Analýza jídelních lístků na vybrané základní škole z hlediska dodržování doporučených výživových dávek / Analysis of menu cards at choice primary school from aspect of advised nutritional doses

Diploma thesis is based on the research which was carried out at the Primary school Velešín in the school year 2007/2008 and was focused on the pupils of fifth, seventh and ninth grades. The objective of the thesis was the analysis of the menus to find out saturation by macro-nutrients and selected micro-nutrients according to the nutritional requirements for school children. Research investigation might be divided into four parts. First part lied in the collection of the menus for the school year, their analysis in the programme NutriDan and following comparison to the norm of need of a school lunch, which is 35 % of a total daily nutritional dose. In the second part the variety of menus was assessed on the basis of repetition rate of particular meals in the school canteen in a month. The third part was the carrying out a questionnaire research of eating habits in pupils. In the fourth part the testing hypotheses were statistically assessed by means of chi-square distribution test. Out of gained results it was found out that required energy was fulfilled only in girls of ninth grade. The fulfilment was at the level 36.14{--}38.29 % of recommended daily dose (RDD). In other grades the energy was undervalued. Proteins were over the limit through the whole year. In the pupils of the fifth grade the fulfilment was in the interval 72.66{--}98.24 % of RDD (the average was 84.7 %), in the pupils of the seventh grade in the interval 55.28{--}74.22 % of RDD (the average was 64.2 %) and in the pupils of ninth grade in the interval 64.93{--}103.15 % of RDD (the average was 82 %). The fulfilment of carbohydrates was insufficient. In the fifth grade it was in the interval 18.81{--}25.35 % of RDD, in the seventh grade only in the interval 16.27{--}23.52 % of RDD and in ninth grade in the interval 21.54{--}29 % of RDD. The intake of lipids was excessive in the girls of the ninth grade (37.56{--}46.21 % of RDD). The fibre was in the norm of need. Out of the observed micronutrients calcium was deficient; the fulfilment was not over 21.62 % of RDD in the pupils of the fifth grade, in the pupils of the seventh grade 19.82 % of RDD. In the pupils of the ninth grade the fulfilment was in the interval 21.37{--}27.86 % of RDD. Through the whole year, vitamins B6 and B12 were over the limit. By the assessment of variety the low rates of leguminous soups, fish, fruit and vegetables were found out. Pork meat and sweet meals were excessive in several months. In boys increasing trend of Body Mass Index (BMI) depending on their age was evident; with higher age more respondents left out breakfast and had lunch more off the school canteen, which might be one of the causes of overweight or obesity in children. The consumption of fruit and vegetables was insufficient. Tested hypotheses proved the following: physical activity did not depend on respondents{\crq} sex; respondents{\crq} BMI depended on regular consumption of breakfast, time spent at a TV set and a computer did not depend on the age of respondents.

Nessa fase, é necessário compreender as transformações em relação ao estado nutricional, para propor estratégias de ações efetivas. O objetivo do estudo foi avaliar o estado nutricional e as práticas alimentares de adolescentes de município da região oeste paranaense. Foi analisada ainda a adesão do grupo em relação ao Programa Nacional de Alimentação Escolar (PNAE). O estudo foi realizado com 167 adolescentes entre 10 e 18 anos, matriculados na rede pública de ensino do município de Toledo-Paraná, no ano de 2004. Foram coletados dados socioeconômicos, antropométricos, de consumo alimentar, percepção corporal, desenvolvimento puberal, atividade física e informações sobre a alimentação distribuída nas unidades de ensino escolar. Para a análise do estado nutricional dos alunos, foi adotado o Índice de Massa Corporal - IMC e para a avaliação do consumo alimentar, o Recordatório Alimentar de 24 horas. Foi aplicado o teste de qui-quadrado para verificar associação entre estado nutricional e as variáveis: gênero, rendimentos familiares, maturação sexual, atividade física e ingestão de nutrientes. A análise de variância e o teste de Tukey foram realizados para verificar associação entre consumo alimentar e estado nutricional e o teste t-student para comparar a ingestão de nutrientes com a recomendação e detectar possíveis diferenças nas medidas referidas e aferidas de peso, estatura e IMC. Para avaliar a concordância entre as medidas referidas e aferidas, foi determinado o coeficiente de correlação intraclasse de Pearson (CCI), conforme faixa etária e gênero. As análises sobre a adesão ao PNAE foram baseadas no cálculo do Índice de Atendimento Efetivo (IAE) e na frequência de consumo da alimentação escolar. A aceitação foi medida pelo método da Escala Hedônica Facial. Os fatores analisados intervenientes na adesão ao programa foram: tipo de preparação, local, temperatura, tempo destinado ao consumo de alimentos na escola, e utensílios usados na alimentação escolar. Para todas as análises, foi adotado o nível de significância de 5%. A prevalência de excesso de peso no grupo foi de 8,4%. O consumo de colesterol apresentou-se elevado no grupo das meninas com baixo peso e a ingestão de fibras foi menor no grupo com excesso de peso, em ambos os gêneros. A ingestão de cálcio e vitamina A foi significativamente menor que o recomendado. Não foram verificadas diferenças significativas entre as variáveis faixa etária e gênero em relação às medidas de peso, estatura e IMC referidos e aferidos. Os resultados mostraram expressiva adesão dos alunos ao PNAE e entre os fatores que interferem na adesão ao programa, algumas preparações integrantes do cardápio devem ser revistas. As medidas referidas, especialmente a estatura, devem ser utilizadas com cuidado na avaliação do estado nutricional de adolescentes. Melhorias podem ser incorporadas ao PNAE para ampliar a adesão dos alunos ao programa. Sugere-se maior envolvimento dos gestores públicos na implementação de estratégias, com destaque para as medidas educativas passíveis de serem desenvolvidas no âmbito escolar, para que sejam corrigidos, em curto prazo, problemas nutricionais que podem comprometer a saúde desta população / Abstract: In adolescents, the inadequate nutritional habits can result in many diseases. During this phase, it is necessary to understand the changes associated to the adolescents' nutritional profile, in order to propose strategies of effective actions as well as improve their health. This study aimed at evaluating the nutritional status and food intake practices in adolescents from a western city of Paraná State. It was also analyzed the group's adhesion on the National School Meal Program (NSMP). The study was performed in 2004, with 167 adolescents from 10 to 18 years old, all enrolled on public schools in the city of Toledo, PR. Data as socioeconomic, anthropometric, food intake, corporeal perception, pubertal development, physical activity and information concerning meal distribution on the school units were collected. In order to analyze the students' nutritional status, it was applied the Body Mass Index (BMI) and to evaluate the food intake consume, the 24-hour diet recall. It was also used the qui-square test to verify any association between the nutritional status and its variables: gender, family income, sexual maturity, physical activity and nutrients intake. The analysis of variance and the Tukey test were done to verify the association between food intake and nutritional status, while the t-student test compared nutrients intake with the recommendation to detect possible differences on the self-reported and measures taken of weight, height and BMI. To evaluate the relation between the self-reported and measures taken, it was determined the Pearson intra-class correlation coefficient, according to the age group and gender. The analyses concerning NSMP adhesion were based on the Effective Assistance Index (EAI) and the school meal consumption frequency. The approval was measured by the facial hedonic method. In order to evaluate the factors that can interfere on the program adhesion, the following items were analyzed: food preparation type, place, temperature, time determined to the food intake and the utensils used on the school meals. It was chosen a significance level of 5% for all the analyses. The cholesterol intake was high for the girls' group, with low weight and the fiber intake was low in the overweight group in both gender. Calcium and vitamin A consumption was considered significantly bellow the recommended. No significant differences were observed between the variables age and gender regarding measures of weight, height and BMI, measured and self-reported. The results showed a significant adhesion of the students to NSMP and, among the factors that interfere on the program adhesion, there are some preparations in the menu which should be reviewed. The self-reported measures, mainly tallness, must be used with caution during the nutritional status evaluation in adolescents. Improvements can be incorporated to the NSMP in order to intensify the students' adhesion to the program. This research proposes a deeper commitment by the public executives to implement some strategies, highlighting educative measurements that can be developed in the school environment, so that nutritional problems can be corrected, in a short term, since they can harm this population health / Doutorado / Consumo e Qualidade de Alimentos / Doutor em Alimentos e Nutrição

Avaliação da concentração de elementos químicos tóxicos na merenda escolar de crianças da cidade de Ribeirão Preto e estimativa de suas ingestões diárias / Assessment of toxic chemicals concentration in the school

A contaminação do ambiente por elementos químicos é um problema crescente em várias regiões do planeta. Muitos destes elementos químicos, que incluem o Cd, Pb e As são tóxicos aos humanos.De acordo com os órgãos de saúde como a Organização Mundial da Saúde (OMS), 90% da ingestão destes elementos tóxicos ocorre por meio do consumo de alimentos (Tavares et al., 1992; Virga et al., 2007). Neste sentido, a estimativa da exposição pela alimentação é fundamental para avaliação de risco de possíveis efeitos adversos. A avaliação da exposição alimentar consiste em associar os dados de consumo alimentar de uma determinada população com as concentrações observadas dos elementos químicos em sua dieta (Nasreddine, 2010). Neste sentido, o objetivo deste trabalho foi, determinar a ingestão diária dos elementos químicos tóxicos (As, Pb e Cd) em crianças em idade escolar através dos alimentos fornecidos pela Prefeitura de Ribeirão Preto nas merendas escolares. A metodologia utilizada no trabalho foi de dupla dieta, onde os alimentos analisados já estão prontos para o consumo. As merendas fornecidas por duas escolas municipais (infantil e ensino fundamental) e a cozinha piloto foram coletadas durante todos os dias letivos dos meses de março, junho, agosto e novembro de 2011. Os alimentos coletados foram congelados e liofilizados para posterior análise. As análises foram feitas utilizando a espectrometria de massas com plasma acoplado (ICP-MS) com prévia solubilização ou digestão ácida das amostras, com hidróxido de tetrametilamônio (TMAH) eácido nítrico (HNO3)/peróxido de hidrogênio (H2O2), respectivamente. A concentração média de As no arroz, feijão, legumes/verduras, carne vermelha, frango, peixe de água doce, peixe de água salgada e carne suína foi respectivamente de: 111 ng g-1, 17,3 ng g-1, 35,6 ng g-1, 34,3 ng g-1, 27,4 ng g-1, 65 ng g-1, 3,3 ?g g-1 e 33,6 ng g-1. A concentração de Cd encontrada nos mesmos alimentos foi respectivamente de: 11,4 ng g-1, 2,9 ng g-1, 24,6 ng g-1, 4,9 ng g-1, 2,6 ng g-1, 4,9 ng g-1, 63,6 ng g-1 e 5,1 ng g-1. Já a concentração de Pb encontrada foi respectivamente: 1,1 ng g-1, 3,4 ng g-1, 23,6 ng g-1, 8,1 ng g-1, 5,1 ng g-1, 4,4 ng g-1, 6,9 ng g-1 e 18,6 ng g-1. Com estes valores encontrados, calculou-se a ingestão média destes elementos químicos tóxicos pelas crianças durante o almoço servido pelas escolas municipais de Ribeirão Preto. A ingestão média de As, Cd e Pb na escola de ensino infantil foi respectivamente de 5,3 ?g, 0,6 ?g e 0,4 ?g; na escola de ensino médio foi respectivamente 6,9 ?g, 0,9 ?g e 0,6 ?g. Estes valores estão abaixo dos valores de referência toxicológicos fornecidos pela Autoridade Europeia de Segurança Alimentar (EFSA) e Organização Mundial de Saúde (OMS). / Chemical\'s contamination in the environment is a growing worldwide problem. Many of these chemical elements, including Cd, Pb and As are toxic to humans. According to the World Health Organization (WHO), 90% of the intake of these toxic elements occurs through the food consumption (Tavares et al., 1992; Virga et al., 2007). Therefore, the estimation of exposure to these chemicals in the diet is essential for risk assessment and, possibly, to determine the relationship between the adverse effects observed in humans and dietary exposure to certain substances. Dietary exposure assessment is an association between the data of food consumption of a specific population with the observed concentrations of chemical elements in their diet (Nasreddine, 2010).In this sense, the objective of this study was to determine the daily intake of toxic elements (As, Pb and Cd) in children through the food provided by the city hall of Ribeirão Preto in school lunches. The methodology used in this study was double-diet, where the foods analyzed are ready for consumption. The meals provided by two local schools and the kitchen pilot were collected during all school days in March, June, August and November of 2011. The food collected was frozen and lyophilized for further analysis. The analyzes were performed using inductively coupled plasma mass spectrometry (ICP-MS) after the solubilization with tetramethylammonium hydroxide (TMAH) or acid digestion with nitric acid (HNO3) and hydrogen peroxide (H2O2) of the samples. The average concentration of As in rice, beans, vegetables, beef, poultry, freshwater fish, saltwater fish and pork were respectively: 111.2 ng g-1, 17.3 ng g-1 35.6 ng g-1, 34.3 ng g-1, 27.4 ng g-1, 65.6 ng g-1, 3.3 mg g-1 and 33.6 ng g-1. The Cd concentration found in the same foods were respectively: 11.4 ng g-1, 2.9 ng g-1, 24.6 ng g-1, 4.9 ng g-1, 2.6 ng g-1, 4.9 ng g-1, 63.6 ng g-1 and 5.1 ng g-1. The Pb concentration was found respectively, 1.1 ng g-1, 3.4 ng g-1, 23.6 ng g-1, 8.1 ng g-1, 5.1 ng g-1, 4.4 ng g-1, 6.9 ng g-1 and 18.6 ng g-1. With these values found, we calculated the average intake of these toxic elements by children during the lunch served by public schools in Ribeirão Preto. The average intake of As, Cd and Pb in elementary school children was respectively 5.3 mg, 0.6 mg and 0.4 mg; in high school was respectively 6.9 g, 0.9 g and 0 , 6 g. These intake values of As, Cd and Pb calculated are below the toxicological reference values provided by the European Food Safety Authority (EFSA) and the World Health Organization (WHO).

Människans utsläpp av miljö och klimatpåverkande växthusgaser har ökat i snabb takt de senaste hundra åren. Fler varor produceras, konsumeras och transporteras över hela jorden för att uppfylla de krav människor har på sin levnadsstandard. Livsmedelsindustrins roll i utsläppen är betydande, speciellt köttproduktionen, som står för 18 procent av världens totala växthusgasutsläpp. Genom att minska den mängd kött som ingår i människors måltider och gå mot att äta mer växtbaserat, som inte innehåller köttprodukter, kan matens miljöpåverkan minska. Ett viktigt område är offentliga matserveringar, vad som serveras där har en inverkan på människors matvanor och deras syn på mat. Måltidskonsumenters köttrika matvanor och matserveringars begränsande utbud av växtbaserade måltider är några av de största hindren för att öka konsumtionen av växtbaserat kost och minska konsumtionen av animaliska produkter. Om matserveringar arbetar med att göra växtbaserat kost lockande och tillgänglig för konsumenter, kan deras påverkan på jordens klimat minska. / The human emission of greenhouse gases, which affect climate change, has increased rapidly over the past hundred years. More goods are produced, consumed and transported all over the world to meet the demands of people connected to their living standards. The food industry's role in emissions is significant, meat production accounts for about eighteen percent of the total global greenhouse gas emission. By reducing the amount of meat included in people's diet and meals and go toward eating more plant-based, its environmental impact reduces. An important area is public restaurants food servings, the food that are served there have an impact on people's eating habits and their attitudes toward food. The meat heavy eating habits of food consumers and the limiting access to plant-based meals are some of the main obstacles to the increase of plant-based foods and reducing consumption of animal products. If food services are working to make plant-based food attractive and accessible to consumers, their influence on the earth's climate reduces.

Vegetabiliska skolmåltider : hållbara alternativ till blandkost som inspiration till skolkök / Vegetarian dishes for school students : sustainable alternatives to a mixed diet as inspiration for school kitchens

Huvudsyftet var att utveckla recept och tillaga hållbara och vegetabiliska lunchalternativ till en blandkostmeny. De nya måltiderna skulle vara välsmakande och näringsriktiga enligt Nordiska näringsrekommendationer (2012). Med hjälp av creative design togs tio vegetabiliska luncher fram och näringsberäknades med hjälp av Dietist Net. Det utfördes ett gillandetest och en gruppdiskussion med 19 gymnasieelever. Erhållen feedback användes i förbättringsarbetet av måltiderna. Slutsatsen blev att genom att planera menyn efter måltider och med grönsaker som ungdomarna redan tycker om så skulle de lättare kunna vänja sig vid den vegetabiliska maten. Det fanns heller inga svårigheter att ta fram recepten, däremot vad det svårt att nå upp till önskad mängd av vitamin D, zink och järn i måltiderna, det fanns även svårigheter att hålla sig till de Nordiska näringsrekommendationerna (2012) för innehållet av salt i måltiderna. När det gällde de ekonomiska kraven fanns det heller inga direkta skillnader i kostnad vid jämförelse av de vegetabiliska menyerna med blandkostmenyerna, då vegetabiliska råvaror generellt sett är billigare än animaliska råvaror. Oatlys berikade havredrycken samt iMat var viktiga för att tillgodose måltiderna med tillräckliga mängder av B12 och vitamin D, de var dock även de mest kostsamma ingredienserna. Ekonomiskt kan det justeras enkelt beroende på vilka mål skolorna har med den vegetabiliska kosten. Genom att varva de vegetabiliska måltiderna med blandkostmåltider eller använda sig av mejeriprodukter i recepten istället går det att få ner priset på måltiderna. / The main aim was to develop recipes and prepare sustainable and vegetarian lunch alternatives based on a mixed diet menu. Ten vegetarian dishes were developed with creative design and the main focus was that the meals should be tasty and nutritious according the Nordic recommendations (2012). The nutritional value was estimated through the program dietist Net and an appreciation test and a group discussion was performed with 19 high school students. The resulting feedback was used to improve the taste and appreciation of the dishes among the adolescents. It was concluded that by planning the menu after dishes and vegetables that adolescents already enjoy, there would be no reason why they would not enjoy the dishes. There were also no difficulties in developing vegetarian recipes, but it was difficult to meet the Nordic recommendations (2012) regarding vitamin D, zinc and iron, and it was difficult to avoid high levels of salt in the dishes. To generate cost-estimates there were no noticeable differences, generally vegetables are cheaper than meat.   Oatlys enriched oat drink and iMat was important to ensure adequate amounts of B12 and vitamin D in the meals, however they were also the most costly ingredients in the vegetarian dishes. Economically, it can be easily adjusted depending on the goals the school set out with the vegetarian diet. By combining the vegetable meals with mixed diet meals or using dairy products in the recipes instead, it is possible to bring down the prices of the meals.

Desempenho e características de carcaça de juvenis de carpa capim (ctenopharyngodon idella) em resposta a níveis e fontes de proteína da dieta / Growth and carcass characteristics of grass carp (ctenopharyngodon idella) juveniles in response of dietary protein levels and sources

Conselho Nacional de Desenvolvimento Científico e Tecnológico / This work was carried out to evaluate the performance and carcass characteristics of grass carp (Ctenopharyngodon idella) juveniles in response to dietary protein levels and sources. For this, two experiments were conducted: the first (80 days), evaluating four crude protein (CP) levels (22, 30, 36 and 44%) and the second (60 days), comparing protein sources in the diet: FCS (porcine meat meal - control); FC: canola meal; FG: sunflower meal and FCG: canola meal + sunflower meal. Both experiments were conducted in a water re-use system composed of 12 tanks (850 L), with three replicates per treatment. In experiment 1, 10 fish by tank (initial weight 153,0±1,5g) were fed 3% of body weight, twice daily, and the experiment 2 was provided ration (2% of biomass) in the morning and forage (Napier grass ad libitum) in the afternoon, to 15 fish by tank (initial weight 54,6±1,0g). Growth parameters (weight, specific growth rate, daily weight gain, relative weight gain and feed conversion ratio) and carcass (carcass and fillet yield, digestive somatic index, hepatic somatic index and visceral fat index, intestinal quotient, protein retention, protein efficiency rate and whole body and fillet protein and fat deposition) were evaluated. Moreover, the proximate composition (moisture, ash, fat and protein) in fillet and whole fish and blood parameters (glucose, total triglycerides, total cholesterol and total protein in both experiments and hematocrit in Experiment 1) were also evaluated. In experiment 2 was also determined the daily consumption of forage and the instrumental color. In experiment 1, linear positive effect of protein level for all growth variables was observed. However, the same effect was observed to whole body and fillet fat deposition, triglycerides and total cholesterol in serum, indicating that the protein from the diet was used as energy source. To feed conversion ratio and fat in whole fish, the effect was quadratic, with maximum response with 40.6 and 37.1% CP, respectively. Protein retention, protein efficiency ratio, protein deposition in whole body and fillet and hematocrit also showed linear positive effect, while the other parameters were not affected. In experiment 2, the growth parameters and the daily consumption of forage (1.24 to 2.11% of body weight) did not differ among the treatments. About proximate composition of whole fish, higher fat content and lower protein content, besides fillet ash, were obtained in the treatment FCG. The diet FCS presented the highest values of serum protein, triglycerides and total cholesterol. The fillet yield was higher in the treatments FCG and FC, while the digestive somatic index was higher in treatment FG and FCG. In the instrumental evaluation of color, the fillets from FCS and FCG diets showed higher value of L (brightness), differing only treatment FC. The other parameters did not differ among them. Based on this results, we can conclude that: the minimum protein level for maximum growth of grass carp in the growing phase, with practical diets, is 44%; the variation in dietary protein level promotes changes in metabolism of juvenile grass carp, reflected in hematological and carcass parameters; canola meal and sunflower meal can be used in diets for grass carp growing phase, when supplemented with limiting essential amino acids, without compromising growth. / Este trabalho foi conduzido com o objetivo de avaliar o desempenho produtivo e qualidade de pescado de juvenis de carpa capim (Ctenopharyngodon idella) em resposta a níveis e fontes de proteína da dieta. Para isso, foram conduzidos dois experimentos: o primeiro, com 80 dias, avaliando quatro níveis de proteína bruta (22, 30, 36 e 44%) e o segundo, com 60 dias, avaliando fontes protéicas na dieta, em combinação com farelo de soja: FCS: farinha de carne suína; FC: farelo de canola; FG: farelo de girassol e FCG: farelo de canola + farelo de girassol. Ambos os experimentos foram conduzidos em sistema de recirculação de água com temperatura controlada, composto de 12 unidades experimentais (850 L), com três repetições por tratamento. No experimento 1, 10 animais por unidade experimental (peso inicial 153,0 ± 18,2g) foram alimentados com ração (3% da biomassa) duas vezes ao dia. No experimento 2, foram utilizados 15 animais por unidade experimental (peso inicial 54,7 ± 7,8g), alimentados com ração (2% da biomassa) pela manhã e capim elefante (à vontade) à tarde. Foram avaliados os parâmetros de crescimento (peso, taxa de crescimento específico, ganho em peso diário e relativo e conversão alimentar aparente) e de carcaça (rendimento de carcaça e filé, índices digestivossomático, hepatossomático e de gordura visceral, quociente intestinal, coeficiente de retenção protéica e deposições de proteína e gordura corporal e no filé). Além disso, a composição centesimal (umidade, cinzas, gordura e proteína) no filé e no peixe inteiro e os parâmetros sangüíneos (glicose, triglicerídeos totais, colesterol total e proteínas totais nos dois experimentos e hematócrito no experimento 1) também foram avaliados. No experimento 2 também foi determinado o consumo diário de forragem e a medida instrumental da cor. No experimento 1, houve efeito linear positivo do nível de proteína para todas as variáveis de crescimento. Entretanto, o mesmo efeito foi observado para a deposição de gordura corporal e no filé, triglicerídeos totais e colesterol total no soro, indicando que a proteína proveniente da dieta estava sendo utilizada como fonte de energia. Para conversão alimentar aparente e gordura no peixe inteiro, o efeito foi quadrático, com ponto de máxima em 40,6% de PB e 37,1%, respectivamente. Coeficiente de retenção protéica, taxa de eficiência protéica, deposição de proteína corporal e no filé e hematócrito também apresentaram efeito linear positivo. No experimento 2, os parâmetros de crescimento não diferiram estatisticamente entre os tratamentos. O consumo de forragem variou entre 1,24 e 2,11% do PV por dia, não diferindo entre os tratamentos. Na composição centesimal do peixe inteiro, maior teor de gordura e menor teor de proteína foram obtidos no tratamento FCG, bem como para cinzas no filé. A dieta FCS foi a que apresentou maiores valores de proteínas, triglicerídeos e colesterol total circulantes. O rendimento de filé foi maior nos tratamentos FC e FCG, enquanto o índice digestivossomático foi maior nos tratamentos FG e FCG. Na avaliação instrumental da cor, os filés obtidos dos tratamentos FCS e FCG apresentaram maior valor de L (luminosidade), diferindo apenas do tratamento FC. Com base nos resultados obtidos, pode-se concluir que: o nível mínimo de proteína para o máximo crescimento da carpa capim na fase de recria, com dietas práticas, é de 44%; a variação do nível de proteína da dieta promove alterações no metabolismo dos juvenis de carpa capim, refletido nos parâmetros sangüíneos e de carcaça; farelo de canola e farelo de girassol podem ser utilizados em dietas para recria da carpa capim, quando for feita a suplementação com lisina e forragem, sem comprometer o crescimento.

Padrões de ingestão e deslocamento de novilhas de corte em pastagens de estação fria / Patters of ingestion and displacement of beef heifers in cool season pastures

Fundação de Amparo à Pesquisa do Estado do Rio Grande do Sul - FAPERGS / The efficient use of pasture is associated to knowledge of the interactions between plant and herbivore, which includes the study of different plant characteristics resulting of had been grazed, which are defined by the grazing management, and the grazing strategies of the herbivore. A meta-analysis was made through a data base including eight experiments with the objective of studying and analyse the feeding behavior, displacement patterns, feeding stations use and meals dynamic of beef heifers (n=658) in cool season pastures. Data was stratified in: with or without energy supplement, phenological stages of grass (Vegetative, Pre-flowering, Flowering), shifts and hourly evaluations. The grazing time decreases and other activities time increases when beef heifers receive energy supplement at the level of 0.8% of body weight, keeping rumination time similar. The energy supplement fed for grazing heifers causes them to remain 12 min less at each feeding station. Supplemented heifers consumed 17.0% less forage and 22.2% less leaf blades than exclusively grazing heifers. Average daily gain of supplemented heifers is correlated positively with bite mass and number of steps between feeding stations. The heifers modify their ingestive behavior, bite rate, meal duration and interval between meals, forage selection patterns and number of steps per minute in the phenological stages of grass and evaluation shifts as a mechanism to keep bite mass similar. The grazing activity was concentrated in the afternoon shift, independent of the feeding system and the phenological stages, and in the night shift the longest rumination event occurs. The forage intake rate is independent of supplement intake and pasture phenological stages. / O uso eficiente do pasto está associado ao conhecimento da interação entre planta e animal, que compreende o estudo da relação de diferentes características da planta, resultantes da ação do pastejo definidas pelo manejo imposto, e do animal, relativas às suas estratégias de pastejo. Foi realizada a análise conjunta de dados provenientes de oito experimentos, com o objetivo de caracterizar o comportamento ingestivo, padrões de deslocamento, uso de estações alimentares e a dinâmica de refeições de novilhas de corte (n = 658), em pastejo de forrageiras de estação fria e recebendo suplemento energético. Os dados foram estratificados em: com e sem o uso de suplemento, estádios fenológicos do pasto (Vegetativo, Pré-florescimento, Florescimento), turnos e horário de avaliação. O tempo de pastejo diminui e o de outras atividades aumenta quando novilhas de corte recebem suplemento energético em nível de 0,8% do peso corporal, mantendo semelhante o tempo de ruminação. O fornecimento de suplemento energético para novilhas em pastejo faz com que essas permaneçam 12 min. a menos em cada refeição alimentar. Novilhas recebendo suplemento consumiram 17,0% a menos de forragem e 22,2% a menos de lâminas foliares que as novilhas exclusivamente em pastejo. O ganho médio diário das novilhas suplementadas está correlacionado de forma positiva com a massa de bocado e o número de passos entre estação alimentar. As novilhas modificam seu comportamento ingestivo, taxa de bocado, duração das refeições e intervalo entre refeições, padrões de seleção da forragem e número de passos por minuto nos estádios fenológicos avaliados e turnos de avaliação como mecanismo para manter semelhante a massa de bocado. A atividade de pastejo foi concentrada no turno da tarde, independente do sistema alimentar e dos estádios fenológicos avaliados, e no turno da noite acontece o evento mais longo de ruminação. A taxa de ingestão de forragem é semelhante, independente do consumo de suplemento e dos estádios fenológicos dos pastos.

Inledning I Sverige har matkulturen länge vilat på en tradition som kretsat kring kött då det ansetts som den viktigaste delen av en måltid. Samtidigt har populationen av unga som väljer bort kött ökat de senaste åren. Men när valet görs när en ung människa fortfarande bor hemma påverkas inte bara denne själv utan hela familjen, och i synnerhet föräldrarna. Syfte Att undersöka hur en tonårings vegetariska kostval påverkade familjens måltidsprocess och hur föräldrarna upplevde de eventuella förändringar som uppstod. Bakgrund Den forskningsbakgrund som använts för studien var matkultur och kommunikation, livsmedel sam nutrition och hälsa - varför äter vi som vi gör, vad innebär måltidsprocessen och hur påverkar valen vårt välbefinnande? Material och metod Semistrukturerade grupp- och telefonintervjuer med föräldrar och tonåringar med kvalitativ innehållsanalys efter Graneheim och Lundman. Resultat Föräldrarna uttryckte samma initiala oro för deras barns näringsintag och deras egen okunskap kring att laga vegetarisk mat. De tog samtidigt ansvar och såg till att hjälpa barnen lösa det genom att själva ta reda på mer. Även om familjerna tidigare haft liknande måltidsmönster var det skillnad på hur omfattande omställningen blev. De upplevde att tonåringarna engagerat sig mer och blivit bättre på att laga sin egen mat. Slutsats Med bakgrund i aktuell forskning visar denna studie på tendenser att en omfattande ändring av kostval kan påverka flera faktorer i en familjs måltidsprocess, men att mer forskning behövs på ämnet för att förstå detta närmare. / Introduction Sweden has a strong tradition regarding meat, as it has been the most important part of a meal. At the same time, the population of young people choosing to remove meat from their diet has increased in later years. But, when a young person that still lives with their family makes this choice, it not only affects their own life but also the whole family, especially the parents. Purpose To analyze how a teenager’s vegetarian food choice affected the family meal process and how the parents experienced the possible changes. Background The research background used for the study was food culture and communication, foods, as well as nutrition and health - why do we eat as we do, what is included in the meal process, and how do our choices affect our wellbeing? Material and method Semi-structured interviews in group and by phone with qualitative content analysis according to Graneheim and Lundman. Results The parents expressed the same initial concern for their children's nutrition and their own ignorance when it comes to vegetarian food. At the same time, they felt their responsibility and made sure to help the children solve it by finding out more for themselves. Although the families previously had similar meal patterns, there was a difference regarding how extensive the changes were. The parents experienced that their teenagers became more involved and better at cooking. Conclusion Based on current research, this study shows that extensive change in diet choices can affect several factors in the family meal process, but also that more research on the subject must be done to get better understanding.

Arbetsmåltider och arbetsmåltiden som en möjlighet till återhämtning : En intervjustudie med sjuksköterskor / Meals at work and how meals at work was described as apossibility to recover : An interview study with nurses

The purpose of this study was to investigate how nurses describe their meals at work, and how meals at work was described as a possibility to recover. The method had a qualitative approach with semi-structured interviews. Five nurses participate and were recruited through a snowball sampling. The interviews were recorded and then transcribed. To analyze the data a manifest content analysis was used. The result showed that the four categories content and meaning for meals at work, environment for the meal at work, time to eat and social relations at the dining table summarized the nurses' descriptions of meals at work. The meal at work was described as one way to recover, but many other things also helped recovering. The conclusion was that nurses in this study described that meals at work can improve through enough length of the break, lower noise level, less stress while eating, enough room for eating and preparing food as well as nutritional food shall be available. The result of the study shows that meals are described as a chance to recover but also that the nurses associate recovery with night sleep, socialize with the family, perform physical activity or just gather your thoughts. / Sjuksköterskor är en utsatt yrkesgrupp och efterfrågan på sjuksköterskor ökar. Arbetsgivare inom vård och omsorg bedömer en brist på sjuksköterskor. En avgörande faktor till bristen är att sjuksköterskor avslutar sjuksköterskeyrket för bristande arbetsvillkor och arbetsmiljön.  Syftet med studien var att undersöka på hur sjuksköterskor beskriver sina arbetsmåltider och arbetsmåltiden som en möjlighet till återhämtning. Metoden som användes till studien var en kvalitativ ansats med semistrukturerade intervjuer. Urvalet bestod av fem sjuksköterskorna som alla arbetade på samma hälsocentral och åt arbetsmåltider. Rekryteringen av sjuksköterskorna skedde via ett snöbollsurval. Intervjuerna genomfördes på informanternas egna arbetskontor och spelades in och transkriberades sedan. För att analysera datamaterialet från intervjuerna användes en manifest innehållsanalys. Resultatet visade att de fyra kategorierna arbetsmåltidens innehåll och mening, miljö för arbetsmåltiden, tiden för att äta och sociala relationer vid matbordet sammanfattade sjuksköterskornas beskrivningar av arbetsmåltider. Arbetsmåltiden beskrivs som en möjlighet till återhämtning men även att återhämtning är mycket mer än måltider som ger energi. Slutsatsen är att sjuksköterskor i denna studie ansåg att arbetsmåltiderna kan förbättras genom tillräckligt långa raster, lägre ljudnivå i måltidsmiljön, mindre stress under måltider, tillräckligt med utrymmen för att äta och tillreda mat samt genom ett utbud av näringsrik kost på arbetsplatsen. Studiens resultat visar att arbetsmåltiden beskrivs som en möjlighet till återhämtning men att sjuksköterskor associerar återhämtning även till nattsömn, umgås med familjen, utföra fysisk aktivitet eller bara att få samla upp sina tankar som de anser ger dem energi.

Foi criado em 1954, perpassou diversos governos e se consolidou como uma política de Estado, de caráter universal que beneficia diariamente cerca de 45 milhões de estudantes matriculados na Educação Básica das escolas públicas. As análises estão ancoradas em uma abordagem neoinstitucionalista de políticas públicas, a partir da proposta do ciclo de políticas públicas. O componente participativo das políticas públicas, instaurado com a Constituição de 1988 e materializados por meio dos conselhos gestores de políticas públicas foi incorporado ao processo de análise. Essa pesquisa se caracteriza, portanto, como um estudo exploratório de caráter quantitativo e qualitativo de análise que se propõe a identificar um conjunto de fatores que impactam na qualidade da implementação do PNAE. A variável dependente que indica essa qualidade são as notas dos cardápios servidos nas escolas e que está relacionado ao principal benefício do programa: uma alimentação de qualidade e nutricionalmente adequada. Trabalha-se com uma amostra abrangente de municípios, 3.832, com dados referentes aos anos de 2006 a 2010. Foram identificadas onze variáveis, agrupadas em três blocos: demográficas, político-institucionais e de participação social. Identificou-se por meio das análises de regressão linear univariada que há alguns fatores que possuem uma maior capacidade de explicação da qualidade da implementação do PNAE, tais como a questão da arrecadação municipal, o volume de investimento realizado no programa, por meio da complementação financeira para compra de gêneros alimentícios, o IDHM e a quantidade de alunos por escola. Outros fatores possuem uma baixa capacidade explicativa da qualidade da implementação: as variáveis referentes à participação social e aspectos demográficos relativos à quantidade de habitantes, de alunos e de escolas no município. O que não descarta a possibilidade de se analisar a relevância desses últimos fatores em contextos específicos. A base de dados construída para as análises desta pesquisa se constitui em uma contribuição para o estudo do PNAE, uma vez que ela não teve o seu potencial de análise esgotado / Abstract: This research is focused on the Brazilian `National School Nutrition Program¿ (PNAE), at municipal levels, one of the long lasting social programs in the country. Created in 1954, it has been run through several different administrations and it was consolidated as a strong consolidated public policy. The PNAE is a universal policy that benefits about 45 million students daily, enrolled in basic education at public schools. This research is anchored in a neoinstitutionalist approach to public policies, and based on the public policy cycle logic. The participatory component in public policy, inaugurated with the 1988 Brazilian Constitution, and materialized through several public policy councils, was also analyzed. This research is therefore characterized by an exploratory study, with quantitative and qualitative methods that aim to identify a set of factors that impact at PNAE¿s implementation quality. The dependent variable that indicates the quality is the schools¿ menu rating system, set by an independent nongovernmental organization. This variable is related to the primary benefit of the program: a high-quality food and nutritionally adequate menus. A comprehensive sample of municipalities, 3,832 in total, is used with data from the period ranging from 2006 through 2010. Eleven variables were identified and organized in three groups: demographic, political-institutional, and social participation. The univariate linear regression analyses showed that there are some factors that have a greater capacity to explain the quality of implementation of this policy, such as the issue of municipal level tax collection, the volume of investment in the program by the local governments, the Municipal Human Development Index (IDHM/MHDI), and the average number of students per school. Some other factors have a lower explanatory power, such as variables related to social participation and demographic aspects. Nonetheless, the relevance of these latter factors could be analyzed in specific contexts where they can make a relevant difference.
