Pressuposto este direito, pretende avan?ar em rela??o ? perspectiva dominante nas pol?ticas e programas sociais que utilizam o argumento da utilidade, propondo considerar a alimenta??o saud?vel tamb?m um dever de virtude, segundo a doutrina kantiana dos deveres para consigo. Apresenta o caso da libera??o de sementes transg?nicas no Brasil como um exemplo de viola??o do direito ? alimenta??o que afeta negativamente a seguran?a alimentar, fruto do desacordo entre a pol?tica e a moral na atua??o do governo. Conclui que a realiza??o do DHAA exige o compromisso tanto do Estado como de cada cidad?o e que a filosofia de Kant pode trazer importantes contribui??es para a fundamenta??o da pr?tica do profissional Nutricionista que precisa estar esclarecido acerca do tema. / This thesis proposes the adoption of a practical and philosophic approach to the discussion about what should be a healthy food, in view of the actual problems concerning this subject (from famine to obesity), which affect food and nutritional security and constitute target of many official policies. In order to handle this task, this work resorts to ethic, pedagogical and anthropological concepts inherent to Immanuel Kant?s philosophy, as valuable contributions to the practice of the professional nutritionist committed to the support and accomplishment of the human right to adequate nutrition (DHAA). Under this assumption, it intends to surpass the prevailing idea inside the social programs and policies favoring the utilitarian argument. It considers rather that a healthy food is also a duty of virtue, according to the Kantian duties to one-self. The liberation of transgenic seeds in Brazil comes up as an example of the violation of the right to food security and affects it negatively, resulting from the conflict between politics and moral faced by the Brazilian government. This paper concludes that DHAA realization requires not only a committed state, but also committed citizens and suggests that Kant?s philosophy should offer important contributions to supporting the practice of the professional nutritionist, awarding him the necessary information about this matter.

For optimal nourishment and lessening of intoxication risks, the animals must detect signs that indicate which items are adequate for their intake. We investigate some factors that interfere in the responses to non familiar food, modulating their neophobic behavior, of marmosets Callithrix jacchus, an omnivore and generalist primate, native to Northeast Brazil, known for being cautious in ingesting not known food. We analyzed the influence of food taste (sweet or salty), pregnancy and sex in feeding behavior and neophobic responses in these animals. 10 captive females were first selected, 5 of them being then pregnant. The females, pregnant or not, ate more when presented to the sweet items than to the salty ones. Pregnant females, however, themselves were less neophobic to both tastes, being also strongly neophilic to the sweets. We verified then the influence of nourishment during pregnancy on young males and females post natal feeding behavior. We observed 10 young divided in two groups, one whose mother ate that food item during pregnancy and one whose mother had no contact to it. In the first group that food was more easily accepted by the young, suggesting that neofobia and feeding behavior had a pre natal influence. Female young also ingested more food and were less neophobic than males, a difference already observed in behavior of adults of these specie. These results suggest that the low neophobic behavior to sweet food showed by females can be adaptive, and might have bestowed more fitness to those who presented it / Considerando as constantes mudan?as ambientais, a capacidade de introduzir alimentos novos na dieta ? essencial para a sobreviv?ncia de animais on?voros. Para a otimiza??o do forrageio e diminui??o dos riscos de intoxica??o, ? necess?rio ao animal detectar sinais que indiquem quais itens s?o adequados ou n?o para o consumo. Investigamos alguns fatores que interferem na resposta aos alimentos n?o familiares, modulando comportamentos neof?bicos em sag?is Callithrix jacchus, primatas nativos do nordeste brasileiro, animais on?voros e generalistas, por?m cautelosos na ingest?o de itens desconhecidos. Foi analisada a influ?ncia da qualidade gustativa dos alimentos (doce e salgado), da gesta??o, e do sexo no comportamento alimentar e na resposta neof?bica desses animais. Selecionamos inicialmente 10 f?meas de origem cativa, sendo cinco gr?vidas e cinco n?o. As f?meas apresentadas aos itens doces ingeriram maior quantidade do que aquelas apresentadas ao item salgado, estando ou n?o gestantes. Contudo, f?meas gr?vidas se mostraram menos neof?bicas para ambos os alimentos, embora demonstrassem forte neofilia para os doces. Verificamos ent?o a influ?ncia da alimenta??o das gr?vidas no comportamento alimentar p?s-natal de seus filhotes f?meas e machos. Observamos 10 filhotes: um grupo cuja m?e teve contato com o alimento na gesta??o e um cuja m?e n?o tivera esse contato. The search for a pattern of decisions to obtaining competitive advantage is strategic activity. Gains momentum the management of supply chain given the volume of purchases and the impacts of products and services provided in quality, in financial results and in image of the purchasing company highlighting the importance of an effective supplier management process. This is noteworthy in the foodservice sector, that is a major consumer of products and services, that depend on a network of suppliers for its functioning, moves a large global market and operates in an environment of rapid change, where its main product, the meal, must satisfy the customer in in the most diverse dimensions, with different attributes and priorities. Issues related to health, welfare, food safety and sustainability still give more complexity to the governance in the sector, due to the peculiar characteristics of the required supply (food), as for example, the perishability. Evaluate suppliers according to these characteristics is fundamental strategic activity for survival in the industry and involves multicriteria decision making. This research explored the decision making process that involves evaluating the performance of food suppliers for efficiency in food production for collectivities, from a case study built in University Restaurants of universities public federal located in the Northeast region of Brazil, proposing a Multicriteria Decision Model. The criteria and performance attributes for suppliers who comprised the model were collected from field research on various sources of evidence and validated by the technique of triangulation of data. The data collected propitiated the establishment of a framework of criteria for performance of food suppliers, as well as its degree of importance and associated indicators for efficiency in the management of collective feeding, from the perspective of the University Restaurants. It was used the method ELECTRE TRI for classification of suppliers in assessment levels desired. The Decision Model developed showed relevance and adequacy to the study context, supporting rationally and not compensatory managerial decision given on the multiplicity of criteria, contributing with the scope of the strategic objectives of the organization. Its application resulted in the classification of suppliers in the levels of expected performance, acceptable and not acceptable, supporting the determination of courses of action following, as definition of the levels of collaboration, maintenance or interruption of supply, also allowed feedback to the suppliers, favoring the continuous improvement, as well as subsidised the standardization and specification of the criteria for selecting new suppliers, identifying inclusive, suppliers capable of benchmark.

Nesse sentido, identificar padr?es alimentares poder? melhorar a compreens?o das pr?ticas diet?ticas e auxiliar nas interven??es nutricionais e educativas. A escassez de informa??es sobre a situa??o alimentar e nutricional dos idosos institucionalizados de Natal-RN, motivou conhecer o padr?o alimentar desse grupo, para subsidiar a elabora??o de estrat?gias que propiciem melhor condi??o de sa?de para os idosos. Esse trabalho objetivou identificar e caracterizar o padr?o alimentar dos idosos que residem em Institui??es de Longa Perman?ncia e propor um Question?rio de Frequ?ncia Alimentar (QFA). Trata-se de uma pesquisa de delineamento transversal, envolvendo todos os idosos residentes nas ILPI (n=300), com e sem fins lucrativos, localizadas no munic?pio de Natal/RN. O consumo alimentar foi obtido no ano de 2013, a partir do m?todo do registro alimentar por pesagem direta dos alimentos e posterior an?lise do rejeito, durante dois dias alternados. O padr?o alimentar foi identificado a partir da An?lise de Componentes Principais, considerando-se a m?dia da quantidade de alimentos consumida (em gramas). Os escores fatoriais dos padr?es alimentares foram categorizados em tercis (baixo, moderado e alto consumo) e verificadas as associa??es com caracter?sticas sociodemogr?ficas, estilo de vida, condi??es de sa?de, estado nutricional e pr?ticas alimentares, revelando a exist?ncia ou n?o de tend?ncia para cada caracter?stica e os n?veis de consumo de cada padr?o. Para elabora??o do QFA, definiu-se uma lista de alimentos a partir da contribui??o percentual de energia, carboidrato, prote?na, gordura total, c?lcio e vitamina D. Entre os alimentos mais consumidos, destacam-se: Latic?nios, arroz e prepara??es, frutas e oleaginosas, feij?o e leguminosas e sucos e bebidas. Observou-se que o item alimentar mingaus e papas ? o principal contribuinte para o fornecimento de energia, prote?na, carboidrato e c?lcio da dieta. O QFA constou de um n?mero reduzido de itens alimentares, que poder? ser aplic?vel em popula??o semelhante ap?s aprimoramento do seu modelo. Foram identificados tr?s padr?es de consumo alimentar: ?Arroz, batatas e carnes?, ?Peixes e massas? e ?Feij?o e sopas?, explicando aproximadamente 70% da variabilidade total do consumo. Verificou-se que os idosos fisicamente ativos possuem tend?ncia para alto consumo do padr?o ?Arroz, batatas e carnes?. J? os idosos do sexo masculino, entre 60-69 anos, fisicamente ativos, fumantes, sem restri??o de mobilidade, com ingest?o excessiva de energia e que n?o necessitam de ajuda para se alimentar, t?m tend?ncia para alto consumo de ?Peixes e massas?. Por fim, os idosos do sexo masculino, com restri??o de mobilidade e com dieta pastosa, apresentam tend?ncia para alto consumo do padr?o ?Feij?o e sopas?. Sendo assim, a identifica??o do padr?o alimentar evidencia a necessidade de interven??es alimentares, a fim de evitar o aumento da preval?ncia da desnutri??o entre os idosos. No planejamento de card?pios das ILPI tamb?m ? preciso estabelecer medidas que incentivem o consumo de frutas, legumes e verduras. / Food is a human need on free demand and with many meanings. However, at the nursing homes it becomes a collective good, with defined schedules and controlled quantities, which may change the eating comportment and compromise the health of the elderly. In this sense, identify dietary patterns based on representative data for the population, can improve the understanding of dietary practices and assist the nutritional and educational interventions. The scarcity of information about food and nutrition situation of institutionalized elderly living in nursing homes in Natal, Rio Grande do Norte, Brazil, motivated to meet the dietary patterns of this group to support the development of strategies that provides better conditions of health to the elders. This study aimed to identify and characterize the dietary pattern of the elderly living in nursing homes and propose a Food Frequency Questionnaire (FFQ). This is a cross-sectional study, involving all elderly residents in philanthropic and private nursing homes located in Natal (n = 300). Food and dietary consumption data was obtained in 2013, through the food record method, by direct weighing of food for two alternate days. Dietary patterns were identified from the Principal Component Analysis, considering the average amount of food consumed (in grams). The factor scores of dietary patterns were categorized into tertile (low, moderate and high consumption) and were verified associations with sociodemographic characteristics, lifestyle, health, nutritional status and dietary practices, revealing the existence (or not) of tendency for each feature and the consumption levels for each pattern. To prepare the FFQ, it was previously defined a list of foods from the percentage contribution of energy, carbohydrate, protein, total fat, calcium and vitamin D. Among the most consumed foods are highlighted: dairy products, rice and preparations based on it, fruits and oil seeds, beans and legumes, fruit juices and drinks. It was observed that pap and porridge are the main contributor to the energy supply, protein, carbohydrate and calcium in the dietary. The FFQ consisted of a small number of Food Items that will be able to be applied in a similar population after improvement of its model. Three patterns were identified in food consumption, called "rice, potatoes and meat", "Fish and Pasta" and "beans and soups," explaining about 70% of total consumption variability. It was found that physically active elderly has tendency to a high consumption of the "rice, potatoes and meat" pattern. The elderly men, aged between 60-69 years, physically active, smokers, without mobility restrictions, which have excessive intake of energy and do not need help to feed, tend to high consumption of "fish and pasta". Finally, the male elderly with mobility restrictions and with pasty dietary tends to a high consumption of "beans and soups". Thus, the identification of dietary pattern shows the need of food interventions to avoid the increased prevalence of malnutrition among the elderly. In planning menus of the ILPI, it is necessary to establish measures that encourage the consumption of fruits and vegetables.

Trata-se de um estudo transversal retrospectivo, descritivo, do tipo estudo de caso, com abordagem quantitativa e qualitativa, no qual foi feita uma minuciosa an?lise documental nos arquivos dos Conselhos de Alimenta??o Escolar para remontar a forma de atua??o deles, buscando conhecer suas principais qualidades e defeitos. Al?m disso, foram realizadas entrevistas com os conselheiros de alimenta??o escolar para entender quais eram as percep??es que eles tinham sobre as atividades que desempenham, por meio da t?cnica denominada an?lise de conte?do. A an?lise documental demonstrou que h? muitas inconsist?ncias na forma de escolha dos conselheiros e in?meras defici?ncias a serem corrigidas pelos Conselhos, por outro lado, tamb?m foram salientados muitos aspectos positivos dos trabalhos desenvolvidos. A an?lise das atas dos CAEs e das entrevistas com os membros dos Conselhos desvelou as percep??es que eles tinham sobre a forma de constitui?ao do Conselho, as dificuldades vividas para desempenhar o controle social, tais como problemas de infraestrutura, de acesso a informa??es e pouco incentivo a se capacitarem. Programa de P?s-Gradua??o em Sa?de, Sociedade e Ambiente, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2017. / This research is included in the research line of Health Promotion, Prevention and Control of Diseases and sought to analyze the 9 (nine) School Feeding Councils of the Region of Diamantina, in the State of Minas Gerais, with the purpose of raising, analyzing and unveiling if they meet the minimum criteria established in the legislation in force, if there is a consistency between the legal attributions of the CAEs and what happens in practice, if they have the minimum structure necessary for the performance of their duties, and what are the perceptions attributed by the counselors on the activities of social control exercised before the Council. This is a cross-sectional, retrospective, descriptive, case-study with a quantitative and qualitative approach, in which a detailed documentary analysis was carried out in the School Feeding Council archives to reassemble their way of acting, seeking to know their main qualities and defects. In addition, interviews were conducted with school feeding counselors to understand what perceptions they had of the activities they perform through the technique called content analysis. The documentary analysis showed that there are many inconsistencies in the choice of counselors and numerous shortcomings to be corrected by the Councils, on the other hand, also highlighted many positive aspects of the work developed. The analysis of the minutes of the CAEs and the interviews with the members of the Councils revealed the perceptions they had about the form of constitution of the council, the difficulties experienced to carry out social control, such as infrastructure problems, access to information and little incentive to qualify. On the other hand, they demonstrated the commitment to carry out their duties, to ensure the quality of school feeding of their Municipalities and the correct use of public money. In the end, it was possible to see that the training, stimulating functions and popular participation are factors that influence the effective and efficient performance of school feeding counselors, which must be guaranteed and encouraged by the Government, by its own counselors and society.

PUC Campinas / Deglutition impairment is a frequent finding in the elderly, particularly in those with dementia, therefore our study?s main objective was to describe it in patients with Alzheimer's dementia (AD) and vascular dementia (VD), namely the aspects of swallowing and eating, to identify risk of dysphagia and their relation with clinical, cognitive, behavioral and neuropsychiatric symptoms. Thirty-five elderly people with a diagnosis of dementia according to the criteria of the Diagnostic and Statistical Manual of Mental Disorders, in follow-up at the Clinical Neurology Clinic of the Hospital Maternidade Celso Pierro (PUC-Campinas), participated in this study. The patients were submitted to clinical history, Mini-Mental State Examination (MMSE), Verbal Fluency Test, Neuropsychiatric Inventory (NPI), Pfeffer Functional Activities Questionnaire (PFAQ), Clinical Dementia Rating (CDR) (NPI-C) and the Speech-Language Pathology and Risk Assessment for Dysphagia (SLPRAD). 24 (68.6%) patients with AD diagnosis and 11 (31.4%) with DV were included. The mean age of the patients was 77.5 (? 9.0) years, mean formal schooling of 2.1 years and mean disease duration of 3.5 years. In the MMSE the total score was 14.2 (? 6.5) and in the verbal fluency test, the mean words were 5.6. The mean score in NPI was 18.6 (? 11.3) and in the functional evaluation (PFAQ) was 22.9. Patients were classified as mild dementia 16 (45.8%), moderate 14 (40%) and severe 5 (14.2%) cases, according to CDR. Patients with AD were significantly older than those with DV (p = 0.003). In dementia?s classification, a higher occurrence of moderate/severe dementia was observed in those with an AD when compared to those with DV (p = 0.013). In PARD, 10 (29%) patients presented normal deglutition and 25 (71%) had signs suggestive of dysphagia, 17 of those with an AD, but with no significant difference in the classification of dementia. There was no complaint of "change in appetite, weight, or eating habits" in those who presented significantly dementia classified as mild (p = 0.044). Patients who complained of coughing and coughed in the anamnesis presented significant signs suggestive of dysphagia (p = 0.007). Patients with no change in the "how to put lots of food in the mouth at once" were significantly those classified as mild (p=0.046). Comparing the subjects' ages with the oral and pharyngeal phases of PARD, it was observed that those who presented alterations in the oral phase (p = 0.024) and in the pharyngeal phase (p = 0.03) were significantly older when compared to those who did not present changes. In relation to MMSE, when compared to those without pharyngeal changes, they presented a significantly worse performance in calculus (p = 0.020) and language (p = 0.031). Patients with suggestive signs of dysphagia had a significant change in Oral Phase and Pharyngeal Phase (p = 0.000) when compared to those without signs suggestive of dysphagia. Those with "change in appetite, weight or eating habits" in the NPI-C had a significant change in the Pharyngeal Phase (p = 0.035) of PARD when compared to those without changes. The incidence of change in appetite, weight or eating habits was high, and the severity of dementia was significantly related. The presence of choking or coughing was observed in 25% of cases, and occurred at all ages. Signs suggestive of dysphagia were elevated in PARD in our sample, but there was no relation with the behavioural and neuropsychiatric aspects. The clinical complaint of gagging and cough was significantly correlated with signs suggestive of dysphagia. Alterations in the oral and pharyngeal phase of PARD occurred significantly in older subjects. Cognitive alterations were associated with alteration in the pharyngeal PARD?s deglutition. / O comprometimento da degluti??o ? um achado frequente em idosos particularmente naqueles com quadros de dem?ncia, assim o objetivo do nosso trabalho foi descrever em pacientes com dem?ncia de Alzheimer (DA) e dem?ncia vascular (DV), aspectos da degluti??o e da alimenta??o, identificar risco de disfagia e suas rela??es com aspectos cl?nicos, cognitivos, comportamentais e sintomas neuropsiqui?tricos. Participaram deste estudo 35 idosos com diagn?stico de dem?ncia segundo os crit?rios do Manual Diagn?stico e Estat?stico dos Transtornos Mentais, em acompanhamento no Ambulat?rio de Neurologia Cl?nica do Hospital Maternidade Celso Pierro (PUC-Campinas). Os pacientes foram submetidos a: hist?ria cl?nica, Mini-Exame do Estado Mental (MEEM), teste de Flu?ncia Verbal, Invent?rio Neuropsiqui?trico (INP), Question?rio de Atividades Funcionais de Pfeffer (QAFP), Clinical Dementia Rating (CDR), question?rio para avalia??o de dist?rbio do apetite e da alimenta??o (NPI-C) e pelo Protocolo Fonoaudiol?gico de Avalia??o do Risco para Disfagia (PARD). Foram inclu?dos 24 (68,6%) pacientes com diagn?stico de DA e 11 (31,4%) com DV. A idade m?dia dos pacientes foi de 77,5 (?9,0) anos, escolaridade m?dia formal de 2,1 anos e tempo m?dio de doen?a de 3,5 anos. No MEEM o escore total foi de 14,2 (?6,5) e no teste de flu?ncia verbal, a m?dia de palavras foi de 5,6. O escore m?dio no INP foi 18,6 (?11,3) e na avalia??o funcional (QAFP) foi de 22,9. Os pacientes foram classificados em dem?ncia leve 16 (45,8%), moderada 14 (40%) e grave 5 (14,2%) casos, conforme o CDR. Os pacientes com DA eram, de modo significativo, mais velhos que aqueles com DV (p=0.003). Na classifica??o da dem?ncia foi observada maior ocorr?ncia de moderado/grave naqueles com DA quando comparados aos com DV (p=0.013). No PARD, 10 (29%) pacientes apresentaram degluti??o normal e 25 (71%) apresentaram sinais sugestivos de para disfagia, desse n?mero 17 casos com DA, mas sem diferen?a significativa na classifica??o da dem?ncia. N?o houve queixa de ?mudan?a no apetite, no peso ou nos h?bitos alimentares? nos que apresentaram de modo significativo dem?ncia classificada como leve (p=0,044). Os pacientes que apresentaram queixa de engasgos e tosse, na anamnese apresentam de modo significativo sinais sugestivos para disfagia (p=0,007). Os pacientes sem altera??o na quest?o ?como colocar muita comida na boca de uma vez s??, eram de modo significativo aqueles classificados como leve (p=0,046). Foi elevada a queixa de mudan?a no apetite, no peso ou nos h?bitos alimentares, e era relacionada de modo significativo a gravidade da dem?ncia. A presen?a de queixa de engasgo ou tosse foi observada em 25% casos, e ocorreu em todas as idades. Foi elevada a ocorr?ncia de sinais sugestivos para disfagia, no PARD, na nossa amostra, mas n?o houve rela??o com os aspectos comportamentais e neuropsiqui?tricos. A queixa cl?nica de engasgos e tosse correlacionou-se de modo significativo com sinais sugestivos para disfagia. It was used 20 crossbreed gilts, with 35 kg on average of live weight, in a randomized blocks experimental design with five treatments, and four blocks. The five levels of barley bagasse inclusion were 0, 12.5, 25, 37.5 and 50%, replacing the ration based on the dry matter of the reference ration (0% of inclusion). The performance variables ration intake (RI), barley bagasse intake (BBI), total feed intake (TFI), daily ration intake (DRI), daily barley bagasse intake (DBBI), daily feed intake (DFI), total body weight gain (TWG), daily body weight gain (DWG) and feed conversion (FC), also carcass characteristics and weights of organs and visceras were submitted to variance and polynomial regression analysis. It was observed linear reduction on RI and quadratic effect on all the other performance parameters evaluated. The BBI increased with the BB increasing level while TFI increased until 14.91% then decreasing after this level of inclusion. A quadratic effect was observed on DRI and DBBI while DFI increased until the level of 15.00% then decreasing after this level of inclusion. TWG and DWG increased until levels of 12.89 and 14.00% respectively, then decreasing after this level of inclusion. The FC improved progressively until 13.34% of inclusion then getting worse after this level of inclusion. Were evaluated: hot carcass weight (HCW), cold carcass weight (CCW), carcass length (CL) and carcass yields (CY), backfat thickness (BT), ham weight (HW) and ham yield (HY), palette weight (PW) and palette yield (PY), lomb weight (LW) and lomb yield (LY), and loin eye area (LEA). It was observed a quadratic effect on HCW and a linear reduction effect on PW and PY, as the level of barley bagasse inclusion was increased in the swines diets, with none influence on the other carcass characteristics. The Weights of gastro-intestinal tracts (GIT), viscera (VISC), stomach (SW) and liver (LW) were evaluated. There was not any influence on the weights of these last variables due to the level of BB in the growing phase diet. It was observed linear reduction in the feeding cost (FCT) and quadratic effect in the cost per unit of gain (CPUG), which decreased until 22.72% and increasing after this level of BB inclusion. The best level of BB inclusion in diets for swines in growing phase would be 14.91% for higher total DM intake, 12.89% for higher bodyweight gain and 13.34% for the best feed conversion. BB can be included in the growing diet up to 17,36%, without compromising the carcass quality of swines slaughtered at 100 kg of liveweight. BB can be included up to 22.72% in diets of swines in growing phase for reduction of the feeding costs. / O presente trabalho foi realizado no Setor de Suinocultura do Instituto de Zootecnia da Universidade Federal Rural do Rio de Janeiro (FAIZ/UFRRJ), durante o per?odo de agosto a novembro de 2005, com o objetivo de avaliar diferentes n?veis de inclus?o de baga?o de cevada na dieta de su?nos em fase de crescimento, dos 35 aos 60 kg de peso vivo. Foram utilizados 20 animais mesti?os das ra?as Large White, Duroc e Landrace, f?meas com peso m?dio de 35 kg, distribu?dos em delineamento de blocos ao acaso com cinco tratamentos e quatro blocos. Os cinco n?veis de inclus?o de baga?o de cevada na dieta foram: 0%; 12,5%; 25%; 37,5% e 50%, substituindo a ra??o com base na mat?ria seca da ra??o refer?ncia (0% de inclus?o). Os par?metros de desempenho consumo de ra??o (CR), consumo de baga?o de cevada (CBC), consumo total (CT), consumo di?rio de ra??o (CDR), consumo di?rio de baga?o de cevada (CDBC), consumo di?rio (CD), ganho de peso total (GP), ganho de peso di?rio (GPD) e convers?o alimentar (CA), assim como caracter?sticas de carca?a e pesos dos ?rg?os e das v?sceras foram submetidos ? an?lise de vari?ncia e de regress?o. Observou-se efeito quadr?tico no PCQ e efeito linear no PPL e no RPPL, ? medida que se aumentou o n?vel de baga?o de cevada na dieta dos su?nos, n?o tendo sido observado influ?ncia sobre os demais par?metros de carca?a. Foram avaliados os pesos de trato gastro-intestinal (TGI), das v?sceras (VISC), de est?mago (EST) e de f?gado (FIG). N?o houve influ?ncia do n?vel de baga?o de cevada na dieta dos su?nos em crescimento sobre esses par?metros. Observou-se redu??o linear no custo de alimenta??o (CAL) e efeito quadr?tico no custo por unidade de ganho (CPUG), observando-se redu??o em at? 22,72% no CPUG e aumento ap?s esse n?vel. Thus, it is considered a generalist species. Studies about the digestive physiology of this animal are rare, mainly due to the importance of the issue to the support of adequated nutritional manipulation that makes possible the survival of the species. In this sense, the objective of this study is assess the ability of the maned wolf to digest typicals fruits of Cerrado, Solanum lycocarpum (wolf?s fruit) and Annona crassiflora, and characteristics of its diet in the wild as well as examine the digestibility of a mixed diet of rats and quails, representing the animal portion of its diet. The maned wolf has a good ability to digest fruits, reinforcing its characterization as an omnivorous animal, and the fruits are great importance to the processes of nutrition of the species. The study confirmed the enormous importance of wolf?s fruit in the diet of this animal. Besides this, that fruit presented high digestibility by animals tested, and cause of this maned wolf?s fruit is probably very important during the dry period, where the availability of fruits, in general, is lower. The digestibility of dry material of wolf?s fruit is even greater than that of a mixed diet with animal and plant fraction, confirming the importance of that fruit to the nutrition of the maned wolf / O lobo-guar?, Chrysocyon brachyurus, maior can?deo da Am?rica do Sul, ? freq?entemente caracterizado como um animal on?voro devido a sua dieta em vida livre, que inclui itens de origem animal e vegetal, sendo uma esp?cie generalista. O estudo confirmou a relev?ncia da ?fruta do lobo?na dieta dos animais, apresentando elevada digestibilidade por parte dos indiv?duos testados, sendo provavelmente muito importante durante o per?odo de seca, onde a disponibilidade de frutos, de forma geral, ? mais baixa. The purpose of this resolution was to repeal the laws related to nutrition labeling of packaged foods ready for consumption (DRC 39 and 40). The legislation of 2003 had the requirement on the labeling of food content of trans fatty acids, as well as specific characteristics of the information contained therein. Currently, epidemiological studies have be associated the consumption of trans fats to the risk of developing cardiovascular and chronic degenerative diseases. In addition, health professionals report that the children have shown high rates of obesity, a situation directly related to excessive consumption of manufactured products. In order to ensure the maintenance and promotion of health, the accuracy of food labels sold in Brazil, mainly in relation to lipid content present in them should be more effectively monitor. This work aimed to make a critical analysis of the nutritional labeling of ?minibolos? sold in the city of Rio de Janeiro, relating lipid profile and content of trans fatty acids and their claim presented. The methodology used for derivatization of fatty acids is characterized by the extraction transesterification. It consists of an acidic or basic catalysis, where there is a double exchange of glycerides of esters of fatty acids. The method described by Huang (2006) for methylation of fatty acids was subjected to the validation process to ensure the accuracy of the results. The determination and quantification of fatty acids were performed by gas chromatography (GC-FID) using fused silica capillary column CP-Sil 88 (100 mx 0.25 mm), at the Analytical Laboratory of Food and Beverage - LAAB. We analyzed the products containing the information to be free of trans fatty acids to quantify the actual levels of these products in order to ascertain whether the labels were described in reliable information. From the results, the obligation to inform in the labels quantities of trans fatty acids was sufficient to make available to brazilian consumers which foods are free of trans fatty acids and which still have trans fatty acids in the food industry. There were no trans fatty acids in the composition of the samples, what means that is a real assertion to be exempt from the same type of fatty acid. / No Brasil no dia 23 de dezembro de 2003 a Agencia Nacional de Vigil?ncia Sanit?ria ? ANVISA publicou a resolu??o de n?mero 360 (RDC 360). O objetivo desta resolu??o era revogar as legisla??es relacionadas a rotulagem nutricional de alimentos embalados prontos para consumo (RDC 39 e 40). A legisla??o de 2003 teve como principal caracter?stica a exig?ncia de se constar no r?tulo dos alimentos o teor de ?cidos graxos trans, al?m de caracter?sticas especificas das informa??es contidas no mesmo. Atualmente, estudos epidemiol?gicos t?m associado o consumo de gorduras trans ao risco do desenvolvimento de doen?as cardiovasculares e cr?nico-degenerativas. Al?m disso, profissionais da ?rea de sa?de relatam que a popula??o infantil tem apresentado ?ndices elevados de obesidade, situa??o diretamente relacionada ao consumo excessivo de produtos industrializados. Com o intuito de zelar pela manuten??o e promo??o da sa?de da popula??o, deve-se fiscalizar de forma mais efetiva a veracidade dos r?tulos dos alimentos comercializados no Brasil, principalmente em rela??o aos teores lip?dicos presentes nos mesmos. O presente trabalho teve por objetivos fazer uma an?lise cr?tica da rotulagem nutricional de minibolos comercializados em estabelecimentos varejistas na cidade do Rio de Janeiro, relacionando o perfil lip?dico e o teor de ?cidos graxos trans e sua alega??o apresentada. A metodologia empregada para a derivatiza??o dos ?cidos graxos ? caracterizada pela transesterifica??o. Ela consiste em uma cat?lise ?cida ou b?sica, onde h? uma dupla troca de acilglicer?is em ?steres de ?cidos graxos. O m?todo descrito por Huang (2006) para metila??o dos ?cidos graxos foi submetido ao processo de valida??o para assegurar a veracidade dos resultados obtidos. A determina??o e quantifica??o dos ?cidos graxos foram realizadas por cromatografia gasosa (CG-FID), utilizando coluna capilar de s?lica fundida CP-Sil 88 (100 m x 0.25 mm), do Laborat?rio Anal?tico de Alimentos e Bebidas ? LAAB. Foram analisados os produtos que cont?m a informa??o de serem isentos de ?cidos graxos trans para quantificar os teores reais destes produtos, visando averiguar se o descrito nos r?tulos eram informa??es fidedignas. A partir dos resultados, verificou-se em que medida a obrigatoriedade de informar nos r?tulos as quantidades de AG trans foi suficiente para tornar dispon?veis aos consumidores brasileiros quais os alimentos que s?o livres de ?cidos graxos trans e quais ainda possuem ?cidos graxos trans na ind?stria aliment?cia no Brasil. N?o foram encontrados AG trans na composi??o das amostras analisadas, sendo real a alega??o das mesmas serem isentas desse tipo de ?cido graxo.
