Produtores, consumidores e valorização de produtos tradicionais : um estudo sobre qualidade de alimentos a partir do caso do queijo serrano dos Campos de Cima da Serra – RS

O tema da valorização de alimentos tradicionais e artesanais tem recebido redobrada atenção no momento atual, em que, por um lado, há crescente demanda de consumidores por alimentos naturais, artesanais, diferenciados e, por outro lado e ao mesmo tempo, realiza-se discussão significativa no que tange a critérios de produção e avaliação desses produtos que, dadas as especificidades, têm suas características comprometidas se avaliados de acordo com os mesmos critérios que regem a produção industrial de alimentos. É nesse contexto que a presente pesquisa está inserida. Para o desenvolvimento da pesquisa, foi tomado como objeto de estudo o Queijo Serrano, queijo tradicional feito artesanalmente a partir de leite cru nos Campos de Cima da Serra, região nordeste do Rio Grande do Sul. Os dados empíricos foram obtidos a partir de pesquisa etnográfica, que priorizou especialmente produtores e consumidores como interlocutores, mas também técnicos e comerciantes de queijo. A análise dos dados obtidos proporcionou elementos para discutir a relação entre os modos de vida dos produtores e a produção de queijo, para apreender as práticas, significados e lógicas associadas à produção, bem como aos utensílios empregados e ao próprio uso de leite cru para a elaboração do produto. No que diz respeito ao consumo de Queijo Serrano, o estudo discute as percepções de risco dos moradores da região em relação ao produto e, ainda, as relações por meio das quais os queijos são comercializados, costumeiramente fundamentadas na reputação dos produtores e em relações de proximidade. Mudanças em curso na região têm, com maior ou menor intensidade, resultado em alterações nos modos de produção, o que pode até mesmo afetar a manutenção de características que conferem singularidade ao Queijo Serrano. Evidenciando a relevância da legitimação de conhecimentos empregados na produção tradicional de alimentos, este estudo busca contribuir para a valorização e proteção desse tipo de produção, associada não apenas à manutenção da renda como também à salvaguarda dos modos de produzir esses alimentos e dos modos de vida das famílias produtoras. / The debate on the valorisation of traditional and artisanal food has been receiving increased attention recently. While there is growing consumer demand for natural, artisanal and unique foods, simultaneously, there is a significant discussion about the criteria used to assess these products which, given their singularity, can compromise their features if they are evaluated according to the same criteria which regulate industrial food production This research was conducted taking into account this context. For the development of this study, Serrano Cheese was taken as the object of research; this is a handmade traditional cheese made from raw milk and produced in Campos de Cima da Serra, a region located in the northeast area of Rio Grande do Sul, the southernmost state of Brazil. Empirical data were obtained from ethnographic research which prioritised information especially from producers and consumers but also from technicians and cheese sellers. The data analysis provided elements to discuss the relationship between producers’ lifestyles and cheese production; and to capture the practices, meanings and logics associated with the production and with the equipment, the tools and the raw milk employed in the production of the cheese. Regarding the consumption of Serrano Cheese, the study discusses the risk perceptions of local inhabitants in relation to the product, and the channels through which the cheeses are sold, usually based on the reputation of the producers and on close relationships. Changes in progress in the region, to varying degrees, have been resulting in alterations in the production methods, which can even affect the maintenance of those characteristics which make Serrano Cheese unique. By evidencing the significance of the knowledge legitimation employed in traditional food production, this study aims to contribute towards the enhancement and protection of this sort of production, which in turn is associated not only with the income maintenance but also with the safeguarding of the production methods and the lifestyle of producer families.

This dissertation presents an anthropological research about ´´Renda Irlandesa``(Irish Lace) Sergipe´s handicraft that had its modi faciendi registered as National Intangible Cultural Heritage, in the Book of Knowledge, in November 2008 - in an approach that introduces new directions for addressing production, marketing and use, resulting from its interaction with the fashion market. The research focuses on a new approach that tends to treat consumption as a matter of culture, analyzing the emergence of new attitudes assumed by artisans in the ´´know-how Renda Irlandesa`` amid the demands of the fashion market linked to women´s clothing, which provide potential use of formulating handmade garments. It highlights the processes of the cultural heritage exerted by the female artisans in their know-how and shape the cultural heritage of handicrafts, emphasizing its role as a complementary source of income for the protagonists of the practice. Finally, we discuss the new mechanisms of representation made by social workers from the symbolic consumption of cultural heritage. / O presente trabalho apresenta uma investigação antropológica sobre a renda irlandesa artesanato sergipano que teve seu modo de fazer registrado como Patrimônio Cultural Imaterial Nacional, no Livro de Registro dos Saberes, em novembro de 2008 em suas novas instruções de produção, comercialização e uso, advindas das interações com o mercado de moda. A pesquisa privilegia uma nova abordagem sobre a Renda, tratando-a a partir de seu consumo como uma questão de cultura, para analisar o advento das novas atitudes assumidas pelas artesãs no saber fazer , em meio às demandas do mercado de moda ligadas ao vestuário feminino, que prevêem a potencialidade do uso de motivos artesanais na formulação de vestimentas. Evidencia ainda os processos de herança cultural exercidos pelas artesãs em seu ofício e que configuram a patrimonialidade do artesanato, destacando seu papel enquanto fonte complementar de ganho para as protagonistas da prática. Por fim, discute os novos mecanismos de representação assumidos pelos agentes sociais a partir do consumo simbólico da patrimonialidade.

Les sites taïwanais potentiellement éligibles au patrimoine mondial : perspectives et enjeux historique, politique, législatif et social / Taiwan’s Potential World Heritage Sites : Outlook and Historical, Political, Legislative and Social Stakes

En 2003 et 2009, le Conseil des affaires culturelles de Taïwan a lancé puis relancé un projet de sélection de dix-huit sites taïwanais potentiellement éligibles au patrimoine mondial, un premier jeu en dehors du jeu du patrimoine mondial de l’UNESCO. Après une présentation brève des sites potentiels, nous essayerons de comprendre les causes historiques de l’exclusion de Taïwan du programme du patrimoine mondial, ce qui nous fera remonter à 1949 et à la séparation de Taïwan et de la Chine suite à la fin de la guerre civile chinoise : dès lors, la Chine sera gouvernée par le parti communiste, et Taïwan, refuge du gouvernement nationaliste déchu, vivra un isolement international. Dans ce contexte, le projet semble une possibilité de contourner les obstacles politiques. Or, le patrimoine mondial fait lui-même partie d’un jeu politique. Afin de jouer ce jeu, des sites taïwanais potentiels se rapprochent de la Chine ou du Japon pour une éventuelle collaboration ; nous examinerons le pourquoi du choix de ces deux pays et les possibilités et difficultés liées à ce partenariat. Au niveau international, la marge de manœuvre diplomatique étant réduite, il est primordial pour l’île de mettre en avant son soft power pour participer au patrimoine mondial de façon significative. Au niveau national, il nous faudra également examiner le mécanisme du projet des sites potentiels ; à cet égard, nous avons constaté plusieurs lacunes juridiques et financières. Mais le facteur humain est aussi à prendre en compte. En effet, ce projet est avant tout exécuté par différents acteurs, qui doivent absolument travailler de concert pour mener à bien le projet. / In 2003 and 2009, the Taiwanese Council for Cultural Affairs started the project to select eighteen potential World Heritage Sites in Taiwan, the first step in the process that precedes UNESCO’s World Heritage selection process. After a brief presentation of the potential sites, we will try to understand the historical reasons for Taiwan’s exclusion from the World Heritage program. For this purpose, we will go back to 1949 when Taiwan was separated from China after a civil war. Thereafter, China would be governed by the communist party, and Taiwan, the refuge of the defeated nationalist government, would live in international isolation. In this context, the project seems to be an opportunity to overcome political obstacles. However, world heritage is itself political. In recognition of this reality, some potential sites are exploring possible collaboration with China or Japan. We will exam why these two countries and what the possibilities and difficulties are for these partnerships. At the international level, Taiwan has little leeway in the diplomatic domain, so it is primordial for the island to highlight its soft power and play a significant role in the world’s heritage. At the national level, we should also examine the mechanism of the potential sites project where we found many judicial and financial issues as well as human problems. In fact, this project is executed by different stakeholders, so it is essential for all of them to work in concert in order to ensure the project’s success. In addition to a strong judicial system to avoid any kind of possible fraud, education is crucial to raise citizens’ awareness of the heritage that they own.

En la actualidad, está la problemática del desarraigo en la tercera y cuarta generación de peruanos descendientes de inmigrantes japoneses, los Nikkei. Este desarraigo de la cultura inmigrante es resultado de los factores históricos y socioculturales del siglo XIX y XX que atravesaron los primeros inmigrantes japoneses que llegaron a Perú; así como la influencia de la cultura receptora (cultura peruana) que se dio con el paso de los años. La presente investigación tiene como objetivo identificar cuáles son las estrategias de comunicación que han influenciado en el desarrollo de las comunidades peruano japonesas en Lima en cuanto a transmitir y difundir su cultura e información a las próximas generaciones Nikkei. Además de analizar cuáles son las estrategias de comunicación que son utilizadas para captar la atención de la tercera y cuarta generación de descendientes. Para ello, se propone una metodología interpretativa con una estrategia metodológica mixta compuesta por encuestas y entrevistas semi-estructuradas para los distintos perfiles de descendientes: Representantes adultos de la colectividad Nikkei, jóvenes Nikkei participantes y jóvenes descendientes en desarraigo. La importancia de este estudio se encuentra en el análisis del uso de las herramientas comunicacionales para la perduración de la cultura inmigrante y la transmisión de nuevos valores e identidad a las próximas generaciones Nikkei que puede servir para el desarrollo de planes comunicacionales contra el desarraigo. Además, los resultados pueden servir como referencias para otras comunidades en situación similar. / Currently, there is the problem of uprooting in the third and fourth generation of Peruvians descendents from Japanese immigrants, the Nikkei. This uprooting present in this migrant culture is the result of the historical and sociocultural factors that the first Japanese immigrants who arrived to Peru went through between the 19th and 20th centuries. As well as the influence of the receiving culture (Peruvian culture) over the years. This research aims to identify which communication strategies have influenced in the development of the Peruvian-Japanese communities in Lima, in terms of transmitting and spreading information and their culture through the next Nikkei generations. In addition, it analyzes which communication strategies are used to capture the attention of the third and fourth generation of Nikkei. For this purpose, an interpretative methodology with a mixed methodological strategy is proposed which consist of surveys and semi-structured interviews for the different profiles of descendants: adult representatives of the Nikkei community, participating young Nikkei and uprooted young descendants. The importance of this study is found in the analysis of the use of communication tools for the continuance of the immigrant culture and the transcendence of new values and a new identity to the next Nikkei generations which can serve to develop new communication plans against uprooting. Studiens syfte är att ge en bild av glashantverksutövares uppfattning av sitt hantverk och yrke, idag och i ett framtidsperspektiv. I uppsatsen redogörs för Glasrikets historiska utveckling samt en inventering av de glasbruk, glashyttor och glasverkstäder som funnits i Glasriket mellan 1742–2023. I uppsatsen presenteras en intervjustudie som genomförts med sex glashantverkare, som är verksamma i Glasriket. / This bachelors thesis in Cultural Studies, is about The Kingdom of Crystal, a part of the southeast of Sweden, called Småland, where a large amount of glass factories has been established since the 19th century. The purpose of the study is to describe glass-craftsmen and women and their perspective in regard to their profession, today and of the future. A summary of the historical development of The Kingdom of Crystal is included in the thesis, as well as an inventory of the glass factories and other glass- related businesses in The Kingdom of Crystal between 1742–2023. The thesis includes an interview study with six different glass-craftsmen and women, active in The Kingdom of Crystal.

[pt] O presente trabalho analisa de que maneira o município do Rio de Janeiro implementou sua política de preservação do patrimônio cultural local e utilizou os instrumentos jurídicos disponíveis à tutela dos bens de natureza imaterial, notadamente, a partir de 2013, com a criação de um novo Livro de Registro: o das Atividades Econômicas Tradicionais e Notáveis. Parte-se do debate acerca das nuances da concepção do patrimônio cultural imaterial (PCI) como categoria analítica, para reconhecer que o PCI carrega um potencial contestador capaz de respaldar as lutas dos grupos e sujeitos historicamente subalternizados, evidenciando, assim, o caráter essencialmente político dessa categoria. Após realizar uma análise das principais construções normativas nacionais e internacionais sobre o assunto, utiliza-se a metodologia do caso-referência para investigar o rebatimento da utilização do Patrimônio Cultural Imaterial na cidade do Rio de Janeiro. Para tanto, empreende-se dois recortes: um temporal e outro territorial, que correspondem, respectivamente, à região central da cidade do Rio de Janeiro e ao período da gestão do Prefeito Eduardo Paes (2009-2016). O desenvolvimento da pesquisa permitiu demonstrar que o patrimônio imaterial carioca, nos casos referência analisados, foi capturado pela lógica empreendedora, neutralizando a potência contestadora dessa categoria e, consequentemente, dando início ao processo de apagamento da memória dos referidos sujeitos e grupos historicamente subalternizados. / [en] This thesis focuses on the means by which the City Hall of Rio Janeiro implemented a policy for the preservation of local cultural heritage and used legal instruments available to the protection of intangible goods, notably from 2013, as of the creation of a new category: The Traditional and Notable Economic Activities s Book of Registry. The research is based on the debate about the conception of the Intangible Cultural Heritage (ICH) as an analytical category, in order to recognize that the ICH carries a challenging potential capable of supporting the struggles of historically subalternized groups and subjects, thus revealing the essentially political nature of this category. After conducting an analysis of the main national and international normative constructions on the subject, the thesis concentrates on the study of a selected case in order to investigate the repercussions of the use of Intangible Cultural Heritage in the city of Rio de Janeiro. To do so, two approaches are undertaken: one temporal and one territorial, corresponding respectively to the central region of the city of Rio de Janeiro and the administration of Mayor Eduardo Paes (2009-2016). The development of the research intends to demonstrate that Rio s intangible heritage was captured by the entrepreneurial thinking, which led to the neutralization of the challenging power of this category and permitted the beginning of the memory deletion process of those historically subalternized subjects and groups.

[pt] Esta dissertação consiste num relato reflexivo e analítico de atividades pedagógicas desenvolvidas em aulas de história denominadas: Estrofes de História. As experiências ocorreram com turmas do nono ano da rede municipal do Rio de Janeiro, em escolas situadas no bairro de Santa Cruz, nos anos de 2018, 2019 e 2021. Ao constatar que o aprendizado de história nas escolas públicas ainda enfrenta grandes desafios, diante do fato de que parte significante dos estudantes não entendem o que leem, buscou-se explorar maneiras de trabalhar o conteúdo curricular de forma a desenvolver em relação a este uma memória positiva, favorecer sua compreensão e avaliar sua assimilação, utilizando a música. O samba é empregado, sobretudo, como estímulo a criatividade e a escrita discentes. Tomando por inspiração versos de improviso do partido-alto, uma das matrizes do samba no Rio de Janeiro, foi desenvolvida uma proposta didática na qual os/as estudantes são desafiados a compor quadras de verso a partir do conteúdo estudado. Compreende-se esse exercício como uma forma de letramento histórico e de estímulo à escrita utilizando elementos que fazem parte do cotidiano dos/das alunos/as. O diálogo entre os saberes históricos, como a agilidade de improvisar versos, característicos das manifestações culturais populares, e os históricos saberes, ou conteúdos formais, no espaço escolar, valoriza o conhecimento dos alunos, estimula o interesse e o prazer em estudar, além de agregar experiências distintas. Esse movimento contribui para tornar docentes e discentes compositores e/ou autores da aula de história como música ou como texto. / [en] In this research, I analyze activities practiced in the classes I teach: History stanzas. The experiences took place with 9th-grade classes in Rio de Janeiro s public schools in the Santa Cruz neighborhood in 2018, 2019, and 2021. Noting that learning history in public schools still faces great challenges, as a significant part of the students do not understand what they read, I explored ways of working with the curricular content to develop a positive memory about history, favoring its understanding and evaluating its assimilation, using music. Above all, Samba is used as a stimulus for students creativity and writing. Inspired by the improvised verses of the Partido-Alto, one of the main samba sources in Rio de Janeiro, I developed a didactic proposal in which students are challenged to compose verse quatrains based on the content studied. I see this exercise as a form of historical literacy and a stimulus to writing using elements that are part of the students daily lives. The dialogue between popular knowledge, such as the agility to improvise verses, characteristics of popular cultural manifestations, and historical knowledge, or formal contents, in the school space, values students knowledge, stimulates interest and pleasure in studying, in addition to adding different experiences, contributing to making teachers and students composers and/or authors of the history class as music or as text.

La sauvegarde du patrimoine culturel immatériel en droit international / The Safeguarding of intangible cultural heritage in international law

Le patrimoine culturel ne s’arrête pas aux monuments et aux collections d’objets. Il comprend également les traditions ou les expressions vivantes héritées de nos ancêtres et transmises à nos descendants ; ce qu’on appelle le patrimoine culturel immatériel. L’importance de ce patrimoine ne réside pas tant dans la manifestation culturelle elle-même que dans la richesse des connaissances et du savoir-faire qu’il transmet d’une génération à une autre. Cette transmission du savoir a une valeur sociale, économique, culturelle et juridique pertinente pour les groupes minoritaires et majoritaires et pour le monde entier. Le choix des techniques de protection internationale est directement lié aux objectifs poursuivis par l’UNESCO. Au-delà du texte de la Convention de 2003 et d’autres instruments internationaux adoptés par l’UNESCO, il peut être utile d’aborder plus largement les solutions juridiques de sauvegarde du patrimoine culturel immatériel. L'objet de notre étude consiste à analyser l’action normative en matière de patrimoine culturel immatériel en mettant la lumière sur sa définition, les normes internationales relatives à sa protection, ainsi que sur la question de l’effectivité et de l’efficacité internationale de la sauvegarde de ce patrimoine. Pour conclure, les résultats de l’action normative et d’effectivité n’échappent pas à notre analyse. Il s’agit d’évoquer enfin la possibilité de mettre en place une feuille de route pour une meilleure protection à l’avenir. / Cultural heritage doesn't only include monuments and the collection of objects. /cultural heritage is about more than monuments or the collection of objects. It, also, includes the traditions or the modern inherited expressions from our ancestors and transmitted to our descendants, what we call the intangible cultural heritage. The importance of this heritage doesn't reside so much in the cultural demonstration itself, but in the richness of knowledge, and the know-hows that are transmitted from one generation to another. This transmission of knowledge has social value, economical, cultural and legal relevance for minority groups, as well as for the main social groups, and is also, important for the world. The choice of the techniques used for international protection is linked directly to the objectives pursued by the UNESCO. Beyond the text of the 2003 convention and other international agreements adopted by the UNESCO, it can perhaps be useful to tackle more widely the legal solutions of the intangible cultural heritage. The aim of our study consists of analysing the normative action concerning the intangible cultural heritage in placing the light on the definition of the intangible cultural heritage as well as the international standards important to its protection and also in tackling the question of effectivity and efficiency of the international protection of this heritage. In conclusion, the results for the normative action and effectivity do not escape our analysis. It is, in the end about the possibility of putting in place a plan for the protection of a better future.
