Les aquifères fissurés de type karst contiennent d'importantes ressources en eau. Ces aquifères sont complexes et hétérogènes sur une gamme d'échelles importantes. Leur gestion nécessite l'utilisation d'outils et de méthodologies adaptés. Dans le cadre de cette étude, différents outils et méthodologies numériques d'étude ont été développés pour la modélisation des aquifères karstiques, et plus généralement, des milieux poreux très fissurés 2D et 3D - en mettant l'accent sur la morphologie et sur le comportement hydrodynamique du milieu à travers la notion de changement d'échelle ("second changement d'échelle", reposant sur un modèle d'écoulement local de type Darcy et/ou Poiseuille avec quelques généralisations). Plusieurs axes sont explorés concernant la morphologie du milieu poreux fissuré (milieux aléatoires, milieux booléens avec réseaux statistiques de fissures, mais aussi, modèles morphogénétiques). L'étude du changement d'échelle hydrodynamique tourne autour du concept de macro perméabilité. Dans un premier temps, l'étude porte sur un modèle de perte de charge linéaire darcien. Les perméabilités effectives sont calculées numériquement en termes des fractions volumiques de fissures et du contraste de perméabilité matrice/fissures. Elles sont analysées et comparées à des modèles théoriques (analytiques). Une étude particulière des effets de quasi-percolation pour les grands contrastes aboutit à la définition de trois fractions critiques liées à des seuils de percolation. Pour tenir compte des effets inertiels dans les fissures, l'étude est étendue au cas d'une loi locale comprenant un terme quadratique en vitesse (Darcy/Ward-Forchheimer). Une perméabilité macroscopique équivalente non linéaire est définie et analysée à l'aide d'un modèle inertiel généralisé (linéaire/puissance). Enfin, l'anisotropie hydraulique à grande échelle du milieu fissuré est étudiée, en termes de perméabilités directionnelles, à l'aide d'une méthode numérique d'immersion. / Karstic aquifers contain large subsurface water resources. These aquifers are complex and heterogeneous on a large range of scales. Their management requires appropriate numerical tools and approaches. Various tools and numerical methodologies have been developed to characterize andmodel the geometry and hydraulic properties of karstic aquifers, more generally, of highly fissured 2D and 3D porous media. In this study, we emphasize morphological characterization, and we analyze hydrodynamic behavior through the concept of upscaling ("second upscaling"). Concerning the morphology of fissured porous media, several axes are explored : random media, composite random Boolean media with statistical properties, and morphogenetic models. Hydrodynamic upscaling is developed using the macro-permeability concept. This upscaling method is based on either Darcy's linear law, or on a linear/quadratic combination of Darcy's and Ward-Forchheimer's quadratic law (inertial effects). First, the study focuses on Darcy's linear head loss law, and Darcian effective permeabilities are calculated numerically in terms of volume fractions of fissures and "fissure/matrix" permeability contrasts. The results are analysed and compared with analytical results and bounds. A special study of percolation and quasi-percolation effects, for high contrasts, leads to defined three critical fractions. These critical fractions are "connected" to percolation thresholds. Secondly, in order to consider inertial effect in fissures, the study is extended to a local law with a quadratic velocity term (Darcy/Ward-Forchheimer). Then, an equivalent nonlinear macroscopic permeability is defined and analysed using a generalized inertial model (linear/power). Finally, the large scale hydraulic anisotropy of fissured medium is studied, in terms of directional permeabilities, using an "immersion" numerical method.

Numerical investigation of multiphase Darcy-Forchheimer flow and contaminant transport during SO₂ co-injection with CO₂ in deep saline aquifersZhang, Andi 20 September 2013 (has links)
Of all the strategies to reduce carbon emissions, carbon dioxide (CO₂) geological sequestration is an immediately available option for removing large amounts of the gas from the atmosphere. However, our understanding of the transition behavior between Forchheimer and Darcy flow through porous media during CO₂ injection is currently very limited. In addition, the kinetic mass transfer of SO₂ and CO₂ from CO₂ stream to the saline and the fully coupling between the changes of porosity and permeability and multiphase flow are two significant dimensions to investigate the brine acidification and the induced porosity and permeability changes due to SO₂ co-injection with CO₂.
Therefore, this dissertation develops a multiphase flow, contaminant transport and geochemical model which includes the kinetic mass transfer of SO₂ into deep saline aquifers and obtains the critical Forchheimer number for both water and CO₂ by using the experimental data in the literature. The critical Forchheimer numbers and the multiphase flow model are first applied to analyze the application problem involving the injection of CO₂ into deep saline aquifers. The results show that the Forchheimer effect would result in higher displacement efficiency with a magnitude of more than 50% in the Forchheimer regime than that for Darcy flow, which could increase the storage capacity for the same injection rate and volume of a site. Another merit for the incorporation of Forchheimer effect is that more CO₂ would be accumulated in the lower half of the domain and lower pressure would be imposed on the lower boundary of the cap-rock. However, as a price for the advantages mentioned above, the injection pressure required in Forchheimer flow would be higher than that for Darcy flow. The fluid flow and contaminant transport and geochemical model is then applied to analyze the brine acidification and induced porosity and permeability changes due to SO₂ co-injection. The results show that the co-injection of SO₂ with CO₂ would lead to a substantially acid zone near the injecting well and it is important to include the kinetic dissolution of SO₂ from the CO₂ stream to the water phase into the simulation models, otherwise considerable errors would be introduced for the equilibrium assumption.
This study provides a useful tool for future analysis and comprehension of multiphase Darcy-Forchheimer flow and brine acidification of CO₂ injection into deep saline aquifers. Results from this dissertation have practical use for scientists and engineers concerned with the description of flow behavior, and transport and fate of SO₂ during SO₂ co-injection with CO₂ in deep saline aquifers.

Optimization of protein concentration from alfalfa juice by high shear rate dynamic filtration / Optimisation de la concentration des protéines à partir du jus de luzerne par filtration dynamique à fort cisaillementZhang, Wenxiang 30 June 2016 (has links)
Les protéines extraites des feuilles de luzerne sont une source importante de protéines. La filtration membranaire, technologie de séparation respectueuse de l’environnement avec une productivité élevée et de faible coût a été utilisée pour séparer et concentrer les protéines des feuilles de luzerne à partir de leur jus. Cependant le phénomène du colmatage de la membrane qui réduit sérieusement le flux et la séparation des protéines est un facteur limitant important dans l'application de la filtration membranaire. Pour améliorer la récupération des protéines et amenuiser le phénomène du colmatage, la filtration membranaire associée à fort cisaillement a été utilisée pour la filtration du jus de luzerne. Toujours dans l’objectif d'optimiser le processus de la filtration, "le mode de la filtration" et "les paramètres de fonctionnement" ont été étudiés pour réduire le colmatage de la membrane et améliorer le rendement de la filtration. Puis, l’effluent du jus de luzerne a été filtré par des membranes dans des conditions de fort cisaillement afin de recycler les protéines. En outre, le mécanisme du colmatage a été étudié et a permis d’évaluer les stratégies de contrôle du colmatage. L'optimisation du procédé membranaire, via l’étude du "mode de filtration" et des "paramètres de fonctionnement" a été conduit dans le but d’améliorer la séparation et la concentration des protéines et de réduire le colmatage. Trois types de « mode de filtration » ont été testés : la filtration frontale sur le module de la cellule amicon (DA), la filtration tangentielle dynamique sur le module à disque rotatif (CRDM) et la filtration frontale sur le module à disque rotatif (DRDM)). Les « paramètres de fonctionnement » qui ont été étudiés sont les suivants : le type de membranes (ultrafiltration (UF) et microfiltration (MF)), la vitesse de rotation, la température et la pression transmembranaire (TMP). Le comportement du débit (évolution du flux du perméat au cours de la filtration), les performances de la séparation (taux de clarification et de concentration), l’efficacité du nettoyage de la membrane (récupération de la perméabilité membranaire) et la productivité lors des tests de recyclage et de concentration ont été étudiés dans le but de définir des stratégies dans le contrôle du colmatage. Puis, l’effluent de luzerne a été filtré par UF afin de séparer et purifier les protéines. Le mécanisme du phénomène du colmatage des membranes lors de la filtration du jus de luzerne a été étudié. Le processus du colmatage de la membrane a montré une tendance d’un colmatage multi-site progressif. Le modèle du colmatage multisite progressif selon la loi de Darcy (SMDM) a été proposé afin de mieux décrire et comprendre le processus du colmatage. Les effets de la composition du fluide d’alimentation, du choix de la membrane et des conditions hydraulique ont joué un rôle important dans le processus progressif du colmatage. De plus, les coefficients de résistance et de compressibilité dans les différentes étapes et sites ont été calculés afin d’expliquer le processus complexe du colmatage et d’évaluer l'efficacité des stratégies du contrôle du colmatage. Une série d'essais avec de longues durées de filtration a été réalisée pour étudier le déclin du flux et le colmatage de la membrane à diverses étapes du processus. Ces résultats présentent une utilité pour améliorer la récupération des protéines et contrôler le colmatage dans le processus de la filtration membranaire à fort cisaillement du jus de luzerne. Ces résultats sont aussi utiles pour la conception et la mise en place des technologies membranaires dans les processus industriels. / Alfalfa leaf proteins extracted from plants are an important protein source. As an environmentally friendly separation technology with high productivity and low cost, membrane filtration was used to separate and concentrate leaf protein from alfalfa juice. However membrane fouling seriously reduces flux and protein separation and is an important limitation in the application of membrane filtration. To improve protein recovery and fouling control, dynamic shear-enhanced membrane filtration with high shear rate on membrane surface and excellent anti-fouling capacity was used for alfalfa juice filtration in this work. In order to optimize filtration process, filtration mode and operation parameters were investigated to reduce membrane fouling and improve separation performance. Then, alfalfa wastewater was also treated by dynamic shear-enhanced membrane filtration to recycle proteins. Furthermore, the fouling mechanism was studied and served as a valuable evaluation for fouling strategies. In this study, process optimization including “Filtration mode” and “Operation parameters” was studied to improve protein recovery and fouling control. In “Filtration mode”, three types of filtration modules (dead end filtration using laboratory Amicon cell (DA), dynamic cross filtration using rotating disk module (CRDM) and dead end filtration using rotating disk module (DRDM)) were used to investigate the filtration performance. As for “Operation parameters”, the operation parameters including membranes (ultrafiltration (UF) and microfiltration (MF)), rotating speed, temperature and transmembrane pressure (TMP) were studied to optimize the filtration process. Flux behavior (permeate flux and flux decline), separation performance (clarification and concentration capacity), membrane cleaning efficiency (permeability recovery) and productivity in full recycling tests and concentration tests were utilized to evaluate the various operation strategies. In addition, alfalfa wastewater was treated by UF membrane, while waste proteins were recycled. Fouling mechanism for alfalfa juice filtration was investigated. The fouling process showed significantly stepwise multisite patterns. Based on Darcy’s law, the stepwise multisite Darcy’s law model (SMDM) was proposed to better describe and understand the fouling process. The effects of feed composition, membrane and hydraulic conditions played an important role in stepwise fouling process. Moreover, the resistance coefficient and compressibility for different steps and sites were calculated to explain the complex fouling process and estimate the efficiency of flux decline control strategies. Besides, a series of long tests were utilized to study flux decline and membrane fouling at various fouling step process. These results can be used to understand the protein recovery and fouling control during shear-enhanced membrane filtration process of alfalfa juice. They have important implications for process design of membrane technology in industrial scale.

Modeling and design optimization of a microfluidic chip for isolation of rare cellsGannavaram, Spandana 12 1900 (has links)
Indiana University-Purdue University Indianapolis (IUPUI) / Cancer is still among those diseases that prominently contribute to the numerous deaths that are caused each year. But as technology and research is reaching new zeniths in the present times, cure or early detection of cancer is possible. The detection of rare cells can help understand the origin of many diseases. The current study deals with one such technology that is used for the capture or effective separation of these rare cells called Lab-on-a-chip microchip technology. The isolation and capture of rare cells is a problem uniquely suited to microfluidic devices, in which geometries on the cellular length scale can be engineered and a wide range of chemical functionalizations can be implemented. The performance of such devices is primarily affected by the chemical interaction between the cell and the capture surface and the mechanics of cell-surface collision and adhesion. This study focuses on the fundamental adhesion and transport mechanisms in rare cell-capture microdevices, and explores modern device design strategies in a transport context. The biorheology and engineering parameters of cell adhesion are defined; chip geometries are reviewed. Transport at the microscale, cell-wall interactions that result in cell motion across streamlines, is discussed. We have concentrated majorly on the fluid dynamics design of the chip. A simplified description of the device would be to say that the chip is at micro scale. There are posts arranged on the chip such that the arrangement will lead to a higher capture of rare cells. Blood consisting of rare cells will be passed through the chip and the posts will pose as an obstruction so that the interception and capture efficiency of the rare cells increases. The captured cells can be observed by fluorescence microscopy. As compared to previous studies of using solid microposts, we will be incorporating a new concept of cylindrical shell micropost. This type of micropost consists of a solid inner core and the annulus area is covered with a forest of silicon nanopillars. Utilization of such a design helps in increasing the interception and capture efficiency and reducing the hydrodynamic resistance between the cells and the posts. Computational analysis is done for different designs of the posts. Drag on the microposts due to fluid flow has a great significance on the capture efficiency of the chip. Also, the arrangement of the posts is important to contributing to the increase in the interception efficiency. The effects of these parameters on the efficiency in junction with other factors have been studied and quantified. The study is concluded by discussing design strategies with a focus on leveraging the underlying transport phenomena to maximize device performance.

The goal of the project was to create a model in COMSOL Multiphysics that can simulate thefilling of resin (epoxy) in Resin Impregnated Paper (RIP) bushings. Using the model new fillingrecipes that avoid problematic double-fronts and thereby avoid the creation of cavities in thebushings should be designed. Another goal was to use Thermocouples and Fiber optics tomeasure the temperature at different positions during the filling to get a better understanding ofthe filling. The first step was to design and determine functions, parameters (such as thepermeability), boundary conditions etc. for the simulation model in COMSOL Multiphysics and tocalibrate the model to align with measurements of fillings previously done. The second part wasto increase the filling time to minimize the maximum difference between filling fronts in thebushings and thereby decrease the risk of problematical double-fronts that create cavities,which decrease the bushing's dielectrical properties. The simulation model aligned somewhatwith the measured data but there is a lot of uncertainty both in the measurements and due toassumptions made in the simulation model. The measurements from Thermocouples and Fiberoptics where almost identical and they indicated that the filling of the bushing is symmetric.

The rate and timing of direct mountain front recharge in an arid environment, Silver Island Mountains, UtahCarling, Gregory T. 03 December 2007 (has links) (PDF)
Direct mountain front recharge (MFR), water table recharge at the base of the mountain front, was evaluated on the arid (<250 mm/yr precipitation) Silver Island Mountains by comparing mountain precipitation to groundwater response. Direct MFR contributions were assessed on two catchments, one bedrock (i.e., mountain block) dominated and the other alluvial fan (i.e., mountain front) dominated. Catchment precipitation and shallow groundwater levels at each catchment outlet were measured for a 24 month period beginning October 2005. This time period captured one complete hydrologic cycle (December 2005-February 2007) for which annual and seasonal direct MFR rates were calculated. Annual direct MFR was calculated using a modified version of the water table fluctuation (WTF) method as 0.015-0.016% of precipitation on both catchments, with seasonal variations of 0% in summer up to 0.023% in winter, spring and fall. Seasonal direct MFR contributions are similar on the bedrock and the alluvial fan dominated catchments, with a notable exception during fall 2006 when direct MFR was twice as effective on the bedrock dominated system than on the alluvial fan dominated system (0.022% and 0.011% of precipitation, respectively). Darcy's law calculations show similarly low annual direct MFR contributions (0.013-0.032% of precipitation) as those calculated by the WTF method. Calculated direct MFR is 10% or less than typical calculated combined MFR (near surface recharge and deep underflow from the mountain block) for similar terrains and climates, and is only 3.5% of the combined MFR for the Silver Island Mountains as calculated by the Maxey-Eakin model. However, based on total recharge to the adjacent playa, it is apparent that the Maxey-Eakin model overestimates combined MFR, and the small calculated direct MFR is at least 50% of combined MFR. Despite some uncertainty in the numerical results, several patterns are evident in the data. The data show that direct MFR occurs in response to small rainfall events throughout much of the year, and that snowmelt is not necessary to produce direct MFR. The data also show that direct MFR responds more quickly and flushes through the system faster on the alluvial fan catchment than on the bedrock catchment.

Dans cette thèse, on étudie les écoulements oscillatoires en milieux poreux (non saturés ou partiellement saturés) dus à des oscillations tidales des niveaux d'eau dans des milieux ouverts adjacents aux milieux poreux. L'étude est centrée sur le cas des plages de sable en hydrodynamique côtière, mais les applications concernent, potentiellement et plus généralement, les problèmes d'oscillation et de variation temporelle des niveaux d'eau dans des systèmes couplés, lorsque ceux-ci mettent en jeu des interactions entre les écoulements de sub-surface (milieux poreux) et les eaux de surface (milieux ouverts) : plages naturelles et artificielles; digues portuaires; barrages en terre; berges de fleuves; estuaires. Le forçage tidal des écoulements souterrains est représenté et modélisé ici, tant expérimentalement que numériquement, par une oscillation quasi-statique du niveau d'eau dans un réservoir externe ouvert, connecté au domaine poreux. On s'intéresse plus particulièrement aux écoulements verticaux forcés par une pression oscillatoire imposée au bas d'une colonne de sol. Sur le plan expérimental, ce type de forçage est obtenu par une machine à marée équipée d'un arbre rotatif. Au total, on utilise dans ce travail trois types d'approches (expérimentale, numérique, analytique), l'objectif étant d'étudier le mouvement vertical de la surface "libre" et l'écoulement non saturé sus-jacent, de façon à prendre en compte aussi bien les pertes de charge dans la zone saturée que les gradients de pression capillaire dans la zone non saturée. […] / In this thesis, we study hydrodynamic oscillations in porous bodies (unsaturated or partially saturated), due to tidal oscillations of water levels in adjacent open water bodies. The focus is on beach hydrodynamics, but potential applications concern, more generally, time varying and oscillating water levels in coupled systems involving subsurface / open water interactions (natural and artificial beaches, harbor dykes, earth dams, river banks, estuaries). The tidal forcing of groundwater is represented and modeled (both experimentally and numerically) by quasi-static oscillations of water levels in an open water reservoir connected to the porous medium. Specifically, we focus on vertical water movements forced by an oscillating pressure imposed at the bottom of a soil column. Experimentally, a rotating tide machine is used to achieve this forcing. Overall, we use three types of methods (experimental, numerical, analytical) to study the vertical motion of the groundwater table and the unsaturated flow above it, taking into account the vertical head drop in the saturated zone as well as capillary pressure gradients in the unsaturated zone. Laboratory experiments are conducted on vertical sand columns, with a tide machine to force water table oscillations, and with porous cup tensiometers to measure both positive pressures and suctions along the column (among other measurement methods). Numerical simulations of oscillatory water flow are implemented with the BIGFLOW 3D code (implicit finite volumes, with conjugate gradients for the matrix solver and modified Picard iterations for the nonlinear problem). In addition, an automatic calibration based on a genetic optimization algorithm is implemented for a given tidal frequency, to obtain the hydrodynamic parameters of the experimental soil. Calibrated simulations are then compared to experimental results for other non calibrated frequencies. Finally, a family of quasi-analytical multi-front solutions is developed for the tidal oscillation problem, as an extension of the Green-Ampt piston flow approximation, leading to nonlinear, non-autonomous systems of Ordinary Differential Equations with initial conditions (dynamical systems). The multi-front solutions are tested by comparing them with a refined finite volume solution of the Richards equation. Multi-front solutions are at least 100 times faster, and the match is quite good even for a loamy soil with strong capillary effects (the number of fronts required is small, no more than N≈ to 20 at most). A large set of multi-front simulations is then produced in order to analyze water table and flux fluctuations for a broad range of forcing frequencies. The results, analyzed in terms of means and amplitudes of hydrodynamic variables, indicate the existence, for each soil, of a characteristic frequency separating low frequency / high frequency flow regimes in the porous system.

From the Proceedings of the 1973 Meetings of the Arizona Section - American Water Resources Assn. and the Hydrology Section - Arizona Academy of Science - May 4-5, 1973, Tucson, Arizona / The geohydrology of a portion of the Santa Catalina Mountains including the definition of aquifer systems in the foothills was studied in order to calculate groundwater recharge to the Tucson basin. This underlying groundwater aquifer is the only source of Tucson, Arizona's water supply. A well network, well logs, geologic profiles, and a water level contour map were used as source information. Recharge was found to occur in some sections of washes and close to the mountains where washes cross or coincide with faults. Significant recharge to sand and gravel aquifers occurs directly through faults and joints. Little of the surface runoff is thought to recharge local aquifers because of low permeability layers beneath the alluvium and the short duration of the flows. Recharge calculation using the Darcy equation was subject to considerable error; but flow net analysis showed the total recharge to be 336 acre-feet per year representing about 50 acre feet per mile of mountain front per year.

[ES] Existen muchos estudios que relacionan el consumo regular de frutas con importantes beneficios para la salud. Esto es debido a la gran cantidad de fibra, vitaminas y otros compuestos bioactivos presentes en ellas, los cuales pueden ser de gran ayuda en la prevención de algunas enfermedades. En los últimos años, el consumidor se ha decantado por consumir productos con alto valor nutricional y, como consecuencia del estilo de vida actual, existe una alta demanda de productos con fácil manejo para su consumo. Algunos de los principales inconvenientes de las frutas son su estacionalidad y corta vida útil, por lo que resulta interesante ofrecer productos de fruta de alto valor nutritivo y sensorial, estables y fácil manejo. La liofilización es una técnica que permiten obtener productos altamente estables microbiológicamente, debido a su bajo contenido de humedad, y con una máxima calidad sensorial, nutritiva y funcional. Sin embargo, se trata de un proceso largo y energéticamente costoso. Con base a lo anterior, el objetivo de esta tesis ha sido seleccionar las mejores condiciones de liofilización para la obtención de dos productos de naranja, uno la propia torta liofilizada y otro el polvo obtenido por trituración de la misma.
Así, la sección uno se centra en evaluar la influencia tanto del contenido de agua como de la composición en solutos de un producto naranja en algunas propiedades de la torta liofilizada y del polvo correspondiente. Las propiedades analizadas se seleccionaron teniendo en cuenta tanto la retención de los compuestos bioactivos, como la porosidad, el color y las propiedades mecánicas de la torta obtenida y del polvo conseguido tras su trituración, además de las propiedades de flujo del polvo y su comportamiento frente a la rehidratación. En base a los resultados obtenidos se ha podido concluir que el puré de naranja es más recomendable a los efectos de obtener un producto tipo snack crujiente y el zumo cuando se desee un polvo para rehidratar, en este caso evitando cualquier tratamiento térmico antes de la liofilización.
En la sección dos, se ha estudiado el impacto de la temperatura del secado, 30 y 50 °C, sobre los compuestos bioactivos del producto obtenido a partir del zumo de naranja formulado con goma Arábiga y fibra de bambú, así como sobre las mismas propiedades antes descritas de la torta liofilizada y de su correspondiente producto en polvo. En este caso, además, se llevó a cabo una evaluación sensorial de los productos rehidratados. Los resultados obtenidos permiten recomendar 50°C para el secado de este producto por liofilización. Esta temperatura acorta el tiempo del proceso en un 64 %, favorece la extracción de la vitamina C sin afectar al contenido total de fenoles y carotenoides, mejora las propiedades mecánicas de las tortas y no afecta a la fluidez ni a la rehidratación del producto en polvo.
Finalmente, en la sección tres, se ha trabajado en la aplicación de una solución analítica basada en la ley de Darcy para modelar la cinética de pérdida de agua durante la liofilización. La solución analítica debe complementarse con una solución numérica de las ecuaciones de Fourier para la transferencia de calor. El modelo se ha ajustado a la dinámica experimental de liofilización de un producto a base de naranja formulado a partir del zumo. La pseudo-permeabilidad de Darcy obtenida fue de 2,0X10-12 con un índice de desviación de la conducta ideal de 0,5. Las ecuaciones propuestas, resueltas con la pseudo-permeabilidad de Darcy ajustada y el índice de desviación ideal, permiten reproducir la dinámica de liofilización experimental del mismo producto a diferentes temperaturas. / [CA] Existeixen molts estudis que relacionen el consum regular de fruites amb importants beneficis per a la salut. Això és degut a la gran quantitat de fibra, vitamines i altres compostos *bioactivos que es troben elles, els quals poden ser de gran ajuda en la prevenció d'algunes malalties. En els últims anys el consumidor s'ha decantat per consumir productes amb alt valor nutricional i, a conseqüència de l'estil de vida actual, existeix una alta demanda de productes amb fàcil maneig per al seu consum. Alguns dels principals inconvenients de les fruites són la seua estacionalitat i curta vida útil, per la qual cosa resulta interessant oferir productes de fruita d'alt valor nutritiu i sensorial, estables i fàcil maneig. La liofilització és una tècnica que permeten obtindre productes altament estables microbiologicament, a causa del seu baix contingut d'humitat, i amb una màxima qualitat sensorial, nutritiva i funcional. No obstant això, es tracta d'un procés llarg i energèticament costós. Amb base a l'anterior, l'objectiu d'aquesta Tesi ha sigut seleccionar les millors condicions de liofilització per a l'obtenció de dos productes de taronja, un la pròpia coca liofilitzada i un altre la pols obtinguda per trituració d'aquesta.
Així, la primera part de la Tesi se centra en avaluar la influència tant del contingut d'aigua com de la composició en soluts d'un producte taronja en algunes propietats de la coca liofilitzada i de la pols corresponent. Les propietats a analitzar es van seleccionar tenint en compte tant la retenció dels compostos bioactius, com la porositat, el color i les propietats mecàniques de la coca obtinguda i de la pols aconseguida després de la seua trituració, a més de les propietats de flux de la pols i el seu comportament enfront de la rehidratació. Sobre la base dels resultats obtinguts s'ha pogut concloure que el puré de taronja és més recomanable a l'efecte d'obtindre un producte tipus snack cruixent i el suc quan es desitge una pols per a rehidratar, en aquest cas evitant qualsevol tractament tèrmic abans de la liofilització.
En la segona part de la Tesi, s'ha estudiat l'impacte de la temperatura de l'assecat, 30 i 50 °C, sobre els compostos bioactius del producte obtingut a partir del suc de taronja formulat amb goma Aràbiga i fibra de bambú, així com sobre les mateixes propietats abans descrites de la coca liofilitzada i del seu corresponent producte en pols. En aquest cas, a més, es va dur a terme una avaluació sensorial dels productes rehidratats. Els resultats obtinguts permeten recomanar 50 °C per a l'assecat per liofilització d'aquest producte. Aquesta temperatura acurta el temps del procés en un 64%, afavoreix l'extracció de la vitamina C sense afectar el contingut total de fenols i carotenoids, millora les propietats mecàniques de les coques i no afecta a la fluïdesa ni a la rehidratació del producte en pols.

This is due to the large amount of fibre, vitamins and other bioactive compounds found in them, which can be of great help in the prevention of some diseases. In recent years, consumers have become more inclined to consume products with high nutritional value and, as a consequence of today's lifestyle, there is a high demand for products that are easy to handle for consumption. Some of the main disadvantages of fruits are their seasonality and short shelf life, so it is interesting to offer fruit products of high nutritional and sensory value that are stable and easy to handle. Freeze-drying is a technique that makes it possible to obtain highly microbiologically stable products, due to their low moisture content, and with maximum sensory, nutritional and functional quality. However, it is a long and energy-intensive process. Based on the above, the aim of this Doctoral Thesis has been to select the best freeze-drying conditions for obtaining two orange products, one the freeze-dried cake itself and the other the powder obtained by crushing it.
Thus, the first part of the Thesis focuses on evaluating the influence of both the water content and the solute composition of an orange product on some properties of the freeze-dried cake and the corresponding powder. The properties to be analysed were selected taking into account the retention of the bioactive compounds, the porosity, the colour and the mechanical properties of the cake obtained and of the powder obtained after grinding, as well as the flow properties of the powder and its behaviour against rehydration. Based on the results obtained, it can be concluded that orange puree is more recommendable for obtaining a crunchy snack-type product and juice when a powder for rehydration is desired, in this case avoiding any heat treatment before freeze-drying.
In the second part of the Thesis, the impact of the drying temperature, 30 and 50 °C, on the bioactive compounds of the product obtained from orange juice formulated with gum Arabic and bamboo fibre, as well as on the same properties described above of the freeze-dried cake and its corresponding powdered product, has been studied. In this case, a sensory evaluation of the rehydrated products was also carried out. The results obtained allow to recommend 50°C for the freeze-drying of this product. This temperature shortens the processing time by 64 %, favours the extraction of vitamin C without affecting the total phenol and carotenoid content, improves the mechanical properties of the cakes and does not affect the flowability and rehydration of the powdered product.
Finally, in the third part of the Thesis, we have studied the application of an analytical solution based on Darcy's law to model the kinetics of water loss during freeze-drying. The analytical solution must be complemented with a numerical solution of the Fourier equations for heat transfer. The model has been fitted to the experimental dynamics of freeze-drying an orange-based product formulated from the juice. The Darcy pseudo-permeability obtained was 2,0X10-12 with an index of deviation from ideal behaviour of 0,5. The proposed equations, solved with the adjusted Darcy pseudo-permeability and the ideal deviation index, allow to reproduce the experimental freeze-drying dynamics of the same product at different temperatures. / Uscanga Ramos, MA.
