Matens klimatpåverkan och näringsinnehåll : En kvantitativ studie om skillnader i matvanor mellan olika kosthållningar och kön bland högskolestudenter

Svenskarnas matkonsumtion är inte hållbar utifrån ett klimatperspektiv. För en mer hållbar konsumtion krävs en minskning av animaliska livsmedel. Tidigare studier visar att det är möjligt att äta klimatsmart och fortfarande nå upp till näringsrekommendationerna. Syftet med studien är att undersöka vilken klimatpåverkan och näringsinnehåll studenters matvanor har och skillnader mellan olika kosthållningar och kön. Studien har genomförts utifrån en kvantitativ ansats med en tvärsnittsdesign genom semistrukturerade intervjuer. Urvalet bestod av 21 högskolestudenter, elva män och tio kvinnor med en fördelning på sju deltagare inom varje kosthållning. Metoden som använts är retrospektiva 24-timmarsintervjuer för att få en bild av en grupps matvanor. Resultatet visar att lunch är den måltidsform med högst klimatpåverkan och näringsinnehåll. Lunch har närmare tre gånger så hög klimatpåverkan jämfört med frukost. Allätare har högst klimatpåverkan och proteinintag, medan veganer har högre kolhydrats- och energiintag samt lägst klimatpåverkan. Vegetarianer och veganer har högst intag av vitamin C. Mäns måltider bidrar med högst klimatpåverkan och de har högst intag av protein, energi och kolhydrater, medan kvinnor har ett högre intag av vitamin C. Det teoretiska perspektivet som användes för att diskutera resultatet är social-ekologiska modellen. / The food consumption of Swedish people is not sustainable from a climate perspective. For more sustainable consumption it requires a reduction of meat and dairy products. Previous studies show that it is possible to eat climate smart but still reach nutrition recommendations. The aim of this study is to investigate the students´ eating habits, nutritional content, impact on the climate, and study if there are differences between diets and between men and women. The study is based on quantitative approach with a cross sectional study through semi-structured interviews. The used method is retrospective 24-hour recall interviews to get at picture of the groups eating habits. The participants comprised of 21 students from Mälardalen University, eleven men and ten women with a distribution of seven participants in each diet. The result shows that lunch is the meal with the highest climate impact and nutritional content and that lunch has almost three times higher climate impact compared to breakfast. Individuals who eat both meat and dairy have the highest climate impact and protein intake, while vegans have the lowest climate impact and highest carbohydrate and energy intake. Vegetarians and vegans have the highest intake of vitamin C. Mens´ meals have the highest climate impact and nutritional content of protein, energy and carbohydrate, while women have a higher intake of vitamin C. The social ecological model is the theoretical perspective used to discuss the result.

Localisation des aires cérébrales impliquées dans le rappel de mots : validation d’un protocole d’imagerie optique

Jusqu'à récemment, les patients souffrant d'épilepsie réfractaire aux traitements médicamenteux étaient destinés à un avenir incertain. Le recours à la chirurgie comme traitement alternatif offre l'espoir de mener un jour une vie normale. Pour déterminer si un patient peut bénéficier d’une intervention chirurgicale, une évaluation complète est cruciale. Les méthodes d’évaluation préchirurgicale ont connu des progrès importants au cours des dernières décennies avec le perfectionnement des techniques d’imagerie cérébrale. Parmi ces techniques, la spectroscopie proche infrarouge (SPIR), aussi connue sous le nom d’imagerie optique, présente de nombreux avantages (coût, mobilité du participant, résolution spatiale et temporelle, etc.). L’objectif principal de cette étude est de développer un protocole d'évaluation préchirurgicale de la mémoire. Une tâche de mémoire verbale incluant l’encodage, le rappel immédiat et le rappel différé de listes de mots a été administrée à dix adultes sains lors d’un enregistrement en imagerie optique. Les résultats obtenus suggèrent l’activation bilatérale des aires préfrontales antérieures et dorsolatérales ainsi que des aires temporales antérieures et moyennes. Les aires préfrontales et temporales antérieures semblent modulées par les différents processus mnésiques et la position du rappel dans le temps. La première fois qu’une liste est rappelée, l’activité hémodynamique est plus élevée que lors des rappels subséquents, et ce, davantage dans l’hémisphère gauche que dans l’hémisphère droit. Cette étude constitue la première étape dans le processus de validation du protocole à des fins cliniques auprès de patients épileptiques. / Until recently, patients with epilepsy refractory to drug treatments were intended to an uncertain future. Surgery as an alternative treatment offers hope to, one day, lead a normal life. In order to determine if a patient may benefit from a surgical intervention, a complete evaluation is essential. With the advancements in brain imagery techniques over the last few decades, preoperative evaluation methods have seen important progress. Among these techniques, near infrared spectroscopy (NIRS), also known as optical imaging, presents numerous advantages (cost, participant mobility, spatial and temporal resolution, etc.). The purpose of this study is to develop a preoperative evaluation protocol for memory assessment. During a NIRS recording, a verbal memory task including encoding, immediate and delayed free-recall of a list of words was administered to ten healthy adults. The results obtained revealed bilateral activation of anterior and dorsolateral prefrontal areas as well as anterior and median temporal areas. Prefrontal and anterior temporal areas seemed to be regulated by different memory processes and the recall location in time. The first time that a list is recalled, increased hemodynamic activity is observed in comparison to subsequent recalls, with a greater activity in the left hemisphere than in the right hemisphere. This study constitutes the first step in the validation process of the protocol for clinical needs among epileptic patients.

When is consumer desire impacted by difficulty of recall ? : the effects of the type of information, expectation and time pressure

Cette thèse doctorale démontre que la difficulté pour un consommateur de se rappeler ses expériences passées de consommation d’un produit préféré influence son désir. Plus particulièrement, ce travail étudie comment le désir est influencé par le type d’information, sémantique ou épisodique, que l’individu se rappelle sur ses expériences passées de consommation pendant une tâche de rappel difficile, ainsi que par la difficulté attendue de la tâche de rappel et par la pression du temps. Nous avons utilisé une méthode expérimentale et avons conduit trois études empiriques. Les hypothèses ont été testées à partir de données collectées de trois échantillons différents : des consommateurs Péruviens, Chinois et Français. Les participants sont principalement des étudiants universitaires. Un total d’onze scénarios expérimentaux ont été présentés aux participants, incluant divers types de produits (boissons rafraîchissantes, produits hédoniques et activités de loisir). Notre contribution peut aider les professionnels en marketing à agir en prenant en compte le rappel des consommations gratifiantes passées. Afin d’évoquer davantage de désir chez le consommateur, les conditions devraient rendre difficile le fait pour celui-ci de se rappeler ses expériences gratifiantes de consommation passées ; les marketeurs devraient se focaliser notamment sur l’information sémantique des expériences passées et soumettre le consommateur à une pression temporelle. Cette recherche se focalise sur un rappel holistique d’expériences passées et sur le processus de récupération d’information à partir de la mémoire, et confirme la théorie du processus dual de Chaiken et Trope (1998) / This thesis demonstrates that difficulty in recalling past consumption of a preferred product influences the desire to consume that product. More specifically, this research evaluate how desire is influenced by what kind of information from past consumption experience is recalled (semantic or episodic information) during a difficult recall task, by the expected difficulty of recall task, and by time pressure. An experimental method was adopted and three empirical studies were conducted. Hypotheses were tested on data collected across different samples: Peruvian, Chinese, and French consumers. Participants were principally university students. A total of eleven experimental scenarios were presented to participants including different types of products (soft drinks, hedonic products, and leisure activities). Questionnaires were administrated by web and face-to-face. Our contribution has the potential to help marketers take action regarding the recall of past rewarding consumptions. To evoke more desire, consumers must be conditioned to difficult recalls of past consumptions of preferred products; marketers must specially focus on semantic information of past experiences and condition consumers with a time pressure. The results suggest that the type of information processed (semantic versus episodic) and time pressure influence the effect of the difficult recall of past consumption on desire. This research focuses on a holistic recall of past experiences and the retrieval process of information from memory, and confirms the Chaiken and Trope (1998)’s Dual-Process Theory

Vitamin A Intake, Status and Improvement Using the Dietary Approach : Studies of Vulnerable Groups in Three Asian Countries

<p>Studies were performed on methodological issues on vitamin A intake, status and improvement in three Asian countries, to improve the dietary approach recommended by FAO/WHO to alleviate vitamin A deficiency in low-income countries.</p><p>The reliability of the practical 24-hour dietary recall method to assess individual intake of vitamin A during pregnancy was investigated in Central Java, Indonesia. The usual mean intake of vitamin A can be reliably measured, but data on attenuation of simple regression coefficients suggest that it is difficult to establish associations between vitamin A intake and some health outcome. The majority of women was below the recommended daily intake of vitamin A in all three trimesters and strategies to improve vitamin A intake in all women are thus needed.</p><p>The applicability of the simplified "Helen Keller International Food Frequency Method" to assess community risk of vitamin A deficiency in South Asia, even though it excludes breastmilk and animal milk, was tested in rural Bangladesh and rural India. Breast milk was found to be an important source of vitamin A even in the second and third years of life in rural areas of Bangladesh. Similarly, animal milk is likely to be an important source of vitamin A among preschoolers in certain areas of India. The method should be revalidated to make it a useful tool even in settings where breastmilk and animal milk are common in the diets of preschool children.</p><p>Whether it is possible to improve vitamin A status with dark green leafy vegetables in children free of <i>Ascaris lumbricoides</i> was investigated in northern Bangladesh. A substantial increase in serum β-carotene was seen after supplementary feeding of these vegetables for 6 weeks. The impact on serum retinol concentrations was less substantial.</p>

The aim of the thesis is to investigate and analyse students’ expressions of pleasure and displeasure and how these are manifested in actions in the teaching of textile sloyd in lower secondary education. The study’s focus is on students’ expressions of pleasure and displeasure in social action in the working processes of textile sloyd and on how these expressions can be related to learning. The empirical material consists of observations, video and audio recordings, individual interviews and focus group interviews, where video and audio recordings were used as stimulated recall. In all, 32 lessons in textile sloyd and 49 students aged 14-15 years were observed at four different schools. Theoretically, the thesis is based on Mead’s practical intersubjectivity and on Dewey’s theory of experience-based learning and dependence on emotions and actions. Pleasure and displeasure constitute valuating partial aspects of emotions. Based on a socio-cultural perspective, emotions are regarded as practices which arise from different predispositions’ dependence on the social context. The study’s analytical approach is hermeneutical. Critical incidents regarding students’ expressions of pleasure and displeasure in social action found in observations and video and audio recordings were analysed in terms of Mead’s concept of gestures. The events were combined with what the students describe as critical incidents of pleasure and displeasure in the interviews and focus group talks. The material was then thematised. Several situations were then subjected to deeper analysis based on sociality and a change in perspective and related to different concepts of learning. The result of the thesis shows a tripartite semantic structure where students’ pleasure and displeasure in textile sloyd are mainly based on textile sloyd’s specific educational community, students’ relationship to the sloyd object and their experience of the working process. Social interaction, humour and mutual acknowledgement proved to be of importance for the function of pleasure and displeasure in the students’ working processes. The students’ experience of pleasure and displeasure depended on their control of the work, the characteristics of different craft techniques and their awareness of time. Pleasure and displeasure in textile sloyd found an expression in four overarching emotional practices with decisive importance for the students’ opportunities for learning: the repudiating, insecure, accepting and incorporating emotional practice. The study also provides an insight into how different cultural factors enable a certain scope for pleasure and displeasure. In this connection, social changes in relation to objects are discussed, as are changes in sociality and emotionality. Based on the pair of concepts of authenticity and ephemerality and closeness and intensity, cultural changes are visualised that are conceivably important for the students’ experiences of pleasure and displeasure in textile sloyd.

Ικανότητα σειριακής ανάκλησης σε μαθητές με αναγνωστικές και ορθογραφικές δυσκολίες : μια μελέτη των επιδράσεων της φωνολογικής ομοιότητας και του μήκους των λέξεων

Στην παρούσα ερευνητική εργασία που είναι επανάληψη της έρευνας των Steinbrink και Klatte (2008) γίνεται προσπάθεια να διερευνηθεί η σχέση ανάμεσα στην ικανότητα άμεσης σειριακής συγκράτησης φωνολογικών πληροφοριών και την αναγνωστική και ορθογραφική ικανότητα παιδιών, που έχουν ως μητρική γλώσσα την ελληνική. Πολλές έρευνες έχουν δείξει ότι παιδιά με αναγνωστικές και ορθογραφικές δυσκολίες δεν χρησιμοποιούν με τον πιο αποτελεσματικό τρόπο τις φωνολογικές στρατηγικές σε έργα σειριακής ανάκλησης. Σε μια ομάδα 15 μαθητών της Γ’ Δημοτικού χωρίς αναγνωστικές και ορθογραφικές δυσκολίες και σε μια αντίστοιχη ομάδα 15 μαθητών με αναγνωστικές και ορθογραφικές δυσκολίες, παρουσιάστηκαν λίστες με τέσσερα ερεθίσματα η κάθε μία, τα οποία αντιστοιχούσαν σε ουσιαστικά υψηλής συχνότητας, με σκοπό την άμεση σειριακή ανάκλησή τους. Το μέγεθος της λέξης και η φωνολογική ομοιότητα καθώς και ο τρόπος παρουσίασης (οπτικός και ακουστικός) και ο τύπος ανάκλησης (οπτικός και προφορικός) ποίκιλαν, σε ένα μεικτό σχεδιασμό με χειρισμό των ανεξάρτητων μεταβλητών εντός υποκειμένων. Σε όλες τις πειραματικές συνθήκες, οι καλοί αναγνώστες απέδωσαν καλύτερα από τους φτωχούς αναγνώστες. Η φωνολογική ομοιότητα δεν επηρέασε τις επιδόσεις και στις δυο ομάδες των παιδιών. Αντίθετα, η επίδραση του μεγέθους των λέξεων διέφερε μεταξύ των ομάδων, πράγμα που ίσως δείχνει ελλιπή φωνολογική κωδικοποίηση και εσωτερική επανάληψη στα παιδιά με αναγνωστικές και ορθογραφικές δυσκολίες. Αναφορικά με τη σειρά παρουσίασης του ερεθίσματος, οι δύο ομάδες μαθητών έκαναν χρήση παρόμοιων στρατηγικών στις περισσότερες πειραματικές συνθήκες. Τα αποτελέσματα δείχνουν ότι οι φτωχοί αναγνώστες χρησιμοποιούν το φωνολογικό κύκλωμα. Αντί αυτού, οι δυσκολίες αυτές πηγάζουν από την ανεπαρκή εφαρμογή διαφόρων στρατηγικών λόγω ελλειμμάτων στη φωνολογική επεξεργασία. / The current study sought to investigate the relation between serial recall of phonological information and reading ability in Greek students. It has been proposed that dyslexic readers show inefficient application of phonological strategies during serial recall tasks. A group of 15 third graders with typical reading performance and 15 with reading impairments were presented with four-item lists of common nouns for immediate serial recall. Word length and phonological similarity as well as presentation modality (visual vs. auditory) and type of recall (visual vs. verbal) were varied as within subject factors in a mixed design. In all conditions, overall performance was significantly lower in poor readers. Phonological similarity did not affect performance in both groups of children. Word length effects differed between groups indicating deficient phonological coding and rehearsal in dyslexic students. With regard to the order of presentation, the two groups made use of similar strategies in the majority of the experimental conditions. The results demonstrate that, poor readers use the phonological loop. Instead, their difficulties stem from inadequate application of various strategies due to deficits in phonological processing.

Labor market search frictions in developing countries : evidence from the MENA region : Egypt and Jordan / Les modèles de recherche d'emploi dans les pays en voie de développement

Dans les pays en voie de développement, les politiques visent à augmenter les opportunités d'emploi afin d'élever les revenus et les niveaux de vie des populations. Parmi ces pays, les pays arabes de la région MENA ont récemment connu une vague de soulèvement populaire, faisant suite aux accroissements de la pauvreté, des inégalités et de l'exclusion, résultats des faibles performances du marché du travail. Comme l'analyse des flux est devenu l'outil de base de l'économie du travail moderne, cette thèse propose d'expliquer le fonctionnement de ces marchés du travail assez spécifiques, particulièrement ceux de l'Egypte et de la Jordanie, en utilisant la théorie de la recherche d'emploi. Elle se penche sur l'analyse des créations et destructions d'emploi ainsi que des mobilités entre emplois. Elle montre que ces marchés sont très rigides. L'impact de l'introduction des réformes structurelles, visant à flexibiliser l'emploi est ensuite discuté de manière empirique ainsi que théorique. Les résultats montrent que la baisse des coûts de licenciement en Egypte a augmenté significativement les destructions d'emploi, mais n'a eu aucun impact sur les créations. Cet échec partiel de la réforme est un paradoxe empirique, qui est interprété théoriquement par un effet d'éviction dû à l'augmentation du coût de la corruption ou/et à l'augmentation des salaires du secteur public. Une extension originale du modèle théorique de Mortensen-Pissarides est alors développée, permettant l'existence de trois secteurs, public, privé formel et privée informel. Ce cadre rend compte de la nature particulière des pays en voie de développement. Pour examiner la qualité des emplois et pour étudier les avancements dans l'échelle des salaires, une estimation structurelle du modèle de Burdett-Mortensen est ensuite proposée. Elle permet d'étudier et mesurer les frictions d'appariement sur les marchés du travail égyptien et jordanien. Les paramètres estimés sont extrêmement faibles, soulignant la forte rigidité de ces marchés. Le marché du travail jordanien s'avère, par contre, être plus flexible que l'égyptien. Compte tenu de la non-disponibilité de données de panels annuelles dans ces pays, il est montré que des données de panel rétrospectives peuvent être utilisées, pour étudier les transitions de court terme sur ces marchés du travail. Ces données de panel sont par contre soumises à un biais de mémoire. Une méthode originale de correction du biais de mémoire est donc proposée et développée. Elle vise à corriger les transitions à la fois à un niveau macro, en utilisant une méthode de moments simulés, ainsi qu'au niveau micro, en construisant des matrices de poids. / Policy prescriptions for poor developing countries struggle to expand employment opportunities toraise their income levels. Among these are the MENA Arab countries that have recently experiencedan unprecedented tide of popular uprisings following the rising poverty, inequality and exclusion, muchof which is related to the labor market. Since the flow approach to labor markets has become the basic toolbox to modern labor economics, this thesis has at its central insight explaining the functioning ofthose specific labor markets, particularly the Egyptian and Jordanian, using the search equilibrium theory. It looks at analyzing job accession, separations and mobility trends. Overall, evidence of highlevels of rigidity is revealed. The impact of introducing flexible employment protection regulations in these rigid markets is then discussed both empirically and theoretically. Findings show that lowering firing costs in Egypt increased significantly the job separations, but had no impact on job creations.This partial failure of the liberalization reform is interpreted theoretically by a crowding out effect due to increased corruption set up costs or increased public sector wages. A novel theoretical matching model a la Mortensen Pissarides is developped allowing for the existence of public, formal private and informal private sectors, reflecting the particular nature of developing countries. Workers’ movements up the job ladder is then explored through a structural estimation of the frictional parameters in a job search model a la Burdett Mortensen. These markets are found to have very high levels of search frictions especially among the young workers. Given the non-availability of panel data to study labor market flows, longitudinal retrospective panel datasets are extracted from the Egypt and Jordan Labor Market Panel Surveys. These panels are then compared to available contemporaneous crosssectional information, showing that they suffer from recall and design measurement erros. An original methodology is therefore proposed and developped to correct the biased labor market transitionsboth on the aggregate macro-level, using a Simulated Method of Moments (SMM), as well as on themicro-individual transaction level, using constructed micro-data weights.
