Destaca-se, sobretudo, o estado de São Paulo que realiza 70% do beneficiamento das tilápias produzidas em seus frigoríficos. Neste processo ocorre o beneficiamento dos peixes que são repassados aos supermercados na forma de filés. Estas organizações, denominadas de agroindústrias processadoras de filé de peixes, competem entre si, na busca por uma gestão de produção eficiente no que tange à redução de custos e à eliminação de desperdícios, gerando dessa forma desenvolvimento e acesso a outros mercados. Diante da carência de estudos verificados, a presente pesquisa tem como objetivo geral analisar como as organizações agroindustriais que processam o filé de tilápia do estado de São Paulo estão trabalhando as questões envolvidas ao sistema Lean Production para alcance da Manufatura de Classe Mundial. O método World Class Manufacturing e o sistema Lean Production denotam ser favorecedores das organizações que buscam atingir a competitividade a nível global, podendo gerar padrões eficientes quando bem utilizados. Para atender ao objetivo da pesquisa, empregou-se como método de pesquisa o estudo de caso do tipo múltiplo, com a condução de visitas in loco, a solicitação de documentos e aplicação em três Unidades de Pesquisa de questionário de modo a caracterizar as organizações, verificar as ações dos níveis organizacionais e relatar os benefícios, dificuldade... Of particular note is the state of São Paulo, which produces 70% of the tilapia production in its slaughterhouses. In this process the beneficiation of the fish that are transferred to supermarkets in the form of fillets takes place. These organizations, called fish fillet processing industries, compete with each other in the search for an efficient production management in terms of cost reduction and waste elimination, thus generating development and access to other markets. Given the lack of verified studies, the present research has as general objective to analyze how the agroindustries processing the fillet of tilapia of the state of São Paulo are working the issues involved to the Lean Production system for reach of the World-Class Manufacturing. The World Class Manufacturing method and the Lean Production system are great proponents of organizations that seek to achieve global competitiveness and can generate efficient standards when well used. Identificação e análise dos fatores críticos que interferem na relação entre o suprimento global e a produção enxuta / Identification and analysis of the critical factors affecting the relationship between global sourcing and lean production

O aumento da competitividade entre as empresas no mundo globalizado vem exigindo das mesmas uma melhoria constante das suas operações para buscar ou manter produtos e serviços de alta qualidade a baixos custos e, assim, manterem-se no mercado. Um dos pilares utilizados pelas empresas para sustentar esta melhoria constante é a filosofia de produção enxuta. Com esta filosofia, elas eliminam desperdícios e se beneficiam da redução do inventário, do lead time e custos de produção, melhoram o fluxo de trabalho e a qualidade dos produtos, entre outros. Outro pilar adotado por várias empresas é o suprimento global. As melhorias necessárias, no entanto, podem ser alcançadas com outros pilares além desses, mas que não serão abordados neste estudo. Com o suprimento global, as empresas se beneficiam de custos reduzidos na aquisição dos produtos, acesso a produtos de alta qualidade e conquista de novos mercados através da disponibilização de produtos inexistentes no mercado doméstico. Entretanto, o longo lead time de entrega dos produtos, conseqüente de vários fatores, provoca um aumento do nível de inventário, penalizando os objetivos da produção enxuta. O objetivo deste trabalho é identificar e analisar fatores críticos que tornam, até certo ponto, conflitantes a associação entre as áreas de produção enxuta e de suprimento global. Os fatores identificados na literatura foram: idioma e cultura, flutuação de câmbio, desembaraço alfandegário, complexidades legais, infraestrutura de transporte, ruptura da cadeia de suprimentos, fuso horário, serviço pós-venda, necessidade de consolidação de volumes no transporte e a relação entre fornecedor-cliente. A presença desses fatores como agentes interferentes na relação entre a produção enxuta e o suprimento global foi analisada em um estudo de caso, uma empresa do ramo da saúde. A maioria dos fatores detectados mostrou-se presente na empresa analisada sendo que desembaraço alfandegário, complexidades legais, ruptura da cadeia de suprimentos e variação cambial foram considerados os fatores de maior impacto. Este trabalho poderá contribuir fornecendo subsídios para a elaboração de propostas que amenizem os aspectos aparentemente conflitantes entre as duas áreas mencionadas e, assim, garantir os benefícios de ambas. / The increasing competitiveness in today\'s global marketplace has compelled companies to continuously improve their internal operations while offering high quality products at lower costs. Lean production has been adopted by companies as a way to boost improvement efforts. The lean philosophy aims at eliminating waste and reducing inventory, which in turn may bring about various benefits such as reduced lead time, lower production costs, better workflow and increased quality of products. Global sourcing has also emerged as another philosophy to help companies increase competitiveness. Other philosophies and practices are believed to bring companies the same benefits, but they have not been addressed in this research. Some of the benefits that may result from global sourcing are lower purchasing costs, access to higher quality products and entrance to new markets by offering new products to the domestic market. However, the long lead time required to delivery products, which may result from a variety of reasons, will cause inventory to increase, thus reducing the benefits of lean production. Hence, the objective of this work is to identify and analyze the factors that cause conflict between global sourcing and lean production. The literature points out some factors, such as language, culture, fluctuation of the exchange rate, customs paperwork, legal issues, transport infrastructure, disruptions in the supply chain, time zone, after-sales service, the need to consolidate transport volumes and the buyer-supplier relationship. The impact of these factors over global sourcing, as well as the lean production initiatives, was analyzed during a case study conducted in a firm from the health sector. Most of the aforementioned factors could be detected during the case study, whereas customs paperwork, legal issues, disruptions in the supply chain and fluctuations in the exchange rate were the ones that most affected the company. The results of this work contribute to the body of knowledge by providing evidence for the development of new approaches that seek to mitigate such factors while maintaining the benefits of both lean production and global sourcing.

Os diversos conceitos e técnicas de melhoria contínua de processos têm sido aplicados, nos dias de hoje, em indústrias de diversos setores e empresas prestadoras de serviços. Tanto em ambientes de manufatura quanto em ambientes administrativos, muitas empresas têm enxergado a oportunidade de aplicar técnicas de melhoria de processos e de qualidade, como as técnicas da Produção Enxuta e da Gestão da Qualidade. Entretanto, têm-se notado que algumas iniciativas de melhoria falham por não terem sido devidamente planejadas e priorizadas. Por isso, métodos que busquem melhorar a eficácia de iniciativas de melhoria, aumentando a taxa de sucesso das implantações, têm se tornado muito importantes. Este trabalho apresenta uma proposta de adaptação do método FMEA (Failure Mode and Effect Analysis) para a análise de desperdícios abordados pela Produção Enxuta e definição de ações prioritárias para eliminação ou minimização de desperdícios baseado nos critérios de severidade, ocorrência e detecção. O uso da técnica proposta pode auxiliar a minimizar duas das grandes dificuldades no planejamento de implantação ou manutenção de Produção Enxuta, que são a identificação dos desperdícios e a definição de quais serão eliminados ou minimizados prioritariamente. A proposta foi desenvolvida a partir de um estudo de campo, analisando um fluxo de informação de processamento de pedidos em uma indústria, paralelamente ao desenvolvimento de um projeto de Produção Enxuta. A proposta inova também ao propor um índice de risco que prioriza ação sobre as causas que geram desperdícios mais severos. Os resultados obtidos sugerem que a sistemática proposta pode contribuir para a melhoria da eficácia de programas de Produção Enxuta. / The concepts and techniques for processes continuous improvement have been applied, nowadays, in industries of a lot of sectors and service provider companies. Both in manufacturing and office environments, a lot of companies have identified the opportunity of applying quality and process improvement techniques such as the ones of Lean Production and Quality Management. However, it has been noticed that some improvement initiatives fail because they are not correctly planned and prioritized. Therefore, methods that aim at increasing improvement initiatives effectiveness, by enhancing the implementation success rates, have become very important. This paper presents a proposal of use of the FMEA (Failure Mode and Effect Analysis) to analyze wastes (to be tackle by Lean Production implementations) and define priorities of improvement actions aimed at minimization or elimination of these wastes based on the criteria of severity, occurrence and detection. The adoption of the proposed technique can aid to mitigate one of the major difficulties in implementing and maintaining Lean production programs, related to which wastes should be eliminate first. The proposal was developed in a field research, based on the analysis of a flow of information for order processing in parallel to the implementation of a Lean Production system. The good results suggest that the proposal can contribute to the effectiveness of Lean Production programs. The paper is finalized with suggestions of improvements of the proposal and possibilities for further applications.

Muitos avanços e progressos na dinâmica dos sistemas de produção têm sido conseguidos por meio da aplicação de diversas técnicas e ferramentas de produção enxuta, teoria das restrições e sistemas híbridos. No entanto, é importante salientar que estas técnicas e ferramentas não devem ser usadas unicamente para solução de problemas operacionais de curto prazo, mas sim como um avanço no sentido de obter-se maior competitividade a ser apreciada, também no longo prazo. Apesar dos resultados positivos alcançados, muitas iniciativas de melhoria acabam por esbarrar no descompasso entre as expectativas dos agentes de mudança e os ganhos reais obtidos no horizonte de planejado desejado. Neste sentido, este trabalho propõe-se a desenvolver um método de implementação, pautado nos processos de raciocínio da teoria das restrições, procurando estabelecer uma base lógica de relacionamento entre as ações de melhoria a serem promovidas, seus efeitos esperados e os potenciais obstáculos à sua efetiva aplicação. Com isso, são estudadas com maior profundidade as ferramentas que compõem o processo de raciocínio e algumas ferramentas de melhoria de processos produtivos. Em seguida, o método é validado empiricamente por meio de uma aplicação em uma empresa do setor moveleiro. / Many progresses have been made on the dynamic of production systems by the application of several techniques and tools of lean production, theory of constraints and hybrid systems. However, it is important to point out that this techniques and tools should not only be used for short term problem solution, but a progress in the sense of obtaining larger competitiveness to be appreciated, also on the long term. In spite of the positive results reached, a lot of improvement initiatives face the gap between the change agent\'s expectations and the real gains obtained along the horizon of time. In this sense, this work intends to develop an implantation method, guided by the theory of constraints\' thinking process tools, trying to establish a logical base of relationship among the improvement actions to be promoted, its expected effects and the potential obstacles to its effective application. So, a large depth studied is promoted on the tools that compose the thinking processes and some improvement tools used on production systems, such as lean production tools. Soon after, the method proposed is validated by its application on a furniture industry.

<p>Examensarbetet utfördes på NCC Halmstad under våren 2010. Syftet med examensarbetet var att klargöra vad visuell metodik kan tillföra byggbranschen och hur det upplevs av personer som utför byggprojekt</p><p>Arbetet innefattar en kvalitativ och en litteraturstudie. Den kvalitativa studien genomfördes med hjälp av sju intervjuer inom Region Syd med personer som arbetat med den visuella metoden NCC Projektplanering. Intervjuerna har ägt rum för att ta reda på hur den visuella metodiken fungerar i praktiken.</p><p>Litteraturstudien innefattar en utredning av begreppen Lean, Lean Production, Lean Construction, Last Planner och NCC Projektplanering. Den röda tråden från Lean till NCC Projektplanering är att genom ständigt förbättringsarbete skapa engagemang och ökad delaktighet.</p><p>Den generella uppfattningen av NCC Projektplanering är positiv, dock varierar uppfattningen av metoden efter aktörernas inställning. Examensarbetet klargör vad visuell metodik kan tillföra byggbranschen.</p>

Managing Quality at the Operational Level : A Case Study at Nordea

The majority of researchers, believe that quality management is the aspect of strategy, a method strategically formed to gain competitive advantage. Quality must however, be managed in the sense that it fits the organization. Besides, organizations must also develop strategies to continuously improve and measure quality work. Historically, the view on quality has moved from an end-product focus in manufacturing organizations, to becoming a more holistic approach, incorporating all aspects of an organization. Today, there is no clear framework for how quality should be implemented in the most suitable way. However, strategic tools such as, TQM, Kaizen and Lean-production are used as means to achieve quality. The purpose of this study is to investigate how quality is managed and measured at an operational level at the corporate market department at Nordea, Jönköping. The research method used for the conduction of this study is a case study. The aim of the case study is to give an intensive description of how management work with quality at the corporate market department at Nordea, Jönköping. Thus, our sample is intrinsically bouned. Methods used for data collection, were two types of interviews with the corporate market department manager, and a questionnaire to the co-workers. The results have been analysed with the help of descriptive statistics. Through interviews, we have found that a qualified criteria for quality is when the right product is provided to the right customer by the high skilled employee, in order to achieve customer satisfaction. Quality work per-meates the whole office and it could be captured in two strategies: proactive and reactive. The former deals with the internal routine of work, more specif-ically; the Lean-meetings, coach-meetings, team work and quality measure-ment parameters, whereas the latter regards their continuous work with customer relations. Furthermore, identified tools at the corporate market de-partment at Nordea, Jönköping are; Lean-production, coach-meetings, ESI and CSI. These are well known by the co-workers, however, what can be further discussed is the implementation and fit of the tools with the organization. / Majoriteten av forskare tror att kvalitetsstyrning är en essentiell aspekt inom strategi för att uppnå konkurrensfördelar. Vidare måste kvalitet inte bara styras och implementeras på rätt sätt utan företag måste även utveckla strategier för att kontinuerligt förbättra samt mäta kvalitet. Historiskt sett, har fokus på vad kvalitet är förflyttat sig från slut produkten i tillverkningsindustrin till ett mer helhetskoncept som inkluderar alla delar av företag. Idag finns inget fast ramverk för hur kvalitets styrning skall implementeras på bästa sätt, dock kan TQM, Kaizen och Lean-produktion ses som hjälpmedel för att uppnå kvalitet. Syftet med studien är att undersöka kvalitetsstyrning på en operationell nivå samt att se hur kvalitetsförbättringar mäts på företagsavdelningen på Nordea i Jönköping. Den forskningsmetod som använts för den här studien är en fallstudie. Målet med studien var att ge en djupgående deskription av kvalitetsstyrningen på Nordeas företagsavdelning i Jönköping. Därför är vår målgrupp bunden till en specifik grupp. Metoder som användes var två olika intervjutyper med företagsavdelningschefen, samt en enkät till medarbetarna. Resultaten var senare sammanställda med hjälp av deskriptiv statistik. Från vår studie kan slutsatsen dras att ett kvalifiserat kriterium för kvalitet på Nordea Jönköpings företagsavdelning är, när den kompetenta medarbetaren erbjuder den rätta produkten till rätt kund för att uppnå kundnöjdhet. Kvalitetsarbetet genomsyrar hela organisationen och på företagsavdelningen kan man identifiera att de jobbar med kvalitetstyrning från två strategier; proaktiv och reaktiv. Proaktiva strategier berör interna arbetssätt, närmare bestämt; Lean-möten, Coach-samtal och kvalitetsmätnings parametrar. Reaktiva strategier är deras arbete för att få konkurrensfördel och stärka kund relationerna. Kvalitetsmätningsinstrumenten som är identifierade i arbetet på företagsavdelningen på Nordea Jönköping är: Lean-produktion, coach-samtal, ESI och CSI. Dessa är vedertagna av medarbetarna men vad som kan diskuteras är dock hur implementeringen av dessa verktyg är anpassad till organisationen.

Miljövärdeflödesanalys av Risifruttiproduktionen : En utvärdering av värdeflödesanalys och miljövärdeflödesanalys

This report is the result of a thesis work carried out on the Risifrutti production at the company Procordia Food AB. The thesis is at a master level and is the final work for the author to receive a Master of Science in Innovative production at Mälardalen University. The thesis comprises 30 credits and has lasted for 18 weeks. The thesis is mainly a research on whether it is possible to perform an Environmental Value Stream Map (E-VSM) in a food processing industry and an evaluation if the tools E-VSM and Green Performance Map (GPM) are useful in this type of industry. An extra part to this research is to use the results from the E-VSM and give Procordia Food AB information on improvement potentials in the Risifrutti production. The author has found it difficult to collect some of the quantitative data to the E-VSM, mainly regarding energy, but by using the Value Stream Mapping (VSM) tool and other Lean tools the author was able to identify and quantify several wastes in the Risifrutti production. Recommendations for improvements based on these wastes have been given to the company. In the research part of this report the utility of the Value Stream Map, Environmental Value Stream Map and Green Performance Map in a food processing industry have been analyzed. The author has found that the Value Stream Map has been a useful tool since waste and unevenness in the tact of the production has been identified. The Environmental Value Stream Map and the Green Performance Map are also great tools when a company wants to analyze their environmental impact and then invest in environmental improvements. However, no profound energy analyzes has been done in the Risifrutti production because of the lack of energy meters for steam, electricity and compressed air in the production lines. / Denna rapport är resultatet av ett examensarbete utfört på Risifruttiproduktionen hos företaget Procordia Food AB. Examensarbetet är på D-nivå och är det slutgiltiga arbetet för att författaren ska få en Civilingenjörsexamen inom Innovativ produktion vid Mälardalens Högskola. Examensarbetet omfattar 30 högskolepoäng och har pågått i 18 veckor.   Examensarbetet är i huvudsak en forskning av huruvida det är möjligt att utföra en Miljövärdeflödesanalys på en livsmedelsprocessindustri samt en utvärdering av om Miljövärdeflödesanalys och Green Performance Map verktygen är användbara i denna typ av industri. En bidel till denna forskning är att med hjälp av resultaten från Miljövärdeflödesanalysen ge Procordia Food AB information om vad som bör förbättras i Risifruttiproduktionen.   Författaren har haft det svårt att samla in vissa kvantitativa data till Miljövärdeflödesanalysen, främst beträffande energiåtgång i delprocesserna, men har ändå med hjälp av en Värdeflödesanalys och andra Lean verktyg kunnat identifiera och kvantifiera flera slöserier i Risifruttiproduktionen. Rekommendationer till förbättringar baserade på dessa slöserier har givits till företaget.   I forskningsanalysen har verktygen Värdeflödesanalys, Miljövärdeflödesanalys samt Green Performance Map användbarhet i en livsmedelsprocessindustri analyserats. Författaren har funnit att Värdeflödesanalys är ett användbart verktyg då slöserier och ojämnheter i produktionstakt har kunnat identifieras. Miljövärdeflödesanalys och Green Performance Map verktygen är också bra verktyg när ett företag vill analysera sin miljöbelastning för att sedan investera i miljöförbättringar. Dock har inga djupare energianalyser kunnat göras i Risifruttiproduktionen eftersom energimätare för el, ånga och tryckluft saknades i produktionen.
