The effect of the senses on the perception of a brand

Thesis (MComm (Business Management))--University of Stellenbosch, 2010. / ENGLISH ABSTRACT: Against the background of the challenge marketers face in influencing consumer perceptions of brands, this study attempts to assess the effect of the senses on the perception of a brand. Perception is the way in which consumers interpret the world around them, with the senses as the receptors of information from the environment. One way of influencing consumer perceptions is by stimulating or involving multiple senses in brand building. To test this statement, the following research question was drawn: ‘Do the senses affect the perception of a brand?’The empirical study was one of an experimental nature, and a 2 x 2 x 2 factorial design was used to assess the effect of the senses on the perception of a brand. In order to focus the research and to provide information to a leading distributor of alcohol spirits in South Africa, it was decided to concentrate on alcohol, more specifically, brandy. Due to the nature of the selected brand, sensory properties in relation to the product were used to measure the effect of the senses on brand perception. The nature of the brand is a consumable, and taste was used as the dependant variable to measure perceptions. The stimulated senses in the experiment are sight, sound and smell. The stimuli were: sight with the visible brandy colour, sound in the form of brandy being poured into a glass and smell as an enhanced honey aroma. Several experiments were conducted in a sensory laboratory, which assessed the effect of the senses on the perception of a brand, by way of individual main effects, two-way interactions and a three-way interaction. A convenience sample of 240 alcohol spirit consumers, from the Western Cape, was used to conduct the experiment. The empirical results indicated that the three independent variables (individual main effects or two-way interactions) did not have significant effects on perception. Most importantly, it was found that the three-way interaction of sight, sound and smell did have a significant effect on the perception of a brand. Therefore, this study revealed that multiple stimulated senses affect the perception of a brand. / AFRIKAANSE OPSOMMING: Hierdie studie handel oor die effek van sintuie op persepsie van ’n handelsmerk, teen die agtergrond van die bemarkings uitdaging wat bemarkers teenstaan om verbruikers se persepsie van handelsmerke te beinvloed. Persepsie is die manier waarop verbruikers die wêreld interpreteer, met die sintuie as ontvangers van inligting vanuit die omgewing. Een manier waarop persepsies beinvloed kan word, is deur die stimulering en betrekking van ‘n meerderheid van sintuie met die bou van handelsmerke. Om hierdie stelling te toets is die volgende navorsingsvraag gestel: ‘Beinvloed die sintuie die perspesie van ‘n handelsmerk?’Die empiriese studie was eksperimenteel van aard, en ‘n 2 x 2 x 2 faktoriese ontwerp is gebruik om te bepaal wat die effek van die sintuie op ‘n handelsmerk persepsie is. Om inligting aan ‘n verspreider, wat ‘n markleier van alkohol spirietes in Suid-Afrika is, te verskaf, is daar besluit om op alkohol, en meer spesifiek, brandewyn te fokus. Weens die aard van die gekose handelsmerk is sensoriese eienskappe in verband met die produk gebruik om die effek van die sintuie op die handelsmerk te bepaal. Die produk is ‘n verbruikbare produk, en smaak is as die onveranderlike gebruik om persepsie te meet. Die gestimuleerde sintuie in die eksperiment was sig, klank en reuk. Die stimuli was: • sig met die sigbaarheid van die brandewyn kleur, • klank in die vorm van ‘n brandewyn wat geskink word en • reuk as ‘n beklemtoonde heuningreuk. Verskeie eksperimente is uitgevoer in ‘n sensoriese laborotorium om te bepaal wat die effek van die sintuie op die persepsie van ‘n handelsmerk is. ‘n Geriefliksheidsteekproefmetode van 240 verbruikers, van die Wes Kaap, was gebruik om die eksperiment uit te voer. Hierdie respondente was almal alkohol verbruikers wat ook spirietes gebruik. Die empiriese resultate het getoon dat die drie veranderlikes (individuele hoof effekte of tweerigting interaksies) geen beduidende effek op persepsie gehad het nie. Die belangrikste bevinding was die dat die drierigting interaksie van sig, klank en reuk wel ‘n beduidende effek op die persepsie van ‘n handelsmerk gehad het. Die studie het getoon dat, dus veelvoudige gestimuleerde sintuie die persepsie van ‘n handelsmerk beinvloed.

Syfte: Studiens syfte är att förstå hur sinnesmarknadsföring påverkar konsumentens köpupplevelse i klädbutikers kassaområde. Metod: Studien bygger på fyra fokusgrupper av ostrukturerad intervjuform. Den är av kvalitativ karaktär och har ett induktivt synsätt med inslag av det deduktiva synsättet. Slutsats: Efter genomförd studie kan det konstateras att sinnenas samspel i olika kombinationer skapar olika köpupplevelser i kassaområdet. Konsumentens köpupplevelse påverkas av över- och understimulering av sinnena.

Išanalizuoti pojūčių rinkodaros teorinius aspektus aatskleidžiant jos svarbą prekės ženklo įvaizdžio stiprinimui; 2. Syfte:                     Syftet med uppsatsen är att beskriva, analysera samt tillhandahålla rekommendationer om huruvida stimulans av sinnena, leder till att kundernas beslutsfattande förändras genom taktil beröring. Vi vill med hjälp av en empirisk studie klargöra om kunder ändrar sitt känselbeteende efter att sinnet syn blivit påverkat.   Metod:                   Uppsats är baserad på en kvantitativ metod med en deduktiv ansats. Arbetet kretsar kring de experiment som utförts med tillhörande kundintervjuer på heminredningsavdelningen på Åhléns i Kalmar. Hypoteser har formats ur instuderad teori, som sedan har testats under experimenten på Åhléns.   Slutsats:        Genom stimulans av sinnena syn och känsel, har författarna med hjälp av experiment kunnat registrera ett förändrat beteende gällande kunders beslutsfattande. Resultatet tyder på att företag kan använda sig av sinnesstimuli för att skapa kontakt med sina kunder. Det har även framkommit att stimulans av synen och känseln har påverkat den tid kunderna känner på produkterna, och då också tagit dem ett steg längre i deras beslutsfattande i köpprocessen.

Inledning: Många organisationer och projekt har under de senaste åren fokuserat på att främja en ökad konsumtion och kunskap om viltkött. Den enkla frågan ”hur smakar vilt?” blir i detta sammanhang mycket betydelsefull. Hur kan smaken vilt beskrivas med ord?Litteraturgenomgång: Idag står viltkött för 4 % av den totala köttkonsumtionen men runt 59 % vill äta mer viltkött. Flera nya Svenska undersökningar har visat att smakbeskrivningar av produkter kan underlätta köpbeslutet för konsumenten. Det har också visats att våra sinnen påverkar våra köpbeslut och att ju mer vi fångar en konsuments sinnen ju mer kan köpbeslutet påverkas.Syfte: Syftet med den här undersökningen var att ta fram en sensorisk beskrivning av viltsmak. Studiens mål var också att få svar på vilka ord som kunde beskriva viltsmaken hos älg-, hjort- och vildsvinskött och hur tydlig viltsmaken var hos de tre viltarterna.Metod: Med kött från tre utvalda villebråd skapades en smakprofil för viltkött genom ett sensoriskt beskrivande test. En profilpanel fick provsmaka ytterfilén av hjort, älg och vildsvin. Undersökningen gjordes vid ett tillfälle och var uppdelat i tre moment. Först fick panelen göra en individuell bedömning av viltköttet genom att fylla i en enkät. Sedan diskuterades enkätens resultat i en gruppdiskussion och i sista momentet bestämdes viltsmakens intensitet hos de tre viltarterna i form av ett intensitetstest.Resultat: Resultatet visar att vilt har en syrlig smak, en karaktäristisk blod- och metallsmak samt en mustig smak av skog och jord. Även om studien främst var inriktad på smaken och inte doft, valdes svaveldoft att finnas med i beskrivningen för viltsmak eftersom den återkom hos samtliga viltarter. Viltsmaken var betydligt intensivare hos älgen och hjorten medan den hos vildsvinet visades vara mycket mild. Älgen hade den mest utpräglade viltsmaken.Slutsats: En slutsats kan dras med resultatet som stöd att viltsmak kan beskrivas vara syrligt, ha en karaktäristisk blod- och metallsmak samt en mustig smak av skog och jord. Slutsatsen kan också dras att älgen och hjorten har en mycket kraftig medan vildsvinet inte har samma tydligare viltsmak. Genom litteraturstudier drogs vidare slutsatsen att sensorisk beskrivning av viltkött kan förenkla konsumentens beslut, skapa en vassare marknadsföring samt öka upplevelsen för både den vanliga konsumenten och inom för konsumenter inom turisnäringen. Med hjälp av beskrivande smakord kan också samtal och uttryck för vad maten smakar öka gemenskapen under en måltid. / Introduction: Many organizations and projects have during the past years focused on to promote an increased consumption and knowledge for game meat. The simple question “How does game taste?” becomes in this context very essential. How can the taste of game be described with words?Literature review: Today game meat represents 4 % of the total meat consumption but approximately 59 % would like to eat more game meat. Several new Swedish studies have shown that taste descriptions of products can ease the purchase decision for the consumer. It has also been shown that our senses are influencing on our purchase decision. All the more we can catch the consumers senses all the more the purchase decision can be influenced.Purpose: The purpose of this study was to develop a sensory description for the gamy flavor. The aim with the study was also to answer, which words could describe the taste of game of deer, elk and boar and how clear the taste of game was in these three species.Method: With meat from three selected games a taste profile for game meat was created through a sensory descriptive test. A profile panel tasted the sirloin from deer, elk and boar. The study was performed at one occasion and divided into three separate stages. At the first stage the panel made an individual judgment by filling in a survey. In the subsequent stage the result from the survey was discussed in groups and in the final stage the taste intensity of the three different games was determined by an intensity test.Results: The results shows that game has a sour taste, a characteristic blood and metallic taste and a rich taste of wood and earth. Although the study focused on taste rather than scents, the scent of sulfur was decided to be a part of the gamy flavor as it appeared at all species. The elk and deer had a strong taste of game meanwhile the boar showed a more mild taste. The elk had the most pronounced gamy flavor.Conclusion: One conclusion that was made with the results as support is that the taste of game can be described as sour, a characteristic blood and metallic taste and a rich taste of wood and earth. Another conclusion that can be made is that the elk and the deer has a much more stronger taste of game compared to the boar which doesn’t have the same clear taste of game. By literature studies a conclusion could be made that a sensory description of game meat can ease the consumers purchase decision, create a more cutting edge marketing, and enhance the experience both for the ordinary consumer and the consumer in the tourist business. Using descriptive words for the taste of the food can also increase the communion during a meal.

A Multi-Sensory Brand-Experience : Sensorial interplay and its impact on consumers' touch behaviour

The purpose of this thesis is to explore to what extent different styling elements can be used within a retail store and how sensorial cues can affect customers buying behaviour by creating a multi-sensory brand-experience. Further, this project aims at contributing to the development of new knowledge regarding a multi-sensory brand-experience through the performance of an experiment. A quantitative research method with a deductive research approach has been used for this study, where theoretical concepts have been described and from which a number of hypotheses have derived as means to test the theoretical framework. In order to test our hypotheses, a research strategy in the form of experiments has been performed in the computer department at Media Markt, Kalmar. General assumptions have then been drawn from the analysis of the results in order to provide sound recommendations for marketers regarding sensory marketing in general and foremost the multi-sensory brand-experience.   The result of our study shows that it is beneficial for marketers to use styling elements and sensorial cues as means to connect with customers and enhance their emotional response. The study also shows that a combination of the sensorial cues of sight and sound together contributes to an experience that is positive and memorable for the customers. Additionally, the results of this study shows that a combination of these sensory cues leads to a change in customers behaviour and create approach behaviour through awareness of products that otherwise could be missed.

Background: Previously, marketing has focused on audiovisual stimulus but as a result from the information overload of the modern society, companies find it harder to differentiate from the competitors through the traditional marketing channels. Consumers of today tend to take functional attributes for granted and seek for an emotional involvement in the purchasing process. Sensory marketing aims at strengthening the relationship between a brand and its consumers on a deeper level through the involvement of the human senses; sight, sound, smell, taste and touch. Since the phenomenon is relatively new, the amount of studies concerning the eventual benefits on brand perception is limited. Purpose: This study investigates how sensory branding can influence the perception of a brand for the consumer. Method: The use of sensory branding was explored by conducting interviews with specialists within the field. The main basis for this research was an experiment, where the effect of using an ambient scent in the branding process was tested in order to investigate and analyze its effect on brand perception. Conclusion: Sensory marketing changes brand perception positively when the stimulus is congruent with the other brand elements. It can thus be seen as a suitable tool for reinforcing the value of a brand. A congruent stimulus influences the consumer on an unconscious level and can affect preference positively hence triggering impulse buying behavior.Adding a sensory dimension to the marketing strategy can strengthen the brand equity implying a stronger bond between the brand and the consumer. However,the authors argue that a strong brand platform is required to benefit ultimately from an investment in sensory branding. The use of sensory branding is growing rapidly and it is predicted to be the future of strategic branding.

Syfte: Den här studien undersöker hur företaget Icehotel arbetar med marknadsföring samt vad som lockar turisten att besöka denna turistattraktion. Vi har valt att studera och forska närmare kring människans fem sinnen, vilket består av syn, ljud, lukt, smak och känsel. Metod: I denna studie arbetar vi med kvalitativa metoder. Vi har utfört en deltagande observation på plats för att kunna få en djupgående förståelse för hur de fem sinnena påverkas under vistelsen. En stor del av empirin består av information som vi har fått genom email- och kvalitativa intervjuer. Det är sju informanter som har besvarat våra intervjufrågor. I analyskapitlet framkommer en diskussion om vår observation och våra egna tankar kring studien. Teori: Vi har i denna uppsats använt oss utav fem teoretiska referensramar och en modell. Teorierna är Sinnesmarknadsföring, Destinationsmarknadsföring, Konsumentkultur, Image och Word of mouth. Modellen heter Människans fem sinnen och sinnesupplevelser. Slutsats: I denna studie om Icehotel har vi kommit fram till att en marknadsföringsstrategi med fokus på människans fem sinnen kan gynna ett företag. Vi har dragit slutsatsen att sinnesmarknadsföring är ett okänt begrepp och om fler företagare blir informerade om dess inverkan kommer de förmodligen att tillämpa det. En förbättrad image kan höja gästernas och dagsbesökarnas helhetsupplevelse. / Purpose: This study examines how the company Icehotel works with marketing and what attracts tourists to visit this tourist attraction. We have chosen to study and research closely on the five human senses, which consists sight, sound, smell, taste and touch. Methodology: The chosen method for this study is that of qualitative method. We have conducted a participatory observation on the destination in order to get a deeper understanding of how the five senses are affected. The empirical data consists of information that we have received by email- and qualitative interviews. In the study seven respondents have answered our interview questions. In the analysis section emerges a discussion of our observation and our own thoughts on the study.  Theory: We have used five theoretical frameworks, as well as one theoretical model from this study. Our theories include, Sensory Marketing, Destination Marketing, Consumer Culture, Image and Word of mouth. The model is called, “The sensory experiences” Findings: In this study about the Icehotel, we came to a conclusion that a marketing strategy with a focus on the five senses can be beneficial for businesses. Sensory marketing is currently an unknown concept. If more entrepreneurs are informed about its impact, they will perhaps apply it. By applying the five senses to their marketing strategies, businesses' images can improve. Hence, raise guests and 'day visitors' overall experiences.
