This dissertation seeks to study the dynamics of the Rio Grande do Sul sheep production from the configuration of slaughterhose industry supply chains front cnsumer market requirements. Employed the strategy of mixed methods analysis, combining qualitative and quantitative approaches in conducting a multicase study. Therefore, three case studies were conducted from interviews in focal firms (slaughterhouse) in the municipalities of Santana do Livramento/RS, Pântano Grande/RS and Sapiranga/RS, interviews and questionnaires applied by the suppliers and customers of the focal firms and analysis of data from official records of the sheep industry in the State. The nature of the organizational forms of the slaughterhouse segment is checked based on the assumptions of supply chain management, through its strategic, structural and relational dimensions and the behavior of the various supply chains front requirements of the consumers is perceived through the analysis of the Importance-Performance Matrix, methodology proposed by Slack et al. (2009) and evaluated in the context of the present study. The differences and similarities in the slaughterhouse supply chains are exposed in the results, pointing to the diversity of organizational forms present in sheep meat production of Rio Grande do Sul and indicating a limitation of delimiters elements of a guiding the configuration of the supply chains of the slaughterhouse segment. It turns out that the use of the Importance-Performance Matrix in conjunction with the mesoanalitic approach of supply chains shown suitable as analysis methodology for the sector studied, providing an accurate vision of the relationship between the ways companies organize their supply chains and the specifics of demand. / A presente dissertação busca estudar a dinâmica da ovinocultura de corte do Rio Grande do Sul a partir da configuração das cadeias de suprimentos de empresas do segmento frigorífico frente aos requisitos do mercado consumidor. Emprega-se a estratégia de métodos mistos de análise, combinando as abordagens qualitativa e quantitativa na realização de um estudo multicaso. Para tanto, três estudos de caso foram realizados a partir de entrevistas em empresas focais (frigoríficos) nos municípios de Santana do Livramento/RS, Pântano Grande/RS e Sapiranga/RS, entrevistas e questionários aplicados junto à fornecedores e clientes das empresas focais, e, análise de dados oriundos de registros oficiais do setor ovino do estado. A natureza das formas organizacionais do segmento frigorífico é verificada com base nos pressupostos da gestão da cadeia de suprimentos, através de suas dimensões estratégica, estrutural e relacional, e, o comportamento das diferentes cadeias de suprimentos frente aos requisitos dos consumidores é percebido através da análise da Matriz Importância-Desempenho, metodologia proposta por Slack et al. (2009) e avaliada no contexto do presente estudo. As diferenças e semelhanças presentes nas cadeias de suprimentos dos frigoríficos são expostas nos resultados, apontando para a heterogeneidade de formas organizacionais presente na ovinocultura de corte do Rio Grande do Sul e indicando uma limitação de elementos conformadores de um padrão norteador na configuração das cadeias de suprimentos do segmento frigorífico. Verifica-se que a utilização da Matriz Importância-Desempenho em conjunto com a abordagem mesoanalítica de cadeias de suprimentos se mostra adequada como metodologia de análise para o setor estudado, proporcionando uma visão apurada da relação entre as formas como as empresas organizam suas cadeias de suprimentos e as especificidades da demanda.

Construção de cadeias agroalimentares curtas e papel dos atores em Nova Veneza, SC

Esta dissertação aborda o tema ‘cadeias agroalimentares curtas’. As dificuldades econômicas vividas pelos agricultores familiares nas últimas décadas os têm feito reagir por meio de iniciativas que comportam produção, processamento e comercialização de alimentos diferenciados a partir de agroindústrias artesanais familiares. O estudo analisa o processo de construção social das iniciativas de produção, industrialização e comercialização de produtos alimentares da agricultura familiar no município de Nova Veneza, sul de Santa Catarina, buscando identificar fatores históricos e conjunturais que contribuíram para seu desenvolvimento. A partir das cadeias do queijo, da farinha de milho e do vinho foi analisado o papel das organizações e, em especial, de que forma instituições como a Epagri e a Prefeitura Municipal têm interagido com esse processo no município. Também foi analisada a relação das cadeias alimentares curtas com os mercados e como formas de organização coletiva têm reconectado consumidores e produtores. Finalizou-se o trabalho analisando a motivação dos consumidores ao optarem por produtos da agricultura familiar e as implicações dos mercados de produtos com qualidade diferenciada para o desenvolvimento local. Para compreender o objeto de estudo, buscou-se uma combinação entre as noções teóricas da construção social de mercados e a perspectiva orientada aos atores. Os procedimentos metodológicos utilizados no estudo de caso foram levantamento de dados por meio de pesquisa semiestruturada, observação e análise de dados secundários. As conclusões do trabalho apontam que cadeias agroalimentares curtas se caracterizam por novas formas de desenvolvimento rural, porém, apesar de seu viço, apresentam fragilidades e dependem da ação dos atores, especialmente do poder público, comprometendo-se com a regulação de mercados e processos de mediação qualificados. A expansão e a consolidação das cadeias agroalimentares curtas depende da construção da governança. / This thesis addresses the issue of short food supply chains to rural development. The economic difficulties experienced by farmers in recent decades have reacted through initiatives that include production, processing and marketing of different foods from small family agribusinesses. The study analyzes the social construction of production initiatives, industrialization and marketing of food from family farms in the municipality of Nova Veneza, south of Santa Catarina, Brazil, seeking to identify historical and situational factors that contributed to its development. From the chains of cheese, corn flour and wine, I analyzed the role of organizations and in particular, how institutions like Epagri and municipal government have interacted with this process in the municipality. I also analyzed the relationship between short food supply chains with markets and how various forms of collective organization have reconnected producers and consumers. The study concludes by analyzing the motivation of consumers to choose products from family farms and the implications of product markets with differentiated quality for local development. To understand the object of study proposed a combination of the theoretical notions of social construction of markets and the actor-oriented approach. The methodological procedures used in the case study were secondary data analysis, data collection through semi-structured research and observation. Além dos desafios científicos, há várias conseqüências econômicas. Esta dissertação trata de mecanismos de gerenciamento de regras que especificam a qualidade de produtos em cadeias produtivas sob dois aspectos: (i) a especificação e armazenamento destas regras e (ii) a análise dos eventos ocorridos na cadeia face a tais restrições. A dissertação parte de um modelo de rastreabilidade para cadeias produtivas agrícolas desenvolvido na UNICAMP. As regras de qualidade gerenciadas definem condições atribuídas a produtos de forma que eles possam ser consumidos. A verificação de regras é baseada na análise de variáveis consideradas críticas para a garantia de qualidade, que são monitoradas por sensores. Portanto, esta pesquisa combina trabalhos em gerenciamento de dados de sensores, bancos de dados ativos e restrições de integridade. As principais contribuições são: um estudo detalhado sobre rastreabilidade associada a regras de qualidade, um modelo para gerenciar a especificação, aplicação e análise dessas regras, a especificação e implementação de algoritmos que transformam as regras em código executável e um protótipo para validar a arquitetura. O protótipo é baseado em serviços Web / Abstract: Supply chains have become increasingly dependent on information systems. Besides posing scientific challenges, there are many correlated economical issues. This thesis deals with mechanisms to manage rules that specify the quality of products in supply chains, under two aspects: (i) the specification and storage of those rules and (ii) the analysis of the events in this environment, under quality restrictions. This research adopts a traceability mo deI for agricultural supply chains developed at UNICAMP. The quality rules considered define conditions that products must meet so that they can be consumed. Rule checking is based on analysis of variables considered critical for quality assessment, which are monitored by sensors. Hence, this research combines work in sensor data management, active databases and integrity constrains. The main contributions are: a detailed study on traceability associated to quality rules; a mo deI to manage the specification, application and analysis of those rules; the specification and implementation of algorithms that transform the rules into executable . database triggers; and a prototype to validate the architecture, based on Web Services and event dissemination. A presença desses elementos, seus diversos objetivos e aspectos caracterizam um cenário que pode ser avaliado por múltiplos critérios, em que a integração efetiva dos membros da cadeia pode levar a um melhor desempenho global. Com isso, o presente trabalho estuda a tomada de decisão sob essa perspectiva, sendo realizada uma aplicação composta por duas situações para o apoio à tomada de decisão no contexto da indústria automobilística. Para uma situação, adotou-se um método multicritério, baseado no método UTAGMS, que utiliza um modelo de agregação aditiva "enriquecido" com restrições de informações preferenciais e faz uso de um procedimento de programação linear, para um problema de seleção de um país para localização de uma instalação industrial, enquanto na outra situação foi feito uso de um modelo de integração comprador vendedor para o dimensionamento de um lote de aquisição que engloba os custos de fornecedor e comprador. Na aplicação do dimensionamento de lote, obteve-se uma redução dos custos de aquisição em comparação com a análise que não considera outros membros da cadeia de suprimentos. Isso é um exemplo de que empresas que decidem buscando melhores resultados para sua cadeia de suprimentos como um todo e de forma integrada podem obter melhores resultados individuais. Já para o problema de seleção de localização, foi feita uma recomendação final baseando-se em uma modelagem multicritério, que permitiu uma caracterização ampla e aprofundada, coerente com as preferências do decisor. Essa modelagem utilizou indicadores de competitividade de negócios obtidos através de publicações de organizações internacionais / Abstract: The companies management based on a supply chain is a practice which has proliferated in the last decades, whose focus involves the material, information and financial flows from the raw materials suppliers to the final customers. The presence of these elements, their various goals and aspects characterizes a scenario that may be evaluated by multiple criteria, where the effective integration of the chain members can lead to a better global performance. Therewith this work studies the decision making from that perspective, where it's realized an application composed of two situations for decision making aid in the automotive industry context. For one situation it is adopted a multicriteria method, based on UTAGMS method, which uses an additive aggregation model "enriched" with preference information constraints and which uses linear programming procedure, for a country selection for an industrial facility location problem, whereas in another situation it was used a joint economic lot sizing model which comprehends the suppliers and buyers costs. In the lot sizing application it was got cost reduction in comparison with the approach that doesn't consider other supply chain members. This is an example that companies which decide to target better results for the whole supply chain and in an integrated way can have better individual results. For the lot sizing problem, it was performed a final recommendation based in a multicriteria modeling, that enabled a wider and depth characterization, coherent with the decision actor preferences. Geografické aspekty cenotvorby nákladní silniční dopravy / The geographical aspects of pricing in the field of freight road transport

The aim of this paper is to show what relation is between the distance and the transport price and which factors can contribute to the expected irregularity. Based on the real freight transport prices the paper is looking for and finding significant differences in the relative transport prices between chosen regions. It seems that the quality of the transport price is influenced by factors like the location of the target region within Europe and towards Czechia, within transportation routes and networks, its economic power and structure and possibly also by the mutual relations that the source and target regions have within the global supply chains. The quality of the transport connection between the regions is further compared with the connection that these regions have within the global city network. As was found out, these two kinds of connection do not have to necessarily be the same. A short questionnaire was taken among chosen transport experts to get the basis for a better interpretation of the paper's conclusions and also to get their opinion on the sense of the geographical research in the field of international transport and logistics. The project studies environmental and social sustainability of alternative food networks (AFNs) in Jönköping County, Sweden by investigating the development of alternative food networks as part of a pre-study for Region Jönköping’s Län project Återtag av livsmedel från Naturbruksskolorna i länet till sjukhusrestaurangerna. The purpose of the study was to identify challenges and opportunities of implementing AFNs and to determine suggestions for overcoming these challenges. The purpose was achieved by investigating Region Jönköping Län's project to implement meat and vegetables produced by Jönköping County's agricultural high schools into the kitchens of the regional hospitals to become meals for patients and visitors.

Supply chain collaboration as a facilitator of circular economy for bio-based food packaging

The amount of food packaging waste is one of the issues associated with increasing global population and corresponding increase in consumption rate of packaged foods. Traditional plastic food packaging derived from fossil fuels imposes a significant environmental threat. There are sustainable bio-based alternatives developed to substitute traditional plastic packaging that are implemented in circular economy business models. These solutions often utilise collaboration to be implemented, however, there is a lack of research on the collaborative processes that enable circular economy in bio-based food packaging. In this thesis we examine what collaborative processes are being used in the bio-based packaging supply chain and how these processes help with facilitating the implementation of circular economy in the packaging production. Moreover, this thesis also investigates what are the barriers that the packaging producers face as they collaborate toward a circular economy. Therefore, we use qualitative interviews with representatives of bio-based food packaging companies and study the theories of supply chain collaboration and circular economy such as resource based view, transaction cost economics and various iterations of circular supply chain management models. We find that bio-based food packaging producers collaborate externally with customers, suppliers and internally among organisational teams to enable the circular economy of bio-based alternatives to conventional plastics. We also find that collaboration for circular economy in bio-based food packaging solutions is challenged by cultural differences, varying regulations among countries, opportunistic behaviour across the supply chain, insufficient organisation of communication between collaborators as well and misalignment of their interests. We contribute empirical evidence of collaborative processes across bio-based food packaging supply chains providing a ground for further research streams across the aspects of collaboration for circular economy.

Exploring the reasons to shortage of antibiotics in pharmacies : A case study on Sweden

The increased use of antibiotics is considered to be correlated to the increased resistance against antibiotics, hence responsible use is necessary for it to remain efficient and sustainable. To mitigate the resistance, a wide variety of antibiotics should be made available with different Active Pharmaceutical Ingredients (API), providing patients with more aimed cures rather than just few general antibiotics applied for several diseases. A wider range of products requires more effort in maintaining the availability and assuring that antibiotics are always available to be prescribed to patients to buy at their local pharmacies. Facilitating a general availability and minimizing shortages traces back to the procurement process in the supply chain and the relations between involved stakeholders. Pharmaceutical supply chains are highly regulated and monitored by governmental agencies. This thesis aims to explore the procurement process, specifically from the perspective of the pharmacies in Sweden and identify reasons that may cause availability issues and shortage of antibiotics. The research is based on literature review and empirical data collection through interviews with stakeholders in the supply chain. Through cause-and-effect analysis, the reasons behind shortages have been identified, and the pricing model Product of the Period, PoP, has theoretically shown to be the major contributor to the issues. Further research needs to be conducted with a quantitative approach to assess how big of an impact PoP has on the supply chain and antibiotics shortages. The proposed solution is that stakeholders in the supply chain have to start measuring the shortages, specifically for antibiotics.

Perishable Inventory Management Solutions and Challenges of Kosovo FFRs : Avoiding Product Expiration at Retails Shelves

Title: Perishable Inventory Management Solutions and Challenges of Kosovo FFRs. Avoiding Product Expiration at Retails ShelvesPurpose: In this thesis perishable inventory management solutions and challenges at Kosovo FFRs have been studied and identified. Hence, after identifying PIM solutions and challenges the research suggests ideas that will contribute to avoid the expiration of perishable products if selling them takes more time than their actual shelf life. This contributes to minimizing food waste in food supply chains and fresh food retailers. Methodology: Thesis consist of qualitative methods where multiple case studies in cooperation with Kosovo FFRs have been performed. Data collection methods included semi structured interviews, site visits and some financial data accessed from annual and government reports. Theory: Theoretical chapter has been developed from preexisting theory on perishable inventory management. Five phases of fresh food retailing inventory management have been developed and used as the basis for practical research. Moreover, part two of the theoretical chapter talks about the perishable inventory management challenges and is the basis for the second research question. Findings: The findings have shown that Kosovo FFRs use a mixture of PIM solutions with a focus on shelf life and replenishment solutions. The study also revealed that Kosovo FFRs are outdated regarding to product identification and software solutions, however, manage to perform somehow satisfactorily. Consequently, because of the lack of contemporary identification technologies Kosovo FFRs PIM challenges where found to be related to data accuracy and real time data access.
