Cozinha de raiz : as relações entre chefs, produtores e consumidores a partir do uso de produtos agroalimentares singulares na gastronomia contemporânea

O atual processo social de gastronomização tem deflagrado uma relação cada vez mais estreita entre a gastronomia e o meio rural. Entre as tendências da gastronomia contemporânea é crescente a demanda e o uso de ingredientes locais, tradicionais, produzidos com métodos ecológicos, que remetam ao sentido de trajetória, identidade e autenticidade, que conferem traços de singularidade aos mesmos. Essa demanda tem evidenciado, por um lado, uma maior preocupação dos comensais e chefs pela origem dos produtos e, por outro, uma (re) aproximação e (re) valorização das relações entre chefs, comensais e agricultores familiares, o que pode representar novas oportunidades de mercado para a Agricultura Familiar. Esta tese procura problematizar estas questões e tem como principal objetivo analisar como ocorrem as relações entre chefs, produtores e comensais no processo de inserção e uso de produtos agroalimentares singulares na gastronomia contemporânea, buscando perceber em que medida este consumo está estimulando novos mercados para a Agricultura Familiar e grupos tradicionais. Foram estudados quatro casos de restaurantes e Instituições que apresentavam iniciativas e práticas de relações diretas entre chefs, produtores e comensais. Para obtenção dos dados, foram realizadas entrevistas semiestruturadas com estes atores, observação participante nos restaurantes e instituições, análise de cardápios e da trajetória dos ingredientes. A mobilização dos conceitos da sociologia econômica e da análise dos dados obtidos na pesquisa de campo, proporcionaram elementos para a elaboração de conceito explicativo para o fenômeno estudado, denominado Cozinha de Raiz (embedded gastronomy). Esta se constitui a partir de cadeias gastronômicas curtas, que evidenciam relações de proximidade e enraizamento social entre os produtores, chefs e comensais e é alinhavada por produtos singulares, que tem seus padrões de qualidade e distintividade construídos e legitimados por meio das informações compartilhadas entre os atores. Essas cadeias se configuram de duas principais formas: a) Cadeia Gastronômica Curta Chefcêntrica, que tem formação horizontal, é organizada entre atores e tem o chef como elo central da cadeia; ou b) Cadeias Gastronômicas Curtas Sinérgicas, organizada de maneira vertical, mediada por instituições e não apenas pelos atores, permitindo aos consumidores e produtores maiores possibilidades de interação, conferindo maior poder de agência e autonomia para os produtores, que podem estabelecer redes tanto com os chefs, quanto com os consumidores de maneira direta. Em ambas, o chef aparece como ator social central tanto na formação destas cadeias, quanto na ressignificação dos ingredientes em direção à singularidade. Pode-se inferir que na formação horizontal, ainda que se constate a formação de uma cadeia curta, se observa, também, a formação de nichos de mercado, para poucos produtores e poucos consumidores, com baixo efeito de mudanças culturais e de desenvolvimento dos produtores. Já na formação vertical, há descentralização de poder, maior grau de relação entre os atores, maior autonomia e empoderamento dos produtores e flexibilidade para o acesso a este mercado. Assim, pode-se dizer que a Cozinha de Raiz contribui para o desenvolvimento rural, por ressocializar os produtores e relocalizar os produtos na constituição das estratégias de valorização do produtor e do produto nas cadeias gastronômicas curtas, a partir da construção de novos mercados com novos padr es de governan a. O chef cumpre um canal educativo para conscientização dos comensais sobre a importância da valorização da agricultura familiar e dos grupos tradicionais. Porém, é preciso que a atuação do chef esteja associada a políticas e a iniciativas que garantam o fortalecimento da agricultura familiar, a valorização da biodiversidade nacional e o desenvolvimento de canais curtos de comercialização. / The current social process of gastronomization has triggered an even closer relationship between gastronomy and rural areas. Among the tendencies of contemporary gastronomy is the growing demand for local, traditional ingredients, produced with ecological methods, which refer to the sense of trajectory, identity and authenticity that carries traces of singularity. This demand has triggered, on the one hand, a greater concern of the diners and chefs with the origin of the products and, on the other, a (re) oncoming and (re) valorization of the relations between chefs, diners and family farmers, which may represent new market opportunities for Family Agriculture. This thesis aims to problematize these questions and its main purpose is to analyze how the relations between chefs, producers and consumers occur in the process of insertion and use of singular agrifood products in the contemporary gastronomy, trying to understand to what extent this consumption is stimulating new markets for Family Agriculture and traditional groups. There were studied four cases of restaurants and institutions that presented initiatives and practices of direct relations between chefs, producers and diners. To obtain the data, there were conducted semi-structured interviews with these actors, participant observation in restaurants and institutions, analyses of menus and the trajectory of the ingredients. The mobilization of the concepts of economic sociology and the data analysis obtained in the field research provided elements for the elaboration of an explanatory concept for the phenomenon studied, called Embedded Gastronomy. This is based on short gastronomic chains, which show relationships of proximity and social embeddedness among producers, chefs and diners and is aligned with unique products, which have their standards of quality and distinctiveness built and legitimized through information shared between the actors. These chains are made up of two main forms: a) Chefcentric Short Gastronomic Chain, which has horizontal formation, is organized between actors and has the chef as the chain's central link; Or b) Sinergic Short Gastronomic Chains, organized in a vertical way, mediated by institutions and not only by the actors, allowing the consumers and producers greater possibilities of interaction, giving greater power of agency and autonomy to the producers that can establish networks with both the chefs, and consumers directly. In both, the chef appears as central social actor both in the formation of these chains, and in the re-signification of the ingredients towards the singularity. It can be inferred that in the horizontal formation, even if the formation of a short chain is observed, also the formation of market niches is observed, for few producers and few consumers, with low effect of cultural changes and development of the producers. In the vertical formation, there is decentralization of power, a greater degree of relationship between actors, greater autonomy and empowerment of producers, and flexibility to access this market. Thus, it can be said that the embedded gastronomy contributes to the rural development by re-socializing the producers and relocating the products in the constitution of the strategies of valorization of the producer and the product in the short gastronomic chains, from the construction of new markets with new standards of governance. The role of the chef is an educational channel for the awareness of the importance of the approximation and appreciation of Family Agriculture and traditional groups. However, the chef's role must be associated with policies and initiatives that guarantee the strengthening of Family Agriculture, of national biodiversity and the development of short marketing channels.

No Rio de Janeiro, são realizados eventos gastronômicos que desenvolvem a cultura e a economia do estado. O presente trabalho tem por objetivo avaliar o processo de comunicação dos eventos gastronômicos que ocorrem no estado do Rio de Janeiro. Os objetivos específicos compreendem entender o significado dos eventos gastronômicos na sociedade e no turismo, avaliam as informações que os meios de comunicação e os restaurantes fornecem aos seus clientes sobre os eventos gastronômicos e verificam o conhecimento dos alunos sobre o tema. Para o desenvolvimento do trabalho foi adotado o método da pesquisa bibliográfica e da pesquisa de campo. No método da pesquisa de campo utilizou-se a abordagem qualitativa e a quantitativa. Foram utilizados como objeto de pesquisa o portal Mapa de Cultura realizado pela Secretaria de Estado de Cultura, como sujeitos de pesquisa, quatro garçons que trabalham na zona sul e na zona oeste e alunos da Universidade Federal Fluminense - UFF. Concluiu-se que há falhas na comunicação em todos os segmentos estudados. / Brazil has a rich and varied gastronomy in all its territorial extension. In Rio de Janeiro, gastronomic events are held to develop the culture and the state's economy. This study aims to evaluate the communication process of gastronomic events that occur in the state of Rio de Janeiro. Specific objectives include the importance of gastronomic events in society and tourism, evaluate the information that the media and the restaurants provide their customers about the gastronomic events and check the students' knowledge of the subject. For the development work, it adopted the method of literature and field research. In the field research method we used the qualitative approach and the quantitative. They were used as research subjects the portal Culture Map held by the Ministry of Culture, four waiters who work in the south and in the west and the students of the Universidade Federal Fluminense - UFF. It was concluded that there is miscommunication in all studied segments.

Tourism is a phenomenon conveyed in the feasibility of transforming and reorganizing geographic space. Tourism reassures cultures and social values, strengthens environmental notions and creates mechanisms to make the economy of a specific place more dynamic. In order to unleash this net of relationships, Tourism needs the articulation among public policies, private sector, and local community; depending on the interrelation with many sciences. The following work aimed mainly to conduct an analysis on the transformation of the space of the municipalities Santa Maria and Silveira Martins for the Tourism at the Gastronomic Touristic Route of Santa Maria and Silveira Martins. This area was situaded at the Rio Grande do Sul state, southern Brazil at the borther of the Paraná Basin. Many authors approaching and discussing the subject of Tourism Geography, categories space and territory, as well as the role of the public power in the regional/local development have been consulted to develop the work and support it. The methodology used was the theoretical research, the study of a wide bibliography guiding the proposed topics and the collection of data. These data were obtained through field researches in the Gastronomic Touristic Route of Santa Maria and Silveira Martins, with pre set visits, reading of local newspapers, and photography storage, mapping of some attractive with the use of a Leica Global Position System and notes in a field record. In the empirical analysis of the Gastronomic Touristic Route, it was perceived that most of the offer of leisure and Tourism already existed before the establishment of the route, even though it was not organized as a touristic product. With the signing of a protocol of intentions between the two City Halls of Santa Maria and Silveira Martins, the route was established in 2005. In 2008 the Association of the Gastronomic Touristic Route was established to act in the planning and management of the route. In the discussion of the results, it was possible to notice that the Gastronomic Touristic Route presents distinct territorialities that set though many uses: local community, private sector, and public sector. The harsh and transformations of the space were important throughout the years to consolidate the route as a strong touristic product of the Central portion of the RS. It is necessary, however, an integrated action of the local community with an integrated planning of the two municipalities, in a way that it strengthens the management of the Touristic Route and contributes to for the economy to strengthen and improve the quality of life of the local population. / O Turismo é um fenômeno capaz de construir e reorganizar o espaço geográfico. Ao inserir-se no espaço o Turismo resgata valores culturais e sociais, fortalece noções ambientais e cria mecanismos que dinamizam a economia de um lugar. Entretanto, para desencadear essa rede de relações, o Turismo necessita da articulação entre as políticas públicas, o setor privado e a comunidade local e depende da inter-relação com diversas ciências. O presente trabalho tem como objetivo principal realizar uma análise da construção do espaço para o Turismo. Os municípios de Santa Maria e Silveira Martins estão localizados na Borda da Bacia do Paraná entre a Depressão Central o Rebordo e o Planalto da Serra Geral, no Estado do Rio Grande do Sul. Para o desenvolvimento deste trabalho, foram consultados diversos autores que abordam e discutem a temática da Geografia do Turismo, categorias espaço e território, e o papel do poder público no desenvolvimento regional/local para dar suporte teórico nas discussões dos resultados. A metodologia utilizada foi a pesquisa teórica, a consulta a uma ampla bibliografia que norteiam os temas propostos e a coleta de dados. Esses dados foram obtidos por meio de pesquisas de campo na Rota Turística Gastronômica de Santa Maria e Silveira Martins, de visitas pré-estabelecidas, de leitura em jornais locais, de registro de imagens em máquina digital, mapeamento de alguns atrativos com o uso do Global Position System Leica GS 20 e de anotações em caderneta de campo. Na discussão dos resultados, foi possível verificar que a Rota Turística Gastronômica se enquadra na modalidade de turismo rural e apresenta nas rugosidades que se misturam no espaço para representar a importância da rota como um forte produto turístico da região Central do Rio Grande do Sul. Porém, é necessária a ação integrada da comunidade local permeada por um planejamento integrado do município de Santa Maria com o de Silveira Martins, de forma que se fortaleçam os laços na Rota Turística Gastronômica e que dessa forma contribua para aumentar a economia e melhorar qualidade de vida da população local.

The dissertation is one of a number of contributions to the research of a rather new form of tourism - beer tourism, or gastronomy tourism in a broader context. In the first part of the dissertation, the topic is grasped theoretically. Firstly, beer tourism is defined as one of the alternative forms of spending leisure time, and it is classified within tourism typology, alongside the better-known wine tourism. Tourists currently prefer the alternative forms, with an emphasis on, besides other things, tradition, authenticity and experience, which make up the values typical for participating in beer tourism. In spite of this form being at the start of its expansion in the Czech Republic, in the last few years, its dynamic has been immense, which is documented by plain statistics. In the past 3 years, almost half of the current 340 Czech breweries have been established. Further in the text, the product of beer tourism is defined and its typology is created, by which the supply side of tourism on the level of the Czech Republic as well as the Liberec region is later analysed. Branding Prince Edward County as a Gastronomic Niche Tourism Destination: A Case Study

Increasingly, gastronomy is playing a role in people’s motivation for travel, and destinations are making food and beverages their main attraction. This study explored the growing field of gastronomic tourism, a type of niche tourism, through the theoretical framework of destination branding theory. Using a qualitative case study research design, this research examined the branding of the emergent region of Prince Edward County, Ontario, Canada as a gastronomic niche tourism destination from the perspective of tourism industry players. Findings indicated that the region turned to gastronomic tourism due to its agricultural history and need for economic development. It was also found that tourism industry players utilized the processes of brand identity, product development, collaboration, support and communication to brand the region. This study contributes scholarly and practical knowledge to the areas of tourism and branding, by providing insight into the development, management and promotion of destination brands.

Regionální gastronomie ve Středočeském kraji / Regional gastronomy in the Central Bohemian region

The main aim of this thesis is to examine the implementation of the project Czech Specials in practice and analyze offer of regional specialities in the Central Bohemian region through the comparison of the product of certified and non-certified restaurants. The theoretical part deals with the importance of restaurant services, gastronomy, gastronomic tourism, quality, and marketing. The content of the work is also characteristic of the region of Central Bohemia, the historical development of regional gastronomy and specifications of traditional regional specialities of the region. The fourth chapter introduces the project Czech Specials and represents the results of the carried out survey of certified restaurants. In the final chapter the author deals with the analysis of the offer of non-certified restaurants in Kutná Hora, and performs a comparison of their product with the product of certified restaurants. Finally, it presents the findings of an interview on the topic of regional gastronomy and project Czech Specials with the owner of the non-certified restaurant in Kutná Hora.

Se plantea en este lugar como punto de partida para un futuro y progresivo crecimiento del turismo gastronómico a esta zona. La estrategia urbana plantea generar una calle pública peatonal, junto con espacios públicos de estar como un oasis en respuesta al caos que actualmente significa el Centro Histórico. Busca integrarse al entorno con los usos mixtos complementarios con vocación gastronómica, que complementen la función principal del proyecto: la escuela, a través de un aprendizaje teórico y sobre todo, experimental. Asimismo, busca integrarse a través del empleo de estrategias propuestas por el regionalismo crítico para de alguna manera, rescatas y potenciar la memoria colectiva del lugar. / The project consists of the development of a Gastronomic School in the Historical Center of Lima. It is proposed here as a starting point for a future and progressive growth of gastronomic tourism to this area. The urban strategy aims to generate a public pedestrian street, along with public spaces to be like an oasis in response to the chaos that the Historic Center currently means. It seeks to integrate into the environment with complementary mixed uses related to the gastronomic vocation, which complement the main function of the project: the school, through theoretical and, above all, experimental learning. La presente tesis desarrolla un proyecto de renovación para un mercado improvisado con más de 80 años de antigüedad, ubicado en el casco histórico de la ciudad de Cajamarca, este edificio hasta la fecha presenta franco deterioro en la infraestructura urbana y arquitectónica, perjudicando la seguridad de los pobladores, sin embargo, estos factores no han detenido esta actividad, por el contrario, aún se mantienen vigentes y en constante crecimiento. Como punto de partida, se explica la tipología novoandina, y como logra fusionar la cultura, gastronomía e identidad de una ciudad en un solo espacio. Asimismo, describe los aspectos institucionales encargados, que facilitarían la viabilidad de este proyecto. Se estudia la determinación del lugar justificando el funcionamiento de los mercados de abasto ubicados en toda la ciudad. Se plantea al mercado como difusor de cultura, identidad y turismo. De ese modo la historia tambien entra a tallar en la investigación y como cada factor de diseño fue mejorando progresivamente la tipología de este edificio. En cierta medida se ahonda en el marco conceptual y énfasis (arquitectura flexible), en proyectos referenciales, respecto a aspectos formales, funcionales, tecnológicos y geográficos; y como son usados para el diseño. ​ A continuación, el programa arquitectónico resume características del usuario local y se ejemplifica el programa arquitectónico a través de características espaciales y proyectos referenciales. Por último, el estudio del lugar permite conocer detalles puntuales del proyecto y así tener criterios de diseño finales, para el desarrollo del edificio. / This thesis develops a renovation project for an improvised market with more than 80 years old, located in the historic center of the city of Cajamarca, this building to date shows frank deterioration in urban and architectural infrastructure, damaging the security of however, these factors have not stopped this activity, on the contrary, they are still in force and constantly growing. As a starting point, the Novoandina typology is explained, and how it manages to fuse the culture, gastronomy and identity of a city in a single space. It also describes the institutional aspects in charge, which would facilitate the viability of this project. The determination of the place is justified by justifying the operation of all the supply markets located throughout the city of Cajamarca. It is proposed to the market as a diffuser of culture, identity and tourism. In this way the story also enters into the investigation and how each design factor progressively improved the typology of this building. To some extent it delves into the conceptual framework and emphasis (flexible architecture), in referential projects, regarding formal, functional, technological and geographical aspects; and how they are used for design. ​ Next, the architectural program summarizes characteristics of the local user and the architectural program is exemplified through spatial characteristics and referential projects.
