The food safety knowledge of street vendors and the food safety compliance of their food service facilities, Johannesburg, South Africa

The inadequate food safety knowledge by street food vendors have been a challenge encountered in ensuring safety of street foods. The aim of this study was to assess the food safety knowledge of street food vendors in the Johannesburg metropolis and to evaluate the conformance and monitoring of their street food vending facilities in accordance to regulations governing general hygiene requirements for food premises in South Africa. A cross sectional survey was conducted in which 315 street food vendors and 155 street food vending facilities were observed using a questionnaire instrument and observational checklist, respectively. The majority (61.3%) of the street food vendors were females and most (64.1%) of them had not attended a food safety training course. Only a few (12.1%) street food vendors knew the correct minimum internal cooking temperature for stuffed chicken, while less than half knew the correct temperature for cold and hot holding of ready-to-eat foods, 40% and 39% respectively. The majority of them have never heard of Salmonella (92.7%), Campylobacter (95.2%), Listeria (57.1%), Clostridium (94.3%), or Staphylococcus (87.6%). Up to 52% street food vendors had moderate food safety knowledge. Most of the street food vending facilities (68.3%) had been inspected by health inspectors and only 17% of street food vending facilities had low level of compliance to regulations governing general hygiene requirements for food premises and the transport of food in South Africa. The overall food safety knowledge of street food vendors in Johannesburg metropolis was moderate. The level of compliance and monitoring of street food vending facilities to regulations governing general hygiene requirements for food premises in South Africa was satisfactory. Inledning Yrket som kabinanställd inom flyget präglas av serviceanda och ansvar för passagerares säkerhet. Arbetsmiljön innebär fysiska påfrestningar vad gäller till exempel kabintryck och låg syrenivå. Mat och måltider intas under olika tider på dygnet och infaller sällan på normala måltidstider. Kabinpersonalens måltider regleras av regler, avtal och policyer rörande arbetstidens längd. Syfte Syftet var att undersöka kabinpersonalens måltider under arbetstid, med fokus på riktlinjer och policyer samt hur de kabinanställda upplevde maten och måltiderna. Material och Metod Efter en inledande litteraturgenomgång genomfördes semistrukturerade intervjuer med personalchefen för ett flygbolag i Sverige samt med VD:n för det företag som levererar mat till de kabinanställda inom detta specifika flygbolag. Därefter genomfördes en enkätundersökning bland kabinanställda i Skandinavien. Resultat Studien visade att maten och måltiden hade stor betydelse för kabinpersonalens arbete och välmående. Från flygbolagets och matföretagets sida fanns en intention att ge kabinpersonalen tillräckligt med tid för att äta och en välbalanserad kost utifrån fackliga avtal om varm mat. I intervjuerna framkom dock att maten inte var näringsberäknad. Enkätsvaren angav att gillandet var lågt vad gäller kabinpersonalens mat, därför medtogs hellre egen mat. Många upplevde också riktlinjer och policyer för maten som oklara och att dessa i vissa fall saknades. Slutsatser Det fanns få riktlinjer och policyer för kabinanställdas mat- och måltidssituation. Detta ledde istället till att informella riktlinjer skapades. Måltidsmiljön upplevdes som stressig och få upplevde att kabinpersonalens mat tillgodosåg deras behov, varken sensoriskt eller näringsmässigt. Ändå önskade många att arbetsgivaren regelbundet skulle tillhandahålla personalmat. / Introduction The cabin crew profession is characterized by a spririt of service and responsibility for the safety of passengers. The work environment involves certain physical strain such as cabin pressure and lack of oxygen. Meals are consumed during different times of the day and rarely occur at normal meal times. The meals of the cabin crew are regulated by guidelines, agreements and policies regarding working hours. Purpose This study was conducted to investigate the cabin crew meals during working hours, with focus on guidelines and policies and how the cabin employees experience the food and the meal environment. Methodology After an initial literature review, a personel manager of a Swedish airline company and the CEO of the food company that provides the airline company with food, were interviewed using semi-structured inteviews. Then a survey was conducted among cabin crew in Scandinavia. Results The study showed that food and meals were of great importance for the work of the cabin crew and for their well-being. There was an intention, from the airline company and the food company, to provide the cabin crew with time enough to eat and with a well-balanced diet based on union agreements on hot food. The interviews revealed that the crew food was not nutrition calculated. The survey indicated that the liking of the provided crew food was low, hence the cabin crew bring their own food. Many of the participants experienced food guidelines and policies as unclear and in some cases as non-existing. Conclusion There were few guidelines and policies for the cabin crew food and meal situation. However informal guidelines balanced the absence of formal regulations. The meal environment was perceived as stressful and few experienced that the crew food met their needs, neither sensory or nutritionally. Even so, many wanted the employer to regularly provide crew food.

The food safety knowledge of street food vendors and the sanitary conditions of their street food vending environment, Zululand District, South Africa

Street-vended foods are convenient and cheap meals, but their contamination can lead to foodborne illness. This study aimed to evaluate food safety knowledge of street food vendors in Ulundi and AbaQulusi local municipalities of Zululand District, South Africa and compliance of their street food vending environment to sanitary requirements. A cross sectional survey design was utilised to gather data from 400 street food vendors using interviews. A piloted checklist was used to collect data on the sanitary characteristics from 200 randomly selected street food vending facilities. Most of the street food vendors were black (99%), females (73%), and above 35 years (55%). Only the minority of street food vendors had attended a high school (47%) and the vast majority (77%) of them had not attended any food safety training course. The majority (64.7%) of respondents knew that food should not be handled when they have diarrhoea, even if their hands were washed regularly, neither when they have flu, colds, cough, or catarrh. The minority (43%) of street food vendors knew that the use of separate cutting boards for meat and salad, and washing them between uses are the safest ways to avoid cross-contamination. The majority (79.4%) of street food vendors were aware that microorganisms could cause foodborne diseases that may lead to death. The vast majority (76%) of street food vendors had low food safety knowledge and only 14% of the street food vending sites had high compliance with sanitary conditions. In conclusion, most street food vendors possessed inadequate food safety knowledge in key food safety parameters and most of the street food vending facilities were noncompliant. Furthermore, most of them operate under poor sanitary conditions. Street food vendors should be provided with compliant waste disposal and standard kitchen facilities with water resources to ensure hygienic preparation and serving of food. / Life and Consumer Sciences / M. Aim: The aim of this study was to investigate the frequency of and the gender differences in the use of professional home care in Germany. Methods: We used harmonized data from three large cohort studies from Germany (“Healthy Aging: Gender-specific trajectories into the latest life”; AgeDifferent.de Platform). Data were available for 5,393 older individuals (75 years and older). Mean age was 80.2 years (SD: 4.1 years), 66.6% were female. Professional homecare outcome variables were use of outpatient nursing care, paid household assistance, and meals on wheels’ services. Logistic regression models were used, adjusting for important sociodemographic variables. Results: Altogether 5.2% of older individuals used outpatient nursing care (6.2% women and 3.2% men; p < 0.001), 24.2% used paid household assistance (26.1% women and 20.5% men; p < 0.001) and 4.4% used meals on wheels’ services (4.5% women and 4.0% men; p = 0.49). Regression analysis revealed that women had higher odds of using paid household assistance than men (OR = 1.48, 95% CI: [1.24–1.76]; p < 0.001), whereas they had lower odds of using meals on wheels’ services (OR = 0.64, 95% CI: [0.42–0.97]; p < 0.05). No statistically significant differences in using outpatient nursing care between women and men were found (OR = 1.26, 95% CI: [0.87–1.81]; p = 0.225). Further, the use of home care was mainly associated with health-related variables (e.g., stroke, Parkinson’s disease) and walking impairments. Conclusions: Our study showed that gender differences exist in using paid household assistance and in culinary dependency. For example, meals on wheels’ services are of great importance (e.g., for individuals living alone or for individuals with low social support). Gender differences were not identified regarding outpatient nursing care. Use of professional home care servicesmay contribute to maintaining autonomy and independence in old age.

More than a Passover: inculturation in the supper narratives of the New Testament

This thesis examines whether the theological method currently known as inculturation was used in the Supper Narratives of the New Testament. A methodology is set up in which texts are examined against the backdrop of Graeco-Roman, Judaic and early Christian cultures. This methodology focusses on family resemblances and analogies, rather than genealogy or causal dependence to examine the links between text and context. It also avoids claims for orthodoxy dependent on claims about origins. Engaging with the claims of writers from Schweitzer, through Jeremias and up to the present, three themes are identified: meals, sacrifice and eschatology. The manifestations of each are examined against the three cultural groups:Judaic, Graeco-Roman and early Christian. The Supper Narratives (Mk 14:12-26, Matt. 26:17-30 and Luke 22:7-23 and 1 Cor 11:17-34) are then mapped against these themes. Analogies to the cultural groups are then traced. This process leads to conclusions that the New Testament writers did use a methodology which can be identified as inculturation. It manifests itself particularly through patterns identified by anthropologists as bricolage and re-accentuation. A notable example is "sacrificialisation", in which events and items are invested with a fresh sacrificial significance. Judaic concepts (e.g., covenant and Atonement) and rituals (e.g., sacramentals and Passover) dominate the interpretations of Jesus' last meal with his disciples. This does not mean that inculturation only took place in relation to Jewish culture. Many of the concepts used (e.g., sacrifice and sacrament) share commonalities with Graeco-Roman thought which allows them to engage with such world-views. This process sees Judaic understandings used as correctives to Graeco-Roman thinking about sacraments. It also sees Jewish concepts used to address Graeco-Roman values, and give an added historical depth (antiquitas) to a comparatively recent event. / Biblical and Ancient Studies / D.Th. Étude des stratégies employées par des parents d’enfants d’âge préscolaire pour favoriser la saine alimentation et le repas en famille agréable

Contexte. Les attitudes et comportements alimentaires développés pendant la petite enfance influencent grandement la relation future du mangeur à l’égard des aliments. Le parent s’avère en ce sens des plus déterminants. Objectifs. Cette étude vise à connaître les pratiques et attitudes employées par les parents québécois d’enfants d’âge préscolaire pour favoriser le « bien manger » ainsi que le repas familial agréable. Méthodes. La collecte de données a été effectuée à l’aide de cartes postales qui étaient distribuées dans six cent cinquante Centres de la Petite Enfance parmi les mille retrouvés dans la province de Québec pour ensuite être remises aux parents. L’analyse des réponses aux deux questions ouvertes figurant sur la carte postale a été effectuée en se basant sur le modèle des prises alimentaires de Jean-Pierre Poulain. Résultats. Plus de mille (1257) cartes postales ont été retenues aux fins d’analyses. Les données recueillies permettent dans un premier temps de connaître la perception des parents quant à la notion de manger bien. Les notions de qualité et de quantité, diamétralement opposées se démarquent. Dans le cas du repas familial, la discussion, la présence de tous les membres à table ainsi que l’absence de télévision sont abondamment mentionnées. Conclusion. Cette étude permet de constater la variété des stratégies employées par les parents québécois au moment du repas. Ces données d’une grande pertinence pour la santé publique permettront de cibler les messages clés à promouvoir auprès de ces acteurs d’influence dans le développement des habitudes alimentaires des tout petits. / Context. Food attitudes and behaviors developed during early childhood greatly influence the future relationships that children will have with food. Parents play a major role in this part of their preschool child’s life. Objective The main goal of this study is to explore attitudes and behaviors that Quebec parents adopt at meal time with their preschooler in order to encourage healthy eating practices as well as enjoyable family meals. Methodology. To collect data, postcards, an innovative tool, were sent to six hundred fifty day-care centres, also known as Centres de la petite enfance (CPE), of which there are more than a thousand in Quebec. The postcards were then distributed to parents, who were asked to respond to two open-ended questions. Analysis of the qualitative data was based on Jean-Pierre Poulain’s food intake model. Results. More than a thousand (1,257) postcards were used in the analysis. Data collected illustrate first and foremost the vision that parents have of healthy eating and reveal two diametrically opposed perspectives: quality and quantity. With regard to family meals, respondents frequently mentioned conversation at the table, the presence of all family members and the absence of television while eating. Conclusion. Findings from this study show the diverse strategies used by Quebecers during mealtimes. The data are essential to defining key public health messages about eating habits for children that should be promoted among these influential actors.

Abstracts This thesis will address current problems in terms of school feeding in the Czech Republic. Its purpose is to summarize the situation from the point of view of the heads of school cafeterias and to determine the greatest difficulties for further functioning of the system. School feeding system is a part of educational and learning process and its effects relate to proper fulfilling of schools' educational programmes. At the same time, it is an environment for application of informal learning in terms of correct eating habits and social interactions during meals. By participating in the process, the pupils gain socio-psychological competences for entire life. Not only they gain practical knowledge in terms of nutrition, they learn as well how to interact during meals in an unforced way. Using the questionnaire method, some of the problems of school feeding system were identified. Some of the most severe problems might become a risk to this whole unique system. The outcome of the research are findings which point out the problems, such as old age of the personnel in the school feeding system, as well as the absence of new young people, who would continuously take on the experiences and replace the retiring workers. Beyond the Ancestral Skillet: Four Louisiana Women and Their Cookbooks, 1930-1970

Cookbooks have a unique ability to record women.s history, both private and public. Cookbooks transmit not only instructions for preparing specific dishes, but also the values of class, race and gender of the times and places in which they are created. This study will focus on several such cookbooks produced by Louisiana women in the mid-twentieth century, from the 1930s to the 1970s. Different though these works are, they collectively demonstrate that the best cookbook authors are purveyors not only of recipes, but also of class values, ethnic relations and folklore, and gender models that one generation of women endeavors to transmit to the next. Most important, this study will argue that these cookbooks provide a rich and penetrating insight into the class structure in rural Louisiana, race and accomplishment in an era of segregation, and the role of gender in domestic and professional occupation.

O Programa Nacional de Alimentação Escolar (PNAE), mais conhecido como Merenda Escolar, é um dos programas mais antigos e duradouros, implementado no Brasil e tem por objetivo atender as necessidades nutricionais dos alunos da educação básica durante sua permanência na escola com o intuito de garantir desenvolvimento e aprendizagem adequados bem como promover a formação de hábitos alimentares saudáveis. O objetivo desta pesquisa foi avaliar o perfil dos beneficiários, a qualidade e a atuação de gestores e da comunidade no âmbito do PNAE no Município de Guariba - SP, no ano de 2013. Para a avaliação nutricional dos alunos foram analisados os indicadores antropométricos (escore Z do Índice de Massa Corporal). Para os pais ou responsáveis foi utilizado um instrumento socioeconômico para captar informações sobre renda, (In)Segurança Alimentar entre outros indicadores referentes aos alunos. Para as merendeiras foi utilizado um questionário para averiguar, além de outros aspectos, a regularidade de distribuição de alimentação nas escolas. Com o Conselho de Alimentação Escolar verificou-se a atuação quanto ao cumprimento da legislação que norteia o Programa. Merece destaque a prevalência de excesso de peso dos alunos (46,35%) principalmente no que tange a proporção de obesos (24%). As condições socioeconômicas das famílias dos alunos também devem ser salientadas, uma vez que 90,88% das famílias possuem rendimento per capita que não alcançava R$ 600,00. As análises envolvendo o tema Segurança Alimentar e Nutricional mostraram que a proporção de famílias em situação de insegurança é superior às médias nacionais e, especificamente, para a região Sudeste do país. Considera-se expressiva a adesão dos alunos ao PNAE bem como o reconhecimento da importância que estes atribuem ao Programa; porém a proporção de adesão efetiva (consumo nos cinco dias da semana) mostrou-se baixa. Quanto às análises de atividade física, constatou-se uma tendência do sexo feminino ao sedentarismo e o tempo dedicado a atividades sedentárias foi maior àqueles destinados para a prática de atividade física. A oferta da merenda escolar ocorre de modo regular nas escolas integrantes da pesquisa. No tocante ao Conselho de Alimentação Escolar, os membros mostraram pouco conhecimento sobre a legislação vigente que regulamenta o PNAE e o cumprimento da exigência relativa à aquisição de gêneros alimentícios diretamente da Agricultura Familiar e do Empreendedor Familiar Rural. / The Brazilian National School Meals Program, also known as School Lunch, is one of the most ancient and enduring programs implemented in Brazil and aims to meet the nutritional needs of basic education students during their stay in the school in order to ensure appropriate development and learning as well as promoting the formation of wholesome eating habits. The principal focus of this essay was seeing the beneficiarys profile, the quality and the performance of managers and the community within The School Meals Program in Guariba\'s city, in 2013. For nutritional assessment of the students there were analyzed anthropometric indicators (Body Mass Index and Z score). For parents or guardians a socioeconomic instrument was used to capture information on income, food security (Brazilian Scale of Food Insecurity and Hunger) among other indicators of students. For cooks a questionnaire was used to ascertain, among other aspects, the regularity of power distribution in schools. Moreover, was analyzed the performance and enforcement of legislation that it guides the Program. Noteworthy is the prevalence of overweight students (46.35%) mainly as regards the proportion of obese (24%). The socioeconomic status of student\'s families should also be emphasized, since 90.88% households income per capita does not reach R$ 600,00. Analyses involving the theme Food Security and Nutrition showed that the proportion of households insecure is higher than the national averages and the Southeast. Can be considered significant adherence of students to school meals as well as recognition of the importance of the program by the students, but the proportion of effective adhesion (consumption in the five days of the week) was low. As for the analysis of physical activity, there was a tendency of girls to a sedentary lifestyle and the time devoted to sedentary activities was higher for those with physical activity practice. It was observed that the provision of school meals happens so regularly in schools participating in the study. Regarding the School Food Council, the members showed little knowledge of the current legislation under the Brazilian National School Meals Program and the fulfillment of purchase of food directly from the Family Farm and Rural Family Entrepreneur.
