Empreendedores e qualidade de vida no trabalho: um estudo sobre comportamento alimentar / Entrepreneurs and quality of work at life: study on eating behavior

Este trabalho apresenta a percepção de Qualidade de Vida no Trabalho (QVT) dos empreendedores que estão vinculados ao Programa de Incubadoras Tecnológicas do Estado de São Paulo. A principal contribuição foi a identificação da satisfação dos empreendedores com a QVT, nas dimensões biopsicossocial e organizacional, e o mapeamento do Comportamento Alimentar (CA). Para os empreendedores, a iniciativa de abrir seu próprio negócio está relacionada à busca de prazer no trabalho. A opção por empreender faz que aumente sua carga horária de trabalho, diminua as atividades de lazer e passatempo com familiares, além de deixar a atividade física e os cuidados com saúde postergados para um futuro incerto. Esse ritmo de trabalho afeta constantemente o modo de vida dos trabalhadores, inclusive a pausa para refeições. Foi realizada uma pesquisa exploratória descritiva pelos métodos quantitativo e qualitativo. Foram aplicados pessoalmente os questionários BPSO-96 para QVT e o Questionário de Hábitos Alimentares para CA. Os respondentes somam 72 empreendedores de Incubadoras de quatro municípios paulistas, uma amostra não-probabilística, sendo realizados três grupos focais. A maioria dos empreendedores da amostra são homens e estão com sobrepeso. Os resultados da Análise Fatorial não demonstram uma forte relação entre Comportamento Alimentar e QVT. Tanto os dados quantitativos quanto qualitativos mostram que os empreendedores percebem de forma positiva sua QVT. Percebem sua alimentação como saudável e estão satisfeitos com seu Comportamento Alimentar (CA). Pode-se, então, concluir que os empreendedores estão satisfeitos com sua QVT, principalmente, em sua dimensão organizacional e psicológica; atribuem à QVT um significado de realização pessoal, por estarem construindo sua empresa com sucesso. Foi identificada uma nova categoria habitabilidade como fator importante para a QVT. Não relacionam o Comportamento Alimentar à QVT. Possuem um padrão positivo de CA alinhado ao estilo de vida empresarial que possuem. Mesmo estando satisfeitos com sua alimentação, existe certa negligência com a dimensão biológica quando se trata da QV T, eles reconhecem uma não satisfação com relação às questões de promoção da saúde. Faz-se necessário investir em ações que promovam um desenvolvimento integrado das dimensões da QV T. / This work presents the perception of entrepreneurs\' Quality of Work at Life (QWL) who are linked to the Technological Incubators Program of São Paulo. The main contribution was the identification of entrepreneurs satisfaction with the QWL, in the biopsychosocial and organizational dimensions, and the mapping of Eating Behavior (EB). For the entrepreneurs, the initiative of opening their own business is related to the search of pleasure at work. The entrepreneurial option increases their workload, decreases their leisure activities and pastime with relatives postponing physical activity and health care to an uncertain future. This working pace constantly affects the workers way of life, including meal breaks. An exploratory and descriptive research was carried out through quantitative and qualitative methods. Questionnaires BPSO- 96 for QWL and the Eating Habits Questionnaire for EB were completed. Participants are 72 incubators from four cities in the state of São Paulo, a non-probabilistic sample, carried out in three focal groups. Most male entrepreneurs of the sample are overweight. The results of Factor Analysis do not reveal a strong relation between Food Behavior and QWL. Both quantitative and qualitative data show that the entrepreneurs notice their QWL in a positive way, and are satisfied with it. They believe their food is healthy and are satisfied with their Eating Behavior (EB). It can be concluded that the entrepreneurs are satisfied with their QWL, mainly in their organizational and psychological dimension; they regard QWL as self- fulfillment, as they are building their company successfully. It was identified a new category liveability as an important factor to QWL. The participants do not relate the Eating Behavior to the QWL. They have a positive pattern of EB adapted to their business lifestyle. Even being satisfied with their eating, there is a certain neglect with the biological dimension regarding QWL; they recognize a non-satisfaction concerning health issues promotion. It is necessary to an integrated development of the QWL dimensions.

Some patognomonics symptoms of this disorder are hyperphagia and obesity, which in most cases happens before the age of six and they severely harm the quality of life of such patients. The present study has focused on the behavioral area and aimed at identifying the daily frequency of eating habits and the caloric intake of children with PWS; identifying the variables of family interaction which control the eating behavior and tracing a cognitive and behavioral profile of the PWS patients. The sample was made by eleven children with a PWS genetic diagnosis, between the ages of 7 and 16 and their parents. The data collecting instruments were: a questionnaire for the eating habits record of the children, an interview to identify controlled environment variances of the eating behavior and the Brazilian version of the Child Behavior Checklist for ages 6-18 (CBCL/6-18) by Achenbach and the WISC-III test (Wechsler Intelligence Scale for Children- 3 rd edition). The data went through an evaluation which included topographic record and functional analysis of eating behavior and others types of children´s non- adaptive behaviors and analyses and comparison of frequency distribution of these behaviors in relation to cognitive and behavioral profiles of the patients. The group was characterized as obese according to the BMI calculation. The main results showed that 82% from the total classified in the WISC-III test as mentally retarded, 100% of the sample was at clinic level and in at lest one of the syndrome scales, competences or problems of the instrument CBCL/6-18. One of the high frequency behavioral classes was the negotiations to obtain food from their parents. There is a behavioral chart configured as pathological in terms of response for tantrums, manipulation, aggressiveness, breaking of rules and oppositionist behavior. Psychiatric comorbidity has also been identified, associated to high consumption of psychotropic drugs. / A Síndrome de Prader Willi (SPW) é uma doença genética de origem paterna causada pela perda de expressão de genes no cromossomo 15. Alguns sintomas patognomônicos da doença são a hiperfagia e a obesidade que, na maioria dos casos, ocorre antes dos seis anos e compromete severamente a qualidade vida desses pacientes. O presente estudo se concentrou na área comportamental e teve como objetivos: - identificar a freqüência diária de comportamentos alimentares e ingestão calórica de crianças com SPW; - identificar as variáveis de interação familiar que controlam os comportamentos alimentares e; - traçar um perfil comportamental e cognitivo dos sujeitos com SPW. A amostra foi composta por onze crianças com diagnóstico genético de SPW, na faixa etária de 7 a 16 anos e seus pais. Os instrumentos de coleta de dados foram: um questionário para o registro de hábitos alimentares da criança, uma entrevista para identificar variáveis ambientais controladoras dos comportamentos alimentares, a versão brasileira do Child Behavior Checklist for ages 6-18 (CBCL/6-18) de Achenbach e o Teste WISC-III (Escala de Inteligência Wechsler para crianças 3ª edição). Os dados passaram por uma avaliação que incluiu um registro topográfico e análise funcional de comportamentos alimentares e de outros tipos de comportamentos desadaptativos das crianças e análise e comparação das distribuições de freqüências desses comportamentos em relação aos perfis cognitivo e comportamental dos sujeitos. O grupo foi caracterizado como obeso de acordo com o cálculo do IMC. Os principais resultados apontaram que 82% do total classificaram-se no teste WISC-III como débil mental, 100% da amostra pontuaram na faixa clínica em, pelo menos uma das escalas das síndromes, competências ou problemas do instrumento CBCL/6-18. Uma das classes comportamentais de alta freqüência foram as negociações para obter alimentos dos pais. Há um quadro comportamental configurado como patológico em termos de respostas de birra, manipulação, agressividade, quebrar regras e oposicionismo. A comorbidade psiquiátrica também foi identificada, inclusive associada a um consumo elevado de psicotrópicos.

Efeitos de um programa de intervenção cognitivo-comportamental em grupo para crianças obesas / Effects of a group cognitive-behavioral intervention program for obese children

A obesidade infantil é considerada um grave problema de saúde pública, tem aumentado de forma significativa e resulta em complicações físicas e psicológicas. O presente trabalho teve como objetivo verificar efeitos de um programa de intervenção cognitivo-comportamental em grupo com crianças obesas sobre a qualidade de vida, depressão, ansiedade, comportamento alimentar e índice de massa corpórea, quando comparados com um grupo controle. Participaram do estudo 65 crianças e suas mães, divididas em grupo experimental (n=35) e grupo controle (n=30) que foram avaliadas em três momentos: avaliação inicial, reavaliação (após 10 semanas) e seguimento (após de seis meses). Nas avaliações as mães responderam ao Questionário do Comportamento Alimentar em Crianças (CEBQ) e nas crianças foram aplicados o Questionário de Avaliação de Qualidade de Vida em Crianças e Adolescentes (AUQEI), o Inventário de Depressão Infantil (CDI) e a escala de ansiedade O Que Penso e Sinto (OQPS). O grupo experimental foi submetido a um programa de intervenção psicológica baseado no modelo da Terapia Cognitivo - Comportamental. Este programa constou de 10 sessões semanais com duas horas de duração cada. Durante o programa foram utilizadas as técnicas: formulação e psicoeducação, registro de pensamentos disfuncionais, balões de pensamento, reestruturação cognitiva, \"role-play\", controle de estímulos, relaxamento, respiração, treino em habilidades sociais e em habilidades educativas parentais. O grupo controle recebeu atendimento padrão oferecido pela equipe do Ambulatório de Endocrinologia Pediátrica (médico endocrinologista pediátrico, psicóloga e nutricionista) durante os dias de consultas agendados. Dentre os participantes deste estudo houve predominância do sexo feminino, idade entre sete e nove anos e escolaridade entre a 1ª e 4ª séries. Com relação aos dados sócios demográficos não foram encontradas diferenças significantes entre os grupos. Foi verificada diminuição significante entre os momentos de avaliação do percentil de obesidade no grupo experimental; dos sintomas depressivos e ansiosos e melhora da qualidade de vida, em comparação com o grupo controle. Os dados também indicam mudança significante no comportamento alimentar das crianças do grupo experimental em relação ao grupo controle. Considera-se que o programa de intervenção cognitivo-comportamental apresentou resultados satisfatórios na melhora de aspectos emocionais e comportamentais de crianças obesas, bem como na diminuição da obesidade. Argumenta-se que programas como este deveriam ser amplamente utilizados em ambulatórios de obesidade infantil para melhorar a qualidade de vida das crianças. / Obesity in children is considered a serious public health problem that has been increasing significantly and resulting in a physical and psychological complications. The objective of this paper is to verify the effects of a group cognitive-behavioral intervention with obese children on quality of life, depression, anxiety, eating behavior and body-mass index, when compared to a control group. Sixty-five children and their mothers participated in this study. The children were divided in two groups: an experimental group (n=35) and a control group (n=30) and were evaluated in three stages: initial evaluation, re-evaluation (after 10 weeks) and follow-up (after six months). In these assessments the mothers answered the Children\'s Eating Behavior Questionnaire (CEBQ) and the Quality of Life Evaluation Scale (AUQEI), the Child Depression Inventory (CDI) and the anxiety scale What I Think and Feel (OQPS) were applied on the children. The experimental group was submitted to a psychological intervention program based on the Cognitive Behavioral Therapy model. This program constituted of 10 two-hour weekly sessions. During the program the following techniques were used: formulation and psychoeducation; recording of dysfunctional thoughts; thought balloons; cognitive restructuring; role-playing; stimulus control; relaxation; breathing; practice in social skills and parental education skills. The control group received standard assistance given by the Pediatric Endocrinology Outpatient team (pediatric endocrinologist, psychologist and nutritionist) on the days they had scheduled appointments. In this study there was a predominance of participants of the female sex, between the ages of 7 to 9 and education ranging from 1st to 4th grades. In regards to the socio-demographic data there was no significant difference between the groups. Considerable decrease in the percentage of obesity; in depression and anxiety symptoms and an increase in quality of life was observed in the experimental group between evaluation stages. The data also indicated a significant change in the eating behavior of the children of the experimental group in relation to the control group. We thus consider that the cognitive-behavioral intervention program presented satisfactory results in the emotional and behavioral aspects of obese children, in addition to a decrease in obesity. It has been discussed that programs such as this one should be widely used in out-patient clinics that treat obese children to improve the quality of life of these children.

Fractionner son alimentation consiste à augmenter la fréquence de ses prises alimentaires, sans modifier la quantité totale d’énergie ingérée. Dans ce travail de thèse, nous avons étudié les effets du fractionnement alimentaire sur l’appétit et la balance énergétique chez des sujets de poids normal et obèses. Le premier objectif était d’ordre méthodologique : nous avons proposé et validé un dispositif original d’étude de l’appétit, basé sur la duplication du même protocole dans deux lieux de recherche différents et sur l’utilisation d’un restaurant expérimental, en reproduisant une situation écologique de repas. Ce dispositif permet de répondre à deux enjeux méthodologiques. D’une part, il permet une approche intégrée de l’appétit, grâce à l’association de mesures subjectives (sensations de faim et de satiété), physiologiques (biomarqueurs de l’appétit : ghréline et GLP-1) et comportementales (consommations, choix et rythmes alimentaires). D’autre part, le caractère écologique de la situation de repas proposée assure une bonne validité externe des résultats. Le second objectif était d’étudier, grâce à cette méthodologie, les conséquences à court terme du fractionnement alimentaire sur les sensations de faim, les hormones qui régulent l’appétit, le comportement au cours du repas qui suit le fractionnement, ainsi que sur les orientations métaboliques. Chez des sujets de poids normal, les approches subjectives, physiologiques et comportementales ont toutes montré une diminution de l’appétit en réponse au fractionnement. En revanche, nous n’avons pas obtenu les mêmes bénéfices comportementaux chez les obèses, chez qui le fractionnement n’a pas induit de baisse des apports énergétiques au cours du repas suivant. Sur le plan métabolique, nous avons montré les mêmes effets dans les deux populations, à savoir une insulinémie maintenue au-dessus de son niveau basal, entraînant une inhibition prolongée de la lipolyse, elle-même caractérisée par une baisse des concentrations plasmatiques en acides gras non estérifiés. Le fractionnement a également entrainé une diminution de la dépense énergétique via la thermogénèse alimentaire. Ce travail met en évidence les bénéfices possibles du fractionnement alimentaire chez les personnes de poids normal pour mieux contrôler leur appétit. En revanche, cette stratégie ne semble pas adaptée pour des personnes obèses. Les effets sur la dépense énergétique et les orientations métaboliques, potentiellement négatifs, doivent être étudiés sur de plus longues périodes / This thesis project consists in studying the effects of eating smaller more frequent meals, with no change in energy intake, on appetite and energy balance in normal weight and obese subjects. The first objective was methodological: we proposed and validated an original methodology for studying appetite, based on the duplication of the same protocol in two different research centers, and the use of an experimental restaurant, reproducing an ecological meal situation. This methodology enables to answer two methodological issues. Firstly, it allows an integrated approach of appetite, associating subjective (hunger and satiety feelings), physiological (biomarkers of appetite: ghrelin and GLP -1) and behavioral (food intake, choices and eating rhythms) measurements. Secondly, the ecological character of the eating situation we proposed, ensure a good external validity of the results. The second objective was to assess, thanks to this methodology, the short term consequences of eating smaller more frequent meals on subjective appetite, on hormones that regulates appetite, on eating behaviors during the subsequent meal, and on metabolic orientations. In normal weight subjects, subjective, physiological and behavioral approaches showed a decrease in appetite after eating smaller more frequent meals, while in obese subjects we did not obtain the same beneficial behaviors: obese subjects did not consume less energy during the subsequent meal. Metabolic results showed the same effects in both normal weight and obese subjects: insulin concentrations were maintained above their basal level, leading to an extended inhibition of lipolysis, characterized by a decrease in plasmatic concentrations of non-esterified fatty acids. Eating smaller more frequent meals also decreased energy expenditure via diet induced thermogenesis. This work highlights the fact that eating smaller more frequent meals may be beneficial in normal weight individuals in order to better control appetite, but it does not seem to be an adequate strategy in obese individuals. The effects on energy expenditure and metabolic orientations, potentially negative, should be studied over a longer period

Psychological and Cognitive Factors that Influence Post-Exercise Energy Intake in Normal Weight and Overweight Sedentary Males

The primary purpose of this study was to evaluate the effects of a single bout of moderate-intensity exercise on acute (ad libitum lunch) post-exercise energy intake (PE-EI) and 12-hour energy intake in normal-weight and overweight sedentary males. Accuracy in estimating energy intake (EI) and energy expenditure (EE), solid vs. liquid carbohydrate intake, mood, and perceived hunger were also assessed. The study consisted of two conditions, exercise and rest, with each subject participating in each condition, in a counterbalanced-crossover design on two days. The participants were randomly assigned to either the exercise or resting (seated) control condition on the first day of the experiment, and then the condition was reversed on the second day. Exercise consisted of walking on a treadmill at moderate-intensity for 60 minutes. Eighty males, mean age 30+8 years were categorized into five groups according to weight status (overweight/normal-weight), dietary restraint status (high/low), and dieting status (yes/no). The main effects of condition and group, and the interaction were not significant for acute (lunch) or 12-hour PE-EI. Overall, participants estimated EE for exercise at 46% higher than actual exercise EE, and they estimated EE for rest by 45% lower than actual resting EE. Participants significantly underestimated EI at lunch on both the exercise and rest days by 43% and 44%, respectively. Participants with high restraint were significantly better at estimating EE on the exercise day, and better at estimating EI on the rest day. Mood, perceived hunger, and solid vs. liquid carbohydrate intake were not influenced by dietary restraint, weight, or dieting status. In conclusion, a single bout of moderate-intensity exercise did not influence PE-EI in sedentary males in reference to dietary restraint, weight, and dieting status. Results also suggested that among sedentary males, there is a general inability to accurately estimate calories for moderate-intensity physical activity and EI. Inaccurate estimates of EE and EI have the potential to influence how males manage their weight.

Non-normative eating behavior and psychopathology in prebariatric patients with binge-eating disorder and night eating syndrome

Background: Binge-eating disorder (BED) as a distinct eating disorder category and night eating syndrome (NES) as a form of Other Specified Feeding or Eating Disorders were recently included in the fifth edition of the Diagnostic and Statistical Manual of Mental Disorders (DSM-5). Objectives: This study sought to investigate the prevalence of BED and NES and associations with various forms of non-normative eating behavior and psychopathology in prebariatric patients. Setting: Within a consecutive multicenter registry study, patients in six bariatric surgery centers in Germany were recruited. Methods: Overall, 233 prebariatric patients were assessed using the Eating Disorder Examination and self-report questionnaires. Assessment was unrelated to clinical procedures. Results: Diagnostic criteria for full-syndrome BED and NES were currently met by 4.3% and 8.2% of prebariatric patients, respectively. In addition, 8.6% and 6.9% of patients met subsyndromal BED and NES criteria, respectively. Comorbid BED and NES diagnoses were present in 3.9% of patients. In comparison to patients without any eating disorder symptoms, patients with BED and NES reported greater emotional eating, eating in the absence of hunger, and more symptoms of food addiction. Moreover, differences between patients with BED and NES emerged with more objective binge eating episodes and higher levels of eating concern, weight concern, and global eating disorder psychopathology in patients with BED. Conclusions: BED and NES were shown to be prevalent among prebariatric patients, with some degree of overlap between diagnoses. Associations with non-normative eating behavior and psychopathology point to their clinical significance and discriminant validity.

Sleep and Eating Behavior Among Adolescent Females with Overweight or Obesity: The Role of Appetite-Related Cognitive Processes

Insufficient sleep duration and poor sleep quality can potentiate weight gain and obesity in adolescents. Furthermore, overweight and obese females are at unique risk for insufficient sleep and associated health complications. We examined self-reported sleep duration and self-reported adequacy of sleep duration as potential moderators of the relationship between eating behavior and several cognitive processes including hedonic hunger, executive dysfunction, and self-control. We used a multisystemic conceptual framework to highlight the pathways that may explain the relationship between sleep behaviors and the Healthy Eating Index (HEI). The study employed a cross-sectional design. Participants completed baseline measures of height and weight, self-control, executive functioning, hedonic hunger, and sleep functioning. Self-report of poor sleep adequacy directly influenced executive dysfunction which consequently explained a decrease in self-control functioning. Moreover, we evaluated whether sleep deprivation and extension influences caloric intake. We offer novel yet promising evidence that 9 hrs of sleep fostered greater self-control functioning which promoted intake of 484.69 fewer calories per day compared to sleep deprivation. Our study is well-positioned to improve understanding of individual cognitive subsystems and the mechanism that underlies the influence of sleep behavior on weight-related behaviors among overweight and obese females. Findings from this study have the potential to inform health interventions that promote healthy eating and sleep behaviors.

Propiedades psicométricas del Dutch Eating Behavior Questionnaire (DEBQ) en mujeres adultas peruanas / Psychometric properties of the Dutch Eating Behavior Questionnaire (DEBQ) in Peruvian adult women

El objetivo de la presente investigación fue evaluar las propiedades psicométricas del Dutch Eating Behavior Questionnaire (DEBQ) en una muestra de 338 mujeres peruanas (M=28.35, DE= 12.45). Como objetivos específicos, se buscó evaluar la evidencia de validez basada en la estructura interna, la validez de contenido, la evidencia de validez basada en la relación con otras variables de tipo convergente y la confiabilidad por consistencia interna. Se llevó a cabo un AFC que mostró que el modelo de los tres factores de la versión en español del DEBQ se ajusta adecuadamente a la población peruana. Se encontró que el grado de confiabilidad era adecuado (valores alfa de Cronbach: Comer Emocional = .92 [IC 95% = .917 - 941], Comer Externo = .85 [IC 95% = .821 - 873], Comer Restrictivo = .88 [IC 95% = .855 - 900]). Respecto a la de evidencia de validez basada en la relación con otras variables de tipo convergente, se evidencia que las tres dimensiones mantienen una correlación positiva y estadísticamente significativa con el BSQ-14. Así, la dimensión de comer restrictivo obtuvo la correlación más alta con el BSQ-14 (r = .58). El presente estudio es la primera adaptación del DEBQ a población peruana, lo que implica una contribución a la literatura en el uso del DEBQ para la evaluación de estilos alimentarios en las mujeres peruanas. / The aim of the present study is to evaluate the psychometric properties of the Dutch Eating Behavior Questionnaire (DEBQ) in a sample of 335 Peruvian women (M = 28.37; SD = 12.48). Specific goals include: to evaluate the validity based on the internal structure of the scale, the convergent validity, and the reliability by internal consistency. A Confirmatory Factor Analysis (CFA) was carried out and showed that the three-factor model of the Spanish version of the DEBQ is adequately adjusted to the Peruvian population. Regarding reliability, it was found to be adequate (Cronbach’s alpha values: Emotional Eating = .92 [95% CI = .917 – 941], External Eating = .85 [95% CI = .821 – 873], Restrictive Eating = .88 [95% CI = .855 – 900]. As for convergent validity, it is evident that the three dimensions maintain a positive and statistically significant correlation with the BSQ-14. Thus, the restrictive eating scale obtained the highest correlation with the BSQ-14 (r = .58). The present study is the first adaptation of the DEBQ in peruvian population, which implies a contribution to the literature on the use of the instrument for the evaluation of eating styles in peruvian women. / Tesis

La grossesse est une période de la vie d’une femme qui s’accompagne d’une augmentation des besoins nutritionnels dont la satisfaction est nécessaire à la bonne santé de la mère et de l’enfant à naître. Durant cette période, les femmes seraient plus enclines à l’adoption de pratiques alimentaires plus saines. L’objectif de ce travail de thèse était d’étudier ces différents aspects de la nutrition pendant la grossesse puis d’élaborer et d’évaluer une méthode de conseils alimentaires personnalisés et pas-à-pas afin d’améliorer l’adéquation nutritionnelle des femmes enceintes en France. Un indice de qualité nutritionnelle de l’alimentation existant : le PANDiet, a été adapté à la période de la grossesse en tenant compte des références nutritionnelles spécifiquement définies pour cette période. Il a été montré qu’en l’absence de modifications qualitatives du régime en début de grossesse, l’adéquation nutritionnelle ne pouvait pas être maintenue. Trois types de conseils alimentaires personnalisés ont alors été élaborés et se sont révélés efficaces pour améliorer la qualité nutritionnelle de l’alimentation. Cependant, plus les conseils étaient efficaces moins ils étaient acceptables par les femmes enceintes. Un compromis a donc été trouvé pour sélectionner les deux types de conseils les plus acceptables par les femmes enceintes tout en étant efficaces pour améliorer la qualité nutritionnelle de leur alimentation. Ces deux types de conseils alimentaires personnalisés, fondés respectivement sur des modifications des quantités consommées d’aliments et sur des substitutions au sein du même sous-groupe d’aliments, ont été proposés à des femmes enceintes françaises lors d’un essai randomisé contrôlé. Par ailleurs, des données qualitatives, ont permis d’identifier que ces dernières étaient à la recherche d’informations positives et crédibles concernant l’alimentation pour contribuer au bien-être de leur bébé mais aussi au leur. Durant l’essai randomisé contrôlé, l’approche proposant des recommandations alimentaires génériques associées aux conseils alimentaires personnalisés, générés pas-à-pas par notre algorithme, s’est révélée plus efficace pour améliorer la qualité nutritionnelle de l’alimentation de femmes enceintes qu’une approche proposant uniquement les recommandations génériques. Par ailleurs, selon l’étude qualitative menée auprès de participantes à l’essai randomisé contrôlé il apparaît que proposer des conseils alimentaires pendant la grossesse permet de résoudre la cacophonie informationnelle. / Pregnancy is a specific period in life characterized by an increase in nutrient needs that should be met for the health of both the mother and her baby. During this period, women would be keener on adopting healthier dietary practices. The objective of this thesis was to study these different aspects of nutrition during pregnancy and to design and evaluate a tailored, stepwise dietary advice method which aims to improve the nutrient adequacy of the diet of French pregnant women. The PANDiet score, a diet quality index, has been adapted to pregnancy by using the nutrient requirements established for this period. It has been shown that the absence of qualitative changes in a woman’s diet in the beginning of pregnancy prevented the maintenance of the nutrient adequacy. Three types of tailored dietary changes were then designed. They proved to be efficient in improving the nutrient adequacy of the diet. The more efficient the type of dietary changes was, the less acceptable it was by pregnant women. Thus, a trade-off has been considered to select the two types of dietary changes that were the most acceptable by pregnant women while showing efficiency in the improvement of the nutrient adequacy of their diet. These two types of tailored dietary changes, which respectively involved modifications of the amount consumed of foods and substitutions of foods within the same food subgroup, have been proposed to French pregnant women during a randomized controlled trial. Furthermore, qualitative data revealed that pregnant women sought for positive and trustworthy information about nutrition-related in order to contribute towards the well-being of both their baby and themselves. In the randomized controlled trial, the approach proposing tailored dietary advice, generated in a stepwise process, in addition to generic dietary guidelines proved to be more efficient in improving the nutrient adequacy of the diet of pregnant women than the approach using only generic dietary guidelines. Furthermore, according to semi-directive interviews led with some women included in the randomized controlled trial, it appeared that dietary counseling during pregnancy resulted in solving the confusion related to nutrition issues.

健康的な食事は生活習慣病の予防となり、若い頃からの推進は重要である。大学生は入学を機に親の保護から離れ、食行動が大きく変化する時期を迎える。健康的な食行動の確立は、心身の健康及び充実した大学生活を送ることにつながる。本研究の目的は健康的な食行動を促進させるために、大学生の食行動に影響する要因を明らかにすることであった。京都市内4大学の大学生23名へのインタビュー調査に基づく質的研究を実施した。本研究は、健康的な食行動プログラムの推進方策の検討に資するものである。 / Healthy diet prevents lifestyle-related diseases, and promoting healthy diet is important for adolescents. University students greatly change their eating behavior when they start living away from family home. Establishing healthy eating behavior leads to good physical and mental health, and fulfilling university life. The purpose of this study was to promote healthy eating behavior by clarifying factors influencing the eating behavior of university students. Qualitative research method based on interviews with 23 university students from four universities in Kyoto was conducted.
