors and nutrition knowledge. The simple random sampling technique was employed to select 200 educators in grades 4, 5, and 6. Data collection was done using structured questionnaires. The data was analysed using the statistical package for social science (SPSS), version 21. Results and Discussion: Of the educators who participated in the study, 66.5% were female, and 33.5% were males. Almost all (94%) of the educators were trained at a college and had teaching experience of between 21-30 years. Most of the educators (60.5%) had a diploma, while 0.5% had a master’s degree. Almost one third of educators indicated that children should eat three (3) times during the day, and 32% identified the important meals as breakfast, lunch, and supper. Most (36.5%) failed to give reasons why children should not skip meals. In terms of basic food and nutrition, majority of the educators (75%, 67%, 56%, and 55.5%) responded correctly on the importance of carbohydrates, fat, vegetables, and fruits, respectively. Only a quarter (26%) knew the importance of protein, while 75.5% knew that protein forms part of a balanced diet. Most of the educators knew the rich sources of vitamin A and fibre but did not know the rich sources of iron, iodine, and vitamin C. There was no significant difference between the level of education and nutrition knowledge (p= 0.129), and between training institution and nutrition knowledge (p= 0.534). Conclusion: The need to train educators on nutrition was one of the main recommendations that emanated from many research projects. Most educators mentioned that training and level of education were of the factors that affected their nutrition knowledge. Nutrition knowledge is becoming increasingly important in food choices and in this study educators acknowledged that training affected their nutrition knowledge. / NRF

As indústrias de alimentos têm desenvolvido produtos com redução de gorduras (PRG) para atender a demanda que encontra dificuldade em seguir as orientações propostas. Este trabalho objetivou caracterizar o padrão alimentar dos domicílios consumidores de PRG. A população foi composta por 2337 domicílios que participaram da POF/FIPE/USP 1998-1999, que estudou uma amostra probabilística da área metropolitana de São Paulo. Foram considerados domicílios consumidores de PRG aqueles que apresentaram consumo de produtos desnatado, semi-desnatado e light com redução de gordura (n=445 19,1%). Foi investigado o perfil demográfico, socioeconômico e de escolaridade. O consumo alimentar domiciliar foi obtido pela média per capita/dia da unidade domiciliar, ajustada para gênero e idade, para 14 grupos de alimentos. A Análise de Componentes Principais foi utilizada para a obtenção do padrão alimentar, a Regressão Logística Múltipla e a Análise Discriminante foram utilizadas para identificar as diferenças entre os grupos. Os domicílios consumidores de PRG apresentaram escolaridade, renda familiar, idade dos integrantes da família, disponibilidade de frutas, hortaliças, produtos industrializados, lipídios de adição e açúcares superiores aos não consumidores. O padrão alimentar dos domicílios consumidores de PRG se caracterizou como \"tradicional\" e entre os não consumidores se caracterizou como \"misto\". Os resultados sugerem que os domicílios consumidores de PRG não apresentam estrutura de alimentar homogênea e o padrão alimentar adotado pode não atender as recomendações nutricionais. / The Food Guides orientate the public to healthy practices concerning food. The food industry has developed low-fat products to attend the demand from those who have difficulties to follow the proposed instructions. This work focused on describing the food standard at low-fat consumers\' domiciles. The .population was composed by 2,337 domiciles, which participated in a research - realized by POF/FIPE/USP in 1998-1999 - about a probabilistic sample from a metropolitan area in São Paulo. We considered low-fat consumers\' domiciles; those who presented skim, semi-skim and Light products consumption (#445 19.1 %). Herein, the demographical, socioecohomical and scholarity level profiles, were also investigated. The housing food consumption was obtained by the per capita/day average at the unity of domicile, tailored to gender and age, for 14 aliments groups. The Principal Components Analyze was used to obtain the food standard as the Multiple Logistical Regression and Discriminat Analyse were used to identify the differences among the groups. The housing low-fat consumers presented scholarity level, the revenue, age of the family members, availability of fruit and greens, industrial products, addition of lipids and sugars higher than those who were not consumers. The food standard at the low-fat consumers was characterized as \"traditional\" and among those who were nor consumers it was characterized as \"mix\". The results suggest that the low-fat consumers have not presented a homogeneous food structure and the food standard adopted by then may not consider nutritional recommendations.

The nutritional quality of traditional and modified traditional foods in KwaZulu-Natal.

The role of traditional foods in reducing hunger and malnutrition is not well documented in South Africa. The aim of this study was to investigate the distribution, popularity and nutritional value of traditional foods in KwaZulu-Natal through evaluation of recipes submitted for a traditional foods recipe competition. Traditional recipes are characterised by indigenous or local ingredients passed from one person to another over many generations, with little or no change in form. Modern recipes include those which use processed ingredients. Modified recipes include those which use processed ingredients. Modified recipes include a mixture of traditional and modern ingredients. The differences between the ingredients of traditional, modern and modified recipes were investigated to determine how modifying and modernising traditional foods changed their nutritional quality. Using competition entries from a traditional recipe competition from all 11 districts of KwaZulu-Natal, the nutritional value of 1200 recipes was analysed using published Food Composition Tables. The 10 most commonly submitted recipes were identified. The majority of recipes came from the more rural districts of KwaZulu-Natal. The largest number of recipes submitted were traditional (68% of entries) followed, respectively, by modified (24%) and modern (8 %) recipes. Adult females submitted more recipes than female youths, male youths and adult males. In general, modified foods had higher nutrient contents than traditional and modern foods. There was a negative correlation between food popularity and nutrient content suggesting that popular foods were not necessarily the most nutritious. It was concluded that the people of KwaZulu-Natal simultaneously use traditional, modified and modern recipes, but that there is a shift towards food modification through use of non-indigenous crops and modern ingredients. Investigating the performance of quality of the Cucumis metuliferus E. May. Ex Naudin (African hornes cucumber) under different growing environments for potential commercialisation

Ex Naudin (African horned cucumber) under protected and open environment with the aim of comparing yield and quality for the purpose of commercialisation of the crop. Therefore, the overall objective was to determine a suitable growing environment for C. metuliferus between greenhouse, shade net and open field, so that a comparative yield and quality analysis could be done for the purpose of commercialisation of the crop. Cucumis metuliferus seeds are difficult to germinate under the normal suitable environmental conditions in which most farmers operate. Germination was evaluated with respect to growth medium, scarification and seed certification. These factors ultimately control yield and fruit quality. The main aim of the study was to investigate the effect or impact of seed certification, growth medium (sand and vermiculite, peat TS1 and seedling mix) and scarification on germination success of C. metuliferus seeds. The seeds were classified under four different categories viz. treated certified, non-treated certified, treated uncertified, and non-treated uncertified. Of the 540 certified and uncertified seeds sown in the three-growth media, 80% germinated, significantly more that those that failed. The treatment combination of treated certified seeds (TC) and peat demonstrated high germination success rate of 93.6%, followed by the treatment combination of treated certified seeds (TC) and sand+ vermiculite with germination success rate of 91.3%. The treatment combination of uncertified untreated (UTU) seeds and potting mix illustrated low germination success rate at 37.2%. In general, the study results revealed that certified seeds scarified with warm water combined had a higher germination rate that unscarified seeds, irrespective of the growth media. Since the seedling root-ball integrity is essential for transplant survival, this study suggests peat and certified seeds as the best combination for propagation and good quality plants. Water scarcity, population growth and climate change are the major factors affecting agricultural productivity in the 20th century. Cucumis metuliferus grows naturally in the wild; however, its yield response to water stress, different cultivation environment and soil types, has not been assessed. A study was carried out to determine water use efficiency of the C. metuliferus grown the greenhouse, shade net and open field under varying soil types and irrigation water levels, so that a comparative analysis could be done on productivity levels. The research was conducted at the University of South Africa (Unisa) Science Campus, in Florida, Gauteng (-26.157831 S, 27.903364 E) during the 2017/2018 and 2018/2019 growing seasons. A factorial experiment with two factors – soil (loamy soil and sandy loam soil) and water stress levels (no water stress, moderate water stress and severe water stress). The pot experiments were a completely randomised design with nine (9) replicates per treatment. Data collected included total biomass, aboveground biomass, harvest index and water use efficiency. Results illustrated that treatment of moderate water stress combined with loamy soil and shade net decreased WUE from 6.2 to 1.4 kg m-3, whereas treatment combination of no water stress combined with sandy loam and open field environment demonstrated increase in WUE from 1.4 to 6.2 kg m-3. Nutritional concentration of most crops depends on factors such as amount of water, growing environment, light intensity and soil types. However, factors influencing nutritional concentration of C. metuliferus fruits is not yet known. Another objective of the study was to determine the effect of different water stress levels, soil types and growing environment (greenhouse, shade net and open field) on the concentration of nutrients in C. metuliferus fruit. Freeze-dried fruit samples were used in the quantification of ꞵ-carotene, vitamin C, vitamin E, total soluble sugars, crude proteins, total flavonoids, total phenols, macro-nutrients (Ca, Mg, P, K, Na and S), and micro-nutrients (Cu, Fe, Mn and Zn). Results demonstrated that plants grown under shade net, combined with severe water stress level and loamy soil, had increased total soluble sugars (15.8 ˚Brix) compared to other treatments. Plants under shade net environment, combined with moderate water level and loamy soil, resulted in increased crude protein content (6.31 ˚Brix). The severe water stress treatment combined with loamy soil under greenhouse conditions resulted in increased ꞵ-carotene content (1.65 mg 100 g-1 DW) when compared to other treatments. Regarding vitamin C, the treatment of no water stress combined with loamy soil under shade net environment showed higher content of (33.1 mg 100 g-1 DW). The severe water stress treatment combined with sandy loam soil under greenhouse environment, increased vitamin E content (35.1 mg 100 g-1 DW) when compared to other treatments. The treatment of open field under severe water stress level and loamy soil increased total flavonoids content (0.85 mg CE/g-1 DW) in the fruit when compared to other treatments. The results thus imply that this plant bears better-quality fruit in terms of concentration of nutrients and biochemical constituents when grown under no to moderate water stress treatment on the loamy or sandy loam substrate in the shade net and open field environment. Primary metabolites are biological compounds that are essential to the growth and development of a plant during its life cycle. They have a direct impact on the yield and biochemical constituents in plants. Quantities of the primary metabolites were determined using the LC-MS-8040 triple quadrupole mass spectrometer (Shimadzu) from fruits harvested from treatments mentioned above. The results showed that the no water stress treatment combined with sandy loam under shade net environment significantly (P≤0.05) increased asparagine content from 10×106 to 80x106 peak intensity when compared to other treatments. The severe water stress treatment combined with sandy loam soil under open field environment during the 2017/2018 season, significantly increased dopa content from 12,030 to 324,240 peak intensity, while during the 2018/2019 season, 4-hydroxyproline from 10×106 to 90x106 peak intensity the was significantly increased. The study suggests that the treatment combination of water stress levels (no water stress and severe water stress) and soil substrates (loamy soil and sandy loam) under greenhouse and shade net significantly affected the shift of primary metabolites profile of C. metuliferus fruit as opposed to individual factors, respectively. There is therefore great potential to commercialise this crop; however, there is still a great deal that is not well understood of its growth habits and biological/biochemical constituents as a future alternative crop. / Ndzavisiso lowu wu endliwe ku lavisisa hi matirhelo na khwaliti ya Cucumis metuliferus E. Dietary intake and urinary excretion of phytoestrogens in relation to cancer and cardiovascular disease

Indiana University-Purdue University Indianapolis (IUPUI) / Phytoestrogens that abound in soy products, legumes, and chickpeas can induce biologic responses in animals and humans due to structural similarity to 17β-estradiol. Although experimental studies suggest that phytoestrogen intake may alter the risk of cancer and cardiovascular disease, few epidemiologic studies have investigated this research question. This dissertation investigated the associations of intake of total and individual phytoestrogens and their urinary biomarkers with these chronic conditions using data previously collected from two US national cohort studies (NHANES and PLCO). Utilizing NHANES data with urinary phytoestrogen concentrations and follow-up mortality, Cox proportional hazards regression (HR; 95% CI) were performed to evaluate the association between total cancer, cardiovascular disease, and all-cause mortality and urinary phytoestrogens. After adjustment for confounders, it was found that higher concentrations of lignans were associated with a reduced risk of death from cardiovascular disease (0.48; 0.24-0.97), whereas higher concentrations of isoflavones (2.14; 1.03-4.47) and daidzein (2.05; 1.02-4.11) were associated with an increased risk. A reduction in all-cause mortality was observed for elevated concentrations of lignans (0.65; 0.43-0.96) and enterolactone (0.65; 0.44-0.97). Utilizing PLCO data and dietary phytoestrogens, Cox proportional hazards regression examined the associations between dietary phytoestrogens and the risk of prostate cancer incidence. After adjustment for confounders, a positive association was found between dietary intake of isoflavones (1.58; 1.11-2.24), genistein (1.42; 1.02-1.98), daidzein (1.62; 1.13-2.32), and glycitein (1.53; 1.09-2.15) and the risk of advanced prostate cancer. Conversely, an inverse association existed between dietary intake of genistein and the risk of non-advanced prostate cancer (0.88; 0.78-0.99) and total prostate cancer (0.90; 0.81-1.00). C-reactive protein (CRP) concentration levels rise in response to inflammation and higher levels are a risk factor for some cancers and cardiovascular disease reported in epidemiologic studies. Logistic regression performed on NHANES data evaluated the association between CRP and urinary phytoestrogen concentrations. Higher concentrations of total and individual phytoestrogens were associated with lower concentrations of CRP. In summary, dietary intake of some phytoestrogens significantly modulates prostate cancer risk and cardiovascular disease mortality. It is possible that these associations may be in part mediated through the influence of phytoestrogen intake on circulating levels of C-reactive protein.
