Foram confeccionados vinte e cinco corpos-de-prova da amostra coletada para cada m?todo de conforma??o e foi realizado o estudo das vari?veis de processamento das mat?riasprimas na fabrica??o de produtos cer?micos por extrus?o e prensagem. Os resultados foram obtidos ap?s as an?lises de: granulometria, ?ndice de plasticidade, fluoresc?ncia de raios X, difra??o de raios X, an?lises t?rmicas e propriedades tecnol?gicas. Atrav?s das curvas de gresifica??o obteve-se um comparativo entre a retra??o linear de queima, absor??o de ?gua, porosidade e massa espec?fica aparente. Os resultados mostram que a mat?ria-prima tem excelente distribui??o e caracter?sticas aceit?veis para o processamento de pe?as estruturais de cor escura a vermelha, necessitando, pois, da mistura de uma argila menos pl?stica com granula??o grossa, que funciona como redutor de plasticidade. manga da variedade Tommy Atkins. O desenho experimental do tipo Composto Central
Rotacional (DCCR) foi elaborado com o intuito de avaliar os efeitos da concentração de
lecitina de soja e carboximetilcelulose (CMC) utilizados como agentes estabilizadores de
espuma (0 – 1,50 g / 100 g), e diferentes valores de temperatura (53 – 87 °C) sobre as
concentrações de compostos bioativos (fenólicos, carotenoides e vitamina C), capacidade
antioxidante e os parâmetros de cor na polpa de manga. O estudo permitiu a identificação dos
principais compostos antioxidantes na polpa de manga, incluindo a mangiferina, que podem
ser utilizados como ingredientes na produção de alimentos funcionais com o objetivo de
melhorar suas propriedades nutricionais e antioxidantes. A concentração de lecitina de soja e
os valores de temperatura apresentaram efeito significativo negativo (p < 0,05) sobre o
conteúdo de fenóis totais, capacidade antioxidante e vitamina C, enquanto a concentração de
CMC mostrou efeito positivo (p < 0,05) para o somatório de fenólicos e capacidade
antioxidante. No entanto, a análise estatística não indicou efeito significativo (p > 0,05) sobre
o conteúdo de carotenoides totais e dos parâmetros de cor. O aumento da concentração total
de compostos fenólicos e carotenoides em manga seca contribuiu para maior capacidade
antioxidante da polpa de manga após o processo de foam mat drying. O estudo concluiu que a
temperatura de secagem em 80 °C e a concentração de CMC e lecitina de soja de 0,30 g / 100
g são bons parâmetros de operação para maior concentração de compostos fenólicos e
carotenoides e capacidade antioxidante. Posteriormente, produtos foram formulados com a
polpa seca nesta condição, e submetidos à análise sensorial, utilizando-se testes de escala
hedônica e triangular e intenção de compra. Todas os produtos com a polpa de manga
desidratada por foam mat drying apresentaram índice de aceitação maior de 44 %. A adição
da polpa de manga desidratada nas formulações da mousse e refresco demonstraram o
potencial uso para o desenvolvimento de alimento rico em substâncias fenólicas e
carotenoides, agregando propriedades benéficas ao alimento / Foam mat drying was used as dehydration method for Tommy Atkins mango pulp. The
effects of soy lecithin and carboxymethylcellulose (CMC) concentrations used as foam
stabilizers (0 – 1,50 g/100 g) and temperature values (53 – 87 °C) on levels of bioactive
compounds (phenolics, carotenoids and vitamin C), antioxidant capacity and the colour
measured in mango pulp were evaluated and optimized according to a multilevel factorial
design (DCCR). The present study allowed the identification of the main antioxidant
compounds in mango pulp such as mangiferin that can be utilized for the production of valueadded
ingredients for various food applications to enhance their nutritional and antioxidant
properties. Soy lecithin concentration and T had a negative effect (p < 0,05) on the phenolic
content, antioxidant capacity and vitamin C, while CMC concentration had a positive effect (p
< 0,05) for phenolic content and antioxidant capacity on the evaluated responses. However,
the statistical analysis indicated no significant effect of variables studied (p > 0,05) on the
total carotenoid and color parameters. The increasing of the total phenolics and carotenoids
content observed for dried mango contributed for higher antioxidant capacity of mango pulp
after foam mat drying process. This study concluded that drying temperature of 80 °C and
concentration of CMC and soy lecithin of 0,30 g / 100 g are good operating parameters for
increased content phenolic and carotenoids compounds and antioxidant capacity. After that,
products formulated with the dried pulp in this condition were submitted at the sensory
analysis, using hedonic scale and triangular testing and purchase intent. All products
formulated with the dried mango pulp by foam mat drying showed higher acceptance (rate 44
%). Addition of dried mango pulp in the mousse and refresh formulation demonstrates the
potential of using on the development of food rich in phenolic and carotenoids substances,
adding to food product beneficial properties

Détection de l’ADN de Toxoplasma gondii et évaluation des performances de deux tests sérologiques dans la viande équine vendue dans les supermarchés en France / Detection of Toxoplasma gondii DNA in horse meat from supermarkets in France and performance evaluation of two serological testsAroussi, Abdelkrim 19 May 2015 (has links)
En France, quelques cas de toxoplasmose sévère ont été liés à la consommation de viande de cheval qui avait été importée du continent américain où les souches atypiques de Toxoplasma gondii sont plus fréquentes qu’en Europe. De nombreuses études de séroprévalence existent dans la littérature mais l’estimation du risque d’infection par T. gondii après consommation de viande de cheval est impossible à cause de l’absence de validation des tests sérologiques et la corrélation inconnue entre la détection des anticorps anti T. gondii et la présence de kystes dans les tissus. Nous avons utilisé la technique de capture magnétique-réaction de polymérisation en chaine (CM-PCR) pour détecter l’ADN de T. gondii dans 231 échantillons de viande de cheval achetés dans des supermarchés en France et évalué la performance et le niveau d’agrément du test d’agglutination modifié (MAT) et de la méthode immuno-enzymatique ELISA dans les jus de viande. Nous avons également utilisé 196 sérums de chevaux provenant de l'institut français du cheval et de l'équitation à Chamberet, en France, pour évaluer la précision des tests sérologiques ELISA, MAT et le test d’immunofluorescence (IFAT). Les tests sérologiques manquaient de sensibilité, de spécificité, d’agrément entre eux et il n’y avait pas de corrélation avec la présence d’ADN de T. gondii dans la viande de cheval, ce qui suscite des doutes sur la fiabilité des données de séroprévalence de T. gondii chez les chevaux dans la littérature. L’ADN de T. gondii a été détecté dans 43% des échantillons de viande de cheval mais l’absence d’isolement de souche chez la souris suggère une faible répartition des kystes dans les muscles squelettiques et un faible risque d’infection par T. gondii avec la consommation de viande de cheval. Cependant, pour éviter tout risque de toxoplasmose, il est recommandé de bien cuire la viande. / In France, some cases of severe toxoplasmosis have been linked to the consumption of horse meat that had been imported from the American continent where atypical strains of Toxoplasma gondii are more common than in Europe. Many seroprevalence studies exist in the literature but the risk assessment of T. gondii infection after horse meat consumption is impossible because of the absence of validation of serological tests and the unknown correlation between detection of antibodies against T. gondii and presence of tissue cysts. We performed magnetic capture-polymerase chain reaction (MC-PCR) to detect T. gondii DNA in 231 horse meat samples purchased in supermarkets in France and evaluated the performance and level of agreement of the modified agglutination test (MAT) and Enzyme-linked immunosorbent assay (ELISA) in the meat juices. We also tested 196 horse sera from - institut français du cheval et de l'équitation, Chamberet, France - to assess the accuracy of ELISA, MAT and immunofluorescence antibody test (IFAT). The serological tests lacked sensitivity, specificity, agreement between them, and there was no correlation with the presence of T. gondii DNA in horse meat, raising concerns about the reliability of T. gondii seroprevalence data in horses from the literature. T. gondii DNA was detected in 43% of horse meat samples but the absence of strain isolation in mice from more than 100 horse meat samples suggest a low distribution of cysts in skeletal muscles and a low risk of T. gondii infection associated with horse meat consumption. However, to avoid any risk of toxoplasmosis, a thorough cooking of horse meat is recommended.

(EN) Civil society is made up of committed individuals, non-governmental non-profit organizations, their employees, volunteers, and other supporters, as well as relations among these actors. Civil society activities include community development, advancement of leisure and professional interests, services to vulnerable groups, as well as efforts to intervene in the political process and to support certain legislation and systemic change. This work focuses on the latter, i.e. the ways how civil society actors influence the political process. In the introductory chapter I present an overview of the current research of civil society and political activism in the Czech Republic and other post-communist countries of Central and Eastern Europe. In this chapter, I identify five central propositions that can be formulated on the basis of existing scientific discussion and I subject them to a critical assessment. In addition, I argue that against the backdrop of the discussion, two streams of literature can be distinguished which differ in their assessment of civil society's quality in Central and Eastern Europe. I try to clarify the reasons for these contradictions. In the second chapter I offer an overview of social movements theories, thus completing the theoretical basis for the empirical part of this...

Sustainability Assessment Tools for Food Products : Similarities, Deviations, and Future Enhancements / Hållbarhetsbedömningsverktyg för livsmedel : Likheter, skillnader och framtida möjligheterAnkarstig, Celina January 2022 (has links)
The growing human population puts pressure on our ecosystems and natural resources. One of the major causes of household’s environmental impact has been found to be the consumption of food, which is why actions need to be taken to decrease it. One such action has been taken by the Swedish grocery store Coop, who by sharing Sustainability Declarations for food products provides information on the sustainability impacts caused by their products. Coop has identified a need to further develop their framework and to ensure its legitimacy, something that this master’s thesis aims to contribute too. Seven sustainability assessment tools of food used within Europe were compared: Beelong Eco-Score, Eco Impact, Eco-Score, Impact Score Shopping, Köttguiden, Vegoguiden and the Sustainability Declarations, for which similarities and differences were identified. Some of the main similarities that were identified were that all tools applied a life cycle perspective, that they mainly focused on consumers and that they aimed to ease the decision of what food to purchase by providing information on sustainability impact. Some of the main differences were the range of scores, type of scores, which functional units were applied and from where the data were collected. Differences were also found in transparency, where some tools provided both scores and detailed descriptions of their framework, whilst others provided a few scores with a brief description of their framework. Whether social sustainability indicators were included or not also differed, and only the Sustainability Declarations were found to include it to a large extent, whilst Impact Score Shopping included it to some extent. To deepen the apprehension of the tools' methodologies and how these impacted the assessments, scores for six products: Almonds, Chocolate, Flour, Milk, Pork and Rice were also compared. The assessments of flour were similar across all tools, whilst the assessment of almonds differed the most. The Beelong Eco-Score generally assessed products lower than the others, whilst the Sustainability Declarations assessed the products higher. The differences were deemed to both be a result of different methodological approaches, but also to be a result of varying food regulations in the country of origin of the food products. To further develop the Sustainability Declarations, Coop could consider integrating Agribalyse in their assessments, and to widen their indicators to include seasonality and packaging to a larger extent. It could also be advantageous to provide their customers with alternatives and ideas of more sustainable products. The method used for the Sustainability Declarations seems to be in line with many of the choices and assumptions made for the methodologies within the other tools, and to be in line with the current state of knowledge in the scientific field. / Den växande mänskliga populationen utsätter ekosystemen och våra naturliga resurser för påtryckningar. Ett sådant initiativ har skapats av Coop, som genom att förse sina kunder med Hållbarhetsdeklarationer innehållande information om vilken påverkan produkter har på olika hållbarhetsaspekter möjliggör för sina kunder att göra mer informerade val av produkter. Coop har identifierat ett behov av att fortsätta att utveckla detta regelverk samt att försäkra sig om regelverkets legitimitet, något som denna masteruppsats syftar till att bidra till. Sju hållbarhetsbedömningsverktyg för mat som används inom Europa analyserades inom ramarna för denna masteruppsats. Verktygen som inkluderades var Beelong Eco-Score, Eco Impact, Eco-Score, Impact Score Shopping, Köttguiden, Vegoguiden och Hållbarhetsdeklarationerna, och dess likheter och olikheter identifierades. Några av de huvudsakliga likheterna som identifierades var att alla verktygen applicerar ett livscykelperspektiv, att de i huvudsak fokuserar på konsumenter och att deras mål är att bidra med information om matens hållbarhetsavtryck i syfte att förenkla valet av vilken mat konsumenterna ska köpa. Några av de huvudsakliga skillnaderna var vilken poängskala verktygen använde, vilken typ av poäng, vilken funktionell enhet som användes och var data hämtades från. Även verktygens transparens skilde sig åt, då några verktyg både hade tillgängliggjort alla sina produktbedömningar och detaljerade beskrivningar av deras regelverk, medan andra hade tillgängliggjort bedömningarna för några få produkter och endast redogjort för några grundläggande delar av deras metod. Det skiljde sig även mellan verktygen om sociala hållbarhetsindikatorer hade inkluderats eller inte. Endast Hållbarhetsdeklarationerna inkluderade specifika indikatorer och poäng för hållbarhetsaspekter, medans Impact Score Shopping inkluderade några få sociala hållbarhetsaspekter i deras indikatorer. För att ytterligare fördjupa förståelsen för metoderna bakom bedömningsverktygen och hur dessa tar sig i uttryck jämfördes också poängen för sex produkter, dessa var: mandlar, choklad, vetemjöl, mjölk och ris. Poängsättningen för mjöl var lik inom alla de analyserade verktygen, medan bedömningen för mandlar varierade mest. Verktyget Beelong Eco-Score gav generellt produkter lägst poäng, medan Hållbarhetsdeklarationerna generellt gav produkterna högst poäng. Skillnaderna bedömdes både bero på skillnader i metodval och vara ett resultat och skillnader i lagar och regelverk som påverkar matproduktionen inom länderna. För att utveckla Hållbarhetsdeklarationerna skulle Coop kunna utvärdera möjligheten att integrera Agribalyse i deras bedömningar, och att utöka deras indikatorer till att också inkludera säsongsvariationer och förpackningar i större utsträckning. Det skulle också kunna vara fördelaktigt att förse deras kunder med alternativa idéer på mer hållbara produkter. Metoden som använts för Hållbarhetsdeklarationerna fanns vara i linje med de val och antaganden som gjorts inom de undersökta verktygen. Metoden fanns även vara i linje med det nuvarande kunskapsläget i det vetenskapliga området.

Theoretical and numerical models on the diffusive and hereditary properties of biological structuresPollaci, Pietro January 2015 (has links)
The main bulk of this Thesis is focused on the response of cell membranes due to chemical and mechanical stimuli. Henceforth, it is mainly devoted to deduce how the key aspect of the cell response activated by chemical signaling can be predicted by a simplified energetics, making use of both theoretical models and numerical simulations. The a ention is focused on cell membranes embedding G protein-coupled receptors (GPRCs). By analyzing the behavior of cell mem- branes, one can isolate three main contributions in order to model their respon- se: (1) diffusion of receptors and transporters embedded in the lipid membrane; (2) conformational changes of the receptors; (3) membrane elasticity. Moreover, the interplay between TM confomational changes and lateral pressure of the lipid membrane against such TMs is introduced. The chemical potential of the receptor-ligand compound, deduced as the variational derivative of such energy, is compared with the one calculated by accounting for the work done by the lateral pressure. The result yields a relationship between the conformational field, the mechanical field (interpreted as either the thickness change or the areal change) and the distribution of the compounds receptor-ligand. The analysis of such resulting constitutive equation among those three quantities shows that, essentially, the reason why ligand-GPRCs compounds prefer to live on lipid ra is a necessity involving the interplay between the work performed by the lateral pressure and the need of TMs to change their conformation during ligand binding. Henceforth, mechanobiology gives a justification to the experimental findings of Kobilka and Lei ovitz, Chemistry Nobel Prizes 2012.

Some variational and geometric problems on metric measure spacesVedovato, Mattia 07 April 2022 (has links)
In this Thesis, we analyze three variational and geometric problems, that extend classical Euclidean issues of the calculus of variations to more general classes of spaces. The results we outline are based on the articles [Ved21; MV21] and on a forthcoming joint work with Nicolussi Golo and Serra Cassano. In the first place, in Chapter 1 we provide a general introduction to metric measure spaces and some of their properties. In Chapter 2 we extend the classical Talenti’s comparison theorem for elliptic equations to the setting of RCD(K,N) spaces: in addition the the generalization of Talenti’s inequality, we will prove that the result is rigid, in the sense that equality forces the space to have a symmetric structure, and stable. Chapter 3 is devoted to the study of the Bernstein problem for intrinsic graphs in the first Heisenberg group H^1: we will show that under mild assumptions on the regularity any stationary and stable solution to the minimal surface equation needs to be intrinsically affine. Finally, in Chapter 4 we study the dimension and structure of the singular set for p-harmonic maps taking values in a Riemannian manifold.

Semantic Image Interpretation - Integration of Numerical Data and Logical Knowledge for Cognitive VisionDonadello, Ivan January 2018 (has links)
Semantic Image Interpretation (SII) is the process of generating a structured description of the content of an input image. This description is encoded as a labelled direct graph where nodes correspond to objects in the image and edges to semantic relations between objects. Such a detailed structure allows a more accurate searching and retrieval of images. In this thesis, we propose two well-founded methods for SII. Both methods exploit background knowledge, in the form of logical constraints of a knowledge base, about the domain of the images. The first method formalizes the SII as the extraction of a partial model of a knowledge base. Partial models are built with a clustering and reasoning algorithm that considers both low-level and semantic features of images. The second method uses the framework Logic Tensor Networks to build the labelled direct graph of an image. This framework is able to learn from data in presence of the logical constraints of the knowledge base. Therefore, the graph construction is performed by predicting the labels of the nodes and the relations according to the logical constraints and the features of the objects in the image. These methods improve the state-of-the-art by introducing two well-founded methodologies that integrate low-level and semantic features of images with logical knowledge. Indeed, other methods, do not deal with low-level features or use only statistical knowledge coming from training sets or corpora. Moreover, the second method overcomes the performance of the state-of-the-art on the standard task of visual relationship detection.
