Ela discutiu quais meios a Gerência da Merenda Escolar (GEDIME) utiliza para levantar o saldo da merenda escolar dos depósitos/estoque das escolas da Coordenadoria Distrital de Educação 4 (CDE4), da Secretaria de Estado de Educação e Qualidade do Ensino do Amazonas (SEDUC/AM), durante a operacionalização do Programa Nacional de Alimentação Escolar (PNAE). Essa preocupação baseia-se na determinação legal da Constituição Federal (CF) que estabelece atendimento aos alunos, durante todo o ano letivo, com fornecimento de alimentação escolar. A pesquisa teve como questão central: Quais os desafios da GEDIME para a otimização do controle do saldo de merenda das escolas estaduais da capital do Amazonas, em específico a CDE4? Como objetivo geral pretendeu compreender como a gestão de estoque dos suprimentos da merenda das escolas da CDE4 é realizada. Como objetivos específicos, buscou: a) descrever como acontece o processo de distribuição e controle da demanda de gêneros alimentícios na rede estadual de educação do estado do Amazonas; b) analisar as dificuldades encontradas no controle dos estoques de suprimentos da merenda escolar nos depósitos das escolas pesquisadas. O estudo, de abordagem qualitativa, utilizou como instrumentos metodológicos questionários para os gestores das escolas e entrevistas semiestruturadas com os demais atores envolvidos no processo. Os resultados apontaram a necessidade de planejamento estratégico para reduzir os gargalos logísticos, além de melhorias na qualidade dos alimentos de alta perecibilidade. Partindo dos dados produzidos pela investigação, propôs-se, ao final, uma ferramenta de gestão a ser utilizada pela SEDUC, ou seja, um Plano de Ação Educacional (PAE), composto por ações que buscam a melhoria das problemáticas evidenciadas. / The present master´s dissertation was developed under the scope of the Professional Master in Management and Evaluation of Education (PPGP) of the Center for Public Policies and Education Evaluation of the Federal University of Juiz de Fora (CAEd / UFJF). It discussed the ways in which the School Meals Management (GEDIME) uses to raise the balance of school lunch of the stores from the schools that belong to District of Education Coordination 4 (CDE4), of the Secretariat of Education and Quality of Teaching for Amazonas State(SEDUC) / AM), during the implementation of the National School Meals Program (PNAE). This concern is based on the legal determination of the Federal Constitution (CF) that establishes the provision of school meals to all students, throughout the school year. The research had as central question: What are the challenges of GEDIME to optimize the control of the lunch balance of state schools in the capital of Amazonas, specifically CDE4? As a general objective, it wanted to understand how the supply stock management of school lunches from CDE4 is carried out. As specific objectives, it sought to: a) describe how the process of distribution and control of the demand of foodstuffs in the education network of the state of Amazonas happens; b) to analyze the difficulties found in the control of supplies of school meals of the researched schools. The qualitative study used as methodological tools questionnaires for school managers and semi-structured interviews with the other actors involved in the process. The results pointed out the need for strategic planning to reduce logistics bottlenecks, as well as improvement in the quality of foods that tendency to perish. Based on the data produced by the research, it is proposed, at the end, a management tool to be used by SEDUC, that is, an Educational Action Plan (PAE), composed of actions that seek to improve the issues highlighted.

Atualmente, tem como objetivo, além de fornecer alimentação aos alunos durante o período escolar, melhorar suas condições nutricionais e a capacidade de aprendizagem e formar hábitos alimentares saudáveis. Apesar das mudanças visarem à melhoria da qualidade das refeições servidas e do gerenciamento, o PNAE ainda enfrenta dificuldades, o que implica principalmente na qualidade da alimentação escolar. Novas tecnologias, como o sistema cook chill e vegetais minimamente processados (VMP), vem sendo desenvolvidas e aplicadas em vários segmentos da alimentação de coletividades, pelas vantagens que oferecem principalmente para a produção centralizada de refeições, sendo porém, raras as prefeituras que se propõem a estudá-las e implantá-las. O objetivo do presente trabalho foi analisar o PNAE no estado de São Paulo em relação aos sistemas de produção de refeições utilizados, centralizado (SC) e descentralizado (SD), identificando os fatores de sucesso e insucesso, além de avaliar o SC com foco na utilização de novas tecnologias, como cook chill e VMP. Foi realizada uma pesquisa quali-quantitativa não probabilística por julgamento, com a elaboração e aplicação de instrumentos de coleta de dados, inicialmente em uma amostra de 54 municípios. A partir dessa amostra, obteve-se uma segunda, por amostragem probabilística sistemática, composta por doze municípios, sendo seis com SC e seis com SD. Em visitas técnicas nesses municípios, foram aplicados outros dois instrumentos de coleta de dados que foram analisados estatisticamente por distribuição de frequência e medidas de tendência central. Verificou-se a influência dos sistemas em relação a alguns fatores: a oferta de alimentos foi considerada adequada somente em quatro dos seis municípios com SD. A taxa de adesão média à alimentação escolar nos municípios com esse sistema foi de 79% contra 62% nos municípios com SC, podendo haver associação com a atratividade e a temperatura das refeições (em três destes municípios as refeições foram distribuídas com temperaturas inferiores a 60°C). Considerada fator de sucesso no SD, a atratividade obteve nota máxima (dez pontos) em três municípios. Nos municípios com SC, a pontuação máxima foi sete para um município. Nos municípios com SD, em quatro de dez unidades escolares, a porcentagem de sobras foi inferior a 7%. Nos municípios com SC, em seis de dez unidades escolares, também foi menor que 7% e houve menor desperdício, com índice médio de resto de 16% em relação ao SD (11%). Em cinco unidades escolares dos municípios com SD, o índice de restos foi menor que 6%. Os resultados mostraram que há a necessidade de estudar novas alternativas que possam garantir a produção com eficiência de refeições adequadas, seguras e atrativas. De acordo com os resultados, a centralização da produção associada à utilização de novas tecnologias, pode ser eficaz desde que haja adequações às peculiaridades de cada município / Abstract: The Brazilian School Meal Programme (PNAE) has faced significant changes since its creation. Besides providing food to students during the school day, it aims to improve learning and encourage healthier eating habits. Despite the recent managerial efforts, PNAE still faces challenges such as the improvement of the quality of school meals. On the other hand, new technologies have been developed and applied to food services, for example, the cook-chill system and minimally processed vegetables (MPV), which are especially suitable for centralized meals production. However, seldom are the Brazilian counties - responsible for the PNAE local administration - that invest in these nonconventional food processing technologies. The objective of this study was to assess the PNAE management in counties located at the state of São Paulo, Brazil, attempting to identify factors of success or failure with respect to meals production systems - centralized (CS) or decentralized (DS). Initially, a sample of 54 counties was determined and from them a sub-sample (N=12) was systematically drawn, being six CS-cities and six DS-cities. Technical visits in the sampled cities were made and a quali-quantitative methodological approach was used to collect data, which were further submitted to descriptive statistically analyses summarized to be analyzed and interpreted. Food supply could be considered adequate in only four of the six cities with DS. About 79% of the students in the cities of DS make their meals in the schools' restaurants, versus 62% in cities with CS and this fact may be due to attractiveness and the temperature of the meals: in three of CS-cities, the meals were served at temperatures lower than 60°C, which diminishes sensory acceptability. Considered a success factor in DS, attractiveness reached the highest rate (ten points) in three cities, while in cities with CS, the highest score was only seven. In four out of ten schools in the cities with DS the percentage of surplus was lower than 7%. Conversely, in cities with CS six out of ten schools presented surplus lower than 7%. With respect to plate waste CS schools showed an average rate of 16% compared to only 11% in DS schools. In conclusion, results showed that there is a need to consider new alternatives to ensure meals production efficiency aiming at safety and attractiveness. Studies show that fingerlings production are feasible and recommend diets with crude protein levels between 45 and 50%, with 30% of total protein should be originated from fish meal. The objective of this study was to evaluate the performance of peixe-rei fingerlings, fed with other sources of animal protein, in substitution of fish meal, allowing new alternatives in the formulation and development of diets for regional fish species. The experiment was conducted in the Ictiology Laboratory, Animal Science Department, Faculty of Agronomy Eliseu Maciel. Experimental units were consisted of 39 water tanks with capacity of 50 liters each. Each aquarium received five peixe-rei fingerlings, measuring 8.02 +/- 0.28 cm of total length and average weight of 3,30 +/- 0,58 g. Environment variables as temperature, dissolved oxygen, pH, alkalinity and total ammonia did not show significant variations. Experimental diets were formulated using the software Super Crac, containing a minimum of 30% of aninal meal (fish, earth worms, chicken guts or bovine blood). The rate of feeding was of 5% of biomass/day. Experimental design was entirely randomized, with twelve (12) treatments and three replications, where fish meal was replaced by bovine blood meal, chiken guts meal and earth worm meal at levels of 25, 50, 75 and 100% and compared to a control treatment, where the only source of animal protein was fish meal. Results of weight gain show that chicken guts meal is a good substitute for fish meal in the diest of peixe-rei; the use 56% of gut meal and 44% of fish meal presented the highest weigth gain. Blood meal substitutes satisfactorily the fish meal up to a level of 50%. Earth worm meal included as substitute of fish meal up to level of 19.7% favored the weight gain of animals. The results show the feasibility of partial replacementof fish meal by alternative sources of animal protein originating from animal residues, in the diet of peixe-rei. / O peixe-rei do gênero Odontesthes é nativo do sul do Brasil onde representam importante fonte de renda para pesca artesanal da região e têm sido objeto de estudos para aproveitamento em cultivo intensivo. Estudos viabilizam a produção de alevinos e recomendam dietas com teores entre 45 e 50% de proteína bruta, sendo que 30% do total da proteína devem ser originadas da farinha de peixe. O objetivo deste trabalho foi avaliar a resposta de alevinos de peixe-rei, alimentados com outras fontes de proteína animal, em substituição a farinha de peixe, viabilizando novas alternativas na formulação e desenvolvimento de dietas para peixes. O experimento foi realizado no laboratório de Ictiologia do Departamento de Zootecnia da Faculdade de Agronomia Eliseu Maciel. As unidades experimentais foram constituídas de 39 aquários de 50 litros cada um. Cada aquário recebeu cinco alevinos de peixe-rei, medindo 8,02 ± 0,28 cm de comprimento total e peso médio de 3,30 ± 0,58 g. As dietas experimentais foram formuladas com auxílio do software Super Crac®, contendo no mínimo 30% de farinha de origem animal (peixe, minhoca, vísceras de aves ou sangue bovino). A taxa de alimentação foi de 5% da biomassa/dia. O delineamento experimental foi completamente ao acaso, com treze (13) tratamentos e três repetições por tratamento, onde a farinha de peixe foi substituída por farinha de sangue bovino, farinha de vísceras de aves e farinha de minhoca, em níveis de 25, 50, 75 e 100%, e comparadas a um controle, onde a única fonte de proteína animal foi á farinha de peixe. As variáveis ambientais temperatura, oxigênio dissolvido, pH, alcalinidade e amônia total não apresentaram variações significativas. Os níveis ótimos de substituição da farinha de peixe por proteína alternativa foram de 56% para a farinha de vísceras, 50% para farinha de sangue e. 19,7% para farinha de minhoca. Os resultados demonstram a viabilidade de substituição parcial da farinha de peixe, por fontes alternativas de proteína animal oriunda de resíduos de animais terrestres, na dieta de peixe-rei. .

This present study is a qualitative observative study. The aim with the study was to iden-tify the potential or possibility applying musical activities in preschool through a music didactic perspective. The collection of the empirical research took place at the time for the meal in the preschool. The most important observations were the meetings between children and background music. The main thesis of this study was that background music at preschool’s pedagogic meals can contribute to make teachers notice what, when and where musical education could be applied for either a prepared or spontaneous educa-tional situation. To test the thesis, the meeting between children in preschool and back-ground music through a musical didactic perspective was observed. The main concepts used in the study were as follows: didactic, musical didactic, pedagogic meals and back-ground music. The observations showed that in the meeting of background music not only did the children interact with each other, but also shows interaction with the music as well. The children showed interaction by moving their bodies, both in the same rhythm and not in the same rhythm as the background music. There was an example of a child who moved along with the music and then paused to eat the food. To conclude adding background music to the pedagogic meals within the preschool environment could help preschool teachers exploring the possibilities combining pedagogic meals together with pedagogic musical activities. Hopefully, this study could start discussions about children, background music and esthetic education.

School Library Access as Related to Student Reading Comprehension in an Urban East Tennessee School District

The purpose of this study was to explore the impact of school library access on student reading comprehension as measured by the Easy CBM universal screener test. The population consisted of 5th and 6th grade students enrolled in one intermediate school in an urban school system in East Tennessee. Data were analyzed for the population of the 2016-2017 academic school year. Specifically, this study considered the impact of school library access on students who qualify for free or reduced meals. A quantitative study was used to find correlations and differences in the reading comprehension data and library checkout data for fifth and sixth grade students who do or do not qualify for free or reduced meals in an urban East Tennessee school district. A quasi-experimental design was selected because preexisting data were collected on 1,003 fifth and sixth grade students enrolled and assessed during the 2016 – 2017 school year. The reading comprehension levels from the Easy CBM universal screener were collected for each of the students in the study. The number of class library visits for each student’s language arts teacher as well as the total checkout numbers for each student were also collected for each student in the study. The results of the study indicated a significant positive correlation in the number of checkouts and class library visits for all students. Results also indicated a significant positive correlation in the number of checkouts for students who qualify for free and reduced meals when these students are taken to the library as part of their language arts instructional block. Additional results of the study indicated a significant positive correlation between the number of books checked out and reading comprehension scores when all students are considered. There was significant difference in the number of books checked out by students who did not qualify for free or reduced meals, with those students checking out approximately one more book than students who do qualify for free or reduced meals. Finally, results of the study indicate a significant difference in reading comprehension scores for student who students who do not qualify for free or reduced meals and students who do qualify. Students who do not qualify for free or reduced meals scored significantly higher than students who do qualify.
