Måltidskvalitet i förskolan : bidrag till ett kvalitetsbedömningssystem / Meal quality in preschool : A contribution to a quality system

The quality of meals is included in the constant improvement of each preschool. The study is carried out on behalf of the City of Malmö and Environmental Management and focuses on this quality work. By compiling a checklist of meal quality and by identifying what the meal quality means for persons working with the meal (managers, cooks, educators and parents), it is our wish that this will be a help in their quality work.   To inspire the composition various organizations working methods and ways to manage, evaluate and make use of different models and tools to improve the dining quality, has been studied.   In the literature, the work has received confirmation of theories that emerged during the analysis work of what a meal is and how quality can be measured. The results show that food quality is described as a complex concept consisting of different parts, where the food, atmosphere, service, together form the meal quality. The semi-structured interviews and the inquiry form, have given an indication of the preschool work with quality in the meal activities and it shows that on a wide range and large differences. When various occupational groups were asked, what ”meal quality” means, the responses are consistent to the food, that it was good, appetizing, organic or where locally produced.   It turned out that the cooperation between managers and other employees worked but that there were no directives "from above" which regulate the work concerning meals. Teamwork between the kitchen and preschool teachers, which is so important in quality work, was very insignificant and they were looking for ways to solve this. The criteria for the Check list that includes headings as, "Food and quality of raw materials", "Dining" situation", “Work environment and collaboration" and "Education and development" are based on the results we received from interviews, literature studies and field trips. / Måltidskvalitet ingår i det ständiga förbättringsarbete som varje förskola i Sverige måste göra enligt skollagen. Studien, som görs på uppdrag av Miljöförvaltningen Malmö stad, inriktar sig på detta kvalitetsarbete. Genom att ta fram kriterier för en checklista för måltidkvaliteten och att identifiera vad måltidskvalitet innebär för personer som är knutna till måltiden i förskolan (chefer, kockar, pedagoger och föräldrar), är målsättningen att detta blir en hjälp i kvalitetsarbetet.   Olika organisationers sätt att hantera, utvärdera och använda sig av olika modeller och redskap för att förbättra måltidskvaliteten har inspirerat sammansättningen av checklistan.   I litteraturgenomgången bekräftas teorier som uppkommit under analysarbetet kring vad en måltid är och på vilket sätt kvalitet kan bedömas. Resultatet av litteraturgenomgångenvisar att måltidskvalitet beskrivs som ett komplext begrepp bestående av olika delar, där mat, miljö och service tillsammans formar måltidskvalitet.   Genom semistrukturerade intervjuer och enkäter har en uppfattning om förskolornas kvalitetsarbete inom måltidsverksamheten erhållits, som visar på en stor bredd och stora skillnader i hur man arbetar med måltidskvalitet. På frågan vad måltidskvalitet betyder för de olika yrkesgrupperna är dock svaren samstämmiga, -att råvaran ska vara god, aptitlig, ekologisk eller komma från producenter i närområdet.   Det visade sig att samarbetet mellan chefer och övrig personal fungerade men att det inte förekom några direktiv ”uppifrån” som reglerade måltidsarbetet. Samarbetet mellan kök- och pedagogerna, som beskrivs som viktig i kvalitetsarbetet, var mycket litet och man letade efter sätt att lösa detta. Kriterierna för checklistan; ”Mat och råvarornas kvalitet”, ”Måltidssituationen”, ”Arbetsmiljö och samverkan” samt ”Utbildning och utveckling” har arbetats fram som ett resultat av vårt empiriska material samt den genomgång av tidigare studier och modeller som genomförts inom ramen för uppsatsarbetet.

AVALIAÇÃO DOS PROCEDIMENTOS DE BOAS PRÁTICAS NA ÁREA DE ALIMENTOS E BEBIDAS EM HOTÉIS / EVALUATION OF GOOD PRACTICE IN THE AREA OF FOOD AND DRINKS IN HOTELS

In this sector, feeding is a characteristic, because the concept of hosting is inevitably linked to food. But one concern is that not enough provide food to the guests, is necessary give them a food safe from the point of view of sanitary, in accordance with the current legislation. The aim of this study was to verified the procedures for Good Practices in the areas of food and drink (production of meals) in hotels, in Rio Grande do Sul within the context of the FIFA World Cup 2014, as well as check the sample characteristics. From August to October 2010 in a sample of 12 hotels in Porto Alegre, was applied to a form with open and closed questions about the characteristics of the hotels and the respondents. Was realized a hygienic sanitary diagnosis based on the current legislation through visual evaluation and analysis the adopted procedures. It was found that none of the hotels have the presence of a responsible trained technician. There is a lack of knowledge on the part of the responsible about the hygienic sanitary legislation of food, both at federal as state levels, and the hotels do not have implemented good practices. The percentage of general sanitary adequation, of the areas of food and drink in hotels, was classified as level acceptable and insatisfactory. Through the results, it is suggested that establishments seek to achieve improvements, for that the health of the guest and the image of the establishment are not compromised. / A indústria de hotéis vem crescendo ao longo dos anos devido ao aumento do turismo em nível mundial. Dentro deste setor, a alimentação é uma característica, pois o conceito de hospedagem é inevitavelmente ligado a alimentação. Entretanto há uma preocupação de que não basta somente fornecer uma alimentação para os hóspedes, mas é necessário entregar-lhes um alimento seguro do ponto de vista higiênico-sanitário, em conformidade com a legislação vigente. O objetivo do presente trabalho foi verificar os procedimentos de Boas Práticas na área de Alimentos e Bebidas (produção de refeições), em hotéis do Rio Grande do Sul, inseridos no contexto da Copa do Mundo de Futebol FIFA de 2014, bem como verificar as características dos mesmos. De agosto a outubro de 2010, em uma amostra de 12 hotéis de Porto Alegre-RS, foi aplicado um formulário com perguntas abertas e fechadas sobre as características do hotel e do respondente. Realizou-se um diagnóstico higiênico-sanitário baseado na legislação vigente através de avaliação visual e análise dos procedimentos adotados. Constatou-se que nenhum dos hotéis possuía a presença de um responsável técnico capacitado. Há um desconhecimento por parte dos responsáveis acerca da legislação higiênicosanitária de alimentos, tanto na esfera federal quanto estadual, e os hotéis não possuem Boas Práticas implantadas. A percentagem de adequação higiênicosanitária geral, da área de Alimentos e Bebidas dos hotéis, foi classificada como nível aceitável e insatisfatório. Através dos resultados, sugere-se que os estabelecimentos busquem atingir melhorias, para que a saúde do hóspede e a imagem do estabelecimento não sejam comprometidas.

L’objectif de ce travail de thèse est d’observer et d’analyser l’interaction entre un élève autiste, un logiciel éducatif et un enseignant dans des situations d’apprentissage de la lecture et de l’écriture. Étudier la manière dont les élèves autistes peuvent interagir avec des logiciels éducatifs en présence d’enseignants est très important, notamment pour comprendre comment mieux focaliser l’attention de ces enfants. Il faut alors étudier l’évolution des comportements des élèves et connaître les modes d’intervention des enseignants, favorisant ou non l’évolution de ces comportements. Pour analyser les modes d’interaction qui se mettent en place entre trois agents (un enseignant, un élève autiste et un logiciel éducatif), nous avons défini des observables, pouvant être recueillis durant les phases d’étude chez chacun des agents, et choisi des outils permettant de collecter les informations en temps réel (stylo numérique et logiciel Camtasia). Nous avons également synchronisé plusieurs sources de données. Les informations recueillies et synchronisées, les traces d’activités, ont ensuite été traitées afin de fournir des formes visuelles résumées de l’activité et de calculer différents indicateurs. Ces analyses ont été confrontées aux experts de l’autisme, pour interprétation et aux enseignants pour une meilleure prise en compte de leur propre comportement. Pour mener ce travail, nous avons, d’un premier temps, participé au projet ANR RobAutisTIC, autour d’une interaction ludique entre des enfants autistes, des thérapeutes suivant un protocole expérimental et un robot. Au cours de ce projet, nous avons élaboré les premières listes de gestes à observer, enregistrer et coder et effectué les premières analyses à l’aide du logiciel Elan. Ce travail a été repris avec des élèves autistes, des enseignants et des logiciels éducatifs, dans des situations d’apprentissage. Nous avons adapté pour cela les grilles utilisées dans le projet RobAutisTIC, à la situation d’apprentissage avec un logiciel éducatif. Nous avons conduit des observations préalables dans les classes ainsi qu’une analyse détaillée des logiciels éducatifs pour identifier les interactions possibles et classer les exercices selon un indicateur de complexité. Nous avons pu suivre quinze séances avec au total onze élèves.L’analyse des données nous a permis de repérer les gestes les plus fréquents, les séquences, etc. L’association entre le codage des gestes, l’enregistrement de la succession des écrans des logiciels et des dialogues entre l’enseignante et l’élève a permis de faire une analyse didactique des interactions dans le cadre de la théorie d’action didactique. Nous avons pu constater des modes fins d’interaction entre l’élève autiste et son enseignante, également des caractéristiques particulières de l’interaction élève-logiciel compte tenu du niveau de complexité de chaque exercice et du niveau de développement socio-communicatif de l’élève autiste. Enfin, les enseignants interviennent souvent dans le but de donner la bonne réponse à l’élève à travers le pointage de l’écran et l’interaction verbale. Ce travail ouvre des pistes d’une part dans l’observation et l’analyse de l’interaction avec des élèves autistes et d’autre part dans l’analyse de l’utilisation de logiciels éducatifs. / The objective of this thesis is to observe and analyze the interaction between students with autism, educational software and teachers in learning situations of reading and writing. Explore how students with autism can interact with educational software in the presence of teachers is very important, especially to understand how to better focus their attention. Then, we must study the evolution of student behaviour and know the teachers intervention methods, promoting or not the changes in these behaviours.To analyze the modes of interaction that are set up between three agents (a teacher, a student with autism and educational software), we defined “observable” that may be collected during the study phases in each of the agents and selected tools to collect real-time information (Digital Pen and Camtasia software). We also synchronized multiple data sources. The information collected and synchronized and traces of activities were then treated to provide visual forms summarized activities and calculate various indicators. These analyses were confronted with experts in autism, for interpretation and teachers to better take into account their own behaviour.To conduct this work, first, we participated in the project ANR RobAutiSTIC around a playful interaction between children with autism, therapist following an experimental protocol and a robot. In this project, we developed the first gestures lists to observe, record, encode and performed the first analysis with the Elan software.This work was implemented in the classroom where were present autistic students, teachers and educational software, in learning situations. We have adapted it for the grids used in RobAutiSTIC project, the situation of learning with educational software. We conducted preliminary observations in classrooms as well as a detailed analysis of educational software to identify potential interactions and classify the exercises in a complex indicator. We followed five sessions with a total of eleven students. Data analysis allowed us to identify the most frequent gestures, sequences, etc. The association between the coding of gestures, recording the sequence of screens software and dialogues between the teacher and the student has to do a didactic analysis of interactions in the context of the educational theory of action. We have seen the purpose modes of interaction between student and teacher autistic, also the special characteristics of the interaction student-software given the level of complexity of each year and the level of socio-communicative development of students with autism. Finally, teachers often intervene in order to give the right answer to the student through the pointing screen and verbal interaction.On the one hand, this work paves the way for the observation and analysis of the interaction with autism students (between themselves) and on the other hand, for the analysis of the uses of educational softwares.

This paper deals with a measure theoretical model for evaluation of e-learning programs. Based on methods of general measure theory an evaluation model is developed which can be used for assessment of complex target structures in context of e-learning programs. With the presented rating function target structures can be evaluated by a scoring value which indicates how the targets in sense of a given logical target structure has been reached. A procedure is developed for the estimation of scoring values for target structures based on adapted assessment checklists.

Operations- och anestesisjuksköterskors upplevelser av att använda checklista för säkerhet vid operationer / Theatre- and anesthetists nurses' experiences of using the checklist for surgical safety

Bakgrund: World Health Organization, WHO har arbetat fram en checklista för säker kirurgi, som skall stötta arbetslaget i arbetet kring patienten. Checklistans syfte är att förbättra kommunikationen i arbetslaget och minska komplikationer och dödsfall i samband med kirurgi. Studiens syfte var att undersöka operations- och anestesisjuksköterskors upplevelser av att använda checklista för säkerhet vid operationer i sitt dagliga arbete. Metod: Studien var en kvalitativ intervjustudie som genomförts i fokusgrupper med operationssjuksköterskor i ena gruppen och anestesisjuksköterskor i andra. Data från två intervjuer analyserades med hjälp av en kvalitativ innehållsanalys. Resultat: Studien visade att brister fanns vid implementeringen och att personalen arbetade enligt gamla rutiner. Ett varierat intresse fanns till checklistan, vilket resulterade i en varierad följsamhet i användandet. Resultatet visade på att kommunikationen förbättras och att checklistan synliggjorde alla medarbetarna och ökade möjligheten till att alla kunde känna sig delaktig i vården kring patienten. Vid användning av checklistan reds frågetecken ut och checklistan skapade ett öppet klimat där personalen kunde ta upp eventuella frågetecken som fanns. Resultatet i studien visar dock på att checklistan inte löser alla kommunikationsproblem, då det framkommer att dåliga attityder och bristande respekt till varandra fanns och försvårade användandet. Konklusion: Operation -och anestesisjuksköterskorna ansåg att checklistan var ett bra verktyg när det gäller patientsäkerhet, kommunikation och teamarbete men att det fanns brister i följsamheten. De ansåg att användandet av checklistan var personbundet och att det trots checklistans tydliga utformning ändå fanns frågetecken hos personalen, speciellt vem som ansvarade att den blev gjord.

[pt] O imbricamento entre cultura e natureza na trajetória humana é objeto da história ambiental: campo historiográfico, inerentemente interdisciplinar, que articula práticas adotadas nas ciências humanas e ciências naturais. À luz dos conceitos de fronteira, paisagem e território, e tendo como ponto observacional o maciço da Tijuca, investiga-se o processo de destruição e reconstrução de suas florestas, no decorrer do século XIX. A intensidade na exploração dos recursos energéticos e madeireiro agravou o abastecimento hídrico da cidade do Rio de Janeiro e resultou na premente necessidade de recomposição florestal, especialmente nas áreas de nascentes. Objetiva-se, à luz do repertório de espécies empregadas, e considerando o desenvolvimento do projeto, avaliar a ocorrência de um padrão na seleção de espécies a serem utilizadas nos plantios denotando uma intencionalidade distinta à unicamente solucionar a crise de abastecimento hídrico. Além disso, buscou-se identificar a ocorrência de testemunhos vivos das mudas e arvoretas utilizadas nos plantios pretéritos que permitisse delimitar a área original do projeto. Para isso, foram utilizadas diferentes metodologias: desde a busca e o exame de documentos históricos, depositados em arquivos, bibliotecas e museus, até o emprego de metodologia para a amostragem da vegetação, além de processos padrões aos estudos de anatomia e sistemática botânica. O estudo das coleções de herbários, o emprego de técnicas cartográficas e o uso de dados climatológicos foram fundamentais à execução do trabalho. A circunscrição ora proposta como área do projeto indica que a floresta plantada teria cerca 330 ha, sugerindo a priorização na recomposição por microbacias, a qual totalizou, nos 33 anos analisados, cerca 110 mil árvores plantadas com sucesso em um repertório de pelo menos 107 espécies, no qual as nativas foram preferencialmente empregadas. O uso madeireiro, em especial para o segmento naval foi priorizado, mas também foram atendidos outros propósitos: como o de comércio e construção. O modelo empregado no projeto, associado aos critérios de seleção das áreas para plantio e das espécies, caracterizam um planejamento estratégico que previa, valendo-se de uma crise hídrica urgente, recuperar as nascentes e gerar riqueza no médio e longo prazo, diversificando o uso do solo e inaugurando um ciclo de exploração silvicultural no país. / [en] The imbrications between culture and nature in the human trajectory are the object of environmental history: a historiographic field, inherently interdisciplinary, that articulates practices adopted in the human and natural sciences. In the light of the concepts of frontier, landscape and territory, and having the Tijuca massif as an observational point, we investigated the processes of destruction and reconstruction of its forests along the 19th century. The intensity in the exploitation of energy resources and wood worsened the water supply of the city of Rio de Janeiro and resulted in an urgent need for forest restoration, especially in the spring areas. In light of the repertoire of species used and considering the project s development, the objective is to evaluate the occurrence of a pattern in the selection of species to be used in plantations, denoting a distinct intention to solely solve the water supply crisis. In addition, we sought to identify the occurrence of living evidence of seedlings and small trees used in past plantations that would allow delimiting the original area of the project. To do so, different methodologies were used, ranging from the search and examination of historical documents in archives, libraries and museums, to the use of methods for sampling the vegetation, in addition to standard processes for anatomy and systematic botanical studies. The study of herbarium collections, the use of cartographic techniques and of climatological data were crucial to this work. The circumscription proposed as the project area indicates that the planted forest would have about 330 ha, suggesting prioritization in the restoration by micro-watersheds, which totaled, in the 33 years analyzed, about 110,000 successfully planted trees from a repertoire of at least 107 species, in which native species were chosen over exotic ones. The use of timber, especially for the naval segment, was prioritized, but other purposes were also served: trade and construction. The model used in the project, associated with the criteria for selecting the areas for planting and the species, characterize strategic planning that called for –while taking advantage of an urgent water crisis – a recovery of the springs and generation of wealth in the medium and long term, diversifying soil use and inaugurating a cycle of silvicultural exploration in the country.

This thesis focuses on the design of the hexacopter construction for photographic purposes with maximum load of 4 kg. When constructing a hexacopter it is necessary to take into account a number of factors. For the actual construction the correct dimensioning of the supporting frame is important as well as the locomotor system. The main concept of this thesis includes three-axis gimbal for camera control. The verification of the structure strength was performed using FEM analysis. This work describes also the selection of individual components and their wiring. The end is dedicated to safety and different procedures for reducing operation risks.

The utility of a Düss fable for cross-cultural measurement of resilience in young children

There is limited research on the utility of specific assessment measures for cross-cultural psychological and research measurement within the South-African context. In addition limited knowledge exists on cross-cultural measurement of resilience in young children. This study analyses purposefully selected (existing) data from the Kgolo Mmogo project (which investigated psychological resilience in South African mothers and children affected by HIV/AIDS) with the aim of exploring the utility of a Düss fable as projective story-telling technique to measure resilience in young children. The primary research question that guided this study was: ‘What is the utility of a Düss fable as cross-cultural measure of resilience in young children?’ Using the ecological and social cross-cultural model as theoretical framework, the concurrent mixed method study compares inductively derived themes from the Düss fables (qualitative: content analysis) with quantitative scores obtained from secondary analysis of Child Behavior Checklist scores. Subsequent to the data analysis themes of resilience and non-resilience emerged from the Düss fables as well as from the CBCL. The themes of both resilience (protective resources) and non-resilience (risk factors) emerged and where significantly situated within the children’s environments. The core themes of resilience as expressed by the child-participants related to their coping strategies, their sense of belonging, the availability of material resources and their ability to navigate towards positive institutions. The most prominent themes of non-resilience that emerged from the participants’ Düss fables related to their coping strategies (maladaptive coping), their awareness of chronic risk, adversity and death. The CBCL was included in the study to provide insight into the perspective of the participants’ mothers with regards to their children’s functioning. Predominantly the mothers mostly perceived their children as well adjusted. The risk-related behaviours mostly reported by the mothers were externalising problems that manifested as rule-breaking and aggressive behaviour. The Düss fables provided meaningful insights into the life experiences of the children. There were instances where the participants’ responses were rich and detailed. The majority of the participants’ stories were age-appropriate and informative, while in some instances the participants gave limited responses. Två företag inom verkstadsindustrin har önskemål att få hjälp med att ta fram ett stöddokument att använda i projektarbete där det idag generellt är fokus på prestanda och kostnadseffektivitet, ofta inom begränsade och snäva tidsramar. Arbetsmiljö som en faktor att ta med tidigt i projekten glöms lätt bort och uppfattas ibland som lite abstrakt och svårt att greppa av projektledare och övriga i projektgruppen. Syftet med examensarbetet är att fylla gapet mellan teori och praktisk verklighet vid utformning av nya eller förändrade arbetsplatser inom verkstadsindustrin. Målet är att ta fram en informativ checklista med stor tyngdpunkt på användbarhet som på ett självklart sätt kommer att användas i installations- och ombyggnadsprojekt. På längre sikt är målet att skapa ett naturligt samarbete mellan projektorganisation och produktionsorganisation samt företagshälsa. Checklistorna är utarbetade så att projektgruppen ska förstå problematiken om man inte tar hand om dessa arbetsmiljöfrågor. Inför varje frågeställning har litteratur granskats och en fördjupning inom ämnet för respektive faktor görs, erfarenheter från tidigare projekt samt vanliga problem i befintliga anläggningar har tagits om hand. Sammanvägningen av dessa erfarenheter och kunskap har sedan lett till ett antal kontrollfrågor med tillhörande råd. En enkätundersökning visade att det finns ett stort intresse för denna typ av rådgivande checklista och resultatet var övervägande positivt med några funderingar kring efterlevnad och vidare utveckling av dokumenten. De personer, intressenter, som deltagit i utvecklingen och utvärderingen av checklistorna menar att de är ett bra komplement till de dokument som används idag. Det finns goda förutsättningar att implementera en rådgivande checklista idag. Medvetenheten ökar bland personalen och få vill utsätta sig för ohälsa och olycksfall. Arbetet med checklistorna kommer fortsätta efter avslutat examensarbete i syfte att säkra efterlevnaden, utvecklingen samt känslan av ägandeskap. En viktig aspekt för att denna checklista ska hållas levande och utvecklas är att den förs in i företagens anskaffningsprocess och att efterlevnaden styrs därifrån. Sökord: arbetsmiljö, checklista, rådgivande, arbetsplats, lean, AFS. / Two companies in the manufacturing industry wishes to develop a supporting document to use in project work where there today is generally focused on performance and cost, often within limited and tight deadlines. Work environment as a factor to be considered early in the projects are easily forgotten and are sometimes perceived as a bit abstract and difficult to grasp by the project manager and other members of the project team. The aim of the degree project is to fill the gap between the theory and practical reality in the design of new or changed workplaces in the manufacturing industry. The goal of this thesis is to develop an informative checklist that will be obvious to use in the installation and renovation projects. In the longer term, the goal is to create a natural collaboration between the project and production organizations and also make the company health service more involved in these projects. The checklists are designed to bring the project team to understand the problem if we do not take care of working environmental issues. For each issue literature was reviewed, and a deeper knowledge for each factor was collected. Experiences from previous projects and common problems in existing facilities have also been taken care of. The balancing of these experiences and knowledge led to a number of questions with associated advice. A survey showed that there is a great interest for this kind of advisory checklist and the results were largely positive with some concerns about compliance and further development of the documents. The persons, stakeholders, who participated in the development and evaluation of the checklists says that they are a good complement to their documents they are using today. There are good opportunities to implement an advisory checklist today. Awareness is increasing among the staff and few wishes to expose themselves to illness and accidents. Work on the checklists will continue after completion of the degree project in order to ensure compliance, development and sense of ownership. An important aspect for this checklist to be kept alive and further developed is to implement it in the corporate acquisition process and that compliance will be controlled from there.
