Conception et évaluation d'un dispositif d'imagerie multispectrale de proxidétection embarqué pour caractériser le feuillage de la vigne / "On-the-go" multispectral imaging system embedded on a track laying tractor to characterize the vine foliage

En Viticulture de Précision, l’imagerie multi-spectrale est principalement utilisée pour des dispositifs de télédétection. Ce manuscrit s’intéresse à son utilisation en proxidétection, pour la caractérisation du feuillage. Il présente un dispositif expérimental terrestre mobile composé d’un GPS, d’une caméra multi-spectrale acquérant des images visible et proche infrarouge, et d’un Greenseeker RT-100 mesurant l’indice Normalized Difference Vegetation Index (NDVI). Ce système observe le feuillage de la vigne dans le plan de palissage, en lumière naturelle. La parcelle étudiée comporte trois cépages (Pinot Noir, Chardonnay et Meunier) plantés en carré latin. En 2013, six jeux de données ont été acquis à différents stades phénologiques.Pour accéder aux propriétés spectrales de la végétation, il est nécessaire de calibrer les images en réflectance. Cela requiert l’utilisation d’une mire de MacBeth comme référence radiométrique. Lorsque la mire est cachée par les feuilles, les paramètres de calibration sont estimés par une interpolation linéaire en fonction des images les plus proches sur lesquelles la mire est visible. La cohérence de la méthode d’estimation employée est vérifiée par une validation croisée (LOOCV).La comparaison du NDVI fournie par le Greenseeker avec celui déterminé via les images corrigées permet de valider les données générées par le dispositif. La polyvalence du système est évaluée via les images où plusieurs indices de végétation sont déterminés. Ils permettant des suivis de croissance de la végétation originaux offrant des potentialités de phénotypage ou une caractérisation de l’état sanitaire de la végétation illustrant la polyvalence et le gain en précision de cette technique. / Mutispectral imaging systems are widely used in remote sensing for Precision Viticulture. In this work, this technique was applied in the proximal sensing context to characterize vine foliage. A mobile terrestrial experimental system is presented, composed of a GPS receiver, a multi-spectral camera acquiring visible and near infrared images, and a Greenseeker RT-100 which measures the Normalized Difference Vegetative Index (NDVI). This optical system observes vine foliage in the trellis plan, in natural sunlight. The experimental field is planted with Chardonnay, Pinot Noir and Meunier cultivars in a latin squared pattern. In 2013, six datasets were acquired at various phenological stages.Spectral properties of the vegetation are accessible on images when they are calibrated in reflectance. This step requires the use of a MacBeth colorchart as a radiometric reference. When the chart is hidden by leaves, the calibration parameters are estimated by simple linear interpolation using the results from resembling images, which have a visible chart. The performance of this method is verified with a cross-validation technique (LOOCV).To validate the data provided by the experimental system, the NDVI given by the Greenseeker was compared to those computed from the calibrated images. The assessment of the versatility of the system is done with the images where several indices were determined. It allows an innovative follow-up of the vegetative growth, and offering phenotyping applications. Moreover, the characterization of the sanitary state of the foliage prove that this technique is versatile and accurate.

Rootstock and canopy density effects on grape berry composition : organic acid composition, potassium content and pH

The influence of rootstock and canopy density on grape berry composition was investigated over the summer of 2003-2004 on a commercial vineyard at Waipara, North Canterbury. This experiment was designed to investigate the influence of rootstock and canopy density on the acid composition, potassium (K) content and final pH of harvested fruit (Pinot Noir AM 10/5 Lincoln Selection). The trial block consisted of eight rootstocks laid out to an 8 x 8 latin square, each plot consisting of five vines of the same rootstock. Two canopy treatments were overlaid the block (down whole rows, assigned randomly, four rows to each treatment); one treatment allowed to grow naturally, in the other treatment the canopy was thinned removing double burst shoots and laterals. The bunch numbers were adjusted in the Unthinned canopy treatment (UCT) to match the Thinned canopy treatment (TCT). Information was gathered to assess: the canopy size and density (Pinot Quadrat Leaf Layer and Percent Gaps and canopy porosity), the plant yield (and berry size, berries per cluster, cluster weight, clusters per plant), plant K levels at flowering and veraison (from petioles and leaf blades) and berry composition at harvest (soluble solids (as brix), K, titratable acidity (TA), tartaric acid concentration, malic acid concentration and pH). The trial area was non-irrigated on clay loam soils and viticultural management was to best commercial practice. It was found that although rootstock influenced the levels of K in the plant and in the juice at harvest, the level of K in the juice did not influence pH in this experiment (range of rootstock juice K: 808 ppm to 928 ppm, l.s.d. = 75 ppm). The level of tartaric acid concentration in the juice was found to be the dominant influence on the level of pH in this experiment (rootstock pH range: 3.21 to 3.39, l.s.d. = 0.05). The juice concentration of tartaric acid was influenced by both rootstock (rootstock range 4.0 to 4.7 g/L, l.s.d = 0.4) and canopy density (UCT = 4.1, TCT = 4.7, l.s.d. = 0.4), decreased shading positively increasing the level of tartaric acid. The malic acid concentration in the juice was positively influenced by increasing canopy density (UCT = 4.7 g/L, TCT = 4.1 g/L, l.s.d = 0.4) and this played a minor role in the determination of pH in this experiment; an influence of rootstock on the level of malic acid concentration was found. The malic acid concentration strongly influenced the determination of TA (UCT = 11.0 g/L, TCT = 10.2 g/L, l.s.d = 0.5); tartaric acid concentration had a minor influence on the recorded TA. Attempts to characterise the influence of rootstock on malic acid, tartaric acid and pH were inconclusive. Rootstock was found to influence the canopy variables measured in this experiment and the recorded average plant yield. Crosses of Vitis rupestris were found to exhibit the most canopy vigour and those derived from Vitis berlandieri and Vitis riparia the least. The Canopy treatment did not show an influence over yield but the rootstock was found to influence plant yield, through the numbers of berries set in a cluster and the final harvest cluster weight. The influence of rootstock on pH may be described by the influence it exerts on canopy growth and yield but this was thought unlikely. Further research is required to describe the nature of the rootstock influence on K, malic acid, tartaric acid and pH.

Caracterização físico-química e sensorial dos vinhos espumantes da serra gaúcha

A influência da cultivar e da época de colheita na composição físico-química e na qualidade sensorial dos espumantes da Serra Gaúcha, Rio Grande do Sul, elaborados pelo método Champenoise nas safras 2006 e 2007, foi avaliada. As cultivares utilizadas foram Riesling Itálico, Chardonnay e Pinot Noir. As uvas foram colhidas em duas épocas distintas: uma referente ao ponto de colheita definido como ideal (época 1) e outra oito dias após (época 2). Os mostos, os vinhos base e espumantes foram analisados quanto à composição básica conforme a metodologia oficial brasileira. Além disso, nos vinhos base e espumantes foram analisados os elementos minerais e compostos aromáticos, através de absorção atômica e cromatografia gasosa, respectivamente. Os espumantes foram avaliados sensorialmente, por uma equipe de degustadores qualificados. Os resultados das análises clássicas dos mostos e vinhos base diferenciaram cultivares e épocas de colheita, nas duas safras estudadas. O mosto de Chardonnay apresentou maior valor de grau º Brix e de álcool potencial. O Pinot Noir se diferenciou pela acidez mais elevada, enquanto que o Riesling Itálico apresentou menores grau Brix e acidez total. Os mostos das uvas colhidas na segunda época apresentaram maiores teores de açúcar, álcool potencial, pH e relação brix/acidez total, e menor acidez. Nos vinhos base, as cultivares Chardonnay e Riesling Itálico apresentaram, respectivamente, maior e menor teor alcoólico e os vinhos das uvas de colheita mais tardia apresentaram menor acidez total. Entretanto, nos vinhos espumantes as análises clássicas não apresentaram diferenças significativas em relação às cultivares e épocas de colheita. Entre os elementos minerais dos vinhos base e dos espumantes correspondentes, o Zn foi único elemento que apresentou diferença significativa entre as cultivares sendo que os vinhos Chardonnay obtiveram os maiores teores. Os vinhos base provenientes das uvas com maior grau de maturação apresentaram, independente da cultivar, maiores níveis de K, Ca, Mg, Mn, Fe, Rb, Li e P e concentrações mais baixas em Cu e Zn. Quanto aos compostos voláteis, maiores quantidades de 2-fenil etanol e dietil succinato diferenciaram os vinhos da cultivar Chardonnay e maiores concentrações de hexanoato de etila e de acetato de isoamila diferenciaram os vinhos da cultivar Riesling Itálico. Já os vinhos Pinot Noir apresentaram teores de 2-metil-1-propanol e 2-metil-1-butanol significativamente superiores às outras variedades. Os vinhos obtidos de uvas colhidas na segunda época apresentaram menores teores de ácido butírico, diferenciando as duas épocas de colheita. Quanto à avaliação sensorial, a variedade Riesling Itálico apresentou maiores notas florais e a Chardonnay maior nota no frutado, tanto no aspecto olfativo quanto no gustativo. Já a Pinot Noir, maior nota vegetal, levedura e pão tostado. Na avaliação final os degustadores não fizeram distinção entre os espumantes Pinot Noir e os Chardonnay, preferindo estes aos de Riesling Itálico, nas duas safras estudadas. Na safra 2007 os degustadores preferiram os espumantes das uvas da primeira época de colheita, enquanto na safra 2006 não foi observada diferença entre as épocas de colheita. The cultivars were Riesling Italico, Chardonnay and Pinot Noir. The grapes were harvested at two different times: one related to the harvesting point defined as ideal (season 1) and another eight days after (time 2). Musts, base wines and sparkling wines were analyzed based on the basic composition as the official Brazilian methodology. In addition, the base wines and sparkling wines were analysed the mineral elements were analyzed and aromatic compounds by atomic absorption and gas chromatography, respectively. Sparkling wines have been evaluated by a team of qualified tasters. The results of the classical analysis of musts and base wines differentiated cultivars and harvest times in the two seasons studied. The Chardonnay must showed higher brix value and potential alcohol. The Pinot Noir has distinguished by higher acidity, while the Riesling Italico had lower Brix and total acidity. The musts of grapes harvested in the second season showed higher levels of sugar, potential alcohol, pH and the realation Brix/total acidity and lower acidity. In the base wine, the varieties Chardonnay and Riesling Itálico were respectively higher and lower alcohol content and wine grapes harvested later showed lower acidity. However, in the sparkling wines the classic analysis showed no significant differences in different cultivars and harvest times. Among the mineral elements of the base wines and sparkling wines corresponding Zn was the only element that showed a significant difference among cultivars is that Chardonnay wines had the highest levels. The base wine from grapes with a higher degree of maturity showed, regardless of cultivar, higher levels of K, Ca, Mg, Mn, Fe, Rb, Li and P and lower concentrations of Cu and Zn. As for the volatile compounds, larger amounts of 2-phenyl ethanol and diethyl succinate differentiated the wines of the cultivar Chardonnay, and higher concentrations of ethyl hexanoate and isoamyl acetate differentiated the wines of the cultivar Riesling Italico. Already Pinot Noir wines showed levels of 2-methyl-1-propanol and 2-methyl-1-butanol significantly higher than other varieties. The wines made from grapes harvested in the second period had lower levels of butyric acid, differentiating the two harvest seasons. As for the sensory evaluation, the variety Riesling Itálico showed higher floral notes and the Chardonnay with highest score on fruity in both the olfactory and the gustatory aspect. As for the Pinot Noir, highest notes aromatic for vegetable, yeast and toasted bread. In the final evaluation the panelists made no distinction between the sparkling wines Pinot Noir and Chardonnay, preferring these to Riesling Itálico, in the two harvests studied. In the season 2007 the tasters preferred the sparkling wines from the grapes of the first harvest season, while the harvest in 2006 there was no difference between harvest seasons. This work helped identify the main components and characteristics that determine the distinguish and tipicity of sparkling wines from the Serra Gaúcha.

No entanto, devido às condições climáticas intrínsecas da região como baixas precipitações pluviométricas e uma elevada demanda evapotranspirativa, o fornecimento de água é indispensável par aos cultivos, assim como uma eficiente reposição de nutrientes aos solos, levando em contas as propriedades físico-químicas da matéria orgânica. O presente trabalho avaliou diferentes alternativas de adubação e demanda hídrica do cultivo da videira Itália (Vitis vinifera L.) no vale do submédio do São Francisco. O ciclo experimental foi realizado entre o período de agosto/2013 a janeiro de/2014. Foi realizada a interpolação de diferentes coeficientes de irrigação (75%, 100%, 125% e 150% do coeficiente de cultura recomendado) e diferentes adubações (100%, 75%, 50% e 25% da adubação mineral recomendada, acrescida de produto orgânico a base de ácidos húmicos e flúvicos), compondo assim um delineamento em parcelas subdivididas 4x4, com 3 repetições. Em função dos tratamentos descritos, foram avaliadas a produtividade por planta, qualidade dos frutos (tamanho das bagas, teor sólidos solúveis e acidez total) e variações fisiológicas na videira (conteúdo relativo da água). Em função dos diferentes fatores de multiplicação do coeficiente de cultura, o tratamento L3 obteve a maior produtividade. O tratamento L4 apresentou o menor valor de acidez. O tratamento L1 apresentou os menores valores de conteúdo relativo de água e peso médio de bagas. Em função das diferentes adubações, a AD3 apresentou maior produtividade. Nas variáveis acidez, teor de sólidos solúveis, conteúdo relativo de água nas folhas e peso de bagas não houve diferenças significativas quanto ao fator adubação. / Viticulture is of particular economic and social importance in the Lower Basin of the São Francisco Valley, as it involves a large annual turnover meant for the domestic and foreign markets. However, due to the intrinsic climatic conditions of the region as low rainfall and high evapotranspiration demand, the supply of water is essential to pair crops, as well as an efficient replenishment of nutrients to the soil, taking into account the physicochemical properties of matter organic. This project aims to evaluate different alternatives of fertilizer and water demand in Italy cultivation of the vine (Vitis vinifera I.) in the São Francisco Valley submedium. The experiment consisted of two cycles, the first of agosto/2013 de/2014 to January and the second in the march/2014 September 2014. Was performed different coefficients of irrigation (75%, 100%, 125% and 150% of the recommended ratio) and different fertilizer (100%, 75%, 50% and 25% of the recommended fertilizer product plus the basis of organic and humic acids Neossols), thus composing a split plot design with three replications. In the treatments described were evaluated productivity per plant, fruit quality (berry size, soluble solids content and total acidity), physiological variations on the vine (relative water content). The L4 treatment showed the lowest acidity. The L1 treatment had the lowest values of relative water content and average berry weight. The soluble solids content did not differ significantly with treatments. Due to different fertilization, the AD3 showed higher productivity. In the variable acidity, soluble solids content, relative water content in leaves and berry weight were no significant differences in fertilization factor.

Afin d’accompagner les acteurs des filières viticoles, notamment d’AOC, dans la nécessaire amélioration de l’éco-efficience de leurs produits, nous avons voulu identifier dans quelles conditions l’Analyse du Cycle de Vie est une méthode appropriée à l'évaluation environnementale des itinéraires techniques viticoles (ITKv) de production de raisins de qualité, à l’échelle parcellaire, afin de pouvoir choisir les plus performants. Pour établir et tester un cadre méthodologique de l’ACV, adapté à cet objectif, des ITKv réels et variés visant un même objectif qualitatif sont nécessaires. Nous proposons ici une chaîne de traitement d’enquête originale, Typ-iti, qui permet le choix de cas réels représentant chaque groupe. Cinq groupes ont ainsi été identifiés parmi les ITKv de production de raisins de Chenin blanc pour vins blancs secs d’AOC en Moyenne Vallée de la Loire, dont trois en viticulture conventionnelle et deux en viticulture biologique. Cinq cas réels ont été choisis pour les représenter. L’ACV est ici déclinée pour la viticulture sur la base de ces cinq cas, par l’établissement d’un cadre méthodologique qui comprend : i) la définition de limites du système incluant les phases non productives et productives, ii) le choix des modèles disponibles les plus pertinents, pour le calcul des émissions directes de polluants à la vigne, iii) l’adaptation fine du modèle d’émissions de pesticides organiques Pest LCI 2.0 aux spécificités viticoles, iv) la proposition et le test d’unités fonctionnelles basées sur un indicateur de qualité du raisin original permettant la prise en compte de la qualité dans les ACV de raisins destinés à la production de vins de qualité. L’ACV a révélé, à l’échelle parcellaire, i) des éco-efficiences contrastées pour les cinq ITKv contrastés, ii) les pratiques responsables de ces contrastes, iii) des solutions d’amélioration et leurs effets quantifiés sur les performances environnementales. La généricité des résultats de ces cas aux groupes qu’ils représentent varie selon l’homogénéité des groupes et avec les catégories d’impacts selon qu’elles sont, ou non, conditionnées par le milieu. L’effet important du millésime sur les résultats, mis en évidence ici sur un cas, mérite d’être pris en compte dans toute ACV viticole. De nombreuses perspectives d’améliorations méthodologiques sont discutées ici pour accroître la pertinence et la complétude des résultats ainsi que la généricité de la méthode et pour son application auprès d’acteurs du développement des filières viticoles. / In order to contribute to the effort of eco-efficiency improvement of the wine sctor, especially in the Protected Denomination of Origin (PDO) contaxt, we worked to identify in which conditions Life Cycle Assessment (LCA) is an appropriate method for environmental assessment, at plot scale, of quality vineyard Technical Management Routes (TMRs), to permit the choice of the most eco-efficient technical operations and TMRs.A methodological framework for LCA suited to this objective was designed and tested on five real and contrasted TMRs, oriented towards a same qualitative objective. These cases were chosen thanks to an original statistical analysis chain, Typ-iti, on the basis of a survey, among the TMRs producing Chenin blanc grapes for PDO dry white wines in the Middle Lore Valley. Five groups were identified and characterized, threee in conventional viticulture, and two in organic viticulture.The methodological framework that was established includes i) the studied system definition including productive and non-productive phases, ii) the choice of the most suitable and available models for calculation of pollutant direct emissions in the vineyard, iii) the customization of the organic pesticide emision calculation model, Pest LCI 2.0, to viticulture specific needs iv) the inclusion of grape quality in the LCA by two functional units including an original grape quality index.LCA proves to be a method complex but powerful, usable at parcel scale for grape production TMRs choice. It revealed i) contrasted eco-efficiencies for the 5 contrasted TMRs, ii) the viticultural practices responsible for these contrasts, iii) solutions for eco-efficiency improvement and quantification of their eco-efficiency effects.The important effect of the production year on the results, highlighted here on one case, must be taken into account in any viticulture LCA. Numerous perspectives of methodological improvement are discussed here in order to increase relevance and completeness of the results as well as genericity of the method and its accessibility for viticulture development stakeholders.

Vines of different capacity and water status alter the sensory perception of Cabernet Sauvignon wines

Reducing disease and increasing fruit quality in vigorous vineyards with dense canopies is demanding of time and resources; unfortunately, vineyards of this nature are common in humid environments. This study investigated the effectiveness with which vine capacity and water status could be regulated as well as if they related to fruit quality and wine sensory perception. The treatments regulating vine size and water status were under-trellis groundcover, root manipulation, rootstocks, and irrigation. Treatments were arranged in a strip-split-split plot design before the introduction of the irrigation treatment resulted in incomplete replication in each block. Treatment levels were under-trellis cover crop (CC) compared to under-trellis herbicide (Herb); root restriction bags (RBG) compared to no root manipulation (NRM); three compared rootstocks (101-14, 420-A, riparia Gloire); low water stress (LOW) compared to high water stress (HIGH). Vines grown with RBG and CC regulated vegetative growth more so than conventional treatments, resulting in 56% and 23% greater cluster exposure flux availability (CEFA). High water stress (HIGH) and RBG reduced stem water potential and discriminated less against 13C. Vines grown with RBG and CC consistently reduced harvest berry weight by 17 and 6% compared to conventional treatments. Estimated phenolics were consistently increased by RBG and were correlated with berry weight, vine capacity and CEFA. Sensory attributes were significantly distinguishable between wines produced from vines that differed in both vine capacity and water status, amongst other responses. Treatments have been identified that can alter the sensory perception of wines, with the potential to improve wine quality. / Master of Science

Optimisation des méthodes d'extraction des composés phénoliques des raisins libanais et de leurs coproduits / Optimization of phenolic compound's extraction methods from Lebanese grapes and their byproducts

Ce travail de doctorat traite l’optimisation des méthodes d’extraction des composés phénoliques à partir des sous-produits de la viticulture et de la viniculture, à savoir les sarments de vigne et les marcs de raisins. Plusieurs technologies innovantes sont appliquées et comparées : l’extraction accélérée par solvant (EAS), les décharges électriques de haute-tension (DEHT), les ultrasons (US) et les champs électriques pulsés (CEP). Les extractions solide-liquide faites sur les sarments ont montré que, parmi les solvants étudiés, l’eau est le moins efficace. L’ajout de la β-cyclodextrine dans l’eau améliore le procédé d’extraction mais est moins efficace que les mélanges hydroéthanoliques. L’extraction en milieu alcalin donne le meilleur rendement en composés phénoliques. L’intensification de l’extraction des composés phénoliques des sarments est possible grâce aux nouvelles technologies d’extraction. L’efficacité des méthodes testées est la moindre avec les US, moyenne avec les CEP pour atteindre le meilleur rendement phénolique avec les DEHT. La filtrabilité de ces extraits est d’autant plus lente que leur composition est complexe. L’ultrafiltration membranaire permet une très bonne purification et concentration des composés phénoliques. L’étude des mécanismes d’action des DEHT a permis d’identifier les phénomènes favorisant l’extraction des composés phénoliques à partir des sarments. Un effet mécanique des DEHT, capable de fragmenter les sarments, est en majorité responsable de cette amélioration. Le procédé énergivore du broyage pourra alors être omis. Un effet électrique contribuant également à l’intensification du procédé d’extraction est démontré. La formation de peroxyde d’hydrogène durant le traitement par DEHT est quantifiée mais ne semble pas altérer les composés phénoliques qui sont des molécules à capacité antiradicalaire élevée. Quant aux études portées sur les marcs de raisins, la variation simultanée de plusieurs paramètres opératoires a permis l’optimisation de l’extraction aqueuse et hydroéthanolique des composés phénoliques en ayant recours à la méthodologie de surface de réponse (MSR). Le passage d’un milieu aqueux à un milieu hydroéthanolique a permis d’améliorer nettement le procédé d’extraction solide-liquide des composés phénoliques et l’utilisation de l’EAS a permis l’augmentation du rendement en composés phénoliques jusqu’à trois fois par rapport à l’optimum obtenu en milieu hydroéthanolique. / This study deals with the optimization of the extraction methods of phenolic compounds from viticulture and viniculture by-products, namely vine shoots and grape pomace. Several innovative technologies were tested and compared: high voltage electrical discharges (HVED), accelerated solvent extraction (ASE), ultrasounds (US) and pulsed electric fields (PEF). The solid-liquid extraction conducted on vine shoots showed that, amongst the studied solvents, water is the least effective. The addition of the β-cyclodextrin to water improves the extraction process but remains less effective than that with hydroethanolic mixtures. The extraction in alkaline medium gives the highest phenolic compound extraction yields. The intensification of phenolic compound extraction from vine shoots was possible thanks to new extraction technologies. The effectiveness of the tested methods was the least with US, followed by PEF to accomplish the highest phenolic yield with HVED. The filterability of the extracts was slower when their composition was complex, and the membrane technology allowed a good purification and concentration of phenolic compounds. The reason behind the high effectiveness of HVED was investigated. The action mechanisms of HVED were studied in details. A mechanical effect of HVED provoked vine shoots fragmentation and particle size reduction. This was the main phenomenon responsible for the intensification of the extraction process. It also suggested that a grinding pretreatment would not be necessary prior to HVED, which considerably diminishes the energy input of the overall process. The presence of a non-mechanical effect and its contribution in the efficiency of HVED were also shown. The formation of hydrogen peroxide during the treatment was observed. However it did not seem to alter vine shoot phenolic compounds since these demonstrated a high radical scavenging capacity. As for the studies conducted on grape pomace, the simultaneous variation of several operating parameters allowed the aqueous and hydroethanolic optimization of phenolic compound extraction from these byproducts by response surface methodology (RSM). The passage from an aqueous to a hydroethanolic medium clearly improved the solid-liquid extraction of phenolic compounds from grape pomace. The use of ASE further increased the phenolic compound yield up to three times as compared to the optimum obtained with a hydroethanolic solvent.

The study design includes the new building of the Moravian wine and cultural center on the Hlinky street in Brno. There are spaces designed for wineries (producing, maturing and storing wine), administration, congress center (with business lounges), spa, restaurant and gastro-studio, shops, exhibition, hotel and parking. The building is trapezoidal shape and replace the existing object in a vacant lot, only some historical cellars will be retained. The supporting structure consists of reinforced concrete skeleton system and reinforced concrete reinforcing inner core around the staircase leading to all floors, the building is covered by a flat green roof. On the facade dominates the element that its shape resembles the vine shoots, which holds the glass facade. The construction is divided into two expansion units - the main part of the building and garage, which is set into the ground sloping towards the south. The building has six floors and one underground floor. The first four floors are connected by open gallery at the southern facade.

This thesis presents a design of a new building — hotel, containing thirty accommodation units, space for employees, restaurant and vine bar meant for both customers of the hotel, and public. Hotel is situated in a cadastral area Brod nad Dyjí. Building consists of basement and five floors with proposed accommodation capacity of sixty people. The basement perimeter walls are designed from reinforced concrete with the width of 300 and 400 mm. The walls are insulated by XPS polystyrene which is 220 mm wide. Perimeter walls of the above-ground floors are proposed as a combination of reinforced concrete and reinforced skeleton concrete supplemented by masonry wall of therm type. All these constructions are insulated by 220 mm wide glass wool facade insulation. The building envelope is a light ventilated facade. All horizontal constructions are projected as reinforced concrete slabs with the width of 250 mm. The roof of the building consists of three flat parts. The lowest part of the roof is designed as a vegetation roof with extensive layer. The roof of the hotel is proposed as walkable with wear layer made of concrete pavement of dimension 400 x 400 mm. Construction of the roof above the fifth floor is designed as one layer flat roof on concrete slab with the width of 250 mm. Inside the object are three reinforced concrete staircases (main staircase, emergency staircase and staircase for staff). The main entrance to the object is situated on the south side of the property, while the staff entrances are located on the east and north-east part. Parking for the object customers is placed in front of the main entrance, parking for staff is situated on the north side. This thesis is processed in the form of project documentation for construction realisation.
