The Public Market System of New Orleans: Food Deserts, Food Security, and Food Politics

This study evaluates the public market system in New Orleans, Louisiana by focusing on the history of New Orleans public markets, the privatization of food, and the "greening" of the city with the creation of the Crescent City Farmers Market and other grass roots food activist efforts. Using qualitative methods, ethnographic fieldwork, participant observation and interviewing, issues of food access, food security, food production, food locality, quality, and affordability in New Orleans are explored. The history of public markets in New Orleans and the patterns of market proliferation, regulation, and privatization are significant in the landscape of cultural self-identification, community cohesion, neighborhood networks and economic and ecological development and sustainability. The city's various food shopping arenas and their locations become markers of history, status, rebellion, and of the "other," and become centers for issues of health, economy, politics, and food.

Lagartos teiú eclodem no verão e enfrentam o desafio de crescer e armazenar substratos em um curto período de tempo, antes do início do período de jejum e depressão metabólica (≈80%) a temperaturas amenas durante o inverno (≈17 °C). No despertar, o aumento do metabolismo e a reperfusão de órgãos favoreceriam a ocorrência de estresse oxidativo. Na primeira parte do presente estudo investigou−se os ajustes que compatibilizam as demandas em teiús neonatos, especialmente na pré-hibernação, por meio da gravação do comportamento em vídeo e da análise da massa dos corpos gordurosos abdominais e do nível plasmático de corticosterona (CORT) durante o primeiro ciclo anual. No início do outono a massa corpórea dos teiús foi 27 g e o comprimento rostro−cloacal 9,3 cm e aumentaram 40% e 20%, respectivamente, ao longo do outono, enquanto que as taxas diminuíram progressivamente até atingirem o valor zero no início do inverno. Na primavera, a massa corpórea dos teiús aumentou 80% em relação ao despertar e dobrou em relação ao final do verão; o comprimento acumulou um aumento de 27% em relação ao final do verão. A massa relativa dos corpos gordurosos foi 3,7% no início do outono e diminuiu nos meses subsequentes; no despertar, este estoque acumulou uma perda de 63% da sua massa. No início do outono 74% dos teiús estavam ativos por 4,7 h e permaneceram 2 h assoalhando diariamente; ao longo do outono o número de animais ativos e o tempo em atividade diminuíram até que todos se tornaram inativos. Na primavera 83% dos teiús estavam ativos por 7 h e permaneceram 4 h assoalhando. Um padrão sazonal similar foi observado na atividade locomotora e na alimentação. No outono, a alimentação cessou antes da atividade diária e os teiús tornaram−se afágicos algumas semanas antes da entrada em hibernação. Os maiores níveis de CORT foram observados no início do outono, reduzindo progressivamente até valores 75 e 86% menores na dormência e despertar, respectivamente; na primavera os níveis de CORT foram 32% menores em comparação com o início do outono. Este padrão sugere um papel da CORT nos ajustes que promovem a ingestão de alimento e a deposição de substratos energéticos no outono. A redução da atividade geral no final do outono contribuiria para a economia energética e manutenção da massa corpórea, apesar da redução da ingestão de alimento. O curso temporal das alterações fisiológicas e comportamentais em neonatos reforça a ideia de que a dormência sazonal nos teiús é o resultado da expressão de um ritmo endógeno. Na segunda parte do estudo foi investigada a hipótese de que ocorreriam ajustes das defesas antioxidantes durante a hibernação, em antecipação ao despertar. Foram analisados marcadores de estresse oxidativo e antioxidantes em vários órgãos de teiús em diferentes fases do primeiro ciclo anual. A CS, um indicador do potencial oxidante, não variou no fígado e foi menor no rim e no pulmão na hibernação. As enzimas antioxidantes revelaram (1) um efeito abrangente de redução das taxas na hibernação e despertar; por exemplo, GR e CAT foram menores em todos órgãos analisados e a GST tendeu a diminuir no fígado e no rim, embora constante no coração e no pulmão. A G6PDH no fígado e no rim não variou. (2) No fígado, a GST, a Se−GPX e o teor de TBARS foram maiores na atividade de outono em relação à primavera e a Se−GPX permaneceu elevada na hibernação. (3) No fígado, a SOD foi maior na hibernação e despertar em relação ao outono e a Mn−SOD seguiu este padrão. Em contraste, no rim, coração e pulmão a SOD foi menor na hibernação e as taxas se recuperaram no coração e pulmão no despertar. A Mn−SOD seguiu este padrão no pulmão. A concentração e o estado redox da glutationa não variaram no fígado, rim e coração; no pulmão o teor de Eq−GSH e GSH foi menor na hibernação, com tendência à recuperação no despertar. O teor de PC no rim foi maior na hibernação e diminuiu no despertar. No fígado, as alterações no jejum se assemelham às sazonais, como sugerem a inibição da CAT e GR e aumento da Se−GPX. Os efeitos do jejum na primavera no rim diferem dos efeitos sazonais, como sugerem a redução do teor de Eq−GSH e GSH e o aumento da razão GSSG:GSH, a redução da G6PDH e o aumento de PC. No conjunto, houve um efeito predominante de redução das taxas enzimáticas na hibernação e no despertar, exceto pelas taxas aumentadas da SOD e Se−GPX no fígado e pela recuperação da SOD no coração e da GR, SOD e Mn−SOD no pulmão no despertar. As elevadas taxas das enzimas antioxidantes no teiú em comparação a outros ectotermos e a ausência de evidências de estresse oxidativo no despertar sugerem que a atividade enzimática remanescente é suficiente para prevenir danos aos tecidos face às flutuações do metabolismo / The tegu lizards hatch during the summer, when they face the challenge of growing and storing substrates during a short time before going into fasting and metabolic depression (≈80% at 17 °C) during winter. The reactivation of metabolism and of blood perfusion during arousal could favor the occurrence of oxidative stress in the tissues. The first part of his study investigated adjustments which potentially conciliate energy demands in neonatal tegus, particularly during pre-hibernation, by video recording of animal behavior and by measuring the mass of fat bodies and levels of plasma corticosterone (CORT) during the annual cycle. In the early autumn the body mass of the tegu was 27 g and the rostro−cloacal length was 9.3 cm, which increased 40% and 20%, respectively, while the rates decreased progressively until reach zero in winter. In spring activity body mass increased 80% in relation to values during arousal and duplicated in relation to late summer. The fat bodies mass relative to body mass was 3.7% in early autumn, and decreased during the subsequent months accumulating a mass loss of 63% during arousal. In early autumn, 74% of the tegus were active for 4.7 h and they basked for 2 h daily; during the autumn the number of animals and the time spent in activity decreased until they become totally inactive. In spring 83% of the tegus were active for 7 h and they basked for 4 h daily. Similar seasonal pattern was observed in the locomotory and feeding activities. In the autumn, feeding was interrupted prior to the interruption of daily activity and the tegus were aphagic a few weeks before the entry into hibernation. The CORT level was the highest in early autumn and reduced progressively to 75% and 86% during winter and arousal in early spring, respectively; later during spring the levels were 32% lower than the autumn levels. These changes suggest a role of CORT in the adjustments which promote food intake and substrate storage during the autumn. Despite a reduced food intake, the widespread decrease of daily activities in late autumn would contribute to energy saving and body mass maintenance. The time course of physiological and behavioral changes in neonates reinforces the idea of an endogenous rhythm underlying seasonal dormancy in the tegu. The second part of this study investigated the hypothesis of adjustments in antioxidant system preparatory to the moment of arousal by the analysis of markers of oxidative stress and of antioxidants in several organs of neonatal tegus, during different phases of the annual cycle and during starvation in the spring. The Vmax of CS, an indicator of the oxidative potential, did not vary in the liver and was smaller in the kidney and lung of dormant tegus. The antioxidant enzymes revealed (1) a widespread effect of lowering rates during dormancy and arousal; for instance, GR and CAT were lower in all organs examined and GST had a tendency to be lower in the liver and in the kidney tissues, although it was constant in the heart and in the lung. (2) In the liver, GST and Se-GPX, and the levels of TBARs were higher in the autumn than in the spring activity. (3) In the liver, SOD was higher during dormancy and arousal in relation to the autumn, and Mn−SOD followed this pattern. Contrastingly, SOD in the kidney, heart and lung was lower during dormancy, and rates recovered in the heart and lung during arousal before food intake. The Mn-SOD followed this pattern in the lung. The glutathione concentration and the redox balance did not change in the liver, kidney and heart; in the lung, the levels of Eq−GSH and GSH were lower and had a tendency to increase during arousal. Importantly, carbonyl proteins were increased in the kidney during dormancy and recovered during arousal. The effects of starvation during spring differed of those of fasting during winter in the kidney, as shown by the lower Eq−GSH levels and increased GSSG:GSH ratio, the lower G6PDH, and the increased carbonyl proteins. In the liver, changes during starvation followed seasonal patterns, as shown by increased Se-GPX, and decreased CAT and GR, together indicating a consistent effect exerted by interruption of food intake. The high rates of antioxidant enzymes in neonatal tegus compared with other ectotherms, and the absence of evidence of oxidative stress at arousal suggest that remaining enzyme activities are sufficient to prevent tissue damage that could be caused by the metabolic fluctuations during the annual cycle in the tegu

La présente thèse traite des chaînes de magasins. Le but est de comprendre comment ces entreprises ont cherché à conquérir les clients (ou consommateurs) des petites villes et des villages, territoires inexplorés de l’histoire du commerce de détail et de la consommation. La notion de « conquête des clients » désigne deux activités fondamentales du commerce de détail. La première est de mettre les marchandises à la disposition des consommateurs : c’est la fonction principale du secteur, selon les économistes. La seconde consiste à capter ces consommateurs. Capter, selon la définition de Franck Cochoy, c’est tenter « d’avoir prise, d’attirer vers soi, de garder ce ou ceux que l’on a attiré(s) » (Cochoy 2004, p. 12). La période considérée court de 1920 à 1960 : ces années voient le développement des chaînes dans les petites localités suisses, et permettent d’aborder la conquête des clients dans des contextes économiques variés, de crise, de guerre et d’abondance. L’ouvrage se base principalement sur l’étude des archives de la société Gonset, active dans la partie occidentale du pays. Il ne s’agit cependant pas seulement d’accumuler des connaissances sur ce détaillant helvétique et ses concurrents. L’objectif est aussi d’enrichir l’histoire du commerce de détail, l’histoire de la consommation et la sociologie économique grâce à l’étude du cas suisse. Ce pays, en effet, est un cadre privilégié pour appréhender la conquête des clients hors des grandes villes : son réseau urbain se compose principalement de petites villes et de villages. / This thesis deals with chain stores. Its goal is to understand how these firms have endeavoured to conquer the customers (or consumers) of small towns and villages, unexplored territories of the history of retail trade and consumption. The concept of “conquest of customers” refers to two basic activities of retail trade. The first is to put the goods at the consumers’ disposal, which is the main function of the sector, according to economists. The second is to “capt” (capter in French) these consumers. To “capt”, according to Franck Cochoy’s definition, means to “try to exert a hold over, or attract to oneself, or retain those one has attracted” (Cochoy 2007, p. 204). The period under examination covers from 1920 through 1960. Those years witness a significant increase of chain stores in small Swiss communities and enable us to approach the conquest of customers in varied economic contexts, in times of crisis, of war and of abundance. This publication is mainly based on the study of Gonset Company’s archives, active in the western part of the country. However, it is not merely a matter of accumulating knowledge about this Swiss retailer and his competitors. The objective is also to enrich the history of retail trade, the history of consumption, and economic sociology thanks to the study of the Swiss case. This country, indeed, is an ideal framework to take account of the conquest of customers outside major cities: its urban network is mainly composed of small cities and villages.

Structuring Fashion : Department Stores as Situating Spatial Practice

This dissertation investigates department stores as complex spatial and cultural buildings, in which values and ideas are expressed, negotiated, and produced. Situated in a cultural context commonly referred to as a society of consumption, where identity and social structures are worked out through consumption rather than production, the query turns to a specific act of consumption: that of shopping. More precisely, it investigates the role of space and spatial distribution in shopping. How space is distributed, arranged, or ordered allows for different possibilities in constructing categories from which the shoppers are to make a selection, and for how these categories can be related to one another, which informs the shoppers what belongs together, what is to be held apart, what is important, what is private, what is public, and what is of higher or lower status. It further supports, prevents, and promotes different routes and choices, giving different patterns of presence, publicity, privacy, purpose, etc. that not only affects the atmosphere of the spaces, but makes suggestions of what is found in them. These questions are investigated through a series of conceptual laboratories, each addressing the problem from different standpoints and focusing on different parts of the question: from how categories are constructed and given character, to how they form systems of values, how shoppers are trained in aesthetics of fashion, how relative degrees of presences are made use of, and how they appear influenced by spatial distribution. In this, the work shifts between qualitative and quantitative methods, each completing and evolving the other. It shows that to a remarkable degree, much of the emergent values and ideas can be understood through the filter of spatial configurations, and especially when treated as two systems: one of exposure and one of availability. As similar operations also affect patterns of movement and being, which enables them to also be related to publicity, privacy, and other social characters, the department stores can be understood as not only commercial spaces but as sites of negotiation of public culture. Cette étude porte sur la culture de travail des femmes qui ont été à l’emploi du grand magasin Dupuis Frères de Montréal entre 1920 et 1960. Nous nous intéressons aux particularités du travail salarié féminin dans le domaine de la vente au détail au Québec, mais aussi à la nature et à l’évolution de cette culture de travail de même qu’à ses liens avec les changements qui surviennent à l’époque dans la construction des nouvelles normes de la féminité respectable. D’une part, notre but est de montrer que pour les travailleuses de Dupuis, leur emploi leur permet de gagner leur vie certes, mais aussi de l’agrémenter, de se divertir au moyen de loisirs organisés par l’entreprise et de créer des liens entre elles. À travers la culture de travail qu’elles y développent, ces femmes se créent une identité particulière. Nous soulignons aussi que Dupuis Frères, dans un esprit paternaliste, encadre de près ses employées et exploite leur culture de travail afin de s’assurer de leur loyauté et de maintenir sa bonne réputation auprès de l’opinion publique. D’autre part, nous cherchons à prouver que même si la culture des femmes à l’emploi de Dupuis au cours de cette période est largement influencée par la domesticité et l’idéologie des sphères séparées, caractéristiques de la féminité « traditionnelle » dominante, elle intègre néanmoins de plus en plus, surtout à partir de la Deuxième Guerre mondiale, de nouvelles dimensions plus « modernes » de la féminité qui ne remplacent pas l’idéal de la mère-ménagère, mais qui viennent plutôt s’y greffer et qui rendent, du coup, leur identité féminine plus complexe. / This study is about the work culture of the women who were employed by Dupuis Frères, a famous Montreal department store, between 1920 and 1960. We will focus on the features of this particular type of paid work, that is women’s work in retail in Quebec. We will also insist on the nature and evolution of that work culture and on the fact that it was influenced, during this period, by the transformations that occurred in the construction of new forms of respectable femininity. First, our goal is to show that these Dupuis Frères women employees didn’t work for the sole purpose of earning a living, but did also in order to live a more pleasant life, to entertain themselves by participating in leisure activities organized by their employer and to create new bonds among themselves. With this work culture that they developed, these women workers also created themselves a new particular identity. We also want to show that Dupuis Frères, with its paternalistic management, was controlling its employees and was exploiting their work culture to ensure the employees’ faith in them and maintain the company’s reputation. Second, we want to prove that even if the work culture of the women working at Dupuis Frères, during that period, was influenced by domesticity and the separate spheres ideology (features of the dominant « traditional » femininity), it was more and more incorporating, mostly from Second World War, new dimensions of a more « modern » femininity that were not replacing the mother-housewife ideal, but that rather were making their feminine identity more complex.

A feature that retailers need to understand is the different demographics of the South African population and consumers from different races; this resulted in inadequate shopping facilities in the black townships and an oversupply in the traditionally white areas. Gaining access to new markets in South Africa is one of the challenges facing the retail sector. The purpose of this study is to evaluate customer service at Pick’ n Pay stores in selected shopping malls within the greater Durban area. It examines the opinions and perceptions of customers from selected shopping centres.

Under det senaste decenniet har den svenska elektronikhandeln präglats av en allt hårdare konkurrenssituation och lägre lönsamhet. Det har lett till att stora butikskedjor gått i konkurs. För att vända trenden måste företagen hanterar sina butiksverksamheter effektivt. Det blir därmed avgörande hur butikschefen sköter butiken. Av den anledningen är det intressant att undersöka butikschefers arbetssätt för att se vad som leder till hög lönsamhet. Vår genomgång av tidigare forskning visar på att det finns en kunskapslucka gällande hur en butikschef bör arbeta för att öka lönsamheten. Studiens syfte är att undersöka hur butikschefer arbetar och utifrån det identifiera faktorer i butikschefers arbetssätt som påverkar resultat och leder till skillnader i butikers prestationer. Studien har en kvalitativ ansats och bygger på intervjuer med 10 butikschefer. Respondenterna har delats in i en högpresterande fokusgrupp och en jämförelsegrupp för att tydliggöra skillnader i arbetssättet. Studien visar på flertalet skillnader i hur butikschefer i fokusgruppen hanterar de vardagliga arbetsuppgifterna. Den största skillnaden består i ledarfilosofin butikscheferna utövar, vilket genomsyrar alla beslut butikscheferna i fokusgruppen tar. / Background During the latest decade the Swedish electronic industry has been exposed to intensified competition and lower profitability. The consequences have been that major retail chains have gone out of business. In order to survive, the companies need to handle their stores as efficiently as possible. As a result it’s crucial how the store manager operates the store. Therefore it is interesting to study how store managers practice their work in order to see what leads to high profitability. Our review of research reveals that there’s a knowledge gap of qualitative studies regarding how store managers should work. Aim The aim of the study is to investigate how store managers works and from that identify factors in the store managers way of work that affects the result and leads to differences in store performance. Methodology The study is made with a qualitative approach and is built on data from interviews with 10 store managers. The respondents have been divided in to a high-performance focus group and a comparison group in order to clarify the differences in their approach of work. Conclusion The study shows a number of differences in how high-performance store managers handle their work. However, the biggest difference is the leadership philosophy they choose to practice, which affect everything they do.

A critical investigation of the impact of on-consumption alcohol outlets on land use compatibility in residential areas in the Umjindi local municipality area of jurisdiction, Mpumalanga Province.

The compatibility of on-site consumption alcohol outlets as land use is predicted by the acceptance level of the utility or disutility they enjoy amongst residents in a neighbourhood. The density of alcohol outlets is argued in literature as correlating to the significant positive rate of amenity effects that include property crime, alcohol related arrests, drunk-driving, fatal and severe alcohol-induced accidents, violence and assault amongst many others. The problems associated with on-site consumption alcohol outlets have been insistently brought to the attention of the Umjindi Local Municipality in the Ehlanzeni District area in Mpumalanga Province by the residents of the Emjindini neighbourhood. The study is based on the hypothesis that the high density of on-site consumption alcohol outlets contributes to the incompatibility of such outlets with residential areas. In addressing the research sub-questions and validating the research hypothesis, the study adopted various methods (including land use surveys, interviews, administration of questionnaires, literature review and document review) for the collection, analysis, interpretation and discussion of data. The study reveals that the higher density of alcohol consumption outlets is significant in areas of low socioeconomic status. The Emjindini Townships are located with the density of 1 on-site consumption alcohol outlet per 263 people. Liquor legislation in South Africa leaves a lot to be desired in its guidelines for alcohol outlet density, public participation, location radius and local authority involvement. In addition, our findings showed that the significantly unacceptable level of impact thereof is experienced especially in the night, in areas characterised by the high density of on-site consumption alcohol outlets. The on-site consumption alcohol outlets are seen as compatible land uses in residential areas for the reason that, the unacceptable level of impact is insignificant during the day. The adoption of preferred and practical guidelines related to the locality and density of on-site consumption alcohol outlets, compatibility performance standards and public participation are recommended for policy and practice.
