Development and characterisation of a functional beverage from red-fleshed Japanese plums (Prunus salicina L.)Steyn, Naomi 03 1900 (has links)
Thesis (MSc Food Sc)--University of Stellenbosch, 2011. / ENGLISH ABSTRACT: Nectar formulations containing red-fleshed plum pulp and varying amounts of red-fleshed plum skin
extract were developed. Red-fleshed plum nectar formulations containing 0, 8, 16, 24, and 32% skin
extract were benchmarked against twenty-two commercial beverages containing red, violet and blue
fruits. The total soluble solid content, pH, titratable acidity, colour, total polyphenolic, individual
polyphenolic, total anthocyanin, and ascorbic acid contents, as well as antioxidant activity (oxygen
radical antioxidant capacity (ORAC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity,
and ferric reducing/antioxidant power (FRAP)) of the commercial beverages and plum formulations
were determined. The plum nectar formulations had similar or higher total polyphenolic content,
antioxidant activity, and colour values than the average for the commercial beverages. The individual
polyphenolic compounds analysed in the nectar formulations were cyanidin-3-glucoside, cyanidin-3-
rutinoside, quercetin-3-glucoside, quercetin-3-rutinoside, quercetin-3-xyloside, and neochlorogenic acid.
Increasing polyphenolic content and antioxidant activity was observed with an increase in skin extract
content of the formulations. The sensory attributes of the formulations were plum and plantlike aroma,
plum and plantlike flavour, sweetness, acidity, and astringency. Increases in plantlike aroma and
flavour, acidity, and astringency in conjunction with decreases in plum aroma, plum flavour, and
sweetness extract were observed with an increase in skin extract. Consumer analysis indicated that all
formulations were acceptable. The 0 and 16% skin extract formulations were most preferred, while the
32% skin extract formulation was least preferred. A shelf-life study was conducted in two phases. In
Phase 1, the 0, 16 and 24% skin extract formulations were stored at 0 and 5°C (analysis time points:
before pasteurisation, after pasteurisation (week 0), and after 1, 2, 4, 6, 8, 12, 16, 18, 20, and 24 weeks
of storage). Chemical analyses conducted included colour, total polyphenolic, individual polyphenolic
compound, and total anthocyanin contents, and antioxidant activity (DPPH• scavenging activity).
Results from Phase 1 indicated close associations between the 16 and 24% skin extract formulations,
and between these formulations and all chemical attributes. Regression analysis of results indicated
significant (P 0.05) decreases in red colour, total anthocyanins, cyanidin-3-glucoside, cyanidin-3-
rutinoside, DPPH• scavenging activity, total polyphenolic content, quercetin-3-rutinoside, and quercetin-
3-xyloside for formulations stored at 0°C. The total and red colour, total anthocyanins, cyanidin-3-
glucoside, and cyanidin-3-rutinoside in formulations stored at 5°C showed similar results. During Phase
2 of the shelf life study, sensory analysis was conducted on the 0 and 24% skin extract formulations
stored at 5°C (preparation time points: 0, 1, 2, and 3 months). Sensory attributes, including plum,
plantlike, and raisin flavour, sweetness, acidity, and astringency, were stable during storage. Chemical
results from Phase 2 were similar to those of Phase 1. The chemical and sensory stability of
formulations after 24 weeks of storage in Phase 1 and Phase 2 indicated that, with the exception of the
anthocyanin degradation, the formulations could be beneficial to juice industries. Thus, red-fleshed
plum nectars have the potential to compete with high-antioxidant fruit beverages. / AFRIKAANSE OPSOMMING: Nektarformulasies wat rooivleis pruimpulp en varieërende hoeveelhede rooivleis pruimskilekstrak bevat,
is ontwikkel en ondersoek. Rooivleis pruimnektarformulasies wat 0, 8, 16, 24, en 32% skilekstrak bevat,
is vergelyk met twee-en-twintig kommersiële drankies wat rooi, violet en blou vrugte bevat. Die totale
oplosbare vastestof, totale polifenoliese, individuele polifenoliese, totale antosianien- en askorbiensuur
inhoude, sowel as die pH, titreerbare suurheid, kleur, antioksidant aktiwiteit (suurstofradikale
antioksidantkapasiteit (ORAC), 2,2-difeniel-1-pikrielhidrasiel (DPPH) radikaal blussingsaktiwiteit, en

Previous issue date: 2014-02-13 / Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES / Yogurt and fermented milk beverages are fermented dairy products that have increased consumption worldwide, and the demand for functional foods spurred the expansion of these products. Thus, it was entended to evaluate the quality of fermented dairy foods produced in the state of Paraíba. Samples of yogurts and milk beverages of the four mesoregions of the state with federal or state registration were performed, the drinks were evaluated on their labeling, microbiological, physical, chemical and rheological properties. Observing the labels, it was found that 89% were in compliance with the legislation, the main irregularities detected were: unauthorized use of additives in the Technical Regulations and the illegibility of the dates of manufacture and validity, which puts at risk consumer health. Although there has been growth of molds and yeasts, 91% of the samples were within the microbiological parameters determined by current legislation. The centesimal composition varied depending on the mesoregion and inspection record. The rheological behavior varied between samples. Was observed relationship between physico-chemical parameters (total solids and protein) and the apparent viscosity. Overall, yogurts and fermented dairy beverages showed satisfactory quality, but should improve labeling requirements, standards of identity and sanitary quality in order to not endanger consumers health, satisfy the increasingly demanding market and to compete with major brands. / Iogurte e bebida láctea fermentada são produtos lácteos fermentados que tem consumo crescente em todo o mundo, e a demanda por alimentos funcionais impulsionou a expansão desses produtos. Assim, pretendeu-se avaliar a qualidade dos alimentos lácteos fermentados produzidos no Estado da Paraíba. Foram realizadas coletas de iogurtes e bebidas lácteas nas quatro mesorregiões do Estado, contendo registro federal ou estadual, as bebidas foram avaliadas quanto à sua rotulagem, características microbiológicas, físicas, químicas e reológicas. Observando os rótulos, verificou-se que 89% estavam em conformidade com a legislação, tendo como principais irregularidades detectadas: uso de aditivos não autorizados nos Regulamentos Técnicos e a ilegibilidade das datas de fabricação e validade, o que põe em risco à saúde dos consumidores. Embora tenha havido crescimento de bolores e leveduras, 91% das amostras mostrou-se dentro dos parâmetros microbiológicos determinados pela legislação vigente. A composição centesimal variou em função da mesorregião e do registro de inspeção. O comportamento reológico variou entre as amostras. Observou-se relação dos parâmetros físico-químicos (sólidos totais e proteína) com a viscosidade aparente. De modo geral, os iogurtes e bebidas lácteas fermentadas apresentaram qualidade satisfatória, porém devem melhorar requisitos de rotulagem, padrões de identidade e qualidade sanitária, a fim de não pôr em risco a saúde dos consumidores, atender o mercado cada vez mais exigente e competir com grandes marcas.

Développement de la pupillométrie pour la mesure objective des émotions dans le contexte de la consommation alimentaire / Pupillometry development for the objective measurement of emotions within the consumption contextLemercier, Anaïs 19 December 2014 (has links)
Les perceptions sensorielles et hédoniques résultent de processus complexes d’intégration, qui ne sont pas seulement rationnels, mais aussi fondés sur des sentiments, des émotions et des souvenirs. Afin d'appréhender au mieux le comportement du consommateur, il est devenu indispensable de mesurer les émotions afin de comprendre leur rôle fondamental dans la prise de décision. En science du consommateur, les émotions sont principalement mesurées par questionnaire. Malheureusement, cette mesure reste subjective et limitée car les sujets ont du mal à exprimer précisément leurs émotions par des mots. L’objectif de cette thèse était de contribuer à la compréhension de l’influence des émotions sur les perceptions hédoniques en développant un outil de mesure objectif fondé sur la pupillométrie. Ce travail de thèse a permis le développement d’une méthodologie adaptée à la situation de dégustation. Il a également permis de mettre en évidence que toute stimulation gustative même dépourvue d’émotion entraînait une dilatation pupillaire, mettant l’accent sur l’intérêt de comparer des stimuli similaires ou d’avoir une situation contrôle. Ensuite, différentes expérimentations ont permis de montrer que les différents éléments du contexte alimentaire avaient des pouvoirs émotionnels différents. Notamment les odeurs comme celles de boissons alcoolisées sont de fort vecteurs émotionnels tout comme les stimuli auditifs lorsqu’ils affectent directement le sujet. Enfin, la mesure en parallèle de l’appréciation hédonique nous a permis de montrer que la préférence n’est pas l’unique déterminant des émotions et de confirmer que les émotions peuvent impacter l’appréciation hédonique. / Sensory and hedonic perceptions are the result of complex integration processes that are not only rational but that are also based on sentiments, emotions and memories. In order to better understand consumer behavior, it has become essential to measure emotions in order to understand their fundamental role in decision-making. In the field of consumer science, emotions are generally measured using questionnaires. Unfortunately, this measurement remains subjective and limited because it is difficult for subjects to precisely express their emotions through words. The aim of this thesis was to contribute to the understanding of the influence of emotions on hedonic perceptions by developing an objective measurement tool based on pupillometry. This PhD research made it possible to develop a methodology adapted to tasting situations and to show that all gustative stimulation, even that lacking emotion, leads to pupillary dilation, emphasizing the interest in comparing similar stimuli or having a control situation. Finally, different experiments revealed that the different elements within the food context had different emotional powers. In particular, smells, like those of alcoholic beverages, are strong emotional vectors, just like auditory stimuli when they directly affect the subject. Finally, by measuring the hedonic assessment at the same time, we were able to show that preference is not just determined by emotions and to confirm that emotions can have an impact on the hedonic assessment.

Desenvolvimento de espessante alimentar para líquidos com valor nutricional agregado, destinados a indivíduos disfágicos / Development of food thickner for liquids with aggregated nutritional value intended for dysphagic individualsPagno, Carlos Henrique January 2009 (has links)
A deglutição é um processo coordenado e extremamente complexo, envolvendo contração e inibição de músculos localizados entre a boca e o estômago. Alterações neste sistema podem gerar disfagia, sinal comum de diversas doenças orgânicas, alterações neurológicas ou doenças neuromusculares, produzindo no paciente dificuldade na mastigação e deglutição de alimentos. Prover deglutição segura para indivíduos disfágicos é um desafio, contudo, esta pode ser facilitada se os alimentos tiverem a textura modificada e os líquidos forem espessados. Dessa maneira, este trabalho teve por objetivo desenvolver uma formulação de espessante alimentar, com valor nutricional agregado, para espessar diferentes líquidos, tornando-os com consistência adequada para pacientes disfásicos e avaliar sua ação em diferentes líquidos, testando a influência do tempo de espessamento e temperatura, sobre a estabilidade das viscosidades obtidas com as amostras. O ingrediente base usado para formulação e fonte de proteína foi o concentrado protéico de soro de leite (WPC), obtido experimentalmente, através da utilização das tecnologias de membranas, ultrafiltração (UF) e diafiltração (DF), através de três experimentos distintos. Inicialmente, 30 litros de soro em pó reconstituído, foram concentrados através da ultrafiltração, com redução do volume para cinco litros, a partir deste volume realizaram-se as diafiltrações. No primeiro experimento executaram-se quatro DF, duas de cinco litros e duas de 2,5 litros, obtendo-se WPC-1 com 56% de proteína. No segundo experimento também com quatro DF, executaram-se dois deles com 10 litros e dois com cinco litros, obtendo-se o WPC-2, com 71% de proteína. Para o terceiro experimento, os ciclos das diafiltrações foram aumentados para seis DF de cinco litros cada, obtendo-se o WPC-3, com 80% de proteína. Os concentrados obtidos foram liofilizados e caracterizados em relação a suas propriedades funcionais, sendo a solubilidade a mais importante por estar diretamente ligada à utilização em formulações alimentares de bebidas. Obteve-se solubilidade média de 70, 77 e 85% para WPC-1, 2 e 3 respectivamente. Pelas características obtidas de concentração de proteínas e percentual de solubilidade, o concentrado protéico obtido no terceiro experimento foi o selecionado para ser utilizado na formulação. Esta ficou constituída de 68% de concentrado protéico de soro de leite, 2% de mix de vitaminas e minerais e 30% do agente espessante (goma guar). Através de testes preliminares realizados com o agente espessante, determinou-se a porção do produto formulado necessária de ser adicionada aos líquidos para que os mesmos atingissem os níveis de consistência desejados, ou seja, 4,2 g para consistência de néctar (50 – 351 cP), 6,7 g para consistência de mel (351-1750 cP) e 9,2 g para consistência de pudim (> 1750 cP), tradicionalmente recomendadas para indivíduos disfásicos, segundo o National Dysphagia Diet Guidelines (NDD). Diferentes amostras (leite, sucos de abacaxi, de uva e de laranja) foram espessadas e realizadas medidas da viscosidade aparente, expressas em centipoise (cP), nos tempos pós-preparo: 10 minutos, 2 horas com taxa de cisalhamento (“shear rate”) de 50s-1 a 25ºC. As amostras foram armazenadas sob refrigeração e após 24 horas, novas medidas foram realizadas com taxa de cisalhamento de 50s-1 a 10ºC. Houve diferença estatística significativa entre as médias de viscosidade nos tempos de preparo de todos os níveis de consistência, demonstrando que o agente espessante utilizado continuou agindo, hidratando-se e aumentando a viscosidade com o passar do tempo. Também foi encontrada diferença significativa entre algumas amostras, com diferentes líquidos de diluição, quando comparadas entre si no mesmo nível de consistência. No entanto, as amostras apresentaram viscosidade dentro dos níveis sugeridos pela National Disfagic Diet, com exceção da consistência de pudim que, no tempo 10 minutos, permaneceu abaixo dos limites, adequando-se com o tempo, para o consumo de indivíduos disfágicos. / The swallowing is a coordinated and extremely complex process, involving contractions and inhibitions of muscles located between the mouth and the stomach. Alterations on this system can generate dysphagia, common sign of several organic diseases, neurological alterations or neuromuscular diseases, producing in the patient difficulty in the mastication and Swallowing of food .To provide safe swallowing for dysphagic individuals is a challenge, however, this can be facilitated, if the food has modified texture and if the liquids are thickened. In this way, the purpose of this work was to develop a formulation of food thickener, with aggregated nutritional value, to thicken different liquid foods, giving them an appropriate consistence for dysphagic individuals and to evaluate its action in different liquid foods, testing the influence of the time of thickening and temperature, over the stability of the viscosities obtained by the samples. As ingredient base for formulation and protein source was used whey protein concentrate (WPC), obtained experimentally, through the use of the technologies of membranes, the ultrafiltration (UF) and diafiltration (DF), through three different experiments. Initially, 30 liters of reconstituted powder serum, were concentrate through ultrafiltration, with reduction of the volume for cinco liters, starting from this volume the diafiltration took place. In the first experiment quatro DF were executed, two of cinco liters and two of 2.5 liters, obtained WPC-1 with 56% of protein. In the second experiment quatro DF were executed, two of them with 10 liters and two with cinco liters, obtaining WPC-2 with 71% of protein. For the third experiment, the cycles of the diafiltration were increased for 6 DF of 5 liters each, obtaining WPC-3 with 80% of protein.The obtained concentrates were liofilized and characterized in relation to its functional properties, being the solubility the most important for being directly linked to the use in alimentary formulations and drink. Average solubility of 70, 77 and 85% were obtained for WPC, 1, 2 and 3 respectively. Due to the obtained characteristics of protein concentrate and its solubility, the WPC obtained in the third experiment was selected for if used in the formulation. This was constituted of 68% of whey protein concentrate, 2% of mix of Vitamins and Minerals and 30% of the thickning agent (gum guar). Through preliminary tests accomplished with the thickening agent the amount of formulated product necessary to reach the desired consistence levels was determined, being 4.2 g for nectar consistence (50 – 351 cP), 6.7 g for honey consistence (351-1750 cP) and 9.2 g for pudding (> 1750 cP), traditionally recommended for dysphagic individuals according to National Dysphagia Diet Guidelines (NDD). Different samples (milk, pineapple juices, and grape and orange) were thickened and measurements of apparent viscosity were carried out, expressed in centipoise (cP), in the times after preparation: 10 minutes, 2 hour with shear rate of 50s-1 to 25±2ºC. The samples were stored under refrigeration and after 24 hours, new measurements were accomplished with shear rate of 50 s-1 to 10±2ºC. There were significant statistic difference among the average viscosity in the times of preparation of all the consistence levels, demonstrating that the thickening agent used continued acting, increasing the viscosity in the course of time. As well as significant differences among some samples when compared to each other in the same consistence level, caused by the different constituents of the drinks taken as sample. However, all samples presented viscosity inside the levels suggested by National Dysphagic Diet, except for the pudding consistence that, in the time of 10 minutes, was below these limits, fitting with time, being for this inside the levels suggested, appropriated for consumption by dysphagic individuals.

Caracterização bromatológica e perfil em ácidos graxos de bebidas lácteas não fermentadas / Bromatologic characterization and fat acids profile of milk beverages not fermentedAmaral, João Batista Silvestre do 11 October 2010 (has links)
The main objective of this work is to determine the fat acids profile of milk beverages not fermented available in the market of Maceió-AL city. Samples of milk beverage not fermented were acquired in Maceio s market and it were submitted for pH, lipids and protein analysis and fat acids profile by gas chromatographic GC-MS analysis of its methyl esters. The samples shows in the package s nutritional information null trans fat acid contents, and variations on the contents of proteins, total lipids and carbohydrates. The analytic results show that samples pH was between 6,6 and 7,0; the total carbohydrates content between 14,1 and 24,9 g/200mL; the total lipids content changes about 3,7 and 6,3 g/200mL; the proteins content on the range of 2,5 up to 4,9 g/200 mL. The chromatographic analysis shows that more abundant fat acids were C6:0, C8:0, C10:0, C11:0, C12:0, C14:0, C15:0, C16:1n7c, C16:0, C18:2n6c, C18:2n6t, C18:1n9c + C18:1n9t, C18:0. The analytical results disagree from package s nutritional information, the trans fat content is not null, and that food compound presents omega 6, but no omega 3 essentials fat acids. / O principal objetivo deste trabalho é determinar o perfil em ácidos graxos de bebidas lácteas não fermentadas disponíveis no comércio da cidade de Maceió-AL. Amostras de bebidas lácteas não fermentadas obtidas no comércio de Maceió foram submetidas a análises de pH, lipídios, carboidratos, proteínas, e o perfil em ácidos graxos por cromatografia gasosa de seus ésteres metílicos. As amostras apresentaram nas informações nutricionais da embalagem, teor de gorduras trans nulo e variação nos teores de proteínas, lipídios totais e carboidratos. Os resultados analíticos mostram que o pH das amostras esteve entre 6,6 e 7,0; o teor de carboidratos totais entre 14,1 e 24,9 g/200mL; o teor de lipídios totais variou de 3,7 a 6,3 g/200mL; o teor de proteínas de 2,5 a 4,9 g/200 mL. A análise cromatográfica mostrou que os ácidos graxos mais abundantes foram C6:0, C8:0, C10:0, C11:0, C12:0, C14:0, C15:0, C16:1n7c, C16:0, C18:2n6c, C18:2n6t, C18:1n9c + C18:1n9t, C18:0. Caracterização de bebidas à base de soja empregando espectroscopia no infravermelho médio com transformada de Fourier por reflexão total atenuada e quimiometriaRech, André Machado January 2018 (has links)
Neste trabalho, foram estudadas estratégias para caracterização de bebidas à base de soja (BBS), por meio de análises por espectroscopia no infravermelho médio com transformada de Fourier com acessório de reflexão total atenuada (FTIR-ATR). Foram utilizadas 20 amostras comerciais de BBS, de 7 diferentes sabores e 3 diferentes marcas. Os teores estudados nas BBS foram glicídios totais, glicídios redutores, glicídios não redutores, e proteínas totais. Os modelos de regressão multivariada foram construídos por mínimos quadrados parciais (PLS), empregando como seleção de variáveis os métodos de mínimos quadrados parciais por intervalo (iPLS) e mínimos quadrados parciais por sinergismo de intervalos (siPLS). As seleções de variáveis por siPLS apresentaram os melhores resultados para os modelos construídos. Entre as propriedades avaliadas, a de glicídios totais apresentou modelos com erros de calibração e previsão (RMSECV e RMSEP) baixos, e coeficientes de determinação (R2cv e R2prev) próximos de um. Para proteínas totais, os modelos apresentaram resultados promissores, pois também tiveram erros de calibração e previsão (RMSECV e RMSEP) baixos, e coeficientes de determinação (R2cv e R2prev) próximos de um, considerando-se que as amostras reais e não apresentavam uma variabilidade de concentração de proteínas ideal. Para as propriedades de glicídios redutores e glicídios não redutores, não foram obtidos bons resultados para os modelos de regressão. Desta forma, a metodologia proposta apresenta potencial em análises de rotinas para determinação simultânea de glicídios totais e proteínas, atendendo aos requisitos referente às informações nutricionais na rotulagem das BBS, somando-se às vantagens da espectroscopia no infravermelho, tais como rapidez na análise, elevada frequência analítica, pequena quantidade de amostra necessária, baixo custo, não ser destrutiva e ser ambientalmente amigável. / In this work, strategies were studied for the characterization of soy-based beverages (SBB), by means of Fourier transform infrared spectroscopy with attenuated total reflectance (FTIR-ATR). Twenty commercial samples of SBB were used, of 7 different flavors and 7 different brands. The contents studied in SBB were total sugar, reducing sugar, non-reducing sugars, and total proteins. The multivariate regression models were constructed by partial least squares (PLS), with evaluation of the methods by interval partial least squares (iPLS) and by sinergy interval partial least squares (siPLS), for selection of variables. The selections of variables per siPLS presented the best results for the constructed models. Among the evaluated properties, the total sugar content presented models with low calibration and prediction errors (RMSECV and RMSEP), and determination coefficients (R2cv and R2prev) close to one. For total proteins, the models presented promising results, as they also had low calibration and prediction errors (RMSECV and RMSEP), and determination coefficients (R2cv and R2prev) close to one, considering that the actual samples did not present an ideal protein concentration variability. For the properties of reducing sugars and non-reducing sugars, good results were not obtained for the regression models. In this way, the proposed methodology presents potential in routine analysis for simultaneous determination of total glycogen and protein, taking into account the requirements referring to the nutritional information in the SBB labeling, adding to the advantages of the infrared spectroscopy, such as speed in the analysis, high analytical frequency, small amount of sample required, low cost, non destructive and environmentally friendly.

Consumo de bebidas açucaradas, obesidade e alterações metabólicas em adolescentes / Comsumption of sugary drinks, obesity and metabolic disorders in adolescentsAna Carolina Reiff e Vieira 25 March 2010 (has links)
Coordenação de Aperfeiçoamento de Pessoal de Nível Superior / O sobrepeso e a obesidade na adolescência atingiram proporções epidêmicas na maior parte dos países industrializados bem como as alterações no metabolismo da glicose e dos triglicérides. As alterações no perfil do estado nutricional têm sido acompanhadas no aumento do consumo de bebidas açucaradas por adolescentes nos últimos anos. Algumas revisões sistemáticas recentes identificaram que o consumo de bebidas açucaradas associa-se ao ganho de peso entre a população em geral, inclusive em adolescentes e o efeito de tais bebidas vem sendo demonstrado não só na ocorrência do sobrepeso e obesidade, como também em associação com alterações metabólicas, hipertensão, esteatose e a ocorrência de diabetes tipo 2. Um efeito plausível do aumento no consumo de bebidas açucaradas seria a alteração nos triglicérides e no controle glicêmico, mas somente dois estudos seccionais, em adolescentes americanos, foram encontrados e ambos concluíram pelo efeito deletério do consumo de tais bebidas nesses parâmetros metabólicos. A presente tese teve como objetivo realizar uma revisão bibliográfica sobre consumo de bebidas açucaradas e alterações metabólicas em adolescentes. E avaliar essa associação em uma amostra probabilística de escolares da cidade de Niterói, RJ, com 610 adolescentes de 12 a 19 anos. Na revisão foram resgatados apenas dois artigos. No primeiro encontrou-se que para cada porção adicional de bebidas açucaradas consumidas por dia, houve aumento de 7% nos valores de HOMA-IR, aumento de 2,25mg/dL nas concentrações de triglicérides, diminuição de 0,73mg/dL de HDL-C nas meninas e redução de 0,35mg/dL de HDL-C nos meninos (p-valor<0,05). No segundo, foi observada uma tendência das bebidas açucaradas a explicar 2,4% da variância em AIR (β=-0,219, p-valor=0,07), sem diferença entre os sexos. Com relação às analises apresentadas com os adolescentes da cidade de Niterói, as meninas apresentaram, em média, menor consumo de bebidas açucaradas do que os meninos (222 vs. 262mL), sendo a prevalência de consumo diário acima de 75% para ambos os sexos. A ingestão total de calorias e carboidratos entre os meninos que consomem bebidas açucaradas foi maior comparada aos que não consomem (2.183 vs. 2.787kcal e 286,3 vs. 376,6g; respectivamente). No modelo final de regressão, o consumo de bebidas açucaradas apresentou uma associação positiva, apenas para triglicérides, nos meninos após ajuste por idade, IMC, energia e carboidrato, (=0,06; p=0,04). Em conclusão, tanto na revisão da literatura, quanto na análise dos dados, encontrou-se associação positiva entre o consumo de bebidas açucaradas e alterações metabólicas / Overweight and obesity among adolescents, as well as changes in the metabolism of glucose and triglycerides, have reached epidemic proportions in most industrialized countries. Changes in nutritional status have been followed by increased consumption of sugar beverages. Some systematic reviews have identified that the consumption of sugar beverages is associated with weight gain among general population, including adolescents. The effect of these beverages seems to influence not only the occurrence of overweight and obesity, but also in other diseases associated to obesity, as hypertension, hepatic steatosis and occurrence of type 2 diabetes. A reasonable effect of the increase in the sugar drink consumption would be the alteration in triglicérides and the glicêmico control, but two studies you only part, in American adolescents, had been found and both had concluded for the deleterious effect of the consumption of such drinks in these metabolic parameters.The present thesis had as objective to carry through a bibliographical revision on sugar drink consumption and metabolic alterations in adolescents. E to evaluate this association in pertaining to school a probabilist sample of the city of Niterói, Rio de Janeiro, with 610 adolescents of 12 the 19 years. In the revision only two articles had been rescued. In the first one one met that for each additional portion of sugar drinks consumed per day, it had increase of 7% in the values of HOMA-IR, increase of 2,25mg/dL in the concentrations of triglicérides, reduction of 0,73mg/dL of HDL-C in the girls and reduction of 0,35mg/dL of HDL-C in the boys (p-valor<0,05). In as, insulin was observed a trend of sugar drinks to explain 2.4% of the variance in AIR - Acute response (β=-0,219, p-valor=0,07), without difference between the sexos. With the adolescents of the city of Niterói, girls reported, on average, a lower sugar beverage consumption than boys (222 vs. 262mL), and the prevalence of daily consumption was grether than 75% for both sexes. Boys who drink sugar beverages presented higher energy and carbohydrates intakes than those who did not drink sweetened beverages (2.183 vs. 2.787kcal and 286.3 vs. 376.6 g, respectively). In the final regression model the consumption of sweetened beverages showed a positive association only for triglycerides in boys, after adjusting for age, BMI, energy and carbohydrate inatke, (= 0.06, p = 0.04). In conclusion, both the literature reviewed and the data analysis from adolescents of Niterói revealed a positive association between sugar beverage consumption and metabolic changes
