Os óxidos de colesterol estão presentes em diversas preparações alimentares, especialmente aquelas que contêm altos níveis de colesterol (exemplo: ovo, leite, carne e produtos marinhos). A formação de óxidos de colesterol é influenciada pelo calor (especialmente por um período muito longo), oxigênio, luz e UV, atividade de água, presença de ácidos graxos insaturados. Dentre os diferentes produtos cárneos existentes, temos os embutidos, ou carnes preparadas embutidas. A procura por produtos cárneos com menores taxas de oxidação e mais saudáveis é uma preocupação mundial. O efeito do processamento térmico dos alimentos sobre a formação dos óxidos de colesterol vem sendo investigado. Evidências sugerem que o tempo e a temperatura são fatores determinantes neste processo, influenciando diretamente na taxa de oxidação de colesterol. A presente pesquisa teve por objetivo: avaliar o valor nutritivo, qualidade lipídica e formação de óxidos de colesterol em Lingüiças Calabresas à vácuo e granel. Os valores médios de umidade, proteínas e minerais (cinzas) foram determinados, quantitativamente, conforme metodologia do ADOLFO LUTZ (1985) e AOAC (1995). Os valores de carboidratos foram determinados por diferença utilizando coeficientes para KCal e KJ (WATT&MERRILL, 1963, SLIMANI et al., 2000). Para a determinação dos lipídios totais utilizou-se a metodologia de MARMER & MAXWELL (1981). Para quantificar o TBA seguiu-se o método de TARLADGS et al. (1964), modificado por CRACKEL et al. (1988), adaptado por TORRES & OKANI (1997). Os ácidos graxos foram determinados seguindo MARMER & MAXWELL (1981) e MORRISON & SMITH (1974). O colesterol e óxidos de colesterol foram determinados seguindo os passos de MARMER & MAXWELL (1981), CSALLANY et al. (1989) e CHEN & CHEN (1994). Para a validação da metodologia para o HPLC foram realizados ensaios de recuperação, precisão, linearidade, limite de detecção e quantificação. Para a análise estatística foi realizado média, desvio padrão, análise de variância e complementada com comparações múltiplas de Bonferroni utilizando o Software SPSS. Os resultados obtidos das análises realizadas foram que o tipo de preparo influenciou no teor de umidade das lingüiças (crua - 65,47g; frita - 53,65, grelhada 58,31g). As amostras da embalagem a vácuo (22,91 g) apresentaram maior quantidade de proteína que as amostras da embalagem a granel (20,25g). Os valores de carboidratos não variaram em função da amostra ser da embalagem a vácuo ou granel. As amostras mais calóricas foram as fritas (242,89 KCal ou 1195,22 KJ) seguida pelas amostras grelhadas (212,41 KCal ou 1083,55 KJ). Não se observou variação da atividade de água nas amostras entre as embalagens estudadas. O tipo de preparo provocou alterações nos valores de TBA, mas não promoveu sabor rancificado nas amostras (crua - 0,06 mgMA/Kg, frito - 0,08mgMA/Kg e grelhado - 0,143mgMA/Kg). O teor de lipídios e colesterol não sofreram alterações em função do tipo de preparo. Os óxidos de colesterol 7-ceto,7α-OH, 7β-OH somente apresentaram traços em todas as variáveis analisadas (preparo, lote, embalagem e procedência). O óxido 25-OH apareceu em todas as preparações, crua (3,05µg/g), frito (3,76µg/g) e grelhado (2,14µg/g). Os resultados mostraram que a as amostras da embalagem vácuo apresentavam quantidade média de 25-OH menor que as da embalagem a granel. As amostras da embalagem a vácuo apresentaram o seguinte perfil de ácidos graxos: 51,04% de saturados e 48,96% de insaturados, enquanto que as amostras da embalagem granel apresentaram 38,18% de saturados e 61,82% de insaturados. Os resultados permitiram concluir que: a) o teor de umidade, proteína, cinzas, carboidratos, calorias, Aw (AA) e pH sofreram alterações quando submetidos aos 3 tipos de preparo e tipo de embalagem; b) os valores obtidos para TBA indicam que as amostras não apresentavam rancidez quando crua e após os vários preparos; c) as lingüiças apresentaram somente traços de 7-ceto, 7α-OH e7β-OH; d) as amostras de lingüiças calabresas quando submetidas a diversos métodos de cocção apresentaram diferentes concentrações de 25-OH; e) a quantidade de 25-OH variava de acordo com o tipo de processamento e este se tornava mais oxidado quando submetido ao processo de fritar; f) as amostras provenientes da embalagem a granel apresentaram maiores valores de 25-OH; g) o perfil de ácidos graxos não apresentou variação quando as amostras eram submetidas a diferentes preparos; h) as amostras da embalagem a vácuo apresentavam mais ácidos graxos saturados e as amostras da embalagem a granel apresentavam mais ácidos graxos insaturados. / The cholesterol oxides are present in several alimentary preparations, especially those that contain high cholesterol levels (example: egg, milk, meat and marine products). The formation of cholesterol oxides is influenced by the heat (especially for a very long period), oxygen, shines and UV, activity of water, presence of unsaturated fatty acids. Among the different meat products, we have the sausages, or built-in prepared meats. The search for meat products with smaller oxidation rates and healthier it is a world concern. The effect of the thermal processing of the victuals about the formation of the cholesterol oxides comes being investigated. Evidences suggest that the time and the temperature are decisive factors in this process, influencing direct1y in the rate of cholesterol oxidation. The present research had for objective: to evaluate the nutritive values, lipid quality and formation of cholesterol oxides in \'Lingüiças Calabresas\' to vacuum and bulk packaging. (1988), adapted by TOWERS & OKANI (1997). The fatty acids was certain following MARMER & MAXWELL (1981) and MORRISON & SMITH (1974). The cholesterol and cholesterol oxides were certain following the steps of MARMER & MAXWELL (1981), CSALLANY et al. (1989) and CHEN & CHEN (1994). For the validation of the methodology for HPLC recovery, precision, linearity, detection limit and quantification were accomplished. For the statistical analysis average, standard deviation, was accomplished variance analysis and complemented with multiple comparisons of Bonferroni using the Software SPSS. The obtained results of the accomplished analyses were that the type of prepare influenced in the moisture of the lingüiças (raw - 65,47g; fried - 53,65, grilled - 58,31g). The samples of the vaccum packaging (22,91g) presented larger amount of protein than the samples of the bulk packaging (20,25g). The carbohydrates values didn\'t vary in function of the sample to be of the vacuum or bulk packaging. The most calorific samples were the fried ones (242,89 KCal or 1195,22 KJ) followed by the grilled samples (212,41 KCal or 1083,55 KJ). The variation of the activity of water was not observed in the samples among the studied packagings. The type of prepare promoved alterations in the TBA values, but it didn\'t promote rancidity flavor in · the samples (raw - 0,06 mgMA/Kg, fried -0,08mgMA/Kg and grilled - 0,143mgMA/Kg). The lipidis and cholesterol didn\'t suffer alterations in function of the type of prepare. The cholesterol oxides 7-ceto, 7α-OH, 7β-OH only presented lines in whole the analyzed variables (prepare, lot, packaging and origin). The oxide 25-OH appeared in all the preparations, raw (3,05µg/g), fried (3,763µg/g) and grilled (3,11µg/g). The results showed that to the samples of the bulk packaging presented larger medium amount of 25-OH than the one of the vaccum packaging. The samples of the vaccum packaging presented the following profile of fatty acids: 51,04% saturated and 48,96% of unsaturated, while the samples of the bulk packaging presented 38,18% saturated and 61,82% unsaturated. The results allowed that: a) moisture, protein, ash, carbohydrates, energy value, Aw (AA) and pH suffered alterations when submitted to the 3 types of prepare and packaging type; b) the values obtained for TBA indicate that the samples didn\'t present rancidity flavor when raw and after the several prepares; c) the lingüiças presented only lines of 7-ceto, 7α-OH, 7β-OH; d) the samples of Linguiça Calabresa when submitted to several cooking methods they presented different concentrations of 25-OH and the amount of 25-OH varied in agreement with the processing type and this became oxidized when submitted to the frying process; f) the samples of the bulk packaging presented larger values of 25-OH; g) the profile of fatty acids didn\'t present variation when the samples were submitted the different prepares; h) the samples of the vaccum packaging presented more saturated fatty acids and the samples of the bulk packaging presented more unsaturated fatty acids.

A notícia e o discurso: o caso da regulamentação da publicidade de alimentos infantis ultraprocessados no Brasil / The news and the discourse: the case of children ultraprocessed food publicity regulation in Brazil

Introdução - A obesidade é um problema de Saúde Pública no Brasil, onde segundo a Pesquisa de Orçamentos Familiares (POF) 2008-2009 uma em cada três crianças de 5 a 9 anos está acima do peso. No ano de 2010 a Agência Nacional de Vigilância Sanitária (ANVISA) regulamentou a propaganda de alimentos e criou regras contra abusos nos anúncios para crianças, processo iniciado em 2004 que gerou grande interesse da mídia nacional, especialmente dos jornais impressos. A resolução da ANVISA, no entanto, não está em vigor em razão de ordens judiciais obtidas pelo setor atingido pela regulamentação. Objetivo - Verificar se a regulamentação da propaganda de alimentos ultraprocessados para crianças influenciou os discursos sobre o risco de obesidade infantil veiculados na mídia brasileira, especificamente nos jornais diários. Métodos - Estudo de natureza qualitativa, descritiva e analítica, realizado sob a perspectiva da construção social do risco e por meio de levantamento da cobertura jornalística sobre a regulamentação realizada pelo jornal Folha de S. Paulo, entre os anos de 2004 e 2012. Uma amostra do material coletado foi descrita para análise do enquadramento do tema na mídia e em seguida submetemos à Análise do Discurso Crítica textos publicados anteriormente e posteriormente à regulamentação. Resultados - Foram localizados 184 textos em 143 edições, média de 23 textos por ano, e em 17 editorias. Dos textos, 28% foram publicados como opinião e 55% indicavam posição contrária à regulamentação pelo Estado. O maior número de textos sobre a regulamentação ocorreu após sua publicação e 40% das fontes ouvidas pelo jornal em reportagens tinham ligação com o mercado atingido pela regulamentação estatal e contrário a sua efetivação. Quanto mais perto o País parecia estar de uma regulamentação estatal, mais o enquadramento distanciava-se do olhar da saúde pública e aproximava-se do olhar do mercado. Houve deslocamento dos discursos sobre obesidade infantil do campo de saúde pública para o campo da liberdade de expressão. Conclusão - A regulamentação da propaganda de alimentos infantis ultraprocessados pelo governo brasileiro influenciou os discursos sobre obesidade infantil veiculados na mídia. Houve deslocamento dos discursos sobre obesidade infantil para o campo de discussões sobre a liberdade de expressão na publicidade. / Obesity is a Public Health problem in Brazil, where one in three children are fat according to a national survey. In 2010 the National Agency of Sanitary Security released a regulation on the advertisement of food and created rules to protect children. The whole process started in 2004 with great attention from the press. Nowadays the regulation is not valid because of a decision from the brazilian Justice. We aim to evaluate the construction of the obesity risk in the childhood and changes in the discourse about obesity after this regulation using the framing theory and the Analysis of Critical Discourse in texts about the regulation published in the Folha de S. Paulo newspaper. In 184 texts about the regulations checked, 28% where opinions and 55% of this were against the regulation. The most of the texts were published after 2010 and 40% of the surveys were person from the market who was the regulation\'s target. When the regulation was about to be released the news framing was more favorable to the market. The discourse on child obesity was moved from the Public Health area to the Market area, which main issue is the freedom in the communications of the market.

The results allowed that: a) moisture, protein, ash, carbohydrates, energy value, Aw (AA) and pH suffered alterations when submitted to the 3 types of prepare and packaging type; b) the values obtained for TBA indicate that the samples didn\'t present rancidity flavor when raw and after the several prepares; c) the lingüiças presented only lines of 7-ceto, 7α-OH, 7β-OH; d) the samples of Linguiça Calabresa when submitted to several cooking methods they presented different concentrations of 25-OH and the amount of 25-OH varied in agreement with the processing type and this became oxidized when submitted to the frying process; f) the samples of the bulk packaging presented larger values of 25-OH; g) the profile of fatty acids didn\'t present variation when the samples were submitted the different prepares; h) the samples of the vaccum packaging presented more saturated fatty acids and the samples of the bulk packaging presented more unsaturated fatty acids.

Le XIXe siècle est en France celui de la bière : production et consommation annuelles passent en l’espace de cent ans de moins de trois à plus de quinze millions d’hectolitres. Profitant de sa position de carrefour commercial et de la qualité de ses eaux, Lyon occupe une place à part dans ce marché de masse en construction. Remettant en question l’hermétisme de supposées frontières alimentaires, la ville se démarque en effet dès les dernières années de l’Ancien Régime par un notable recours à la boisson houblonnée et la fabrication d’un produit aux qualités organoleptiques bien particulières qu’elle exporte en direction d’un large quart Sud-est du pays. Savamment entretenue, cette position originale fait de la cité rhodanienne l’un des principaux centres de production de bière français de la première moitié du siècle. La donne change à compter du Second Empire. Aux évolutions des modes et pratiques alimentaires à l’égard des alcools s’ajoutent décloisonnement des marchés et avancées technologiques affectant de manière irrémédiable l’activité. Le secteur brassicole régional, très largement lyonnais, passe ainsi en quelques décennies d’une structure artisanale voyant coexister une myriade de petits établissements employant quelques individus et produisant chacun annuellement quelques centaines d’hectolitres à une dimension industrielle où un nombre réduit de grandes usines concentrent main-d’œuvre, capitaux et parts de marché. L’encadrement réglementaire lui-même, qu’il s’agisse de législation professionnelle ou de régulation de l’insalubrité, et les politiques fiscales, à l’échelle de la ville comme du pays, participent à cette transition. Alors que la redéfinition des logiques urbaines et commerciales impacte directement les pratiques des brasseurs en les forçant à revoir leurs procédés de fabrication et leurs stratégies de formation, d’approvisionnement et de vente, c’est la progressive structuration d’une filière de la bière qui apparaît en filigrane. Il faut néanmoins se garder de voir ces entrepreneurs comme de simples victimes de mouvements qui leur échappent : plus que spectateurs d’une révolution protéiforme, ils s’en font les acteurs. L’étude prosopographique de 337 parcours considérés dans leurs dimensions individuelles et collectives atteste de la pluralité des destins : quand le modèle de la petite entreprise permet aux artisans les plus audacieux, qu’ils viennent d’un ailleurs professionnel ou géographique (sont notamment mises à jour les origines germaniques et alsaciennes de nombre d’entre eux), de valoriser leur travail et de satisfaire leurs ambitions, celui de l’industrie fait d’une poignée seulement de véritables brasseurs d’affaires. Ce seront les seuls à survivre, la plupart de leurs collègues et concurrents payant à terme les effets conjoints de la conjoncture économique, de la rationalisation du marché et des tragédies familiales. À l’orée du premier conflit mondial, seules six brasseries sont encore opérationnelles : ayant démontré sa précoce capacité d’adaptation en modifiant sa structure afin de donner aux établissements subsistants les moyens d’assimiler la modernisation productiviste, le monde brassicole rhodanien fait figure d’exception parmi les activités pré-industrielles, a fortiori parmi celles relevant du secteur agroalimentaire. / In France, the nineteenth century is the age of beer: in a hundred years, annual production and consumption grow from less than three to more than fifteen million hectolitres. Thanks to its advantageous commercial position and the quality of its waters, Lyon occupies a unique place in this developing mass-market. Calling presumed alimentary boundaries into question, the city distinguishes itself as soon as the end of the Ancien Régime through a wide use of the hoppy beverage and the making of a product with specific organoleptic qualities being exported to the southeast quarter of the country. Skilfully maintained, this original situation turns Lyon into one of the main French beer production centres of the first half of the century. Things change with the advent of the Second Empire. New drinking trends and habits, birth of a European then worldwide consumption market and substantial scientific and technical improvements combine themselves to change the activity into a definite way. Thus, the Rhône brewing sector, leaded by Lyon’s breweries and initially made of numerous and small short-lived handcraft production units selling locally only, becomes in a few decades an industry operating towards foreign markets and formed by a handful of big factories gathering workforce, capitals and market share. Regulatory framework itself (professional legislation or insalubrity control) and fiscal politics on national and municipal scales contribute also to the transition. Since they have to adapt their manufacturing and formation processes, as well as supplying and selling strategies, the redefinition of urban and commercial logics has a direct impact on brewers’ practices: in a wider sense, it is the organization of the beer sector which progressively reveals itself. However, it would be untrue to see these businessmen as powerless victims of an uncontrolled process. More than spectators, they are actors of a protean revolution. The prosopographical study of 337 careers considered in their individual and collective dimensions prove the plurality of fortunes: while the model of the small business allows audacious craftsmen whatever their professional and geographical origins (many of them come from Alsace and Germany) to succeed by highlighting their work and satisfying their ambitions, the industrial model is more selective. In the medium term, only a few businessmen will survive, their smaller colleagues and competitors suffering the joint effects of economic conjuncture, market rationalization and family tragedies. At the edge of World War One, six breweries are still in operation: having proven its early adaptation ability by modifying its structure in order to assimilate the productivist modernization, the Rhône brewing sector can be considered as an exception among the pre-industrial activities, a fortiori among those from the food-processing sector.

A Multidisciplinary Approach to Food Safety Evaluation: Hummus Spoilage and Microbial Analysis of Kitchen Surfaces in Residential Child Care Institutions (rcci) in Massachusetts, U.S.A.

Food borne illnesses continues to be a public health challenge in the United States (U.S.); an estimated 9.4 million incident cases occurred in 2011. In view of this challenge we conducted two food safety studies; 1) related to product formulation (hummus spoilage challenge study) and 2) evaluating the microbial safety of domestic kitchen surfaces in Residential Child Care Institutions (RCCI pilot study). Hummus is of Mediterranean origin but is currently eaten globally. This challenge study evaluates a variety of industrial hummus formulations (four in total, differing in pH and/or addition of a preservative (natamycin). Two batches were setup: batch 1; aseptically inoculated hummus with 100 CFU/g fungal isolates and batch 2; uninoculated hummus. Samples of both hummus batches were stored at both 20oC (10 days accelerated testing) and 4oC (84 days recommended temperature testing). Inoculated samples were analyzed for fungus, whiles both fungi and bacteria (standard plate count (SPC) and Lactococci) counts were done for uninoculated samples. Results indicate that accelerated testing inaccurately predicts fungal growth at 4oC in hummus, also fungal growth inhibition requires a pH ≤ 4.0 ± 0.2 and refrigeration. Limited studies have specifically evaluated the prevalence of pathogenic bacteria in domestic kitchens in the U.S, for this reason we assessed the microbial safety of 6 RCCI locations in MA. Fifteen key food contact surfaces and dish washing sponges, if available at each RCCI facility were assessed for SPC, yeast and molds, total coliform and E. coli, Listeria sp and Salmonella sp. Microbiological assessments were conducted preceding and after a hazard analysis and critical control point (HACCP) food safety training and implementation at each location. Microbial growth varied by surface for each type of microorganism, wet surfaces had higher most probable number (MPN) counts. Compared to dry surfaces, wet surfaces had significantly higher mean total coliform counts. For both E. coli and total coliform, microbial load differed significantly by surfaces sampled (P = 0.0323 and 0.014) respectively. The surface and training interaction effect was highly significant for only E. coli (P = 0.0089). Training overall had no significant effect on reducing the microbial load on kitchen surfaces.

Implementing food science-based instruction in career technical education courses

Students are exposed to food concepts in agriculture-based career technical education (CTE) courses which provide a gateway for students to become more aware of food science career pathways. Professional development for Mississippi (MS) CTE teachers is needed to effectively implement food science-based instruction since there is not a food science curriculum framework adopted in MS. The objective of this study was to assess a food science professional development training for MS CTE teachers that would increase their self-perceived knowledge of food science, self-perceived ability to conduct food science skills, and their self-efficacy to implement food science-based instruction. Thirty-one teachers participated in a 2-h professional development (PD) training that provided teachers an experiential learning opportunity to learn and apply food science concepts. Results indicated that the food science PD training was effective at increasing teachers’ self-perceived knowledge and ability to conduct food science skills. Post training, more than 77% of the participating teachers were more confident in their ability to teach food science concepts. Overall, teachers were satisfied with the food science PD training. After participating in the food science PD training, teachers were asked to implement food science-based instruction in their CTE courses. A pilot test was conducted to examine MS CTE teachers’ (N=4) perception of implementing food science-based instruction that was provided to them. Post implementation, each teacher participated in a semi-structured interview to capture each teacher’s detailed experience pertaining to the implementation of the food science-based instruction. A conventional content analysis was used to analyze teacher responses. Research findings indicated that MS CTE teachers were interested in teaching food science to increase student knowledge of food science and to enhance student performance on the Future Farmers of America food science career development event. All teachers noted that they had a positive experience implementing the food science toolkit and that they intend to use the food science-based instruction in the future. MS CTE teachers perceived that the food science toolkit increased student exposure to, engagement in, and interest in food science academic and career pathways.

Improving nutrition and food safety knowledge of small-scale fish processors in Delta State, Nigeria

Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value. Aim: To improve the knowledge of fish processors on nutrition and safe fish handling. Methodology: A 3-day participatory training was organized to train 122 fish processors, 95 women, and 25 men. The training was conducted in the three senatorial districts in Delta State, Nigeria. Knowledge was assessed using the pre and post quizzes and assessed self-evaluated knowledge using a 5 points-Likert scale survey. The training material was validated using the content validity index (CVI) and modified kappa index (k*). Comprehensibility was determined using the cloze procedure. Minimum dietary diversity survey (MDDW) was used to determine the dietary diversity of women at baseline and 12 weeks after the training. Low literacy tools and the overall training were evaluated on Likert scales. Results: The developed seven-module nutrition and food safety flipbook were validated at a content validity index value of 0.983 and kappa index value ≥ 0.67., and the cloze score of 72.1%. There was a significant improvement in knowledge (p ≤.05) in the 7 modules taught. Wristbands and hand fans were rated useful and served as a reminder of nutrition values. There was no significant difference (p > .05) between the dietary diversity at the baseline; 5.8 ±.22 and end-line; 6.4 ±.20 at 95% CI. However, the number of women that consumed ≥ 6 of 10 food groups increased by 9.8% after 12 weeks of training intervention. Conclusion: The developed and validated training material was considered culturally suitable and appropriate. There was an increase in knowledge acquired in all modules taught on nutrition and food safety. Consumption of animal source food increased post-training. However, there is a need for additional training to address food contamination and dietary diversification.

Aussi, afin de pouvoir appliquer aux produits litigieux un statut adéquat et déterminer par la même le régime juridique qui doit être le leur, des références précises de l’aliment doivent être mises en évidence au travers de son analyse d’ensemble, l’étude tant de sa fonction que de sa présentation s’avérant indispensable pour résoudre cette problématique non dépourvue d’importance pratique / With the widespread appearance of borderline products, the traditional boundaries between the food and other categories of products that we ingest are constantly blurred.
